What’s Your Favorite? by Jenny King | Photo by David Berger Winter is prime viewing time to catch a glimpse of our feathered neighbors.

L

ast month we asked where you like to catch the sunrise? Your choices were Sunrise Rock, Rhodes Big View and Meditation Rock. You voted and your number one selection was the breathtaking Rhodes Big View. If you’re like many people, you tend to spend more time indoors when winter comes. But the colder months offer up some wonderful outdoor activities thanks to the opening of long-range vistas. Are you a feeder of birds? Do you love to sit at your kitchen table and watch the many varieties flock to the bear-protected feeding stations? If so, have you ever taken it a step further and tried bird watching in the field? Since there are many avid birders in our area and a very active chapter of the Audubon Society, you’ll find lots of support should you decide to take up this rewarding pastime. In speaking with local photographer and former owner of The Bird Barn Cynthia Strain, she had some great suggestions for the novice. Turtle Pond Road offers many locations to park and observe all types of flora and fauna. It follows Turtle Pond Creek and you can enter from the Highway 64 (the Franklin Road) across from

Van Hook Glade. Another way to access Turtle Pond Road is from the Dillard Road (Highway 106) near The Mountain Retreat and Learning Center. Horse Cove offers many of Strain’s favorite birding perches, particularly Rich Gap Road. She says, “Horse Cove has lots of open areas to see bluebirds, kingfishers, red shouldered hawks and lots of other good birds.” Rich Gap road can be accessed from Highway 28 (The Walhalla Road) and also from Horse Cove Road. The Highlands Biological Station is known for its plethora of plant life, and that makes it home to a wide variety of birds. Next time you hike in the Botanical Gardens, bring your binoculars and guidebook and jot down what you see. For more information on birding atop the Highlands Plateau, stop by Mill Creek Gallery to speak with Cynthia Strain and visit highlandsaudubonsociety.org. After your bird watching expedition, log onto our Facebook page and let us know what you found and which was your favorite spot.

Noshing with St. Nick by Wiley Sloan Santa Claus will visit Highlands United Methodist Church at 8:30 A.M. Saturday, December 12, to share breakfast with his friends, hear their whispered wishes, and pose for photos. Call the church office at (828) 526-3376 for reservations.

T

he excitement is mounting for children as they prepare to talk with Santa at Highlands United Methodist Church’s Breakfast with Santa. Make sure your children or grandchildren get their chance to tell Santa what they want under the tree. Bring them to breakfast at the Highlands United Methodist Church on Saturday, December 12, from 8:30 to 10:30 A.M. Everyone will have the chance to enjoy a delicious breakfast. After large stacks of pancakes with maple syrup the kids will be wired, but that’s just to be expected. A glass of juice or milk and a little fruit will bring them back to earth. Christmas wouldn’t be Christmas without your favorite carol. Join in making a joyful noise as folks young and old sing their

favorite songs. This is the perfect time to make tons of photos. Dress the children in festive holiday attire and snap away. Last year, some kids arrived in their holiday pajamas, others in holiday sweaters, and some young girls even sported ruffles and lace. This is just one big “come as you are party,” so dress comfortably. The suggested donation is $10 per family but don’t let that stand in your way if things are tight this year. Reservations should be made by calling the church no later than Monday, December 9 at (828) 526-3376. The church is located at 315 Main Street, immediately behind the Town Christmas Tree.

Christmas Classics EVENTS

by Wiley Sloan The talents of some of Highlands’ finest vocalists and musicians sparkle with the Highlands Community Christian Chorale’s Christmas Concert, 5:00 P.M. Saturday and Sunday, December 12 and 13 at Community Bible Church.

T

here’s no better way to get into the true spirit of Christmas than attending the Highlands Community Christian Chorale’s annual concert on both Saturday, December 12, and Sunday, December 13, at Community Bible Church. This year’s performance is entitled, “O Come, Emmanuel,” and it tells the story of the Advent of Jesus Christ through music. There’ll be a reception following the Sunday performance. The concerts will feature both Christmas classics, as well as newer compositions. Some of the selected songs include: • “Gloria in Excelsis Deo,” a modern piece composed by Mack Wilberg, one of the primary composers and directors of the Mormon Tabernacle Choir. This is a beautiful piece that invites listeners to begin the journey to Christ’s birth. • “O Magnum Mysterium,” a Latin text that’s been set to music by many of history’s greatest sacred composers. This particular

composition is is by Morten Lauridsen, a 20th century composer. • “Excerpts from George Frideric Handel’s ‘Messiah,’” one of the most beloved Christmas traditions. The chorale’s excerpts from this work will include selections for both soloists and chorus and classics like “Glory to God,” “There Were Shepherds Abiding in the Field,” and, of course, the “Hallelujah Chorus.” This year the Chorale is performing under the direction of Cody Turner, Worship and Arts Pastor at CBC. Turner received his Bachelor of Music in Church Music at Lee University. The chorale is made up of talented singers from across the Plateau. Their blend of melodic voices has long filled the halls of Highlands’ churches to honor God during this season of the year. This year’s performance will be the chorale’s 21st year. The singers practice from the Monday after Labor Day until the concert. Be prepared to share a small donation to help offset the cost of music.

Voices of the Mountains by Jenny King The Highlands Cashiers Players’ Holiday Program, a charming blend of readings and music, will be staged at 7:00 P.M. Thursday, December 17, at the Highlands Performing Arts Center.

T

he Highlands Cashiers Players have been delighting audiences with their annual holiday presentations for years. It’s a free program and a gift to the community, a way of saying “thank you” for its support. This year it will be held at the Highlands Performing Arts Center on Thursday, December 17 at 7:00 P.M. As has been their tradition in the past, the Players will once again offer a dramatized reading as well as special music. The reading is taken from Betty Smith’s novel, “A Tree Grows in Brooklyn.” It’s a poignant literary classic that tells the story of Francie Nolan and her brother Neeley, growing up in an impoverished neighborhood of Brooklyn, New York in the early 1900s. The music of this year’s Holiday program will be presented by the men and women of the new 40-voice regional chorus Mountain Voices. The group, composed of voices from Highlands, Franklin and Dillard, recently debuted at the Smoky Mountain Performing Arts Center in Franklin and is directed by Beverly Barnett and accompanied by pianist Arthea Brimmer. After the program, audience members are invited to enjoy refreshments downstairs in the PAC reception room. No tickets are required, so wear your best Christmas sweater and bring the family to the annual Highlands Cashiers Players Holiday Reading at the Highlands Performing Arts Center on Chestnut Street.

