where your history is created

W H E R E YO U R H I S TO RY I S C R E AT E D De Historiske – historic hotels & restaurants – is a unique membership organisation cont aini ng many of Norway’s most charming hotels and restaurants. A very definite perception of the responsibilities of the proprietor is required to qualify, with the relating of history forming the setting for the guests’ own overnight stay and gastronomic experience. Our aim is to use the past as a backdrop for our guests, to enable them to create their own history based on experiences. It is our hope that these narrations may continue to live in the memories of our guests long after their return home.

Although the members of De Historiske each have their own distinctive characters, you will find that they have features in common: a warm welcome, good service, a friendly atmosphere and high quality in every respect. The quality standards that the group has in common ensure a generally high standard in the group, and our values of “hospitable”, “personal” and “quality conscious” shall aid us in achieving our shared vision: Take your story home. Welcome!

HISTORIC HOTELS Our hotels are not “ordinary” hotels. They are landed estates, country houses, manors, large and small timber-built hotels in pseudo-Swiss and Jugend (Art Nouveau) style, old coaching inns and many more historic buildings that have been transformed into beautiful, small, romantic hotels. This, and the passion we feel about our role as hosts, is what primarily characterises De Historiske! A stay at one of our hotels is above all about giving you a warm, personal and welcoming experience in an atmosphere of real quality where the focus is always on the guest. We offer fine cuisine based on the very best ingredients, vintage wines from our wine cellars, original artworks on the walls, cultural experiences of the highest quality,

6

interiors and decorations based on long traditions, first-class service and comfort, exciting history, a romantic atmosphere, peace and quiet, spa treatments, golf and much, much more. Our hotels represent much more than a comfortable bed and a good meal: first and foremost we represent a rich diversity of experiences and activities, both indoors and outdoors. Your challenge is to choose something you don’t want to miss! No matter what you choose, we will always do our best to make you feel that this is “a good place to be”. Welcome!

Sel busjøen Hot el l & Gjest eg å r d A .D. 1850 – 58 room s

The property of Havernesset in Selbu has been the site of business activity since around 1850. It was built for the merchant Fredrik Birch, who established a trading post with the assent of King Oscar I. Selbusjøen Hotell & Gjestegård opened its doors in 1988, and we are working constantly to develop and further improve the venue, and nurture its history. We are conscious of our cultural heritage and want to pre-

serve all that is historic and authentic, such that the hotel is a good place to be. Selbu is widely known for its knitting traditions, and there are good opportunities for trout fishing and walks on signposted trails. The hotel enjoys an idyllic location by Selbusjøen lake, close to regional tourist road 705 that links the E6 to the Røros region.

HISTORIC RESTAURANTS Norwegian food traditions are deeply rooted in Norwegian culture, to this very day. The challenge is to find these gastronomic experi ences outside the Norwegian home. Accordingly, we offer a concept designed to highlight historic restaurants in Norway. The Historic Restaurants group is constantly increasing its membership. See www.dehistoriske.com for updates on new members.

How will our guests benefit?

First and foremost, through access to information about historical restaurants in a town or area that you may not be familiar with. The hotel you are staying in will help you book a table at a historical

restaurant, and guests living at a Historical Hotel will be given priority. It will be reassuring to know that the restaurant radiates an atmosphere of “a good place to be”, and sets a high standard in terms of service and quality. Our main objective is to fulfil your expectations that the meal should be an experi ence. Accordingly, the Historic Restaurants are bent on providing you with a unique food and wine expe rience provided by an enthusiastic staff possessing sound gastronomic knowledge. Our intention is to leave you with such a deep impression that you spread the word of your enjoyment to a wider audi ence. Dinner is served!

A lton a A .D. 1614

Altona has a proud history dating back to 1614 and has been home to one of the oldest known public houses in Bergen. It represented the very centre of culture in Bergen for a period of time. During the second half of the 18th century, it was home to both Det Harmoniske Selskab and Det Dramatiske

Selskab, amateur musical and theatre groups respec tively. Today, the six-room basement building is once again a “public house”, with its beamed ceil ings in the two largest rooms and brick vaults in the remaining rooms, the traditional fireplace and new bar – this is an exclusive wine bar and brasserie.

But it’s the bar in the former hall of the chamber of commerce that really stands out, with its marble surfaces, glass walls and original wood carvings. We prefer to look to Western Norway rather than to foreign trends, and our ambition knows no bounds!

Towards the end of the 1990s Ekebergrestauranten was closed and left to dete riorate, until Christian Ringnes and Eiendomsspar bought the site and announced a largescale invest ment. Together with restaurateur Bjørn Tore Furset, they have now created a modern building that still retains all its classic features.

