2015 Winner Brooke Homann took home the crown during the 2015 Coles County Fair Pageant. Homann, a 2013 Charleston High School graduate, attends Southern Illinois University with a major in physiology and a minor in psychology. She would like to be a physician's assistant in pediatric cardiology, according to her bio, which was read during the pageant. She's also a St. Louis Cardinals fan, an announcement that was met with cheers from the audience her crowning night. Homann succeeds 2014’s winner, Lacey Jo Solomon. Her court includes first runner-up Haiven Bowersock and second runner-up Victoria Drake. Contestant Shelby Linder won Miss Congeniality. Also, Karson Spencer was crowned 2015 Little Miss Coles County.

During this time of year, empty fields and parking lots are transformed into entertainment wonders featuring rides, foods and plenty of games of chance. Carnival games are a fun diversion. Thousands and thousands of fairgoers test their luck at these games when carnivals roll into town. Games often seem as though they are stacked in the house’s favor, but games are not impossible to win. A few pointers can increase any player’s chances of winning. • Ring toss: The object of this game is to

Otherwise, aim for the top of the square on the backboard so that the ball will bank right into the net. • Whack-a-mole: This game is fun because a player can go after whichever critter pops out of the hole. A key advantage to this game is never to raise the mallet higher than the height of the mole. This ensures a faster swing and a quicker resetting to hit the next mole that pops up. • Balloons and darts: To counteract potentially dull darts, look for the shiniest, thinnest balloons. Those are the ones that are inflated the most. This will increase your chances of
popping a balloon. Frog toss: Young children are drawn to this game because they get to launch a rubber frog into the air and throw it toward a lily pad. The chance of getting wet combined with pounding a mallet can make this game quite attractive. To improve your odds of winning, make the frog as small as possible by folding its legs underneath the body. Aim high so that the frog is launched in a high arc and has a better chance of landing in that lily pad cup. Carnival games can be entertaining. One-hundred fifty three years...
. . .and still going strong! Since 1854 the Coles County Fair has been held—making it the oldest continuing county fair in the state. However, Coles County has been interested in agricultural fairs since 1841. An association entitled the Coles County Agricultural Society was formed in Charleston on May 24, 1841. The Society held three successive fairs given on October 1, 1841, October 1, 1842 and September 27, 1843. Each fair lasted one day and, as there were no grounds belonging to the association, they were held on the town commons located in the northwest part of Charleston in what was then called “The Woods.” In 1856 the directors of the Coles County Agricultural Society were able to secure about seven acres of elevated land about a mile west from the city of Charleston. They paid a hundred dollars down on it, built a fence around it, dug and curbed a well, and made a list of premiums for the next fair to be held September 24 and 25, 1856.
There’s a great deal of history behind the fair. It was the site of the fourth of the seven Lincoln-Douglas debates on September 18, 1858 where an estimated crowd of between ten and twelve thousand was in attendance. The grounds were described by many to be the most beautiful fairgrounds in the state. William Jennings Bryan’s colorful speeches were once part of the Chautauquas held on the grounds and traces still can be found of the sidewalk to the tabernacle where evangelist Billy Sunday once
preached. In the early 1900’s the race track was lengthened, repaired, and practically rebuilt by bringing in three hundred loads of dirt. There were horse races, mule races, bicycle races, dog races and a “fire truck” race. A part of the Charleston Fire Department before 1900 consisted of barrels pushed on carts by men. These made an amusing race when run on the race track and viewed by the many visitors. In the center of the race track was a beautiful bandstand with spiral steps leading up.
The Coles County Fair suffered a great disaster Saturday afternoon, May 26, 1917 when a terrific tornado demolished the grounds, with the exception of a portion of one stable. Another disaster, a fire on December 1, 1973, killed 57 race horses. The grounds have continued to change and expand through the years and more buildings have been added and updated. People continue to come to the fair to have a good time—to be entertained by grandstand shows, horse races, 4-H exhibits, tractor pulls,
carnivals rides, fabulous fair food and just to see their friends and neighbors. 12 6-inch wooden skewers For the tomato sauce: 3 pounds assorted large heirloom tomatoes 1 small sweet onion, minced 1 garlic clove, minced 1/2 teaspoon sea salt 1/4 teaspoon freshly ground black pepper 1 tablespoon honey, preferably sourwood honey 1/4 cup fresh basil leaves, cut into thin strips (chiffonade is the formal name for this cut), plus more for garnish Sea salt Freshly ground black pepper 1. To marinate the shrimp, combine the olive oil, red wine vinegar and garlic in a large bowl. Stir to combine. Add the shrimp and allow to sit, covered, for 1 hour. Stir

To make the tomato sauce, bring a medium pot of water to a boil. Place one or two tomatoes at a time into the boiling water. Watch them and, as you see the skin split, remove with a slotted spoon and place in a

bowl of cool water. At this point, it will be very easy to slip off the skins. 4. Cut the peeled tomatoes into a small dice. Put the cut tomatoes into a large bowl. Add the onion, garlic, salt, pepper, and honey. Stir gently to combine. 5. Skewer the shrimp, 3 per skewer. Grill the skewered shrimp for 1 to 2 minutes on each side, until they are pink. Sprinkle lightly with sea salt and a couple grinds of fresh pepper. 6. Just before serving, add the basil leaves to the tomato sauce. Taste and add more salt if necessary. 7. Ladle the tomato sauce onto a serving platter and arrange the skewers on top of the sauce. Garnish with more basil leaves and enjoy!

Light and savory sandwich for summertime meals Many people prefer smaller portions during the warm weather, choosing food that will not sit heavily in the stomach. As a result, finger foods, salads and vegetables are especially popular in the summertime. Roasted or grilled vegetables can be delicious and filling. Whether served over rice or the “meat” of a sandwich, vegetables like mushrooms, zucchini and eggplant make versatile additions to any recipe. This summer, add more versatile veggies to your diet with the following recipe for “Roasted Vegetable Focaccia Sandwich” from “The Pampered Chef Stoneware Inspirations” (The Pampered Chef(R), Ltd). Roasted Vegetable Focaccia Sandwich 1 medium eggplant 1 large zucchini 1 tablespoon olive oil
until vegetables are tender and deep golden brown. Remove from oven to a cooling rack. 3. Meanwhile, cut mozzarella and tomato into 1/4-inch-thick slices. Cut bread in half horizontally. Spread mayonnaise on cut surfaces.
4. To assemble sandwich, arrange basil leaves, vegetables, tomato slices and mozzarella slices over bottom half of bread. Top with top half of bread. Cut into slices and serve six. Enjoy on a picnic or on the patio.
