LETTER FROM PUBLISHER THE

Anyone who knows me knows my love for Christmas. It is my favorite time of year for many reasons. I’m the one with her tree up first (this year before Thanksgiving), the lights taken down last and who loves spending time with family and friends. There is a magic about the holidays that I have never outgrown and hope I never do.

This is one of the reasons why I love our Holiday Issue for December & January. It is like a holiday stocking full of wonderful goodies just waiting to be opened and shared with you. In this issue, we bring you something different in each of our features. My writers have brought something special for everyone. I couldn’t do this without my team, and I hope you enjoy all their stories and photography in this issue.

To me, one of the best things about Christmas is all the comforting memories, and nowhere is that better expressed than with food. I got a group of friends together sharing old and new recipes and staged it into a photo shoot. It was a time to share memories, laugh, and to enjoy some delicious appetizers and a cocktail. Make it simple and invite some friends over through the holidays and have some much-needed friendship and giggles. We share some of our recipes with you in this issue that are simple to give you some ideas.

Amidst the festivities, decorations and gift-giving, it is essential to remember the profound significance of Christ’s birth. He is the ultimate gift, the source of love, grace and redemption, and the reason we rejoice during this season.

I learn with each issue that even in the trials of life, if we have eyes to see what we are grateful for and trust our faith, then we can find positivity everywhere we look. I am so thankful for what has evolved over the thirteen years of publishing Heartland LIVING , and I make it a point to never lose that gratitude.

As with every year, I want to personally thank you for letting us share pieces of the Heartland communities with you. To our advertisers, readers, friends and family, I thank you from the bottom of my heart for all your support throughout the years. I am grateful each of you joined me on this humbling journey, and we look forward to our new opportunities in 2025.

Her roots are deep in Highlands County; her mother was born in a house in DeSoto City in 1928, and her relatives were among the firefighters who went to rescue those in Moore Haven during the hurricane of 1926, giving her a unique perspective into our culture.

LISA TAYLOR HALL picked up her camera 7 years ago when motherhood inspired her to see the beauty in each day. She loves how photography captures a moment in time that otherwise might be forgotten. Lisa loves to capture organic moments in their best light. She grew up in Sebring and currently lives in Lake Wales with her husband and their three sons. Lisa specializes in lifestyle photography for families, small events, maternity, and graduates.

Hannah Tucker is the Public Information Officer for the City of Sebring. Hannah was born and raised in Sebring and is the greatgreat-granddaughter of George E. Sebring. Kelsey Schauf was born and raised in Sebring and resides in Mooresville, NC. For the first eight years of her career, she was a Public Relations Representative in the motorsports industry. The Meaning of Christmas

Isn’t it wonderful how the scent of certain foods has the magical ability to unlock core memories? For me, it is the smell of my grandmother's rolls cooking in the oven. The kind of rolls that require days to prepare and are reserved for special occasions. The smell of those rolls instantly teleports me back to being a little girl at Thanksgiving or Christmas in my grandmother's kitchen. I can remember so vividly my grandma using her butter-coated hands to carefully and meticulously roll the three little spheres that would be gently placed into each muffin cup. Then placed on top of the stove to rise. When she would begin to bake them, the sweet, yeasty aroma would fill the room, and you knew it was almost time for dinner. The rolls were best served hot and fresh so that you could tuck a pad of butter to melt inside the center of the three, now overfilled, spheres that made a perfect clover. While the recipe is rather simple, I have tried for several years to reach the same expert level as my grandma, but they just aren’t the same. I will keep trying! „

“I spent a lot of time with both grandmothers growing up and ‘helping’ in the kitchen. It became more of a tradition after I had girls. They remember baking with their greatgrandmother, grandmother, and me. We continued the holiday baking with my mom (until she passed 2 years ago) along with the granddaughters. Everyone has their favorite recipes! Now I am the matriarch, and my heart is very full during the holidays. I am blessed to make memories and pass on the traditions.”

