Fighting Fatigue America is experiencing an energy crisis. I’m not talking about oil or coal or natural gas, but the kind of energy that gets you up in the morning and keeps you going throughout the day. According to a 2007 study published by the Journal of Occupational and Environmental Medicine, 38 percent of American workers experience fatigue, which costs employers $136 billion dollars annually in lost productivity. And the National Highway Traffic Safety Commission reports that driver fatigue was a factor in an average of 83,000 U.S. traffic accidents per year between 2005 and 2009, including some 37,000 injury accidents per year. But you don’t need statistics to tell you the extent of the problem. Just take a walk through the aisles of any grocery or convenience store, and you’ll see dozens of products purporting to boost energy—most by way of excess caffeine, sugar, and other unhealthy ingredients. During an eight-week training program, researchers tested 100 mg daily of Pycnogenol against a placebo among 147 recreational athletes, and found that those taking Pycnogenol were able to do more push-ups and sit-ups. In another part of the study, 150 mg daily of Pycnogenol was tested against a placebo among 54 semi-professional triathletes. Those taking Pycnogenol were significantly faster, suffered fewer cramps, and experienced less pain during and after running. FENUGREEK lowers blood sugar For people with type 2 diabetes, fenugreek can significantly lower unhealthy levels of blood sugar, according to a review of 10 clinical trials that was published in Nutrition Journal. A collaboration of researchers from the Harvard School of Public Health and universities in Canada and Singapore found that taking at least 5 grams daily of fenugreek seed powder produced the best results, lowering a1c levels, a marker of longerterm blood-sugar levels, by nearly 1 point—a significant amount. Researchers believe that the herb, popular in Asian cooking and medicine, reduces blood sugar absorption and enhances insulin production.
GREEN TEA reduces blood pressure and cholesterol A review of research, published in the journal Nutrition, Metabolism and Cardiovascular Diseases, examined 20 clinical trials of green tea covering a total of 1,536 participants. It found that drinking five to six cups of the tea daily reduced blood pressure, harmful LDL cholesterol, and total cholesterol. While the reductions in each marker were small, they were significant. The active ingredient in green tea, epigallocatechin gallate (EGCG), is found in many supplements. Up to 200 mg daily of EGCG would be equivalent to drinking the effective amount of the tea.
PROBIOTICS double weight loss in women Lactobacillus rhamnosus can help women lose weight and keep it off, concluded a study of 125 overweight men and women that was published in the British Journal of Nutrition. Researchers found that among women, but not men, these probiotics doubled weight loss when compared to a placebo. After a 12-week diet and another 12 weeks without a diet, women taking probiotics lost nearly 12 pounds, while those taking the placebo lost just under 6 pounds.

How to Eat Chia Unlike flax seeds, whole chia seeds are easily digested, and most people find that they have no distinct taste. Eat whole seeds as a snack; mix them in nut butters; sprinkle them on salads, sandwiches, yogurt, or other foods; or mix them in juices or smoothies. Chia seeds absorb approximately nine times their weight in water, help control appetite, and boost energy without stimulants. If you prefer less crunch, use ground or milled chia seeds, also called chia meal.

hia seeds have been called the world’s healthiest whole food for good reason. “Chia contains the highest amount of omega-3 fatty acids of any plant known, and also contains significant amounts of protein, fiber, and antioxidants,” says Wayne Coates, PhD, professor emeritus at the University of Arizona, chia researcher, and author of Chia: The Complete Guide to the Ultimate Superfood. “Omega-3 fatty acids and fiber have been shown to have positive health benefits in terms of heart health and diabetes,” he says, “And omega-3 fatty acids and antioxidants have also been shown to help reduce inflammation and boost immunity.” Plus, chia is gluten-free.
Tiny Seed, Big Benefits In one study of type 2 diabetics at the University of Toronto, people who received 37 grams of chia daily for 12 weeks experienced decreases in blood pressure, inflammation, and blood sugar 8
that were significant enough to lower their risk for heart disease. The same researchers also found that in healthy people, 15–24 grams of daily chia reduced blood sugar levels and appetite for up to two hours after a meal. A study of long-distance runners that was published in the Journal of Strength & Conditioning Research , found that a half-serving of a sugary sports drink with added chia was a healthier fuel than a full serving of the sports drink alone.
Omega-3 Fats One tablespoon of chia contains a good day’s worth of alpha-linolenic acid (ALA), the plant-based form of omega-3 fats. The Institute of Medicine recommends 1.6 grams daily of ALA for men and 1.1 grams for women, and integrative physicians often recommend around 2–3 grams daily. One tablespoon of chia seeds typically contains more than 2 grams. It’s also worth noting that higher levels of ALA are not toxic, and may be