T

he children of the Highlands and Cashiers communities will stage a Christmas musical at 10:50 A.M. Sunday, December 20, at Highlands United Methodist Church. “The Journey of the Wee Red Cap” was written by Luke Osteen with music by Les Scott, based on a story by Ruth Sawyer Durand. It tells the story of a miserly Scotsman who gets a lesson on Christmas charity courtesy of a troupe of fairies and a magical red cap. “It’s such a charming story, and the children really inhabit their roles and the songs that adorn the narrative,” said Scott, the music director at HUMC. “This marks the 10th collaboration that Luke and I have produced and we’re developing a strong company of musical actors. In fact, we have a couple of performers who come all the way from China to participate in our summer productions.” The show is open to everyone in the twin communities. Although this production has been cast and the performers have been working on the music for months, Scott and Osteen are always looking for new talents. If you know a child who’d enjoy performing in the duo’s upcoming Summer 2016 musical, call the church office at (828) 526-3376.

Ridge Tops to River Bottoms Contributed by Madeleine Landrum For the students of Highland Biological Station’s fall semester, a stay in Highlands has been an in-depth education outside of the classroom.

T

he students in the Highlands Biological Station’s fall semester-inresidence program are wrapping up the semester. The program at HBS, held in cooperation with UNC-Chapel Hill’s Institute for the Environment and overseen by HBS Director Jim Costa and Associate Director Karen Kandl, has been going strong since 2001. The institute immerses students in their subject of study like no campus-based classes can. In keeping with the educational philosophy of biological field stations like HBS, teaching and learning here is all about getting up close and personal with the fabulously biologically rich region we live in, gaining firsthand experience with organisms and ecosystems. These students spend more time on the trail than in the classroom; in fact, from ridge tops to rivers, the mountain landscape is their classroom. This year’s Highlands-IE class of nine students arrived in midAugust and has been immersed in a full program of study that includes biogeography, conservation biology, GIS (landscape analysis), cultural

26 | December 2015 | thelaurelmagazine.com

history, and hands-on research projects. These projects are a highlight of the semester: students work singly or in pairs on an environmental issue or scientific question under the guidance of a mentor. The mentors represent organizations as diverse as the projects themselves – the Highlands-Cashiers Land Trust, Coweeta Hydrological Laboratory, NC Wildlife Resources Commission, US Forest Service, and more. The students also work on a group research project, which in recent years has been an in-depth analysis of a local aquatic system. This year they focused on the health and associated characteristics of the Horsepasture River, from the headwaters near Cashiers to just above the South Carolina state line in Gorges State Park. To learn more about these projects and meet the students, come join us on Wednesday, December 9th from 2:00 to 4:00 PM in the seminar room of the W. C. Coker Laboratory at the Highlands Biological Station. The students will give short presentations on the results of their individual and capstone research projects. Cheer them on as they conclude their research in Highlands!

T

he Mountain Top Ringers, the hand bell choir of the Highlands United Methodist Church, will present “Ring Christmas Bells” on Wednesday evening, December 16, at 6:00 P.M. Worshipers at the church’s 10:50 A.M. service will get a preview of the performance on December 13. The four sacred selections included in the Wednesday performance will be played for the congregation at that time. The concert will include a combination of traditional Christmas tunes like “Silent Night” and “O Holy Night” plus some avant-garde tunes not usually performed by hand bells. If you’ve never heard the hand bells, you’ll be amazed as they play the Shepherds’ Jubilee which includes “Hark the Herald Angels Sing,” “While by Our Flocks,” and “Angels We Have Heard on High.” Bring your singing voice with you. One segment of this concert will include a sing-a-long that will have you singing old familiar favorites like “White Christmas,” “Rudolph the Red-nosed Reindeer,” and others. The kids will especially enjoy hearing “The Chipmunk Song” played on bells. With only 11 ringers for this performance, the group may be smaller than normal but the talent is huge. Be sure to come enjoy this celebration of the Christmas season as the bells perform under the direction of Les Scott, HUMC’s Minister of Music. The church is located at 315 Main Street. T

he Friends of the Albert Carlton-Cashiers Community Library will celebrate their newly expanded bookstore with a party from 1:00 to 3:00 P.M. Friday, December 4. The gathering recognizes the hard work and generosity of the community and the Carlton Foundation – they’ve greatly increased the size of the Friends’ Bookstore for book display and storage and new equipment. More books can now be processed more quickly and the shelves displaying them will be much more user-friendly. The Expansion Celebration will feature a chili bar provided by the Friends corporate partner, Wendy’s, which, like the library, is also a community institution; and a scrumptious table of desserts. Bargains and specials will be a part of the day’s celebration. The Friends of the Library was founded in 1994 in association with the Albert Carlton-Cashiers Community Library to help contribute to the library’s day-today operations. Its outreach goes beyond fundraising and volunteering, as the friends are responsible for getting the word out to the people of Cashiers and the surrounding communities about the library’s activities as well as hosting and organizing many programs.

Dixie Barton

“Highlands’ Christmas” Remembered by Wiley Sloan Resident Dixie Barton’s memories of Highlands Christmases are mirrored in this year’s holiday celebrations.

T

hinking about Christmas in Highlands evokes memories of “True Americana” – maybe even makes you think of the Currier and Ives Christmas cards that your parents shared with their friends in the 50s and 60s. Long-time Highlands resident Dixie Barton fondly recalls her previous 25 Christmas seasons here on the Plateau. Dixie and her family enjoyed their home on Lake Rabun for 40 years when a short day-trip up the mountain to Highlands was a common occurrence. When the time came to escape the rigors of Atlanta, Dixie decided that she would like to move her specialty linens business (vintage and imported items for table, bedroom and bath) to Highlands. A quaint little house nestled in the rhododendron at the end of Main Street caught her eye. Since 1990 Dixie has watched Highlands evolve from the sleepy little hamlet that it was to the vibrant, tourist mecca that it is today. All seasons in Highlands are “a dream,” but the Christmas season with its Community Christian Chorale performance, holiday readings and especially the Olde Mountain Christmas Parade are

especially memorable. Dixie told me, “I love to see all the families-especially the youngsters – as they soak in the sights and sounds of Christmas. Years ago the school band rang out tunes of Christmas while floats from various churches and businesses joined the Tooth Fairies, the Beagle parade, and a myriad list of local entities to parade down Main Street.” For the past 18 years Dixie has danced with her friends in the Mountain Garden Club’s widely acclaimed performances. Yes, their choreographed, costumed routines are parade and YouTube favorites. The children watch in awe as the camels and Wise Men ring in the season while they clamor for Santa and Mrs. Claus to appear. Vintage Thunderbirds sparkle in the sunlight, sandwiched between the entries from churches, businesses, and numerous non-profits. The first Saturday of December can bring crisp temps, sometimes even a few flutters of snow. The weather is irrelevant. What’s important is the family is together and you are in Highlands. The Christmas season has begun. Build Christmas memories with your family here in Highlands.

