Slated to open in 2021, the announcement comes as the Accor Group aims to strengthen its presence in the luxury segment in South Korea. Understand the cost of your booking channels to maximise revenues Written by: Stephen Hambleton, IDeaS senior product manager Today, more than ever, Indonesian hoteliers need to understand that often a direct booking is the best kind of booking. However, while encouraging guests to book direct can help hotels bypass third-party commissions and fees, there are still many hotels that rely on the distribution and marketing reach of online travel agencies (OTAs). Given the rising costs of distribution, it is critical to weigh the value of each booking channel. Hoteliers now need to ask themselves what is the actual cost of acquiring reservations through a booking channel and how much of that demand is needed. Understand your reservation acquisition costs To date, hoteliers have generally drawn on the vast amount of data stored in their reservation and distribution systems to optimise revenues. However, this focus is changing as reservation acquisition costs have increased and hotels have seen demand shift to higher cost channels with more pressure on bottom-line performance. Understanding costs by channel—and evaluating which channels deliver the greatest returns for a hotel—can be a significant challenge, unless a property’s revenue management team has a common definition on the coding structure and a means to calculate cost of acquisition.

Hoteliers are increasingly focused on collecting data to understand the impact of acquisition costs. Identifying the true value of acquisition costs can facilitate short-term booking decisions and longer-ter m channel-value - centr ic decisions when contracting with distribution channel partners. There are a multitude of ways hoteliers can determine the cost structure of a booking channel, including incorporating infrastructure and labour costs, like data servers, salespeople. For revenue management purposes though, it’s more appropriate to keep it simple and consider the cost of acquiring one additional booking through a channel. This will make it easier to compare costs on a channel-by-channel basis and build a foundation for optimisation—i.e., how hoteliers decide if they need one more reservation from that channel, or if they have demand from lower-cost channels. Knowledge is power in contract negotiations A hotel that knows the cost of its booking channels has greater power when it comes to contract negotiations with booking partners. This includes deciding how to agree to a fair commission percentage, or which rate and availability parity clauses to agree upon (and how a hotel is penalised for authorised breaking of said clauses within a contract). The alignment of these clauses across partners are important prerequisites as a hotel puts sophisticated profit optimisation strategies in place (e.g., if a hotel closes or restricts bookings in one channel, must it do the same in all channels?). The current value of these ac tivities and the partner overall can be hard to evaluate, and the impacts are difficult to predict unless contractually committed. It is especially impor tant as revenue management and marketing are typically a short-term centric discipline, with short-term promotions or pricing practices to drive demand across optimised occupancy dates.
Trends or impacts of these distribution practices will play a key role in longer-term performance and should be evaluated as such. Strategies for reducing acquisition costs I ndonesian Hoteliers look ing to reduce their booking acquisitions costs should review their third-party contractual commitments to availability and rate parity and investigate introducing more flexibility into those commitments. These changes typically take time to go into effect and have a significant bearing on how hotels can enact longer term channel optimisation. Through capturing their channel costs by looking at each booking endpoint in their distribution ecosystem—from direct online bookings through each GDS, OTA and group booking partner, hoteliers can effec tively review and analyse their acquisition outlay. As a hotel considers each booking endpoint, it is important to define what the cost of taking each additional booking is. Once a hotel has a clean data set from which it can isolate its channel costs, revenue managers can make the decision to take more or less of the available demand through various channels on the basis of the cost to take one additional reservation through that channel. That’s how Indonesian hotels will improve profit performance: by controlling costs on a channel-by-channel basis. The distribution landscape is changing—ensure you get the most out of it As hoteliers become savvier around the need to measure the costs associated with each channel and booking acquisitions generally, meaningful negotiations will occur between hotel brands and OTAs that help secure guests. It is those hoteliers who understand the cost versus value each booking partner delivers that will be best placed to hold effective negotiations and establish mutually beneficial business relationships.

