Showcase beautiful rockmelon, cherries, mango, pomegranate and juicy stone fruit in a simple fruit salad or as the jewels in the crown of a crowd-pleasing dessert. Asparagus, radishes, tomatoes, heirloom carrots, zucchini and zucchini flowers are all perfect at this time of year too – but the list is practically endless!

No pressure, but right now you’re working towards what’s probably the most important meal of the year! Whether you opt for traditional turkey, glazed ham, free-range roast chicken, a vegetarian feast or oysters followed by a sumptuous seafood platter, salads and something for the barbecue, Christmas is all about the main event, so make sure you plan a showstopping centrepiece.

PAVLOVA WITH FIGS & POMEGRANATE Prep + cook time 2 hours (+ cooling). Serves 8 to 10 1 Preheat oven to 120°C/250°F. Mark a 16cm x 32cm rectangle, or two 21cm diameter circles, on baking paper. Place paper, marked-side down, on a lightly greased large oven tray. 2 Beat egg whites and cream of tartar in a medium bowl with an electric mixer until soft peaks form. Gradually add sugar, beating until sugar dissolves between additions. Quickly fold in sifted cornflour, vinegar and vanilla extract. 3 Spread meringue mixture inside the marked shape on baking paper, building

up at the sides. Smooth top and sides of pavlova. Bake for 90 minutes or until dry to touch. Turn the oven off, leaving meringue inside to cool with the door ajar. 4 Remove seeds from pomegranate and set aside. Whisk cream until soft peaks form. 5 Just before serving, spoon cream on pavlova, top with figs, raspberries and pomegranate seeds.