THE ARTS

Living His Dream by Donna Rhodes

For artist John Philips, glass is a kaleidoscopic miracle that never fails to beguile.

It’s funny how things get started,” says John Phillips, owner of Fire and Light Glass Studio in Otto, North Carolina. “We lived in an older home in Duluth, Georgia, and decided we wanted some stained glass windows. So in 1981 I took a stained glass class. I got addicted, so much so, that when we moved to North Carolina, I set up a glass-making studio, Fire and Light.” Today he does mostly glass fusing. “In 1983 I took a fusing class at Arrowmont,” he says. “After that class everything I saw was in the context of glass – colors, melting possibilities, glow, shine, and texture. I was enraptured with glass surfaces and the depth they convey.” Doing led to teaching. Now he has a steady stream of students working at all levels making ornaments, plates, vessels, sculptures, jewelry, and whatever items the medium will allow. Phillips has 13 kilns ranging from a small jewelry kiln to one that will accommodate three-by-four feet. Temperatures get up to 1,600 degrees. When I asked how many blisters he had, he replied, “None.

40 | December 2015 | thelaurelmagazine.com

You learn real fast not to touch hot glass.” Phillips loves every aspect of glasswork. He says, “I still get a rush when I see it. When different colors mingle you get different effects. When it’s hot it’s one color. When it cools, it’s different. When you open that kiln every morning it’s like Christmas time.” You can see it in his eyes and hear it in his voice…he is one of those lucky people who is living his dream. Phillips is available to do all kinds of custom art glass. He often works with designer Debra Green of Franklin for special installs. Visit fireandlightglass.com to see his work or go to his FaceBook page, fireandlightglass, to see his students’ work. See what you can do, too! You’ve probably passed Fire and Light Studio dozens of times on your way to Atlanta. The address is 9788 Georgia Road, Otto, North Carolina, 28763. Winter hours are 10:00 A.M. to 5:00 P.M. He’s closed Wednesdays and Sundays. The studio can be reached at (828) 349-4505.

Licensed to Kiln Contributed by Bonnie Potts For ceramicist Kristin Edwards, The Bascom is an exhilarating classroom for exploring her passion.

H

ighlander Kristin Edwards is a wife, a mother, and one amazing potter. Her first began pottery classes in college and has continued them since then. When The Bascom opened its new facility in 2009, Kristin was thrilled with the state-of-the-art ceramics equipment, and even more impressed with the instructors teaching at The Bascom. For the past six years, she has immersed herself in the studio, working independently during open studio, taking classes and workshops throughout the year, and volunteering in the studio once a week. “I love the studio atmosphere,” she said. “There are lots of people with different backgrounds and techniques and we all learn from each other. From the visiting artists, to the resident artists, to the ceramics interns, to the new or visiting students…we all present new ideas with our work.” Frank Vickery, Director of Ceramics at The Bascom, praises Kristin for her hard work and dedication to ceramics, saying, “She’s a fantastic and exemplary student. Her work has improved a great deal over the years and I’m proud of all she has accomplished.”

42 | December 2015 | thelaurelmagazine.com

The Bascom’s Ceramics Program has expanded a great deal over the years. An impressive number of visiting instructors teach specialized workshops throughout the year, each widely recognized for his/her work within the industry. An open studio model was established in 2014, allowing students to work independently on their own projects at their own pace. And in 2015, a grant from the Coastal Community Foundation allowed The Bascom to implement the Resident Artist Series – weekly classes taught by the Ceramics Resident Artists; each class focusing on the basics of ceramics. When pressed to name one of her favorite classes, Kristin laughs and says, “All of them. Sectional Throwing with Frank Vickery stands out as one of my favorites. I’ve taken the class three times already and will be taking it again next year. You learn so much in that class and it’s exciting to see how tall you can build your ceramic pieces.” The Bascom’s Dave Drake Studio Barn offers classes and workshops throughout the year in beginning, intermediate, and advanced levels. Visitors and new students are always welcome and financial aid and scholarships are available. To find out more, please visit www.thebascom.org.

Art League’s THE ARTS

Triumphs Contributed by Cherie Faircloth

Thanks to a rich relationship with its communities, the Art League of Highlands-Cashiers enjoyed a smashing 2015 season.

T

he Art League of Highlands-Cashiers ended the 2015 season with a bright outlook for 2016. A highlight of ALHC is the Artist Series at The Bascom, running from April through October. Each month, an ALHC artist presents completed works with a presentation on the medium used. This is a free event with a wine and cheese reception, plus the opportunity to network with ALHC and Bascom artists and guests. Painter Mike Price, textile artist CynDe Copple, bronze sculptor John Tolmay, mixed media artist Norma Hendrix, and folk artist Steven Kelly were presenters in 2015. The Bascom gave a tour of the Main Gallery, open studio and pottery shed. Featured exhibit was the work of innovative light artist Steven Knapp. ALHC artists presented their Summer Colors Show in July at the Sapphire Valley Community Center, under the direction of Peggy Marra. October’s Fall Colors Show was held at Highlands Civic Center. Show chair Zach Claxton reported improved sales this year and higher than average donations to the ALHC from patrons. Each summer The Bascom, under Susan Nastasic’s direction, provides a free program for the children. Art League members donate time plus material and collaborate with Susan in an effort to expose the children to a variety of studio arts. These projects are displayed at Highlands Civic Center. To help offset the expenses of these costs, donations can be made to the Bascom year-round to help make this Summer Children’s Program the great success that it is. As the 2015 season ends, so does a long relationship with Creekside Restaurant and ALHC artists who have exhibited their work on the popular dining spot’s walls for many years. Gratitude goes to Creekside owners Bob and Sandra Carlton for their support of ALHC artists. As Creekside closes, ALHC welcomes a new spot for continued community art exhibits in the Highlands-Cashiers area. ALHC President Patty Calderone, owner of Calderone Fine Art Gallery, is pleased with the outlook for ALHC in 2016. “We have a great group of new board members and volunteers and we look forward to a continued wonderful working relationship with The Bascom,” Calderone said. “Membership has increased and our presentations are unique and exciting, bringing art into our community.” Be sure to catch up on ALHC news in the Laurel Magazine, Facebook and artleaguehighlands-cashiers.com.