Metropole Hanoi Debuts Michelin-Star Lineup for 2nd ‘Culinary Stars’ Week

ANOI, Vietnam (Aug. 19, 2019) - Leading culinary stars from around the world, boasting a total of 8 Michelin stars among them, will join the second edition of “Metropole Culinary Stars” from Oct. 6-13 at Sofitel Legend Metropole Hanoi.
The eight-day culinary extravaganza, which follows last year’s highly successful inaugural event, will feature 18 internationally renowned chefs who will collaborate on a series of extraordinary and memorable meals at the Metropole Hanoi. Michelin-starred chefs participating in this year’s event include: Jacques Pourcel (3-Michelin-star chef at Le Jardin des Sens in Montpellier, France), David Rathgeber (the chef-owner of Michelin-starred L’Assiette, one of Paris’ most sought-after bistros), Hervé Rodriguez (chef-owner of Michelin-starred MaSa restaurant in Paris), Jean-Baptiste Natali (youngest chef in France to earn a Michelin star when he was awarded one in 2002 at age 27), Raoul Meuwese (Chef de Cuisine of Michelin-starred Bridges at Sofitel Legend The Grand Amsterdam) and Michael Dyllong (head chef of Michelin-starred Palmgarden in Dortmund, Germany). Mr. Ho’s accomplishments expand far beyond his professional endeavors in the hospitality world. He is the founding and current Chairman of the Board of Trustees of Singapore Management University, Chairman of The Singapore Summit and a non-executive Director of Diageo, the UK-listed spirits company. Educated in Tunghai University, Taiwan; Stanford University, California and the University of Singapore, he was the Economics Editor of the Far Eastern Economic Review in Hong Kong before joining the Thai Wah family business and then starting his own companies. Among various awards, Mr. Ho has received the London Business School Entrepreneurship Award; CEO of the Year at the Singapore Corporate Awards; CNBC Travel Business Leader Award; Distinguished Alumnus Award from the National University of Singapore; as well as several achievement awards from conferences.
For his services to the country he has been decorated with the Meritorious Service Medal and the Distinguished Service Order by the Singapore Government. Mr. Ho has also been conferred honorary doctorates by Johnson & Wales University and from Hong Kong Poly University. He is the author of two books: “Asking Why” reflects his journey in journalism and entrepreneurship over a period of forty years, and includes articles commissioned by The Straits Times; while “The Ocean in a Drop: Singapore in the next Fifty Years” is a compilation of public lectures he gave as the Inaugural Fellow of the SR Nathan Lecture Series, named after the Sixth President of Singapore.

INDONESIAN HERITAGE ART They include: Chicken Pair Located at the entrance to the Artisian Bar, this antique art piece featuring a pair of chickens hails from the island of Madura, which lies just north of Surabaya. The piece was once part of the decoration on the back of a ship and dates back to the 19th century. In Maduranese culture, the chicken is a symbol of diligence, hard work and persistence. Toraja House Art This large, wooden, triangleshaped structure is a distinctive frontage feature of a traditional Toraja house. Toraja is an ethnic group from the Tana Toraja Regency, commonly referred to as ‘Tator’ or ‘Land of the Toraja’, a tribal highland in South Sulawesi, situated 315 km north of Makkasar. The Octopus and Ferns This intricate wood carving of octopus and ferns symbolizes an intertwined relationship and its harmony. Originating from the Dayak tribe in Kalimantan, this piece actually formed part of a ship dock gate back in the 19th century. Ceremonial Shields The four ceremonial shields that adorn one wall come from a collection of hundreds of traditional ceremonial shields from Cirebon, West Java. Their design is influenced by Indochine colours and patterns. The rest of the collection is owned by art museums and art collectors. Pastry chefs and enthusiasts – heads up as a new competition is coming to town. Open to competitors under 21 years of age, the Asian Junior Pastry Cup is designed to provide a solid training ground for the younger generation of pastry chefs in Asia. The top three teams from the Asian Junior Pastry Cup will compete in the World Junior Pastry Championship 2021 held in Rimini, Italy.
At the same venue from 31 March-3 April 2020, industry professionals, including distributors, importers, manufacturers and retailers from Asia will get to see and source from some of the world’s finest display of food ingredients, drinks and fresh produce from global top manufacturers and brands – at FHA-Food & Beverage. High octane competitions are held across FHA-HoReCa and FHA-Food & Beverage, providing not just professionals and budding apprentices a conducive stage to learn, gain exposure and recognition for their craft and profession, but also to offer attendees an incredible, all-rounded experience at the events. FHA Culinary Challenge The FCC, since its introduction as Salon Culinaire in 1978, is Asia’s most prestigious international culinary competition, supported by the World Association of Chefs’ Societies (WACS), Singapore Chefs’ Association and regional chef associations.