keep your colon happy It’s not something we usually like to talk about, but colon health is key to overall well-being
C
olon problems—constipation, diarrhea, or alternating bouts of both—can be uncomfortable, embarrassing, or downright devastating. “Symptoms paint a picture,” says Julie McIntyre, a medical herbalist in Silver City, N.M., who treats people with complex health conditions. The colon is part of the gastrointestinal tract, which starts in the mouth and ends with the anus. And, she says, it’s influenced by our emotions (butterflies in your stomach, for example), as well as our eating habits. As a basic rule, McIntyre says, “Eat what makes you feel healthy, what your body is craving, and what makes you feel happy.” While that doesn’t give license to overindulge in junk food, she does warn against too much deprivation of what you love: “If you’re forcing yourself to eat something because you think you should, it interferes with good digestion.” And walking, she says, is the best exercise for the colon. For the most common colon-related complaints, McIntyre offers these recommendations:
For Constipation Quick remedy: Cascara sagrada is an effective herbal laxative. Take 500 mg at bedtime, which is often enough to get things moving. If that doesn’t work, take magnesium citrate (1,000 mg three times per day) or vitamin C (1,000 mg three times daily), and 1,000 mg of Cascara sagrada before bedtime. If that doesn’t bring relief, switch to triphala or yellow dock (see below) and continue magnesium or vitamin C. Cascara sagrada shouldn’t be used on an ongoing basis, as it can lead to a lazy colon. Longer-term: Yellow dock (Rumex crispus) and triphala can both be used on an ongoing basis, as they are nutritive herbs, not laxatives. Both tone the colon and either may bring relief. If you have acne, dry or itchy skin, and/or the area around your liver is tender to the touch, your liver likely needs help. Yellow dock supports the liver as well as toning the colon. Take 500–1,000 mg daily. An Ayurvedic combination of three herbs, triphala moistens

and tones the colon to bring it back to health. Personal needs vary, but try 500 mg two or three times per day to start. If you still don’t have regular bowel movements, take more, adding 200–500 mg per day until you get relief from symptoms, and then cut back to the lower dose for maintenance.
For Diarrhea Quick remedy: Eat a couple of green bananas each day, as these have an astringent quality that counters diarrhea. And take Nux vomica, a homeopathic remedy, at a dose of 5 pellets (30c) two or three times per day. Longer-term: Take triphala in a lower dose than for constipation—ideally in a tincture, one-quarter teaspoon, once per day. In a capsule, take 250 mg once daily. The tincture gets into the bloodstream more quickly and brings faster relief. And drink chamomile tea, an astringent that has drying, cooling, and anti-inflammatory effects.
For Both For fluctuating bouts of constipation and diarrhea, or a spastic or painful colon, take triphala, adjusting the dosage based on your symptoms (higher for constipation and lower for diarrhea, as above). And make a yarrow tea by steeping one-eighth cup of dried yarrow flowers in one-half quart of very hot (not boiling) water for two hours. Strain and drink throughout the day. This concentrate can be diluted, as yarrow is quite bitter. For convenience, you can steep teas in the evening and store them in the fridge so they’re ready to go the next day.