THE ARTS

If You Weren’t Smitten Before by Donna Rhodes | Art of Diane Kilgore

S

Smitten’s 2016 lineup showcases the dazzling talents of a quartet of exciting artists.

mitten is celebrating four years of success. 2016 promises to be the best year ever with a slate of fresh artists, scouted from all over the Southeast. Here are teasers for four outstanding members of the new Smitten family. Painter Diane Kilgore from Greenville, South Carolina, is the bird girl. Whether cardinal, crow, or canary her personable birdies have a song to sing and a story to tell. She says, “I have painted thousands upon thousands of birds and I never tire of them. There is something about being surrounded by a wall full of birds that is soothing, satisfying, and exhilarating.” Her birds were tweet before tweeting was cool! Jeweler Elizabeth Haskins works with 10 and 14K yellow gold and sterling. Jeweler’s bronze is also a favorite. It has the beauty of gold without the cost. Excellent craftsmanship and keeping current with trends are the keys to her success. She started out with complex vessels and utensils. Over the years people have pared down to simpler lifestyles and it reflects in the clothing and accessories they wear. She adapted her designs to what worked with fashion and the modern lifestyle. Ask about her Dreaming Tree line of jewelry. Painter Daphne Lisenby of Rabun, Georgia, and her husband were

48 | December 2015 | thelaurelmagazine.com

professional photographers before she took up painting later in life. She started taking workshops and wanted to develop a style. Asking around, artists told her it took decades to do that. She laughed and said, “I don’t have that much time!” Turns out she didn’t need a lot of time, for in the past five years she had established a following from here to Atlanta. Her animal subjects – goats, cows, chickens, lambs, and other beasties – are quirky and charming, guaranteed to warm a room and capture a heart. Harry Hearne of Brasstown, North Carolina, is a potter extraordinaire. He has been working out of his own Turning Point Clay Studio since 1990. His specialty is raku firing, which he teaches at Arrowmont and John C. Campbell Folk School. As a traveling teacher, art show exhibitor, kiln builder and raku firer, life can be physically challenging, but Harry does it all with style and Grace (Gracie is his newest kiln, and yes, he names them!) winning peer recognition and awards all along the way. So stop in for a preview of Smitten’s latest, newest, hottest for 2016! Prepare to be dazzled. Hours are 11:00 A.M. to 6:00 P.M., Monday through Thursday; 11:00 A.M. until Friday and Saturday; and Sunday, 1:00 to 5:00 P.M. DINING

The Orchard by Luke Osteen | Photo by Marjorie Christiansen

F

irst things first – if you choose to dine at The Orchard during this “off” season, make reservations! My sweetie and I sauntered in at 7:00 P.M. on a Friday. It was a Friday in November, we were vaguely worried that we’d be the only diners in this rambling 100-year-old building. The first clue we had that our lonely conversations wouldn’t bounce around the walls like a pinball was the clot of people milling around on the porch, sharing a drink and a bit of laughter. We bobbed and weaved our way through the throng in the foyer to the front station where, to his credit, co-owner Travis Boswell did not roll his eyes when I hesitantly (I’d left my “Big Man in a Little Town in November” confidence on that front porch) said, “Table for two, please.” Chad helpfully gave us a reservation for 8:30, so we galumphed around Cashiers for an hour and a half, which is about as awkward as it sounds. But here’s the thing – a meal at The Orchard is worth a 90-minute wait. First of all, the restaurant is loaded with charm – this restored farmhouse embraces its storied heritage, adoring its walls with all sorts of ephemera wandering from the 1880s all the way through the 1940s. The resulting effect is cozy country casual, as welcoming as Cashiers has always been to its guests. The dining areas (there’s no central dining room, another nod to its downhome heritage) are perfectly suited for easy chat. Every time we’ve dined at The Orchard, every time, there’s been a raucous party of diners who aren’t shy about sharing their laughter and boisterous conversations. In our experience, this adds to the freewheeling charm of the place and it’s still possible to enjoy whispered intimacies with a loved one. But none of this relentlessly upbeat atmosphere would matter if The Orchard didn’t deliver on its menu. No doubt influenced by the rustic feel of the place, Tricia started with Fried Green Tomatoes – a down-home selection served at a thousand diners across the South since the 1920s. A delicately seasoned breading and absolutely irresistible bacon-horseradish dipping sauce elevated this

52 | December 2015 | thelaurelmagazine.com

venerable chestnut into something magical. Remembering The Orchard’s well-deserved reputation for seafood (yes, I know, we’re about a million miles from the coast) I went with the Cullasaja Ahi Tuna Crisps – a heavenly blend of soy/sesame marinated Ahi served on crispy wontons nested with a seaweed salad. Tiny pearls of wasabi played arpeggios on my taste buds with every bite. Take your time to get your money’s worth out of this sensually satisfying dish. It’s meant to be savored. We dove into our entrees – Dark Cove Chicken Ravioli for her; Hawkins Venison Filet for me. I have an undying prejudice against Ravioli that all too clearly reveals my solid middle class upbringing – an inimitable orange-white abomination was listlessly plopped onto my tray every Wednesday from kindergarten through eighth grade. What a tragic waste of the human spirit. But when Tricia shared her dish with me, it was an immediate love – this stuff was transcendent. A happy confluence of fresh (The Orchard was early in its commitment to locally-grown/raised ingredients) herb-roasted chicken, housemade spinach and goat cheese ravioli, and autumn harvest vegetables, tossed in a white wine grape tomato sauce. It drove a stake through the heart of Chef Boyardee and I was redeemed. Still, I made the right choice with my dish. I’ve had a mixed record with venison – sometimes the inherent gaminess is truly overwhelming. It was a carefully constructed dish of Applewood smoked bacon-wrapped venison loin filet that’s been rosemary seared and topped with brie cheese, caramelized apples, and a port wine reduction. I can’t imagination a more brilliant anatomization of the flavors of an autumnal-winter country dish. Each bite was a celebration. Well, once again I’ve run out space. Let me throw this in just before I’m cut off – Flourless Chocolate Torte and Pumpkin-Pecan Pie. Trust me! The Orchard is located at 905 Highway 107 South in Cashiers. Reservations are a must, unless you want to look like a blooming idiot like me – (828) 743-7614.

Visions of

Sugar Cookies by Jenny King

To relieve holiday stress, the extremely patient and wise Mrs. Claus recommends these cheer-inducing cookies.