Gamle Raadhus, the old town hall of Christiania (now Oslo), was built by the deputy mayor Lauritz Hansen in 1641 with financial support from King Christian IV. Gamle Raadhus was originally built to be the city’s first town hall, but was later used as a fire station, church, private residence, high court, the cityʼs assembly rooms, a prison, Freemasonsʼ meeting place, restaurant and museum. The origi

nal prison cells have been preserved in the build ing’s basement and serve today as a wine cellar and banqueting room for up to 20 people. In 1856 the building was transferred to the restaurateur Matheus Helseth and a restaurant was opened on the ground floor. After many years in decline, Det Gamle Raadhus opened its doors once again in 1983, newly restored and with new owners.

DE HISTORISKE IS HELPING TO MAKE TOURISM MORE SUSTAINABLE! For generations, many of De Historiske’s member hotels and restaurants have sought to offer their guests a flavour of Norway’s history – ideally with local ingredients, cultural history and a distinctive style of hospitality. For our members to deliver on this, Norway’s brand as a tourism destination must nurture the country’s unique natural and cultural values. This is why cooperation in the tourism industry is important, and De Historiske has contributed to and is a signatory to the “Roadmap for Norway’s tourism industry”. The industry holds enormous potential for low-emission solutions, is labour intensive, touches on many economic sectors along the value chain, and can nurture Norway’s natural and cultural capital by shifting towards greener, cross-sectoral and experience-based hospitality. This is important for De Historiske, and our 100

hotels and restaurants enable our guests to experience architectural styles, historical buildings and local food, and enjoy friendly, genuine and inno vative hospitality. De Historiske’s members are representatives of both authentic experiences and genuine Norwegian traditions, and take pride in nurturing nature, culture and the environment of their home town. Our members work continuously to reduce food waste, develop menus in close collaboration with local producers and suppliers, exploit geothermal and seawater heating, offer their guests bikes to explore the local area, etc. This is sustainability in practice, and De Historiske has also been certified by Miljøfyrtårn – the Eco-lighthouse foundation – ensuring continuous development in the best interests of the environment.

MEMBERS OF SPECIAL EVENTS De Historiske offers meeting and function rooms that are perfect for smaller meetings, conferences, kick-offs, all types of company events, weddings and other private parties. “THE CULINARY ROUTE” – EAST TO WEST OR VICE VERSA For generations, many of our member hotels have had a clear focus on providing guests with “a good meal”. We want to show tourists travelling the roads of Norway that our country has so much more to offer in the way of food than hot dogs and hamburgers. We make use of the absolutely best local ingredients, the best local suppliers and aim to be perfect hosts, recounting the history of both the restaurant and the menu. Follow the “culinary route” and get to know the best of Norwegian food. The hotels and restaurants selected for the “culinary route” have been hand-picked using the following criteria; 110

THE “CULINARY ROUTE” – FROM SOUTH TO NORTH, OR THE OTHER WAY IF YOU PREFER ... Norway is one of the most elongated countries in Europe. Travelling from south to north, visitors will be met with many new impressions thanks to the great variations in landscape, weather condi tions and climate. The culinary experiences on offer are as varied as Norway is long, which is why De

112

Historiske is proud to present its second “Culinary Route” – from south to north. Using the best local ingredients, the best local suppli ers and aiming to be the perfect hosts, recounting the history of both the restaurant and the menu, De historiske hopes that the “Culinary Route” –

from south to north will offer visitors a range of experiences all the way from the mild climate of South Norway to arctic North Norway. For more information about the “The Culinary Route” see www.dehistoriske.com For criteria see page 110. As you travel from south to north (or the other way), you will find that every meal is delicious but different. The landscape varies and colours all your sensory perceptions along the way, and these are reinforced by the culinary delights served by our chefs, waiting staff and hosts. Bon appetit!

THE “CULINARY ROUTE” – WITH A FLAVOUR OF COAST AND FJORD In recent years fresh seafood has gained welldeserved recognition and popularity worldwide, making it especially exciting to be able to offer selected restaurants and hotels serving genuine topclass seafood – Norwegian seafood from the coast of Norway. Norway boasts extensive resources in our sea and coastal areas, resources which we

114

exploit by means of fishing and aquaculture. The resulting culinary experiences are based on worldclass ingredients. Norwegian seafood has on several occasions been used in the Bocuse d’Or World Cuisine Contest, and De historiske now includes celebrated kitchens along our lengthy coast which,

through the generations, have developed recipes to delight guests. Over time they have also taken new inspirations from other cultures and traditions, such that the exquisite dishes from sea and fjord served today offer culinary experiences reflecting the variety of Norway’s culinary culture. It is therefore with the greatest pleasure that De historiske invites travellers to enjoy our third “Culinary Route” – with a flavour of coast and fjord. For more information about the “The Culinary Route” see www.dehistoriske.com For criteria see page 110. Bon appetit!