With the holiday season upon us, it seems like everyone is bringing out the books and boxes that are stuffed full of recipes that have been passed down from moms, grandmas, aunties, great-grandmas, mothers-in-laws, etc. The circle of women that have influenced and enriched our lives in so many ways. Whether it is an ancient family secret or a new twist on a classic dish, the recipes that define holiday gatherings are connections to past and future generations that nurture bonds and seem to transcend time with just aromas.

The “scent of the season” is the absolute best thing about this time of year. The delicious melody of spices that dance through the kitchen evokes memories and conjures images of gatherings from the past. These sensory experiences shape how we cherish our childhood. As we think back fondly on the simple act of cooking with family, traditions will start as a way to continue the legacy of lessons passed through generations. „

This deeply emotional link between smell and memory influences the way we perceive food as adults. The connection to our heritage and loved ones drives us to seek, preserve and share the recipes that shaped our childhood. When we are preparing recipes that are infused with warmth and comfort, it is our way to share those same feelings with others. In a way, it becomes an act of storytelling and offers us a deeper connection to our friends and family who gather together during the holidays.

My gatherings are always a treasured tradition where the warmth of connection is felt the strongest. I think most of us could agree that once we roll in November, our social calendars are filled every weekend for the next couple of months with holiday parties, concerts, recitals, parades, ugly sweaters, cookie decorating and turkey carving. This is why the kitchen has always been viewed as the heart of the home. Whether it’s family, friends or family (friends who have become family), the act of cooking and eating together becomes a way of expressing gratitude, nurturing relationships and celebrating traditions that make each family unique. „

“When I moved to Florida from Michigan, I asked my mom to write down all the recipes for her Christmas cookies. My favorite are her butter tarts! Everyone always likes the spritz cookies I make from her recipe, and for nearly 20 years I pull out the same old pieces of paper to start baking.”

As laughter and conversations fill the air, our food and recipes aren’t the only things that are shared. It isn’t that we aren’t gathering together any other time of year, but the holidays offer a unique kind of experience. Homes are aglow with twinkling lights, Christmas trees and festive decorations. The dining table acts as a centerpiece of celebration, overflowing with appetizers, casseroles, bread and entrees that have been prepared with love, each one carrying the stories and history that have come before this special day. As everyone gathers around, hugs and smiles are exchanged freely, wrapping the atmosphere in love and comfort. It is during these precious moments that the hustle and bustle of everyday life seems to fade. The busyness is simply replaced by the joy that comes with being surrounded by the people who matter most. „

Friends and family, old and new traditions, recipes and gathering— together these moments create a tapestry that will be treasured long after the holidays end. We will continue to reflect back on the times we’ve gathered during the holidays and be overwhelmed with a rush of warmth and nostalgia. Before you run off to the kitchen in search of your family recipes, I want to share a personal story about how recipes can be very similar to that silly game of “telephone” we all played when we were kids. Sometimes you are given a pumpkin pie recipe from your mother-in-law, but there is a slight miscommunication in the ingredients. Despite the mistake, it actually turns out kind of perfect, and everyone says it's the best pie they’ve ever had! Fast forward 15 years later, and you tell everyone, “It’s a family recipe with a little love added from me.”

Encounters of the Conservation Kind

Where can you “walkabout” with kangaroos only an hour and a half from Lakeland? At the Brevard Zoo! It’s true—there’s no cage, and that’s only one of the unique animal encounters offered here in Melbourne, Florida. I recently got a backstage pass to experience this community-established zoo and conservation hub that is celebrating its 30th year. Let’s take a look at some of the things that make the Brevard Zoo special. „

“Everybody thinks roos are scary, but they are prey animals,” says senior keeper Alyssa Pagan. She’s quick to point out that anything will defend itself if it feels the need. “In six years, I’ve never once been kicked,” she adds.

Her favorite roos are Louise and Jacie, who were hand-reared at the zoo. “They are our two oldest ladies and they definitely rule the roost,” she says. You might spot Louise as the extra-fuzzy roo. In her old age, she’s got arthritis but receives acupuncture, injections, and laser therapy. Louise shares the habitat with 13 other roos, including Dr. Roo-Little, the resident breeding male. “We swap out our breeding male every few years,” Alyssa explains.