illions of Americans suffer from tinnitus, a condition more descriptively known as “ringing in the ears.” People with severe tinnitus may have trouble hearing, working, or even sleeping. Causes include exposure to loud noises or certain medications, particularly Valium-type drugs (benzodiazepines) and non-steroidal anti-inflammatories such as aspirin and ibuprofen. Tinnitus may also be a symptom of other health issues, such as allergies, high or low blood pressure, tumors, and problems in the heart, blood vessels, jaw, or neck.
Treating Tinnitus Naturally The easiest way to treat tinnitus is to identify and eliminate the cause. However, if the ringing is due to prolonged exposure to loud noises or music, scuba diving, or other irritants that damage the eardrum, it can be difficult. Some studies have shown that supplementing with magnesium may help in these cases (150–250 mg three times daily). Other natural medicines of note include: ZINC. Supplementation with zinc (20–30 mg per day) can relieve or eliminate tinnitus in those with zinc deficiency—a common occurrence in many cases of tinnitus. GINKGO BILOBA EXTRACT (GBE). The results from double-blind studies using GBE to treat tinnitus are contradictory. People with recent-onset tinnitus are more likely to respond than those who have had tinnitus for at least three years. The recommended dosage of GBE for tinnitus is 240–320 mg per day. VITAMIN B12. Nearly half of all tinnitus patients are deficient in this key vitamin. Many people with low B12 levels experience complete resolution of their tinnitus when given the methylcobalamin form of B12. Take 3,000–5,000 mcg daily for one month, then reduce your intake to 1,000 mcg daily as a maintenance dose.
The Promise of Melatonin Two recent studies have demonstrated that taking 3 mg of melatonin per day at bedtime can significantly improve tinnitus, as well as overall sleep quality. The latest research was conducted at The Ohio State University Eye and Ear Institute and published in the July 2011 issue of the Annals of Otology, Rhinology and Laryngology. In the study, 61 adults with chronic tinnitus were randomized to receive 3 mg of melatonin or a placebo nightly for 30 days, followed by a one-month washout period before switching to the other treatment. Results demonstrated convincingly that melatonin was associated with a significant decrease in tinnitus intensity and improved sleep quality in patients with chronic tinnitus. Melatonin was most effective in men with severe and bilateral tinnitus and/or those with a history of noise exposure. Researchers believe that one of the ways melatonin helps tinnitus is by improving sleep quality, an interesting mechanism of action, since tinnitus is often a side effect of prescription sleeping pills. 12

The right combination of supplements, diet, and lifestyle changes can treat—and even reverse— rheumatoid arthritis without side effects A: “Autoimmune” means that your immune system is attacking other parts of your body. In rheumatoid arthritis (RA), which is an autoimmune disease, the immune system rejects synovial tissue in the joints, and floods those areas with white blood cells.
Difficult to Digest Almost all autoimmune diseases start in the gut, with irritating foods. “Leaky gut” means your cells don’t form an effective barrier to large molecules of food, which leak into the bloodstream and trigger an immune response. Pretty soon your immune system is revved up and reacting to all sorts of things, including your own tissue. Friends and even physicians may tell you to take aspirin or ibuprofen to treat RA pain. But that can make the leaky gut worse, which makes it much more difficult to heal from this chronic condition. The key is to treat your gut right, and avoid problem foods. Some of the most problematic are wheat, dairy, corn, soy, shellfi sh, tomatoes, coffee, eggs, peanuts, and artificial coloring/ flavorings. Instead, eat lots of dark leafy greens, yellow and orange vegetables, and foods high in vitamin C such as strawberries, bell peppers, and citrus.

Avoiding Antibodies When your immune system decides that something in your body is “non-self,” it creates antibodies to the “non-self” tissue. One way to neutralize these antibodies is to ingest material that’s similar to the stuff that your body is attacking. For example, the ground-up chicken gristle in Knox gelatin is very similar to the cartilage in joints. So if your body is producing antibodies to cartilage, you can tie up those antibodies in the intestinal tract by eating gelatin—one packet daily in a glass of water taken without letting the gelatin thicken.
Soothing Inflammation Bromelain, from the inner core of the pineapple plant, is commonly used to digest meat when taken with a meal. But if taken without food, it can get into the circulation, where it can enzymatically “digest” the debris of inflammation. Take 500–1,000 mg daily on an empty stomach. Other helpful supplements for reducing the chronic inflammatory pain of RA include fi sh oil (that contains at least 2 grams EPA), selenium (200 mcg daily), vitamin E (400 IU daily), zinc (50 mg daily), copper (1 mg daily), and manganese (15 mg daily).
Wholesome Therapies Heat is your friend if you have RA. Weekly paraffin hand baths provide a lovely deep heat. Warming liniments (topical tinctures) rubbed into the small joints can be soothing, and warming herbs such as ginger and cayenne can help. Devil’s claw and yucca are also helpful herbs, as is black cohosh, especially when RA worsens during menopause. Exercise is also a good thing. Not moving the joint will make it stiffer and ultimately less functional. Don’t exercise to the point of pain, but try to move your whole body every day. 14