Hailed as the biggest pastry competition in Asia, the Asian Pastry Cup is the official selection platform where top three Asian teams will compete at the World Pastry Cup in Lyon, France. Held in tandem with the Asian Pastry Cup is the C3 (Chocolate Chef Competition) and the Global Star Chefs Pastry Show. Returning for its second edition, the Asian Gelato Cup, supported by the Singapore Pastry Alliance, Gelato e Cultura S.r.l. and Italian Exhibition Group Expo S.p.a, will see up to eight national teams competing to create the best gelato, plated dessert, gelato cake and an artistic showpiece. The top three teams will compete in the Coppa del Mondo della Gelateria (Gelato World Cup) in 2022 in Rimini, Italy. Teams for Asian Junior Pastry Cup, Asian Pastry Cup and Asian Gelato Cup will be pre-selected in national competitions to represent their country/region in the Asian leagues.

Wine lovers rejoice, Seminyak Wine Carnival lands this September Hosted at VIN+ the day event is a celebration of the island’s best food and drink.

ali-based food and wine lovers best grab their diaries, for a special new event is on the horizon set to celebrate the best of the island’s drinking and dining scene. Taking place on September 7 is Seminyak Wine Carnival, hosted by wine specialist VIN+ at its central outpost in the middle of town from 1.00pm. More than 1500 guests can expect a day of tasting, learning, buying and celebrating with some of the island’s top foodie talent. Some of Bali’s best restaurants will be present (Ubud’s famed Locavore included), who will be treating guests to their adored dishes, all to be partnered with sample wines from around the globe. Of course, it’s not just eating and drinking (though there’s plenty of that to be done); live music will arrive once the sun sets at 7.00pm, with food stands to continue until 9.00pm. Throughout the day masterclasses will take place on the main stage alongside demonstrations. TV presenter and certified plant-based holistic chef Sophie Navita will be leading these proceedings, which will see winemakers, chefs, and mixologists alike impart their knowledge to the crowd.

Five Designer Hotel Pieces You’ll Want for Your Home

he palatial Saigon Suite of Ho Chi Minh City’s most grandiose hotel, The Reverie Saigon, embodies the property’s over-the-top appeal. Two of Italy’s leading design houses – Cassina and Poltrona Frau — collaborated on the décor, sparing no expense. The resulting interior of the USD 12,000 per night suite is a treasure trove of luxury items that you’ll crave for your own abode. The suite’s Veliero (Italian for sailing vessel) bookcase consists of 1,800 pieces. Its design is so intricate that the hotel flew in a Cassina craftsman from Italy to ensure that it was installed properly. Poltrona Frau’s plush leather Chester One Sofa was designed in 1912 by Renzo Frau. The back and armrests of the comfy perch are filled with vegetable horsehair which is hand-modelled. An Isidoro vintage-style travelling liquor cabinet by JeanMarie Massaud for Poltrona Frau, takes center stage in the parlour. The repurposed aesthetics of a classic leather trunk to a mini-bar is a feat of imagination that one might expect from the design house that supplies leather seats for Maserati and Ferrari. A deep crimson Juliet armchair designed by Benjamin Hubert was the winner of a design competition to mark Poltrona Frau’s 100-year anniversary. It is crafted of solid beech and birch plywood, padded in polyurethane foam and polyester wadding, upholstered in Pelle Frau leather, and embellished by crimp stitching.