W

hen you think of Christmas you no doubt picture Santa Claus; but what about longsuffering Mrs. Claus? Surely, she deserves to be appreciated. Does she even have a first name? Imagine her husband slaving away all year with no one to help but guys with pointy ears. He’s not one to ship his work to the South Pole where labor is cheaper (those blasted penguins will do anything for a few fish) so he comes home at the end of the day with complaints about backaches and labor disputes. Mrs. Claus has learned, over the years, how to bring a dimpled smile to her hubby’s face. And

that’s with homemade cookies. His little round belly has enjoyed a few too many of the sugary treats, but who wants to see a skinny Santa? Mrs. Claus has several favorite cookie recipes in her kitchen safe but she always seems to go back to this traditional Sugar Cookie. Ingredients: 1 cup Butter 2/3 cup Granulated Sugar 1 Egg 2 ½ cups sifted All-Purpose Flour ½ teaspoon Salt 1 teaspoon Vanilla Extract Directions: Cream together butter and sugar. Beat in the egg. Combine and add flour,

54 | December 2015 | thelaurelmagazine.com

salt, and vanilla. Chill for 3 to 4 hours before rolling and cutting into shapes of your choosing. Preheat oven to 350° F and bake for eight to 10 minutes or until slightly colored. Decorate with sprinkles and other decors prior to baking. If you want to impress the elves, use the following Royal Icing recipe: Ingredients: 4 Tablespoons Meringue Powder scant ½ cup Water 1 lb. Powdered Sugar ½ to 1 teaspoon Light Corn Syrup A few drops of a Clear Extract (Lemon, Almond) if desired

Directions: Combine meringue powder and water and beat until foamy. Sift in powdered sugar and combine. Add corn syrup and extract and beat for about five minutes until icing is glossy and stiff peaks form. Cover with plastic wrap touching the icing or divide and tint using gel paste food colorings. Mrs. Claus suggests you check out some online instructional videos for tips on decorating sugar cookies with royal icing for the real “Martha Stewart” look. Yes, Mrs. Claus has joined the digital age and, with her husband working all the time, she admits to spending way too much time updating her Facebook profile.

The Etiquette of Corkage DINING

The intricacies of outside bottle etiquette shape a restaurant’s corkage policies.

N

Curt Christiansen, Wine Navigator Madison’s Restaurant, empiricon@hotmail.com

56 | December 2015 | thelaurelmagazine.com

ever has a term been more misunderstood than the use of “corkage.” A frightening number of people believe that corkage or corkage fee is a charge to remove the cork from an outside bottle of wine. Corkage is a fee to recoup the revenue lost to an outside bottle, four to five drinks or $35 to $50. For a restaurant that’s a significant loss. We all have special wines at home that we would like to enjoy on a night out. There are a few steps to make your experience, pleasant and hospitable. Inquire ahead, many restaurants do not accept outside wine. In many cases they may not be legally permitted. Etiquette dictates that you do not bring a wine that the restaurant already stocks. When bringing an outside wine, leave it with the Maître d’ or the Host. There is no universally fair corkage fee as they can vary widely. If it is above your comfort level you may want to enjoy your wine at another time or place. Also, buying a wine from the list does not recoup the loss of revenue from the outside wine, so don’t expect to have the corkage waived. The bottom line is that the only place you can drink for free is at home, a favorite place of mine to enjoy a special wine with friends. Drink well, Curt

F

or the past 88 years the Highlands Biological Station has fostered research and education focused here in Highlands. Each summer hundreds of students come to Highlands to learn more about this rich and diverse environment. Here are a few of the many excellent projects that were funded by the Highlands Biological Foundation and conducted here in Highlands this summer: Damien Wilburn, a recent doctoral graduate from the University of Washington, examined the connection between plethodontid salamander fertilization proteins and human fertility problems. In America, approximately 12 percent of couples suffer from fertility problems, and more than 10 percent of cases have no known cause. Damien’s research uses state-of-the-art molecular and biochemical techniques to identify fertilization proteins between species of salamanders. The results of this research may provide insights into mammalian fertilization, which could lead the development of therapeutics for treating infertility in humans. Kara Jones, a Ph.D. student from the University of Kentucky, spent her summer collecting and examining the genomes of Desmognathus salamanders. Despite all of our modern technological advances,

64 | December 2015 | thelaurelmagazine.com

very little is known about the genetics of southern Appalachian salamanders. Kara’s goal is to determine ways to overcome these difficulties so we can start to answer fundamental questions about salamander evolution, especially here in the salamander capital of the world. Highlands is an incredible area for many reasons, one of which is the sheer amount of plant and animal diversity. This diversity, due to our unique elevation and precipitation levels, brought Ph.D. student Michelle D’Aguillo here from Duke University. Michelle came to Highlands to study the germination ecology of a native bluet along an elevational gradient. Seeds have an incredible ability to detect changes in the environment. This information signals to the plant whether to germinate or remain the soil until more favorable conditions develop. Knowing the environmental conditions that cause germination help us understand how important the seed stage of plant life cycles is for survival, growth, and plant distribution. Please consider supporting important scientific research in Highlands by making a contribution to the Highlands Biological Foundation at highlandsbiological.org.

Above All, Bee Kind VENTURE OUT

by Donna Rhodes Colony Collapse Disorder is not sparing stressed local bees. A committed public can help reduce the toll.

I

n the November issue we reported on the alarming disappearance of honeybees. In this issue we take a first-hand look at what’s happening to bees in our own back yards. Geared up in overalls, gloves, hats, and veils, bee farmers Kenny and Kathy Hayes, Laurel Managing Partner Marjorie Christiansen and I set out for the Hayes’ apiary (the bee yard). But the sweet adventure turned bitter the moment we pried the lid off the first hive. The frames on which bees construct the familiar hexagonal honeycombs were empty except for a few wax beetle larvae that took over after the colony vacated. There were no dead bees in the area. No evidence of foul play. They simply vanished. Worker bees can’t last more than 24 hours without their hive. So where did they go? Three months prior the hive had produced a bumper crop of wildflower honey. What in the world happened? The second hive revealed the same devastating news, though a few bees buzzed the box, perhaps confiscating the honey left in the vacated structure, taking it back to the third and last hive. When we pulled the lid off that hive there were plenty of bees (we all breathed

66 | December 2015 | thelaurelmagazine.com

a collective sigh of relief) but there was no harvest honey. Was this in the process of suffering the fate of the other two? The Hayes started out with eight hives a few years ago. Three remain. And after this revelation, only one is viable…maybe. When Kathy saw the first empty hive, she teared-up and moaned, “CCD.” CCD (Colony Collapse Disorder) is ravaging the bee industry. She’d hoped living in the rural countryside of Franklin would be safe, but bees fly a five-mile radius. Somewhere in that radius the bees were collecting tainted nectar. A century ago, American farmers grew multiple crops – corn, wheat, tomatoes, potatoes, etc. Today, agriculture has become monoculture. Farmers plant thousands of acres of one crop. This makes hives dependent on a single, pesticide-loaded crop for their existence. There is hard evidence that systemic pesticides are the CCD culprit (see last month’s article), but the EPA is slow to act. What can we do to reverse this deadly trend? Write your congressman. Read up on CCD. Buy local, organic products. Plant a garden. Raise your own bees. Reduce pesticides in your yard. Donate to bee preservation organizations. Start a dialog with friends. Spread the word.