EAT FAT—IT’S GOOD FOR YOU! While this sounds like strange advice, good fats are absolutely essential for optimum health. Essential fatty acids (EFAs) are the building blocks of fats that play a variety of roles in the body. EFAs are a source of energy, they insulate your body against heat loss, prevent drying and flaking of skin, and are the building blocks of all cell membranes. They are also responsible for the production of prostaglandins, which are hormone-like substances that regulate many body processes including inflammation and cardiovascular and immune functions. The two main categories of essential fatty acids are omega-3 and omega-6. These are called essential because our bodies require them but do not manufacture them, so we must get them in our diets. The omega-3 fatty acids EPA and DHA are found in fatty fish, such as salmon or tuna. Flaxseed and hemp seeds also contain fatty acids that convert to EPA and DHA in the body. Studies have shown that people with a high omega-3 oil intake from either fish or vegetable sources (such as flaxseed) have a significantly reduced risk of developing heart disease. EPA specifically decreases inflammation in the body, while DHA targets eye and brain health. DHA is required for normal fetal brain development, making it an important nutrient during pregnancy and early childhood. Omega-3 fatty acid deficiency has been linked to behavior problems in children, making them an essential part of any nutrition program for kids. Omega-6 fatty acids, including linoleic acid (LA) and gamma linolenic acid (GLA), are popularly used for PMS complaints, healthy skin, and for their anti-inflammatory benefits. Common omega-6 supplements come from evening primrose oil, borage oil, or black currant seed oil. Flax and hemp also contains omega-6 fatty acids. Most EFAs are available in pill or liquid form. FRESH FOOD FOR DOGS “There are a lot of items you can put in a dog dish that add nutrition and antioxidants,” says Rick Woodford, author of Feed Your Best Friend Better. But, he cautions, chocolate, onions, grapes, and raisins are toxic for dogs; salt and pepper are irritants; and foods cooked with oils or other fats can upset their tummies. Try slowly introducing fruits and veggies, says Woodford, starting with teaspoons or tablespoons. Carrots, apples, green beans, pears, bananas, melons, plums, apricots, broccoli, snap peas, tomatoes, and plain cooked potatoes are good choices. Eggs, cooked without added fat, salt, or pepper, are an easy replacement for some regular dog food. Woodford recommends one-quarter of an egg for each 10 lbs of your dog’s weight, for example: one-half egg for a 20-lb dog.
COOKING FOR CATS “Cats are carnivores, but in the wild, they don’t eat only muscle meat,” points out Lisa Shiroff, author of Purr-fect Recipes for a Healthy Cat. Their prey is 75 percent moisture. Canned cat food contains moisture, but dry food can lead to dehydration because cats don’t automatically drink enough water. And, says Shiroff, cats may avoid tap water because their senses detect chemical additives. So give them filtered water. Shiroff also dispels some myths: Most cats are lactose intolerant. Fish should be an occasional treat, because it doesn’t provide taurine, an amino acid cats need in plentiful amounts (organ meats are the richest source). And for fiber and antioxidants, about 10 percent of a cat’s diet should be vegetables and easily digestible grains such as oats and rice. Shiroff’s list of foods to avoid includes chocolate and cocoa, coffee and tea, grapes, raisins, green tomatoes, onions, nuts, rhubarb, pork, salt, sugar, and raw forms of fish, eggs, and potatoes.