A
rtists like to exhibit their work in 5-star hotels - they’re usually spacious and well-lit, host an affluent clientele, and are experts at catering to the public. Hotel owners also like to invest in artwork, and their lobby displays can constitute an eye-catching and intriguing welcome for guests the moment they step through the doors. Here are a few luxury hotels -- in the Far East and Middle East -- that create a visual feast for their guests: Al Bait Sharjah. Plenty of hotels have museumworthy exhibits and some are so enamored of their heritage, they liken the entire premises to a museum. But the Al Bait has actually opened its own, purpose-built museum. In two generous galleries, the museum tells the story of Ibrahim Bin Mohammed Al Midfa, who lived in one of the four old homes that form the foundation of the new resort. Images picture Al Midfa and his family and tell how they accrued wealth from the pearl trade and rose to prominence in the government. Glass display cases exhibit artifacts from his life, from a replica of the dagger he wore at ceremonies to the pens he used to compose poetry to books from his library. Another exhibit memorialises the location of the post office that stood on this site. In another room, the door to Al Midfa’s original home stands against a far wall, no longer providing egress to any actual place but to an imagination of the past. Chedi Club Tanah Gajah Ubud. The Chedi Club was built as the private estate of the noted Indonesian designer Hendra Hadiprana and repurposed by GHM as a hotel in July 2004. The hotel is an artistic tour de force in itself, as it still houses the bulk of the late Hadiprana’s private collection. The collection was built up over three decades and features 29 Ganesh statues (either found or commissioned by the former owner), vases from the 16 and 17th centuries collected throughout Asia, and an impressive collection of paintings from Indonesian artists.
The Anam Cam Ranh. The Anam’s commitment to the arts is obvious all over its grounds, where an eclectic collection of hundreds of artworks by local artists hang from its walls and bedeck its pedestals. Ranging from vivid landscapes and abstract oil paintings to striking photography, the authentic artworks depict Vietnam and the daily lives of the Vietnamese, positioning the resort as a gateway to the country’s rich culture. Black and white images by Vietnamese photographer Mai Lôc, whose life story epitomises Vietnam’s rapid transformation, are among the most popular works with art-loving guests. Once living under the poorest conditions as a miner, Mai Lôc met a Norwegian couple by chance in 1995. They kept in touch and for his wedding, the couple gave him a camera, changing his life. Today he’s a sought-after photographer who has exhibited in Canada, Finland, Austria and other countries. In support of local art, the Anam becomes an open-air artist’s studio each Wednesday, ushering talented local artists onto its grounds to practice their craft. Reverie Saigon. This hotel is remarkable for several astonishing pieces of art, including a ceiling installation of hand-blown Murano glass fashioned in the shape of Vietnam and accented by LED-lit crystal and steel ‘Arabesque Egg’ chandeliers, and an 1895 Bechstein grand piano transformed into art by Baldi with the addition of a mosaic veneer of malachite stone and chiselled bronze. Moreover, the hotel itself is a design aficionado’s dream. Seventeen different Italian design houses collaborated on the interiors, leading famed Italian designer Giulio Cappellinithe, art director of the Milan-based Poltrona Frau Group and an iconic trendsetter in the industry to say: “I can’t think of any other property anywhere in the world that has brought together so many of Italy’s leading furnishings design brands … except, perhaps, a museum.” Palace Hotel Tokyo. This hotel opened in 2012 after a $1.2 billion investment and they have since invested deeply in artwork.