uring the winter months our resident avian friends – the Titmice, Dark-Eyed Juncos, and Carolina Chickadees that live around and amongst us – become more easily seen and appreciated. With branches bare from the fall, they are more visible in the trees. If you have a bird feeder they become frequent visitors. Suet attracts woodpeckers of all sorts; sunflower seeds draw a large variety of other grateful diners. Like people, some of whom are seasonal and some permanent residents, some birds come or go in the winter months and others just stay and brave the weather. The many varieties of Warblers and our numerous Ruby-Throated Hummingbirds migrate south for the winter, some following the flyways to destinations in the Caribbean and South America. Some northern birds who summer in Canada and Alaska migrate only as far south as Western North Carolina. Pine Siskins fall into this category. Winter residents of the Highlands Plateau include over 40 species. Some of the most common have already been mentioned. Others include Wild Turkey, Mourning Dove, Blue Jays, American Crow,

68 | December 2015 | thelaurelmagazine.com

White-Breasted and Red-Breasted Nuthatch, Eastern Bluebirds, Song Sparrow, Purple Finch and American Goldfinch, and Eastern Towhee. Some waterfowl also winter in our area – Mallard, Bufflehead, Hooded Merganser, Canada Geese and other similar species. Mirror Lake near Highlands is a good place to sight some of these colorful and highly visible birds. Our feathered neighbors are more visible in the winter but less likely to be heard. Without the ongoing mating and nesting activities that characterize the spring and summer months, there is less need to defend territory or woo through song the females of the species. There is also less of a need to associate only with one’s own kind; winter flocks tend to be collections of mixed species of birds. by Donna Rhodes Hogs and wild, wild women were a threat to Highlands’ bucolic social environment.

I

t’s almost New Year’s Day, 2016. Roll back to New Year’s Day, 1884, when a new city ordinance went into effect. It was one of many as Highlands transitioned from a “boysterose” town, as one resident put it, to a lawful municipality. The ordinance read: “That any hogs found at large in the town of Highlands on or after the first day of January, 1884, shall be taken up by the Constable, or his Deputy, and a fine of twenty-five cents be levied on each hog and ten cents additional for each day they remain unclaimed.” Imagine hogs running amok in Highlands today. At an elegant downtown affair the waiter might say, “Pardon me sir, care for some cheese with your swine?” Sheds a different light on the term hog wild, doesn’t it? It wasn’t just the hogs that accosted people and property downtown. Sometimes it was the wives. Think roller-derby-mule-skinners in calico and sunbonnets. Helen Hill Norris tells the tale of two bad boys who’d run afoul of the law and wound up in the clink. Their spouses burst into the jailhouse the next day, one totin’ a double-bitted axe slung across

her shoulder and the other, a double-barreled shotgun. “Shotgun Sadie” ordered the husbands to stand clear, and she blasted the cell door hinges. “Axe-handle Bertha” finished the unhinging with one fell swoop. They made their leisurely escape, no officials brave enough to tackle extremely well-armed biker babes. They marched past Mayor O’Farrell’s drug store. Doing his duty, the mayor politely advised them they had broken the law. They momentarily halted, no intention of surrendering, and one of the women sharply snapped, “You’uns can just leave our menfolk alone. We women up here tend to our men ourselves.” And I’ll just bet they did. I wonder if there is prime time slot available for The Real Hogwives of Highlands. If you want to know more about “Macon bacon,” go online to www. highlandshistory.com or email Ran Shaffner at highlandshistory@nctv. com. Inquire about his book, “Heart of the Blue Ridge.” Museum visits will resume in late Spring 2016.

Cornelius Zepher Neal Zachary HISTORY

Contributed by Jane Gibson Nardy, Historian, Cashiers Historical Society

T

he October issue of The Laurel contained an article about Neal Zachary’s tombstone in the Upper Zachary Cemetery in Cashiers which was lacking his date of death and a plea was made for help in learning that death date. Just a few days after the October 1 publication hit the new-stands, a reader phoned and provided an answer which will now enable a stone-carver to add Neal’s death date of September 29, 1952 to Neal’s tombstone. An impressive amount of research had been undertaken on Neal and the thick package that arrived soon after the phone call contained the following documents: Neal’s death certificate; his wife Bessie’s death certificate; Neal’s World War I Draft Registration Card; and an Ancestry. com four- page fact sheet for Cornelius Zepher Neal Zachary. Wow, what a name! I suspect that “Neal” was actually the nickname for Cornelius.

74 | December 2015 | thelaurelmagazine.com

Neal Zachary at Camp Merrie-Woode

Neal’s parents were identified as D. Woodford Zachary and Mary V. Mollie Hooper so my folder on Woodford Zachary, youngest son of Col. John A. Zachary, was quickly pulled out of the filing cabinet and I saw that David Woodford Zachary, nickname “Tang,” was indeed the father of Neal. Reading decade old emails from Woodford Zachary descendants led me to a new conclusion about Neal’s life – it wasn’t only sad at the end but it was also touched by sadness while he was still a boy as his father died when Neal was just two months old. Therefore, Neal and his sister, Sophie, were raised by their mother, Mollie Hooper Zachary, the daughter of Alfred Monroe Hooper. The picture illustrating this article shows Neal in his overalls with one of his dogs on the grounds of Camp Merrie-Woode. The years Neal spent working at the girl’s camp were probably the happiest days of his life.

HOMES & LIFESTYLES

A Stay and Play Chalet by Wiley Sloan This cozy home is packed with charm and all sorts of elegant touches, adding up to a life of ease and genteel comfort.

