ur bones are continually being remodeled—new bone is being built and old bone is breaking down. When more is broken down than built up, osteoporosis develops and fractures become more common. We all know the importance of calcium, but magnesium and vitamin D are equally vital because they enable the bones to use calcium. Vitamin K and boron also play important roles, and many bone formulas contain a combination of these key nutrients.

STRONTIUM: A SPECIAL BONE BUILDER Sometimes, you need more than just the basics. Strontium, a mineral that’s similar to calcium and magnesium, increases the rate at which bone grows and decreases the rate at which it breaks down, which can help prevent and reverse bone loss. One study, published in the New England Journal of Medicine, tested strontium with more than 1,600 postmenopausal women with osteoporosis who had already suffered at least one vertebral fracture. Among women who took a placebo, bone density decreased. But the women who took strontium experienced significantly increased bone density and less risk of bone fractures: 49 percent less fracture risk in the first year and 41 percent less during the three-year course of the study.

WHAT TO TAKE Calcium: Get a total of 1,000 mg daily before age 50 and 1,500 mg after that. Most people get about 500–700 mg daily from food. Don’t take more than 500 mg of calcium at a time. The extra stays too long in the bloodstream and contributes to hardening of the arteries. Better to take smaller doses— 500 mg or less, including food sources—throughout the day. Magnesium: A common recommendation is 400 mg, once or twice daily. Many integrative physicians recommend getting equal amounts of magnesium and calcium. Vitamin D: 1,000–2,000 IU daily. Formulas: Look for a combination with vitamin K 2 and boron. Strontium: In studies of postmenopausal women, an effective dose for treating osteoporosis was 680 mg daily, and 340 mg for prevention. On labels, look for such amounts of “elemental strontium.” Take strontium at a different time from calcium and magnesium, as they compete for absorption. 6

CHERRIES FIGHT GOUT

A

Eating cherries or taking a cherry extract reduces gout attacks, according to a study of 633 gout patients at Boston University. The most effective dose was three servings of either 10–12 cherries or a cherry extract consumed over a two-day period, reducing risk for gout attacks by 35 percent over the course of the yearlong study. Combining cherries or cherry extracts with medication lowered risk for attacks by 75 percent. Earlier studies have also found that cherries and cherry extracts reduce gout pain.

diet containing Roundup-tolerant genetically modified (GM) corn—or Roundup weed killer at levels currently considered safe—can cause tumors and organ damage and lead to death in laboratory rats, according to research published online in the journal Food and Chemical Toxicology. Published in September, this was the first animal trial examining the long-term effects of exposure to Roundup-tolerant GM corn. The study lasted two years, the rats’ average lifespan, and much longer than the typical 90-day trials used in other GM studies. In the study, the rats were fed NK603, a Monsanto-patented variety of GM corn that’s widely used in North America. The rats were either fed the NK603 corn, corn treated with agricultural levels of Roundup, or water treated with Roundup at levels found in contaminated drinking water and used in agriculture in the United States. The research linked varying levels of both Roundup and the NK603 corn to mammary tumors in female rats and severe liver and kidney damage in male rats. As a result of the massive breast tumors and liver and kidney damage, up to 50 percent of the male rats and 70 percent of the female rats who ate the corn died prematurely, compared with only 30 percent and 20 percent in the control group. Gilles-Eric Séralini, PhD, who lead the research team, said that the rats’ diet reflected the kind of exposure to genetically modified organisms and Roundup that humans who eat genetically engineered food should expect. —Melissa Diane Smith

SLOW BRAIN AGING WITH VITAMIN E In nature, vitamin E comes in several different forms: tocopherols (alpha, beta, gamma, and delta) and tocotrienols (alpha, beta, gamma, and delta). Taking vitamin E supplements that contain all eight forms can help delay brain aging and loss of function, according to a study in Neurobiology of Aging. In supplements, the most common form of the vitamin is d-alpha-tocopherol, but many fullspectrum vitamin E products are available. Note that the dl-alpha form is not active in the body, so a 400 IU dl-alpha tocopherol capsule only gives you 200 IU of usable vitamin E.