Hotels Moonlighting as Galleries More than 1,000 pieces of art vie for eyeballs throughout the hotel, with the grandest pieces hung from the walls and put upon pedestals in the lobby, reception and in meeting spaces. The hotel itself makes its own claim as a work of art, winning renown as the best designed large hotel in the world in 2014 from Travel + Leisure magazine in the U.S. For those who want to take a memory of the artworks home, the hotel has published a book detailing its collection. Sofitel Legend Metropole Hanoi. Guests are invited to experience the hotel’s storied past in the “Path of History” tour, offered twice daily at 5pm and 6pm. Led by a hotel historian, the tour includes a look at classic artifacts from the Metropole Hanoi, including photographs of famous guests (such as Charlie Chaplin and US President Bill Clinton, among others), as well as items like vintage room keys from the hotel that date back more than 100 years. For many, the highlight of the tour is a visit to the hotel’s bomb shelter, which protected famous visitors like Joan Baez and Jane Fonda from air raids during the US-Vietnam War. The bunker was closed and sealed after the war, before being rediscovered during the renovation of the Bamboo Bar in 2011. Hyatt Regency Bangkok. A new photo gallery in one of Bangkok’s most culturally diverse areas is giving guests a glimpse into another era with a permanent exhibition on the history of Bangkok’s most important boulevard - Sukhumvit Road. Located on the fourth floor of the new Hyatt Regency Bangkok, Sukhumvit Gallery features an eclectic mix of rare photographs of people and places that tell the story of the road, vintage maps, and important documents covering the area’s history. “Nana’s roots are as a vibrant international marketplace,” explained the general manager of Hyatt Regency Bangkok Sukhumvit, Sammy Carolus. “With this gallery we are sharing the fascinating story of the neighborhood as it once was.” Sukhumvit Gallery is open daily 11am–10:30 pm, with free entrance. Awei Metta, Yangon. Renowned Belgian artist Christian Develter travelled in 2012 to Myanmar’s Chin State, visiting the hill tribes of this remote region where women have for generations tattooed their faces, symbolizing strength and beauty.

Develter was subsequently commissioned by Awei Metta, ahead of its grand opening in December last year, to produce a series of lithographs, combining classic Asian beauty with this ancient custom. The canvases adorn some of the 72 rooms and are prominent throughout the hotel, where the stunning portraits appear to stare back provocatively into the viewer’s eyes. Grand Hyatt Taipei, Taiwan. Taipei’s largest five-star hotel is well-known for its sizeable collection of quirky art installations, watercolor paintings, and calligraphy works by Taiwanese artist Suyin Zhou. Many of Zhou’s black and white paintings adorn the walls of the hotel’s 850 guest rooms and suites, including one of a large swirl, which hangs in the entrance to one of the corner suites. In the hotel lobby, a giant wooden sphere by Korean artist, Jae Hyo Lee, is on permanent display while a life-like statue of a ‘Standing Guard’ (nicknamed ‘Charlie’ by hotel staff ) by US artist Marc Sijan, stands to attention near the elevators. Laguna Lang Co, Vietnam. A commitment to Vietnamese arts is strong at Laguna Lang Co, the Southeast Asian nation’s most far-reaching integrated resort. Throughout the rooms and the public areas at the project’s award-winning hotels -- Banyan Tree Lang Co and Angsana Lang Co -- guests will find images by photographers depicting local life in Central Vietnam as well as artworks inspired by the area. In addition to these, the resort has not one but two galleries dedicated to showcasing the arts and crafts of the area. At Banyan Tree Gallery browsers will find everything from traditional Vietnamese crafts and furnishings to objets d’art and ethnic apparel. At Angsana Gallery, meanwhile, the range of arty artefacts spans locallycrafted baskets and lanterns as well as handcrafted ceramic burners.

The classic wellknown bridge is on display on one of the walls, and is re-interpreted as the plate -- a handcrafted sculpture of stainless steel, copper plating and artificial marble, that is decorated with local flowers.

