Twenty years ago, we started Heritage Foods to expand the most important livestock and poultry operations in the United States. The legendary non-profit Slow Food, which was founded when the first McDonalds opened on the Spanish Steps of Rome and grew to include an Ark Project to save endangered foods from extinction, introduced us to the last remaining American farms raising rare and heritage breeds.
Moving from a non-profit to a for-profit was like going from the Scouts to the Marines, but thanks to our mentors like Carlo Petrini, Alice Waters, and Winona LaDuke, we had grand ideals to guide us. We thought outside the box and were not conditioned by precedent; when presented with multiple-options for optimizing efficiency and growth we often responded the way our advisors taught us to, with the answer “none of the above.”
To this day we are called crazy by our peers. We pay our farms about twice as much as the market rate and we operate exclusively on handshake agreements with our partners, which means more to us than any lawyerly contract — as Bob Dylan once wrote “to live outside the law, you must be honest.”
We never buy a pound of meat from outside our network who raise exclusively 100% heritage breed animals just for us. Even our bacon, salami, and prosciutto come from product we send to great curemasters and then buy back when it’s ready.
We commit to purchasing the whole flock and the whole herd from every farm we work with. Covid added extra pressure to our mission considering how far in advance farmers operate: turkeys start hatching in February for the Thanksgiving harvest and sows gestate for exactly three months, three weeks, and three days.
Heritage Foods is a nose-to-tail operation. A turkey that cannot be sold whole for Thanksgiving is cut into parts. Our 200 weekly pigs each consist of over 20 cuts that must be sold through our retail and wholesale outlets. The same goes for our seasonal lamb and goat projects. Our Wagyu beef program is a single origin operation and we only purchase one variety from the family of farms that first brought the Akaushi breed from Japan. All the meat we sell is grown on pasture and antibiotic free.
Our Berkshire farmer, David Newman, was once one of 19,000 hog farms in the counties of Oregon and Howell, Missouri — today he is the only one left. Our work is important. Besides the farms, breeds like the Red Wattle pig, Standard Bronze turkey, and Tunis lamb might go extinct if not for your purchases. Genetic diversity in our food supply is one of the most important issues of our time, but the good news is that fighting for it is steeped in pleasure as heritage breeds are truly the most delicious.
Our goal at Heritage Foods is to last forever. We would be nowhere if not for chefs and gastronomes who recognize that eating meat is a luxury in this day and age, so when we eat it, it should be consistently the best. We thank you and look forward to the next 20 years.

There is a long history to the Akaushi breed which originated in Japan and is now raised in Texas. Akaushi was originally free ranged on Mount Aso, the largest active volcano in Japan, which stands in Aso Kuju National Park in Kumamoto Prefecture on the island of Kyushu.

Akaushi beef is near and dear to us because the taste is so consistently juicy and delicious. We are proud to feature the Akaushi in its pure form, and crossed with one of America’s best lines of Angus. The pure Akaushi is buttery and tender while the Wagyu with Angus is more toothsome and sturdy — both demonstrate the delicious flavor inherent in Akaushi beef, considered one of the most marbled breeds in the world.