Low Vitamin D Raises Death Risk The largest study so far of vitamin D and heart disease has found that below-optimum levels of the sunshine vitamin raise these risks: Risk of heart attack by 64 percent Risk of coronary artery disease or angina by 40 percent Risk of death from heart disease by 81 percent Researchers took blood samples from 10,000 people in Denmark between 1981 and 1983, and then tracked their health to the present. The study was published in Arteriosclerosis, Thrombosis, and Vascular Biology.

As you can see, fat serves a variety of important functions. But not just any fat will do. Our cells rely on the right type of fat. Here’s our guide to the top two essential fatty acids (EFAs), omega-3s and omega-6s, as well as the lesser-known omega-9s.

Just how important are essential fatty acids? Maybe even more valuable than a daily multi.

NOT THAT LONG AGO, it was believed a low-fat diet was the key to good health. This led to an onslaught of low-fat processed foods, which really wasn’t such a good idea, as scientists have confirmed that the low-fat food craze actually made us fatter and sicker. “We’re a nation of low-fat foods and high-fat people,” says Brian Wansink, PhD, author of Mindless Eating: Why We Eat More Than We Think. “People see low-fat foods as a get-out-of-jail-free card.” There are several reasons why the low-fat food fad hasn’t worked: • People tend to eat more when they eat low-fat. • Most low-fat foods are highly processed, and all of those added preservatives, colorings, and flavorings are damaging to our health. • We aren’t getting enough of the right fats, which are vital to our health.

Why You Really Need Fat The body needs fat to function. Because fat has such a high concentration of calories, it’s a preferred energy source. Fat also cushions and insulates vital internal organs, and provides structure to cell 10

Omega-3s are polyunsaturated fatty acids— something that the average North American diet is severely lacking. The best food sources include fatty fish such as mackerel, trout, herring, sardines, albacore tuna, and salmon. Omega-3s are also found in plant oils, nuts, and seeds, as well as many fruits and vegetables. There are three main varieties of omega-3s: alpha-linolenic acid (ALA); eicosapentaenoic acid (EPA); and docosahexaenoic acid (DHA). EPA and DHA are most readily utilized by the body. ALA is the plant source of omega-3s, which the body converts into EPA and DHA. Omega-3 EFAs reduce inflammation, which explains why they help prevent arthritis, heart disease, cancer, and other inflammatory conditions. They’re also concentrated in brain tissue, so they can be beneficial in preventing disorders such as dementia and Alzheimer’s, as well as relieving mental health issues including anxiety and depression. Several studies have confirmed that individuals with brain disorders have lower levels of EFAs in their brain tissue. Research from Canada, published in the American Journal of Clinical Nutrition, showed that women experiencing psychological distress and depressive symptoms associated with menopause found relief by taking omega-3 dietary supplements as compared to placebo. The same researchers, who also published their data in the journal Menopause, found that the frequency of menopausal hot flashes was reduced after taking an omega-3 supplement.

Sources While many fish oil supplements are made from sardines and anchovies, they don’t necessarily offer the highest levels of omega-3s. As a rule, the fattier the fish, the more omega-3s—and Atlantic salmon fits the bill perfectly. On average, just 3.5 ounces of Atlantic salmon provides 1.2 grams of omega-3 fatty acids. Raised in the fjords of Norway and along the coasts of Scotland, these salmon are maintained under strict supervision, and provide approximately

And don’t overlook calamari-based fish oils. Calamari is a superrich source of DHA, which is vital for both brain and eye health. Krill oil is another option; most krill oil supplements come from Antarctic krill, tiny creatures that contain a natural balance of DHA and EPA.

OMEGAS IN OIL

Omega-6s

The following chart gives you an overview of the omega content of various oils.

Omega-6 essential fats can be both bad and good. Animal sources of omega-6s, including red meat and eggs, aren’t always great diet choices. But plant sources of the fat, including evening primrose oil, black current oil, and borage oil, are quite healthful. The real problem is that the North American diet features far more bad sources of omega-6s than good, and far more omega-6s than omega-3s. More than 10,000 years ago, the hunter-gatherer diet consisted of about a 1:1 ratio of omega-3s to omega-6s. Today, that ratio can be as high as 1:30. In addition to those mentioned above, more healthful dietary sources of omega-6s include whole-grain breads, nuts, pumpkin seeds, and sunflower seed oil.