jakarta hotel market review AS NEW LUXURY HOTELS GATHER ON JAKARTA’S HORIZON WILL INTERNATIONAL TRAVELERS FOLLOW?
W
hile Jakarta Indonesia is transforming into an Asian megacity, it has yet to capture a wider international audience of visitors. In 2018, the city’s hotels hosted over 13 million guests, yet 86% were from the domestic segment. In a newly released report, the Jakarta Hotel Market Review from hospitality consulting group C9 Hotelworks over 2.7 million overseas passengers arrived at the gateway Soekarno-Hatta International Airport last year. Over a 10-year period the compound annual growth rate hit an impressive 7.4 percent. Yet, the reality, is that Indonesia’s largely domestic economic marketplace remains the key spotlight as public sector infrastructure is playing catch up with ongoing mass transportation developments trying to link the city’s spread of mini-metros. A key outcome of the domestic feeding frenzy is that Indonesian conglomerates and real estate groups are developing massive integrated mixed-use properties with global luxury operators. NEWLY RELEASED REPORT REVEALS 86% OF CITY’S HOTEL GUESTS ARE DOMESTIC MARKET
While historically the influx of overseas guests are business travelers during peak mid-week periods who leave the city in advance of the weekend. This leaves hotels with the choice of either lower room rates for the domestic market or else empty beds. Jakarta’s international geographic source of business profile has seen Mainland China in the top position since 2015, with a 5-year CAGR of 9%. Rounding out the top 5 are Malaysia, Japan, Singapore and Saudi Arabia. There have been few surprises during the past few years yet two international sporting events, the 2018 Asia and Para Asian games pushed market-wide demand higher. Looking forward, C9 Hotelworks Managing Director Bill Barnett said “it’s unclear if the new luxury pipeline will dramatically induce the overseas market. Until there are broader economic reforms that will positively impact FDI (foreign direct investment) and improvements in commuting to CBD areas, the domestic segment is likely to remain firmly entrenched in the driver’s seat of Jakarta hotel performance.”

Elzer’s seasonal 8-course Prestige Menu showcases the most premium caviar from around the world including Shadi, Kristal, L’Imperial, Oscietra and Beluga caviar. Dishes include Kristal Kaviari with Brittany razor clams “a la marinière” with pressed Kristal caviar cream, Poached French pink rock lobster with Imperial caviar, cucumber and dill emulsion and Seared Wagyu beef tenderloin and beef marrow with beluga caviar and blinis. Chief Sommelier Tristan Pommier’s mission is to provide an extensive and holistic wine and beverage list, focusing on small boutique wineries so that guests can enjoy rare vintage or limited edition bottles with their selected menu. For connoisseurs, they can enjoy labels that are exclusively available at L’Envol and the St. Regis in Hong Kong including the Pommery, “Les Millesimes d’Or” 1983, and Pommery, “Les Millesimes d’Or” 1964 Magnum. Chateau Cos d’Estournel 1975 from Saint-Estèphe in Bordeaux is considered one of the fifteen Deuxiemes Crus, a vintage red wine that L’Envol also houses. Aside from vintage and iconic wines, guests at L’Envol can also enjoy premium Armagnac and rare cognac selections for the perfect after dinner digestif. At the end of every meal, guests can enjoy a decadent selection of cheeses served on a cheese trolley paired with homemade condiments including Iranian honeycomb, white chocolate, homemade fig and pepper. A freestanding abstract pavilion in pale oak creates a building-within-abuilding flanked on two sides by window-side tables, and two private dining rooms with distinctive lighting and artworks that can sit up to 16 and 10 guests. At Rùn, Tea Master Kezia Chan greets guests with a welcome tea of the day and can tailor each brew according to guests’ preference. In summer, a cold infused tea is presented; and a digestif tea is offered at the end of the meal. Porthault, well known for their luxurious embroidered and printed linens, designed the tablecloths and tablemats at the hotel. The feminine interior of L’Envol is reflected in the tablecloth, which is light beige in colour with a delicate pattern of linear ascending effervescence of champagne bubbles, symbolising a spirit of celebration. At The Drawing Room, the tablemat takes after the original pattern of the Orient Express train, symobolising the connection between East and West. The glassware in the hotel is created by Cristallerie de Paris. ilton (NYSE: HLT) reached the mid-year point of 2019 having signed 120 new hotels in Asia Pacific, taking its total estate to 845 hotels open and under development across the region.
The world’s most recognised hotel brand will also be expanding its presence in Hokkaido with Hilton Sapporo Park. Additional properties in Xi’an, Nanchang, Chengdu and Shenzhen will further strengthen the brand’s presence in China.
The latest wave of growth has come from across Hilton’s portfolio of eight trading brands in Asia Pacific, and in major markets including China, India, Japan, Australia and South East Asia.
As DoubleTree by Hilton celebrates its 50th anniversary this year, 10 new DoubleTree by Hilton deals were also completed, marking the continued rise of one of the company’s most successful international brands.