While a roo may cross your path, the staff asks that you don’t touch. The roos are most active in the morning and at dusk. “Mid-day is nap time,” Alyssa explains. Between 10am and 11am is feeding time, and guests can purchase a cup of food for $5. “We’re a nonprofit, so all the money goes right back into the animals,” she adds.

Right across from the Kangaroo Walkabout are two freeflight aviaries that were another highlight of my visit. One aviary is populated by a flurry of rainbow lorikeets and the other houses cockatiels. Alyssa explains that many people don’t realize these birds can live 60-80 years, which is how many of them come to need a home. You’ll spot other birds in this installation as well, including two kookaburras named Bendigo and Adelaide, and an orinoco goose named Han Solo. Three dollars purchases either a cup of nectar for the lorikeets or a seed stick for the cockatiels. Be ready for that photo opp as the birds land on your hand, arm, or even your head! For fans of the feathered, it’s a special experience. „

Most kayak tours in Florida boast turtles and alligators, but the Brevard Zoo is the only place where you can kayak around zebras, giraffes, and a pair of senior siamangs (a species of ape) named Pete and Sapphire. Our tour guide, retired Navy volunteer Dusty Rhodes, leads us on a leisurely paddle down a narrow, quiet river. Volunteers are the lifeblood of the zoo and have helped from day-one construction all the way through to current day, where they can assist the staff in preparing food for animals, interacting with guests, and even working at the Zoo’s Sea Turtle Healing Center. Dusty points out lemurs and shows us where the rhinos are let out first every morning. He also introduces us from a distance to George the okapi, who is a bit of a celebrity here.

Two-year-old George joined the Brevard Zoo as part of the Species Survival Plan (SSP), which helps guide zoos in managing healthy animal populations. The Zoo recently launched Okapi Encounters, where guests can pet and feed George, though he always has the option to walk away. Alyssa Simon, a member of George’s care team, shares, “George is very personable and loves keeper attention. He can be a bit goofy, and he loves to run around the yard. He has been enjoying Okapi Encounters since they started and is often ready and waiting at the window, eager for snacks and guest interaction.” „

hile it does cost extra to purchase food for animal feedings, go kayaking or do an up-close animal encounter, there is plenty included with your admission ticket. Wander down tree-shaded pathways and boardwalks to experience Africa, the Rainforests of South America, Australia, and Wild Florida. Get flirted with by a stingray who’s hoping it’s feeding time (sorry, stingray, it wasn’t feeding time when I came to see you).

Sit in a rocking chair and watch Florida black bears Brody and Betty play-wrestle. Get a close-up look at a capybara (they look like oversized guinea pigs) and check out the “found family” of spider monkeys, including J, who joined the Zoo at just a few months old as an orphaned victim of wildlife trafficking. (Despite this sad start in life, J is a full member of the troop who uses his prehensile tail to rocket all over their habitats).

Some of my favorite moments were being eyed through the glass by Ophelia and Felix, the Zoo’s two otters, and stumbling upon a feeding of the poison dart frogs by a keeper. For families, be prepared for the splashpad and the playground to be a hit with the littles. There’s a Treetop Trek high ropes and zipline course that can be purchased as an add-on as well. „

At the Brevard Zoo, underpinning all of the fun animal experiences crafted for visitors is a profound commitment to conservation. According to senior communications manager, Lauren Delgado, “Our Zoo has strived to be a community resource and leader in local and global conservation initiatives. We like to say that our unofficial mission is ‘We Answer the Call’.”

The Zoo sponsors a Restore Our Shores program that engages local residents in replenishing healthy populations of oysters, clams, mangroves and seagrass in the Indian River Lagoon. They also fund conservation programs all around the world through the Quarters for Conservation program and Wildlife Emergency Fund. Their Sea Turtle Healing Center is not open to the public, but Lauren took me behind the scenes to meet sea turtle program manager, Shanon Gann.