Increasing your consumption of essential fatty acids can be accomplished four ways: Cooking with EFA-rich oils. Eating more vegetables, fruits, nuts, and seeds. Adding EFA-rich oils to dishes. Eating fish twice a week.

WHAT ARE OMEGA-9S? Omega-9, also known as oleic acid, is a monounsaturated fat. It’s not a “true” essential fatty acid because our body has the ability to produce it in small amounts. (The body cannot produce omega-3s and 6s in any amount; these two EFAs can only come from the diet and dietary supplements.) However, if the body doesn’t have enough omega-3s and 6s, it cannot produce omega-9s. So you see, this is truly the trifecta of essential oils—3, 6, and 9. L-theanine’s effects are usually felt within 30 minutes and can last for 8–12 hours. What to take before bedtime: 100–400 mg.

Melatonin Melatonin is a hormone produced by the pineal gland in the brain. It initiates sleep, rather than prolonging it as L-theanine does. Darkness triggers melatonin production and levels of the hormone naturally peak shortly before bedtime. It’s estimated that a healthy person’s body naturally produces about one-half milligram of melatonin per day; however, this production naturally declines as we age. What to take before bedtime: As little as 0.5 mg is therapeutic, but up to 6 mg may be used.

What to take before bedtime: Take 25–100 mg to improve sleep. For mood improvement, take an additional 100 mg one or two times during the day. If you’re using any medications that affect levels of serotonin, such as SSRIs, talk to your doctor first before taking 5-HTP. In addition to products that contain all three of these nutrients, you can improve your sleep by using a product that contains at least one. Or, you can buy all three as single supplements.

No matter where you are in the world, holidays are marked by rituals: decking halls, lighting menorahs, trimming trees, giving gifts—and preparing festive food. 1. Heat oil in large saucepan over medium heat. Add onion, and cook until just tender, 3–5 minutes. Add broth, potato, and beets. Bring to a boil; reduce heat; and simmer, covered, until vegetables are soft, 15–18 minutes. 2. While beets are cooking, remove stems from mushrooms and very thinly slice caps. Toss with coconut oil or butter, and spread in single layer on large baking sheet (mushrooms should not be touching). Roast in 400°F oven until browned and crispy, about 15 minutes, stirring halfway through. Remove from heat, and let cool on pan.

3. Transfer soup to food processor, and purée in batches until smooth.

4. To serve, divide soup between four individual bowls. Scatter mushrooms across the top of each. Garnish with a dollop of parsley cream, and serve. *To make your own vegan sour cream, combine 1 package of silken tofu with 1 tablespoon grape seed oil, 1–2 Tbs. lemon juice and ½ teaspoon honey or agave. Puree until smooth and creamy.

1. Preheat oven to 375°F. 2. Beat eggs and flour together in large bowl. Add parsnips, carrots, sage, salt, and pepper. Grate potato. Using hands, squeeze out as much water as possible. Add to bowl, and mix well.

3. Heat 1 Tbs. of grape seed oil in large skillet over medium-high heat. Drop four scoops batter, about 3 Tbs. each, into pan. Fry 1–2 minutes, until golden and crispy, pressing down gently with spatula to ¼-inch thick. Turn, and cook on remaining side 1–2 minutes. Transfer latkes to large baking sheet, and repeat with remaining batter, adding additional 1 Tbs. oil if pan gets too dry.

4. Bake 15–20 minutes, turning once during cooking, until latkes are cooked through and crispy on outside. Remove from baking sheet and drain on paper towels. 5. To serve, arrange latkes on large serving platter. Garnish with additional sage, if desired. Serve hot with sour cream and applesauce. Vegan Coconut-Rice Custard with Orange Blossom Water SERVES 6 This simple dessert was inspired by majarete, a Puerto Rican rice pudding. The long, slow cooking time extracts the starch from the rice and concentrates the coconut milk into a creamy, sweet custard, so very little sweetener and no eggs are required. A few drops of orange blossom water add flowery, intriguing undertones. Use brown rice if you’d like a nuttier, chewier custard; just be sure to use the shortest grain possible. 1 cup Arborio rice, or short-grain sweet brown rice 2 Tbs. honey 1 14-oz. can light coconut milk 1 vanilla bean ¼ tsp. orange blossom or orange flower water Additional coconut milk for garnish (optional) 5 tsp. finely chopped pistachios

1. Combine rice with 3 cups water and dash of salt in medium, heavy saucepan with tight-fitting lid. Bring to a boil, reduce heat, and simmer 35–45 minutes, until most of the water is absorbed and rice is just tender, but still very firm to bite.