D

o you remember as a child rushing down the stairs on Christmas morning to see what Santa had brought you? Along with the gifts that you had told Santa about, there’d be a couple of surprises that made your eyes twinkle with delight. This month’s Home of Distinction is a surprise – not one of the larger, estate homes of our area but a smaller chalet nestled in the woods, just a short five minutes from downtown Highlands. The front porch overlooks rock steps that meander down the gently-sloping hillside through a garden filled with native plants to guest parking below. Through the frosty mist of a winter morning you can see the mountain ranges of South Carolina in the distance. Glowing embers in the fireplace that’s shared by Living Room and Master Suite chases away the chill of a winter morning as the invigorating aroma of coffee nudges you awake. Shards of sunlight slither across barren limbs to tip-toe across the home’s hardwood floors. Your guests are stirring slowly this morning, too. Dinner was a blast as team rivalries sparred around the dining table. With only

76 | December 2015 | thelaurelmagazine.com

six people, could there be no common team favorite? The howls of laughter still reverberate up to the Loft Bedroom at the top of the spiral staircase. The compact kitchen with its tile backsplash covering one wall turns out some surprisingly inventive meals. Highlands’ temperate weather finds you on the home’s screen porch and patio much of the year. Throw something on the grill as you discuss the topic of the day “out back.” Mountain vistas in the distance may cause your friends to lose focus of the conversation. Whether here for a short weekend or a longer escape from the hub-bub of the city, this three bedroom, two bath chalet is the perfect abode. There’s a lot of pizazz packed into this small package. A breeze to maintain, it welcomes you after a day of mountain adventure. Cozy, filled with charm; ample without being overly burdensome, this chalet is the perfect home for people of all ages – the young couple starting out, the empty nester, or the couple who seeks a hide-a-way. Priced at less than $169,000 including furnishings, this home won’t last long. Contact Tammy Mobley at Highlands NC Realty at (828) 524-5420 or e-mail her at msmobley@aol.com for more information.

Hell, Fire, and Stumpy Cigars by Donna Rhodes Donna’s granddad wasn’t Ward Cleaver, but he was handy for unforgettable life lessons.

M

y granddad had a trademark – a half-smoked cigar dangling from the corner of his mouth. It was always there, a stubby thumb of a thing. It was rarely lit, though ash burns in his ties and suits told the real tale. He was superintendent of the Piedmont and Northern Railroad in the Carolinas. A bear of a man, he was not to be messed with. But he also had a compassionate side. Whenever there was a train wreck, they’d call Gramps. He’d drive to the boonies, sometimes in the middle of the night to sort things out. More often than not, there’d be a bonanza of damaged consumables such as canned food, paper products, etc. For practically nothing he could load some of the so-called bad-order into the trunk of his car to bring home to his family. Our toilet paper always had a kink in it. He kept a few items to give to the needy. I watched him pull over many a time, open up his trunk, and let the poor take what they could use.

He lived in Greenville, South Carolina, home of a famous conservative Christian university. One day a college student was walking along the road in the rain. Gramps pulled over and offered him a ride. This was one of the times the stogie was lit. With the windows rolled up the car was a smoke-filled cavern. The student climbed in, fanned at the miasma, and launched into a sermonette on the evils of smoking. Gramps listened a mile or two, puffing away. The student summed up his hellfire oration with this line, “And if God had meant you to smoke, He’d have put that cigar in your mouth when you were born!” That did it. Even though it was now a downpour, Gramps pulled over to the shoulder, exhaled a billowing cloud of smoke enveloping the student as he reached across him and opened the passenger door. He leaned back, stuck the stogie between his lips, and said, “Yep. Well, I reckon if God had meant you to ride, He’d have put wheels on you.”

Christ Anglican Church by Wiley Sloan One of the area’s newest churches, Christ Anglican Church is alive with a spirit of community and outreach.

C

ompared to many of the other Christian churches in the Highlands-Cashiers area, the Christ Anglican Church, which meets at 464 U.S. Highway 64 East in Cashiers, is a youngster, having been organized in 2004. The congregation is led by Father Jim Murphy who migrated to our area in 2009. This family of God is part and parcel to the 80 million member strong worldwide Anglican Communion with its primary focus directly upon the teachings of Jesus Christ. Many Anglicans in our region have worshipped with other denominations over the years due to the lack of an orthodox Anglican option in our area, until this group was organized. Church members gather at their Cashiers facility from locales ranging from Highlands to Sapphire, from Glenville to Lake Toxaway, from Balsam to the South Carolina upstate, as well as from Cashiers. Needless to say, these faithful folks are dedicated to make the drive each week to worship with one another and to share their faith. Like most churches in our area, the congregation has its largest attendance during the summer season when worship can see up to 110 participants on a busy weekend. Winter crowds, consisting principally of the hardy year-round residents in Macon and Jackson counties, are a bit more intimate – usually running from two to three dozen attendees. Christ Anglican is liturgically-oriented, mission-minded with a dedication

80 | December 2015 | thelaurelmagazine.com

to discipleship. While they collaborate with other area churches to fill local needs, this small congregation has a big heart and a larger vision as they reach out internationally with missions in Africa, Western Asia, Eastern Europe, and soon to be, Southeast Asia. The congregation is excited to see the progress being made to their building. Recent renovations include a new Fellowship Hall, kitchen, entryway and restrooms. During the winter-spring of 2015-16 they will expand their worship space. If all goes well they will worship in their renewed 150-seat sanctuary soon after Memorial Day 2016. This is really exciting for a congregation who for years had worshipped at diverse places such as local homes, the Highlands Community Building and in shared facilities at the Whiteside Presbyterian Church. Father Murphy and all the members of the congregation invite everyone to come worship with them. Services include a warm season schedule of 8:30 A.M (Traditional, said) 1928 Prayer Book Service; Christian Education (Sunday School) at 9:30 A.M.; and a celebrative Holy Eucharist (Family) service (including music) at 10:30 A.M. There is also a regular Monday Evening Bible Study & Supper in private homes at 6:00 P.M. each week, plus other studies and services on occasional basis. Please call the church for more invitations (828) 743-1701. The cooler season schedule is the same, save for the suspension of the 8:30 A.M. service from November through April.

The Debt Dilemma HOMES & LIFESTYLES

Contributed by William Zoellner Advisor at Wells Fargo Advisors in Highlands at (828) 787-2323.

M

any people wonder if they should pay off their debt as quickly as possible or invest their money, letting debt payments run

their course. The answer depends on whom you ask. Theories about balancing investing with debt vary widely. Some financial experts say freedom from debt is the most important goal. Others say it’s more about the math: Your money should go toward investing if your investments earn a higher rate of return than your debts cost you. Still others focus on the emotional aspect: how comfortable are you with a certain level of debt? Neither one nor the other. Better yet, perhaps, is a balanced approach to wealth management. If you’re like most people, you’ll need to manage finances for both present and future needs. That means paying off some debt today while simultaneously investing with an eye on the future. Although your decisions should

82 | December 2015 | thelaurelmagazine.com

take into account your own needs and circumstances, consider the following guidelines for handling debt in light of investing goals: Save for a rainy day. Before paying down debt (beyond required payments) or settling on an investment strategy, make it your first priority to put funds aside for an emergency reserve. We recommend six months or more of living expenses; an absolute minimum is three months’ worth. These funds should be in traditional savings or very short-term, highly liquid, non-volatile investments. By contributing to a longterm investment plan as early as possible, you may set yourself up for a brighter future. If paying down debt is also a priority, you’ll want to examine your personal budget to decide how much to direct each month toward investing and how much toward

debt repayment. Prioritize your debts. With an emergency fund in place and your investment strategy up and running, putting any extra money toward your debts is also a smart way to go. But how do you decide which debts to pay down first? One approach is to start with the smallest debts first to eliminate at least some of your debt burden and interest payments in a timely manner. It also makes sense to pay off high-interest debts like private student loans and credit card debt more quickly. Federal student loans and mortgages might be lower priorities, because their rates are often lower and their terms are longer. Vehicle loans might fall somewhere in the middle. Tax considerations might also come into play.