All six species of sea turtles in the U.S. are protected under the Endangered Species Act. With two board-certified veterinarians, a CT scanner, pharmacy and surgical bay, the Sea Turtle Healing Center is prepared to care for sick and injured hatchlings as well as older turtles.

“Brevard has some of the most important nesting beaches,” Shanon explains as she places eye drops into the eyes of a loggerhead hatchling and gently replaces it on a towel. Many hatchlings end up here when their trek out to the sargassum weed line is disrupted by storms. “After hatching, they have a frenzy period of 72 hours from the stores in their yolk,” Shanon explains. After that, they may become exhausted. The hatchlings are rehabilitated and then transported as part of what rehabbers call “The Atlantic Baby Train” down to the West Palm/Ft. Lauderdale area, where the weedline is closer to shore. At that point, partner vessels or the Coast Guard conduct the release.

Shanon takes me out back to a canopied area to meet the older patients. In the first tank, Capocollo, a juvenile green turtle, swims after a leaf of lettuce. Flint, a smaller juvenile, has a small weight affixed to its carapace to help correct buoyancy issues. Both are recovering from pneumonia. In two other tanks, a big loggerhead named Mischief and a smaller turtle, Biscuit, recover from flipper amputations. While many injuries can be attributed to boats, the scars on Biscuit’s carapace point to a shark attack. Hopefully, all of these turtles will fully recover and be released back into the wild. You might even be able to attend one of their release events, which are open to the public—search for upcoming releases at brevardzoo.org. „

ocal entrepreneur Jon Spiegel has always been a creative thinker and go-getter. He believes in being hands-on and visible in his businesses, and that has translated into the passion he has put into his labor-of-love: decorating the downtown Sebring Circle each year for the Christmas season.

Thirty-seven years ago, Jon noticed that the holiday decorations lining the streets and Circle of downtown Sebring were lacking. Ever the thinker, Jon imagined creating something memorable, something that families would want to bring their children to enjoy, something that would turn into traditions for those families and for “kids of all ages.” He approached the City of Sebring with his designs in hand and was able to win the Circle-decorating contract. Little did he know that this would be the start of a huge undertaking, one that has grown larger and more popular with each passing year. „

ast forward to 2024, and Jon Spiegel is still hard at work with this love-labor along with his wife, Judy, who has been there from the beginning. Now, instead of taking a couple of people two-to-three days to set up the decorations on the Circle, a large group of six-to-seven helpers spends two-to-three weeks setting up. From the humble beginnings of a single animal puppet to the dozen assorted puppets who sing along to Christmas carols, and from the initial rudimentary setting for Santa to greet a few children to the elaborate Santa’s house that sometimes commands an hour-long wait, the Sebring Christmas Carousel of Lights has morphed into a much-anticipated annual event for thousands to enjoy.

Ever humble, Jon is quick to thank the City of Sebring for their endless support and cooperation whenever anything is needed in preparation for the yearly event. He credits a large portion of its success to two young men: Jeremy Daughtery and C.J. Wood, who, with much dedication, help Jon and Judy each year to assemble and place the thousands of parts that go into creating the beautiful Christmas scene on the Sebring Circle. Said Jon, “Jeremy has been there from nearly the beginning. C.J. has helped us for about six years. Jeremy was a 13-year old child who needed something to do. He would help set up and we paid him with popcorn! He considers us his parents, and we call him our son. He is now 41 years old and a successful business owner, and he and his crew of Lerma’s Landscaping still help set up. We met C.J. when he was volunteering at the Humane Society in Sebring, and that led to his involvement with decorating for Christmas. We are so grateful for both of them.” „

lways aiming to make the Sebring Christmas Carousel of Lights better each year, Jon recently introduced a snowfall area that has become a huge hit. During the 10-15 minutes each night that the snow is blowing, they don’t have any other activities occurring so that everyone can enjoy playing in the snow. There is a miniature golf game on the circle, and a Fishpond, as well as the carousel, and a “singing zoo” with 12 assorted animal puppets. Says Jon, “People notice when we add things. It’s nice to see so many enjoying our Circle on a busy Saturday as we get closer to Christmas.”