2. Stir in honey and coconut milk. Add vanilla bean and orange water, and return to a boil. Immediately reduce heat and simmer, uncovered and stirring often, until mixture is thick and creamy, and rice is soft, 15–20 minutes. 3. Remove and discard vanilla bean, and divide mixture between six

individual serving dishes. Drizzle with additional coconut milk, if desired. Garnish with chopped pistachios, and serve warm, or refrigerate 2 hours before adding additional coconut milk and pistachios, then garnish, and serve chilled. What to do When you Get Sick

YOU DID YOUR BEST TO STAY WELL, but between weather changes, stress, and exposure to others who are sick, your body gave in and you came down with a cold. So what do you do now? It’s part fight and part nurture—boost your immune system while giving your body some rest and comfort.

1. REST. Never is there a time when rest is needed more than when you are sick. Rest allows the body to recuperate faster. This is especially critical for children who are often active even when they are sick. Quiet activities and extra nighttime rest will help their bodies recover more quickly.

People with a gluten allergy or celiac disease (some 3 million people in the U.S. alone) were once relegated to the crudité platter and maybe a slice of ham at Christmas. The yummy stuff—stuffing, biscuits, pies, and other gluten-containing treats—was strictly off-limits. No more. Delicious options have sprung up recently, including gluten-free flours, crackers, and bakery treats that are indistinguishable from the real thing. Case in point: these incredible desserts. You’ll love them even if you’re not gluten sensitive (and none of your guests will be the wiser).

PUMPKIN WHOOPIE PIES WITH CHAI MAPLE MARSHMALLOW FILLING MAKES 12 PIES

cups brown rice flour tsp. baking powder tsp. baking soda tsp. salt Tbs. pumpkin pie spice blend tsp. xanthan gum cups organic brown sugar cups unsalted, organic butter (2½ sticks) tsp. vanilla extract 15-oz. can solid-pack pumpkin eggs cup finely chopped walnuts (optional) batch Chai Maple Marshmallow Filling (recipe at right)

1. Preheat oven to 350°F. Line 2 large cookie sheets with parchment paper.

2. Stir together rice flour, baking powder, baking soda, salt, pie spice, and xanthan gum in medium bowl. In separate bowl, combine brown sugar and butter. Beat until fluffy. Blend in vanilla and pumpkin. Beat in eggs one at a time. Gradually beat in rice flour mixture. Stir in nuts.

3. Chill dough in refrigerator at least 20 minutes. Put 6 scoops of dough on lined cookie sheet with large ice cream scoop. Stagger scoops so that they won’t touch during baking.

4. Bake 17 minutes, or until tops look dry and edges are just beginning to take on color. Allow cookies to cool on baking sheet. Repeat with 32

remaining dough, alternating baking sheets until dough has been used up. Keep dough in refrigerator between batches.

5. Place one dollop Chai Maple Marshmallow Filling on flat side of cookie with large ice cream scoop. Top marshmallow with inverted 2nd cookie, being careful not to press and cause filling to ooze out. Poke toothpick through center of sandwich to keep top cookie from sliding off. Repeat with remaining cookies and filling. Set sandwiches on level surface, and allow marshmallow to set, about 3 hours. Remove toothpicks before serving.

Chai Maple Marshmallow Filling (Filling for 12 Pies) 2 ¼ 1 1 ½

packages unflavored gelatin tsp. salt tsp. pumpkin pie spice blend tsp. vanilla extract cup very strong chai tea, cooled to room temperature ¾ cup organic brown sugar ¾ cup real maple syrup

1. Place gelatin, salt, pie spice, vanilla, and chai tea in bowl of stand mixer. Stir to make sure gelatin will bloom properly. Attach whisk, and set mixer close to range where you will be cooking syrup.