EVERY DAY, OUR BODIES are exposed to chemicals and toxins through the air we breathe, the food we eat, the products we clean our house with, and many more. The good news is that our bodies have a multi-faceted cleansing system that works through the colon, the liver, the kidneys, and the skin to eliminate waste and toxic substances that can harm us. However, poor food choices, unhealthy lifestyle choices, and/or environmental factors can easily overwhelm the body. To help keep the body functioning optimally, many nutritionists recommend cleansing the body at least once or twice a year. A detox program should be gentle, with modest dietary changes and natural support that does not disrupt normal daily activity. A good detox program is done in conjunction with modest changes to the diet. Eating clean for the time of the detox will further enhance the cleanse. Always start with less extract—you can add more if desired, but you can’t take it out if you overdo. ecently, one of the children in our family had to go on an extremely restricted diet for six weeks. No grains, dairy, corn, or corn products. That’s basically everything that kids eat. It means no cereal, no milk, no ice cream, no cakes, sodas, pies, or anything else that contains sugar, wheat, or high fructose corn syrup. Why am I telling you all of this in an article about an exquisite chocolatesoaked dessert recipe? Because during those six weeks, I was introduced to some of the most extraordinary sweet treats, made with just a few basic, whole-food ingredients. So I offered a challenge to my friend Chef Jeannette: Come up with an absolutely scrumptious dessert that adheres to the same rules: no grains, dairy, corn products, or sugar. She took the challenge. And the result is the healthiest sinful dessert you’ll ever eat. It’s packed with good fats from the coconut, fantastic cocoa flavanols that help lower blood pressure, and minerals and protein courtesy of the cashews. She even managed to sweeten it with a bit of rice syrup without breaking any of the rules. And it’s mind-blowingly delicious, to boot.
1. Combine cashews and rice syrup in food processor, and process until smooth. Add cacao, vanilla, and salt, and process until smooth. Add coconut, and process or pulse until wellincorporated. Taste, and adjust seasonings. 2. Rest batter in freezer 20 minutes. Remove, and form into 1-inch balls, rolling each truffle thoroughly in coating, if desired. Store truffles in refrigerator. hen Man first stood upright and started foraging, he certainly found plenty of fruit that had fallen from the tree and become desiccated in the hot Mediterranean sun. And that’s when he had his eureka moment—delicious, nutritious, and portable, what more could you ask of a food? And so it went down through the centuries. The oldest known recipes, written on clay tablets in Babylonia, detailed scrumptious dishes that included dates, figs, apples, and pomegranates—all dried. In 3,000 BC, Chinese nobles indulged themselves with dried plums and peaches. And the Romans rewarded victorious athletes with jars of highly-prized raisins. Today, we value our dried fruits for the concentrated nutrition they provide, as well as for their mouth-watering goodness. From apricots to berries and plums to papaya, almost any fruit you can name is now available in this healthy and convenient form.

Dried fruits are almost entirely free of fats and sodium, and are packed with vitamins, minerals, and fiber. And because of their high polyphenol contents, dried fruits are excellent sources of antioxidants that help promote heart health and prevent cancer. Try apricots for their beta-carotene, figs for their potassium, mangoes for their omega-3s, and prunes for their fiber and iron. For high levels of antioxidants, go to blueberries, cherries, apples, and papaya. And for vitamin A, seek out goji berries and peaches. In the winter months, this is an especially effective way to get your necessary servings of fruit without buying flavorless produce from far-away climes. In fact, the National Cancer Institute specifies ¼ cup of dried fruit as a proper single serving toward your daily requirement. With that concentration of flavor and nutrition, however, also comes a concentration of calories. According to the USDA, a 100-gram serving of fresh plums contains only 46 calories, whereas the same portion of prunes contains five times that amount. So enjoy these sweet treats in reasonable quantities. Stir dried blueberries into your morning oatmeal; include a handful of dried goji berries in a quinoa pilaf; add a few dried apple slices to a green salad; fold a few dried cherries into some fat-free yogurt—the possibilities are endless! 30

Combine cherries and pomegranate juice in small bowl, and microwave 30 seconds, or until hot. Set aside to allow cherries to absorb liquid and soften, about 20 minutes. Drain excess liquid. 2. Mash chèvre lightly in medium bowl. Add cherries and chopped almonds, and stir to combine well. Refrigerate overnight to allow flavors to merge. 3. Bring chèvre mixture back to room temperature. Spread on baguette slices, arrange canapés on platter, and serve.