Asked how he comes up with his ideas for new decorations each year, Jon explains that he sometimes looks at cartoon books for inspiration, purposely seeking out characters that are not the Christmas norm, such as turtles, seahorses, alligators, or dolphins. A landscape company with welding talent brings his visions to life. Jon’s carousel of sea creatures is on full display each night during the November-December Sebring Christmas Carousel of Lights event.

Recalling some favorite memories of the endeavor, Jon says, “Several years ago, a gentleman came up to me and said, ‘I would like to propose to my girlfriend here.’ I arranged for the person who runs the animal puppet show to call out her name during the performance. She was surprised to hear her name, but then when her boyfriend got down on one knee to propose, she was stunned. They are still married and return for the event each year, and we reminisce about their proposal.” „

udy recalls a mentally challenged adult who visited the Sebring Christmas Carousel of Lights for at least 20 years. “He came with his mother, and he couldn’t wait to sit on Santa’s lap to tell him what he wanted for Christmas. It was obvious that it was the highlight of his day. We have children in wheelchairs who come to see Santa.

This event truly brings joy.” Adds Judy, “We’ve had some wonderful Santas over the years, and it really takes talent to be Santa, using psychology to turn a negative into a positive when a child makes a request that Santa knows isn’t possible to fulfill.’”

She notes that one of the most popular features at the event is getting a photo taken with Santa. Says Judy, “It’s a family tradition for hundreds and hundreds of families. Years ago, we began with a Polaroid camera, which popped the photo right out for a nice keepsake. Now, we have a printer, and the photo is inscribed with ‘Sebring Christmas Carousel of Lights’ right on it. They come here to get their family photos with Santa. Some bring their pets! We print their Christmas photo out for them while they wait, and for some of them, this will be their only family photo for the holiday.”

Jon shares her warmth for the event. “I feel that I’ve created a tradition with the Sebring Christmas Carousel of Lights. Knowing that I’ve created something that people come to enjoy year after year has a nice feel to it.”

has a story to tell. It’s a story of tragedy. It’s a story filled with pain. It’s the story of his darkest days and the light that pulled him through. Cody’s story is about overcoming in a big way. But it’s really a story about God’s unexpected goodness and the glorious weaving of a beautiful life from the tattered pieces of a very broken man. Sometimes, you must fall to rise… „

In 2016, Cody was solidly living the life of a guy in his mid-20’s. He had the roommates, the parties, the big adventure. He had just moved to California, fumbling and stumbling and occasionally stringing together good choices. Mostly, he was having a lot of fun. On June 8th, Cody woke up feeling better than his hungover roommates and headed out to explore the beauty of the California cliffs and coast. He decided to hike the Ho Chi Minh Trail in La Jolla, CA. Though the signs advised that this was a trail for the experienced hiker, Cody was an accomplished athlete, and he proceeded without a second thought. Hours later, his body was found in a crevice five stories below the trail.

Over two months later, Cody woke up across the country in Maryland, but it would still be months before he had the capacity to begin to understand what was happening. Discovered by a couple who happened to be hiking the same place that day, Cody was airlifted to the hospital in such bad shape that cerebral spinal fluid was leaking from his ears, and he was having active seizures. He was taken immediately into surgery to try to stop the three different types of bleeding on his brain. Four surgeries later, the top of his shattered skull had been removed and placed in a cooler in hopes that would allow room for the swelling. He had broken his nose and eye sockets and every single rib, except one. His left ulna was completely shattered, both lungs had collapsed, his right femur was dislocated out of the hip socket, and his lumbar vertebrae had sustained notable damage. Cody’s body was very, very broken, but his will was not shattered.

The doctors kept Cody in a coma hooked up to an IV of fentanyl. The pain alone would have been enough to make a man wish he were dead. While his damaged brain and body rested and healed, Cody’s stubborn, indomitable will burned in his heart. In the Maryland rehab facility, a friend or family member had to be with Cody at all times. He would cry and scream out and throw his body from the bed. The truly hard part was just beginning.