2. Whisk brown sugar and maple syrup in medium saucepan. Clip candy thermometer onto side of pan. Cook over low flame until mixture reaches 240°F. Remove pan immediately from heat, and carefully remove thermometer from pan. 3. Turn mixer on low, and slowly pour maple/brown sugar syrup down side of bowl into gelatin mixture. After all syrup has been added, gradually increase mixer speed to high, being careful not to splatter hot mixture. Continue to beat 12 minutes, or until mixture is lukewarm.

APPLE SPICE STEAMED CAKES MAKES 6 CAKES Topping: 2 cups small dice of peeled and cored Granny Smith Apples 1 cup dried cranberries 2 Tbs. unsalted, organic butter 3 Tbs. fresh-squeezed lime juice ½ cup organic brown sugar Pinch salt Cake: 1-3 cup masa harina* ¼ cup cornmeal 1 Tbs. pumpkin pie spice or baking spice blend 1 tsp. ground ginger ½ tsp. salt ½ tsp. baking powder 1 7-oz. container Greek-style yogurt 2 tsp. finely grated fresh ginger 2 tsp. vanilla extract Zest from 1 juiced lime ½ cup organic, unsalted, butter 1-3 cup organic brown sugar 1 egg

1. Preheat oven to 325°F. Line bottom of 9- x 13-inch cake pan with two layers of paper towels. Set 6 6-oz. ramekins in cake pan. Coat ramekins with cooking spray.

2. To make Topping: Combine diced apples and cranberries in small bowl. Set aside.

Whisk butter, lime juice, and brown sugar in small sauce pan over low flame. Allow mixture to simmer on low, 3 minutes. Divide mixture evenly among prepared ramekins. Divide apple/cranberry mixture evenly among ramekins.

3. To make Cake: Combine masa harina, cornmeal, pie spice, ground ginger, salt, and baking powder in small bowl. In separate bowl, combine yogurt, ginger, vanilla, and lime zest.

4. Beat butter and brown sugar in medium bowl until fluffy. Add egg, and continue to beat until well combined. Add yogurt mixture, and beat until well combined. Add dry ingredient mixture, and beat until thoroughly combined, scraping down sides of the bowl to insure total incorporation.

5. Divide batter evenly among prepared ramekins. Cover baking pan with foil, leaving one corner open. Pour warm water into pan until water level reaches ¾ of the way up ramekins’ sides. Tightly close open corner of foil. 6. Place pan on center rack of oven, and bake 75 minutes or until toothpick inserted

Really good tips for a happy, healthy holiday CHRISTMAS WAS ALWAYS a big deal in our family when I was growing up, and the delights of the table were front and center. But my youthful ability to eat anything with no effect is consigned to the mists of Christmas Past. If the same is true for you, fear not. By following a few guidelines, you can party without the post-holiday guilt.

Try picking out one or two must-have favorites, and stop up your ears against the siren song of those other tempting treats. Under no circumstances should you attempt to “sample ’em all”— that way lies madness, and an ever-expanding waistline.

Tame the Demon Rum The social fallout from overindulging aside, those useless carbs can pile up! So… 1. Water it down. That vodka will do less harm when mixed with a generous pour of cranberry juice and tonic. 2. Alternate. A cranberry and tonic will taste much the same without the vodka. 3. Keep your water glass busy. Wine with dinner is delightful, but don’t let it be your only beverage. 4. And remember—you don’t need alcohol to have a good time. Seriously.

This fizzy treat has minimal alcohol and maximum flavor! To make it really festive, freeze raspberries and mint leaves into a ring of ice in a 10-inch circular mold and float it in the punch bowl. For a non-alcoholic version, you can double the sparkling lemonade and leave out the champagne.

1 bottle dark beer, such as Guinness 2 15-oz. cans organic red beans 2 cups frozen corn kernels

1. Pour olive oil into large pot. Add onions, and sauté over medium heat, 3 minutes. Add garlic, and cook 1 minute more. Increase heat, add bison and chili powder, and cook until browned, stirring often, about 5 minutes.

2. Add entire contents of tomato cans, beer, and red beans, and bring to a boil. Reduce heat and simmer, stirring often, one hour.
