These properties, along with its cooling, soothing, antiseptic effects, make it a good ingredient in blends for cystitis and urinary tract infections.

Demulcent: Plantain’s combination of toning tannins and soothing demulcent properties makes it a good remedy both internally and externally for any sore or irritated condition.

Healthy Herb Summer Salad

2 ears corn, husked and cooked 12 lettuce leaves 2 limes, juiced 1 bunch scallions, trimmed and thinly slices 1/2 bunch cilantro, chopped 1/2 onion, finely chopped 1/2 cup chopped flat leaf parsley 1/2 cup feta cheese 2 tablespoons extra virgin olive oil Freshly ground pepper

In a medium bowl, mix together scallions, cilantro, parsley, lime juice and olive oil.

Strip the corn from the cob carefully using a sharp knife and add the kernels to the herb mixture.

Stir until all ingredients are well-combined. Divide the mixture into 12 and scoop into lettuce leaves. Top with feta cheese and season with ground pepper.

Herbal Drinks

Cool off with herbal drinks. Make an herbal infusion with 2-4 Tbsps fresh herbs such as mint, lemon balm, lavender and chamomile. Boil a cup of water in a pot, add the herbs, then turn off the heat and allow to infuse for 30 minutes.

Strain and storein fiidge. Drink as is on hot summer days or make a smoothie with your favorite milk or nut milk with ice. Ahhh!