Traumatic Brain Injury occurs when an outside physical assault damages the brain. Cody’s brain had more damaged areas than normal areas. He had to relearn how to eat, talk, walk, and utilize his fine motor skills. Paralysis on the left side of his body (the brain injury is most prevalent on the right side) has further complicated his ongoing recovery. After moving to Florida with his parents in 2019, an intensive eight months of daily hyperbaric oxygen treatments and hours of rehab at AVIV Clinic in The Villages gave Cody a much-needed boost in progress. „

Perhaps the most important boost, though, came in 2020 when Cody met Livia Alves Da Silva on Tinder. As Cody was still in speech therapy, texting was the easiest way to communicate, but the two immediately felt a connection. Livia had come to Florida from Brazil on a temporary visa and certainly didn’t expect to find a husband. But by February of 2021, the two were married and starting out on a path that looked a little different than most newlyweds’. Livia is Cody’s biggest cheerleader, constantly researching ways to help him continue to improve. And he is still improving! Most importantly, Livia brought a deep love for God and a faithful practice of prayer into Cody’s life. Livia and Cody moved to Lakeland in January 2024 and are expecting a baby girl in February 2025. „

Cody started recording his story with talkto-text two years after the accident. Today, you can find his completed book, “5 Stories Down,” on Amazon. He has been invited as a keynote speaker in the spring of 2025 to the annual conference of The Brain Injury Association of Maryland (BIAMD), and he works daily to continue to regain strength and mobility in anticipation of being the coolest dad ever. Even before Cody had a deep faith and active relationship with God, he always liked the verses Jeremiah 29:11-13: “For I know the plans I have for you,” declares the Lord, “plans to prosper you and not to harm you, plans to give you a hope and a future. Then you will call on me and come and pray to me, and I will listen to you. You will seek me and find me when you seek me with all your heart.”

Cody knew these verses, but he had to live them to fully understand them. The journey from his brokenness did not leave Cody in despair, though he certainly had those moments. Instead, it focused his attention on the amazing glory of a life well-lived. Cody knows better than most that life has no guarantees and that hope is a strong anchor for the soul.

An Afternoon Tea at Bare Wood Market

Scones, tea sandwiches, lemon bars and snow monkey plum tea were some of the delicious treats headlining Bare Wood Market’s “September to Remember,” an Afternoon Tea on September 28. One of my vendors owned a tea room in West Palm Beach for 23 years. Following her lead, we pursued, and the rest is history. Yes, it was a lot of work. Yes, we had many brainstorming sessions. Yes, we were careful to try and make it somewhat easy on ourselves. And, yes, it was an incredibly successful day!

Prior to the doors opening, two high school students played music as the ladies waited to enter. When they entered, the ladies were directed to their assigned seats. Some people knew each other and for others, new friends were made. Fascinator hats were passed out for those who wanted to wear one. (Everyone took a hat except the Red Hat Ladies. They came prepared, of course!) Then, tea was brought to the tables.

Vintage glass and china luncheon plates adorned the tables along with vintage tablecloths and silverware. Two small gifts for each guest were at each place setting. One gift was a special ‘welcome’ card made by local artist Mary Seigfreid. The second gift was soap - made by my vendor Donna Bondi, owner of Savvy Owl Soap Shoppe - that looked and smelled like chocolate in the shape of a heart truffle, which sat in a lovely lace cup.

Kay and Amy volunteered to serve our guests at the Afternoon Tea. Both are board members of Women In Action, a local organization started by Ameilia Duran, which helps empower women. Thank you, Kay and Amy, we really appreciated your help!

It was an awesome, relaxing time with new friends, good food, enjoying each other and making memories. A big thank you to all our guests. I know they had a great time. And to all those who prepared food, set-up and took photos, it was a success because of you. And yes, we’re planning another one. We hope to see you again!

