Amalia MorenoDamgaard

Amalia’s love affair

with cooking started where so many others do: in her grandmother’s kitchen. Hers was in Guatemala. “I still remember the flavors I grew to love as a girl,” Amalia says. “I remember the banana leaves, Guatemalan chiles, the cinnamon, loroco, chipilín, and all those native spices and flowers.” As an adult, Amalia immigrated to the United States for college and had a first career in international banking.

After earning an executive master’s degree in international business from St. Louis University, she graduated from Le Cordon Bleu. Later she founded Amalia–Latin Gourmet with a Cultural Flair (AmaliaLLC.com), a business designed to help others develop a better understanding and appreciation of Latin cultures through gourmet cuisine.

Amalia uses her culinary savvy and business skills as a platform to educate others about the cultural synergies in Latin America. For years, she has been delivering fun, cultural and culinary experiences to many Fortune 100 and 500 companies, nonprofits, historical societies, universities and schools, and others through custom events.

Worldwide traveling has further enhanced Amalia’s culinary and cultural perspective. During her second career, Amalia has supported many community-driven organizations through charitable donations of her time and skills and also co-founded Women Entrepreneurs of Minnesota (wemn. org), a nonprofit organization that fosters women entrepreneurship. Latin Gourmet with a Cultural Flair!

ARROZ NEGRO CON CHILE PIMIENTO Black Rice with Red Bell Peppers This is an attractive and delicious dish.

The black rice contrasts beautifully with the red bell peppers, and the mellow flavor pairs well with grilled meats or any of the Mayan stews found in Amalia’s Guatemalan Kitchen Cookbook. (See page 14 of this directory.) For a spicy twist, add chopped hot peppers to the mixture.

Serves 4 to 6 people

1 cup long-grain white rice 1 tablespoon canola oil 1/2 cup finely diced yellow onion 1/2 teaspoon minced garlic 1/2 cup julienned red bell pepper 1/2 cup finely diced Roma tomatoes 2 cups black bean broth and 1/2 cup freshly cooked or canned black beans Kosher salt and freshly ground black pepper

Adorno (Garnish) 1/2 cup thinly sliced green onions 1/4 cup red bell pepper strips (2 inches long), Sautéed.

1. In a medium skillet, sauté the rice in the oil with the onions, garlic, pepper, and tomatoes until the rice is well coated with oil (2 to 3 minutes).

2. Add the black bean broth and beans, then season with salt and pepper to taste.

Bring to a quick boil, lower the heat, and simmer covered until rice has absorbed most of the liquid (15 to 20 minutes).

3. Garnish with onions and pepper strips.

BISTEC Pan-Seared Minute Steaks with Onion and Tomato Bistec is the Guatemalan term for “beefsteak.” (The two words are pronounced about the same.) This is a terrific dish to make when you don’t have much time to prepare a meal. For a quick weekday menu, accompany the steaks with Guacamol Chapín (Guatemalan guacamole, or Güicoyitos con Mantequilla y Cebolla (steamed baby squash with onion butter), or Papitas a la Maggi (roasted spicy Yukon gold potatoes with Maggi sauce. All these recipes are in Amalia’s Guatemalan Kitchen Cookbook. (See page 14 of this directory.)

Serves 4 to 6 people

Four to six 3- to 4-ounce minute steaks Kosher salt, freshly ground black pepper 2 to 3 teaspoons canola oil

1 teaspoon canola oil 1/2 cup julienned yellow onions 3/4 cup thinly sliced vine-ripened tomatoes 1. Heat a medium skillet over medium-high heat.

2. Season the steaks with salt and pepper.

3. Add the oil to the hot skillet. Sear the steaks for 1-1/2 minutes per side and transfer them to a platter. Keep the steaks warm.

4. Adjust the heat to medium. Add the rest of the oil to the same skillet.

Sauté the onion until it’s translucent and medium brown (about 3 minutes). Add the tomatoes and sauté 2 minutes. Taste and adjust seasonings, if needed.

5. Top the steaks with the tomatoes and onions.

Did you know that there are two parts to a DWI case?

There is a civil part in addition to the criminal part.

-The criminal part of a DWI involves impacting your permanent criminal record, jail, fines, probation, mandatory chemical evaluations and chemical dependency programs, home monitoring, and even possible random urine/breath testing.

The consequences are very serious and can include driver’s license revocation, driver’s license cancellation, plate impoundment, mandatory ignition interlock, vehicle forfeiture and also impact the driver’s license record leading to high risk insurance and additional financial burdens.