ON THE FIRST DAY OF CHRISTMAS MY TRUE LOVE GAVE TO ME... A PARTRIDGE IN A PEAR TREE

It resurfaces every holiday season, along with gingerbread cookies and mistletoe. The classic carol, the "12 Days of Christmas” is a Yuletide tradition every bit as reliable and beloved as trimming the Christmas tree. Who can’t recall at least a few of the strange and downright silly-sounding gifts mentioned in the lyrics, which range from a partridge in a pear tree all the way up to 12 drummers drumming? After all, the Christmas song is not only a standard of carolers from coast to coast, but it’s the type of catchy little tune that stubbornly lodges itself in your head, too, playing on repeat as you prepare for Christmas.

But what is the meaning of the "12 Days of Christmas"? Or the origins of this somewhat odd, if extremely catchy, Christmas song? The lyrics have an old-fashioned sound to them, with all the maids a-milking and lords a-leaping, indicating they were probably written long ago.

WHAT ARE THE 12 DAYS OF CHRISTMAS?

There actually are 12 days of Christmas in Western Christianity, but they begin on Christmas Day, not before, and ends on January 6, which

WHEN WAS THE "12 DAYS OF CHRISTMAS" WRITTEN ?

There’s a reason the lyrics sound a bit dated—it's because they are. The earliest known written version of the "12 Days of Christmas,” which was printed without accompanying music, goes back to 1780 and the English children’s book Mirth With-out Mischief. However, many scholars believe the poem was French in origin and started out as a game to test memory that revelers played at Twelfth Night parties. If you forgot the words, you’d have to give your opponent a kiss or grant them a favor.

This cumulative verse poem—defined as a poem “where each patterned verse contributes to a longer narrative”—shifted and changed over the centuries. The "12 Days of Christmas” at one time contained lines referring to “bears a-baiting,” “badgers baiting,” “ships a-sailing,” and a “very pretty peacock upon a pear tree.” One version listed “four colly birds.” In Old English, colly meant “black as coal,” so the gift was four blackbirds. It wasn't until English composer Frederic Austin added music in 1909 that "colly" turned into "calling" and the "five golden rings" were emphasized, creating the carol we know and love today.

IS THERE A SECRET CODE IN THE "12 DAYS OF CHRISTMAS" LYRICS?

Sometime in the 1990s, a rumor spread that the "12 Days of Christmas” contained a secret code hidden within the lyrics. According to this theory (which could explain the peculiar gifts listed in the song), after the Reformation in England, persecuted Catholics taught their children the catechism using the poem’s imagery as symbols relevant to their faith. The partridge in a pear tree is said to represent Jesus; the two turtle doves are supposedly The Old and New Testaments; the three French hens are purportedly Faith, Hope, and Charity, the theological virtues, and so on.

Rumors spread that it was a coded guide for Catholics who had to study their faith in secret in 16th-century England when Catholicism was against the law. According to the Christian Resource Institute, the legend is that "the 'true love' mentioned in the song is not an earthly suitor, but refers to God Himself. The 'me' who receives the presents refers to every baptized person who is part of the Christian Faith. Each of the 'days' represents some aspect of the Christian Faith that was important for children to learn."

There is pretty much no historical evidence pointing to the song's secret history, although the arguments for the legend are compelling. In all likelihood, the song's "code" was invented retroactively.

Hidden meaning or not, one thing is definitely certain: You have "The Twelve Days of Christmas" stuck in your head right now.

INGREDIENTS

8 ounces brie

8 ounces gouda

6 ounces smoked provolone wrapped with Prosciutto

6 ounces goat cheese

1 package of sorted crackers

1 cup green and red grapes

½ cup pomegranate arils

½ cup pistachios

4 sprigs rosemary

INSTRUCTIONS

Arrange cheeses, crackers, grapes, pomegranate, pistachios on platter or wooden cheese board. Garnish with rosemary, if desired.

INGREDIENTS

20 grape tomatoes

10 ounces mozzarella cheese, cubed

2 tablespoons extra virgin olive oil

2 tablespoons fresh basil leaves, chopped

1 pinch salt

1 pinch ground black pepper

20 toothpicks

2-4 Tbs. balsamic glaze

INSTRUCTIONS

1. Gather all ingredients

2. Toss tomatoes, mozzarella cheese, olive oil, basil, salt and pepper together in a bowl until well coated.

3. Skewer one tomato and one piece of mozzarella cheese on each toothpick.

4. If serving immediately, drizzle with balsamic glaze. If serving later, refrigerate until serving and drizzle with glaze just before serving.

This is the BEST chicken salad recipe. It could not be easier or more delicious. With chicken, cranberries, grapes and pecans, it’s full of wonderful flavors and textures.

INGREDIENTS

3/4 cup mayonnaise

1 teaspoon Dijon mustard

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

1/4 teaspoon kosher salt

1/4 teaspoon pepper

4 cups (about 2 pounds) cooked, chopped chicken breast

3/4 cup small green or red grapes

1/3 cup dried cranberries

1/4 cup chopped pecans

INSTRUCTIONS

1. In a large bowl, whisk together the mayo, mustard, onion and garlic powder, salt and pepper. Taste and adjust seasoning, if necessary.

2. Make sure your chicken is completely cool. Chop it up and add it to the bowl.

3. Gently fold in the grapes, cranberries and pecans.

4. Eat as is or place on sliced croissant rolls. „

A classic party favorite, this appetizer cheese ball is decked out in the most delicious coating of chopped dried cranberries and pecans. This is an easy make-ahead hors d’oeuvre that’s sure to please a crowd!

INGREDIENTS

16 ounces cream cheese, softened to room temperature

1 and 3/4 cups shredded sharp white cheddar cheese

2 Tablespoons chopped fresh chives, divided

2 teaspoons chopped fresh parsley

1 teaspoon light or dark brown sugar

1 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

3/4 cup finely chopped dried cranberries

3/4 cup finely chopped pecans

INSTRUCTIONS

1. Using a stand mixer fitted with a paddle or whisk attachment, beat the softened cream cheese on medium-high speed until the mixture is smooth and creamy, about 2 minutes

2. Add the shredded cheese, 1 Tablespoon chopped chives, chopped parsley, brown sugar, garlic powder, salt, pepper, half of the chopped dried cranberries, and half of the chopped pecans and beat/stir until combined. Using a silicone spatula, scrape down the sides of the bowl and bring the mixture together, forming it into a ball as best you can. You can use your hands for this as needed.

3. Make the coating: In a small bowl, stir together the remaining chopped chives, dried cranberries, and chopped pecans. Sprinkle the coating onto a large plate, and roll the cheese ball into the mixture to evenly coat.

4. Wrap the cheese ball tightly in plastic wrap and refrigerate for at least 1 hour.

5. To serve, let the cheese ball sit out at room temperature for 20–30 minutes to slightly soften up. Unwrap the cheese ball and place it on a plate or platter surrounded by crackers, along with a knife to spread.

INGREDIENTS

The best spiced Christmas cocktail with cranberries, apples, oranges, cinnamon and cloves. You can also make it ahead of time if needed.

3 cups cranberry apple juice cocktail, divided

¼ cup sugar

2 oranges, thinly sliced

½ cup halved fresh cranberries

2 5-inch sprigs fresh rosemary

INSTRUCTIONS

2 3-inch cinnamon sticks

3 star anise pods

8 whole cloves

2 cups sliced small apples

1 750-mml bottle pinot grigio, chilled

1. Combine 2 cups cranberry apple juice and sugar in a medium saucepan over medium heat, stirring until the sugar has dissolved, about 4 minutes. Remove from heat.

2. Stir in oranges, cranberries, rosemary, cinnamon sticks, star anise and cloves. Let stand 30 minutes; remove and discard rosemary and cloves.

3. In a large pitcher, whisk together orange mixture, apples and remaining 1 cup cranberry apple juice.

4. Let chill in refrigerator for at least 4 hours.

5. Serve over ice with pinot grigio.