A Romance

with Reading by Jenny King Celeste Bittner’s peripatetic life has brought her to the shelves of the Albert Carlton-Cashiers Community Library and a daily hunger for adventure.

H

as this ever happened to you? You’re standing in line and a lovely platinum-haired woman comes up and asks what your favorite book might be. No? Well, if it does, you can bet that woman is Celeste Bittner, a volunteer at the Albert Carlton-Cashiers Community Library. Celeste has been giving her time to the library for 10 years and doesn’t foresee that changing any time soon, even if spontaneity is the spice of life for her. She has the heart of a gypsy and that’s what led her to the Cashiers Valley. Her journey started in New Jersey then took her to Florida. The heat of the summer was too much so, after picking up a magazine, she and her husband headed this way. They found their own piece of the plateau and discovered an excavation site on the property. They’ve found all sorts of things like hand forged nails, cooking pots, even a child’s spats. In keeping with her sense of adventure, Celeste says, “I hate sitting at home and I love being outside. I hike, I play tennis, and my husband and I spend a lot of time searching our land for more treasures. My time at the library is my quiet time.” The staff of the library is delighted she has chosen to volunteer with them. She’s quick and efficient and thanks to her focus on getting things done, Bittner has been asked to come in two afternoons a week. When questioned about why she chose the library, she admits to having a lifelong love of the written word. Personally, her tastes have changed, she says. “My beach-book reading days are over. I seem to choose more serious books, ones I learn from.” Her favorite book of all time? “A Prayer for Owen Meany,” by John Irving. “He’s my favorite author by far.” Yes, Celeste really does start conversations by asking about favorite books; so start thinking now about what you might answer should she ask. You never know when she might be in line right behind you.

Little Feet. Big Steps. GIVING BACK

Contributed by Tammy Mobley, Big Brothers - Big Sisters Program Director The Big Brothers Big Sisters program relies upon generous contributions and a dedicated coterie of mentors.

A

s the new Program Coordinator, I’m not asking you for just a donation, but rather an investment in a child’s future. By supporting BBBS, you are making our community stronger. Studies show that mentors outside the family often play a critical role in helping a child develop his/her full potential. BBBS is a well-respected organization started over 103 years ago nationally, 26 years ago regionally and established for 12 years in Highlands! Our one-on-one Mentoring Program connects local children with an adult to share enriching activities and experiences to encourage higher aspirations. Will you help us today? Roughly 90 percent of every dollar you give goes directly to our much-needed mentoring programs and services. You can rest assured we are using donations wisely: Great Nonprofits has ranked BBBS of America as a top Children’s and Families Nonprofit and awarded us a five-star rating! Your financial support allows us to provide careful screening and matching of volunteers with the children, and the ongoing professional management necessary to keep the mentoring relationships going

strong for as long as possible. In addition to the individual mentoring, group exercise and nutrition classes were just added, weekly martial arts and a monthly nutritional hands-on workshop at The Bascom. Martial arts is utilized to boost their self-confidence, motivation, discipline, encourage team work and exercise. An Anti-Bully Program is also taught. We have planted two indoor Garden Towers at The Bascom whereby they will harvest the lettuce, veggies and herbs to make healthy salads and new snack choices. (This year they harvested, made basil and parsley pesto and sold it – “Highlands Little Organics.”) Camp Henry at Lake Logan was a thrill for all children who attended the last two years. For most, it was their first experience at camp and their only vacation. My vision is to match more children with mentors and to increase their enrichment experiences available through our local BBBS programs. Your donation to our general fund, exercise/fitness program and/or nutritional workshop will certainly expedite this goal. Our mailing address is BBBS of Highlands, POB 2544, Highlands NC 28741.

our new unique properties will be conserved with Highlands-Cashiers Land Trust in 2015 – they protect water, wildlife habitat and public views. Your land trust has been conserving our most treasured places here locally since 1909 and thanks to our supporters, we are able to protect the quality of the air you breathe, the water you drink, and a healthy habitat for all who live here. We are close to completing an easement on a 220-acre tract near Cullowhee that protects rare wetland seeps. Another easement in Horse Cove will help to protect a portion of the Horse Cove Bog. Also, a large land donation in Highlands will conserve several significant old growth stands and a portion of the Satulah viewshed. The fourth property is called Eden and it conserves almost 30 acres of intact forestland in Jackson County, 1700 feet of streams and significant views. Every property has a story and this is a glimpse at Eden’s… Bill Ray loves to hike. While living in Atlanta, he and his late wife Bamby and their two dogs were looking for new places to explore together. When they discovered the plateau in the early 1990s, he and Bamby started looking for a summer home here. After a long search they found the perfect place – it was love at first sight! Bamby decided this was the place where they would spend many more seasons. Conserving Eden was always Bill and Bamby’s plan. Bill explained that he did not want to risk their property one day becoming the byproduct of poorly planned development. The Eden conservation easement was created in honor of Bamby and her father, Louis Zimm, who was one of the early foresters in the South. We are thankful that the Rays found HCLT and are honored to help them conserve their family land. It will forever remain the special place they fell in love with. To learn how you can help us conserve more of our most treasured places contact us at hicashlt.org, (828) 5261111, or julie.hitrust@earthlink.net. GIVING BACK

Hello, Dolly! Contributed David Stroud, Executive Director, Cashiers-Highlands Humane Society | Photo by Marty Boone Sweet-natured Dolly is looking for a loving place she can finally call home.

C

HHS Hero Pet Dolly is a sweet five-year-old female Plott Hound/Spaniel mix found wandering as a stray in Tuckasegee in March, 2014. She was rescued and given safe refuge at CHHS and after nearly two years, Dolly is the longest-term resident canine at our no-kill shelter. Dolly definitely has the tracking instincts of a hound, but she is actually very calm and laid back. Dolly adores affection and attention, gets along great with other canines, and she loves warm beds and soft, fluffy blankets. And if you’ve never seen a dog do the “army crawl,” you’re in for a real treat – Dolly performs that maneuver like a boot camp all-star. Dolly is intelligent, completely housetrained, adores all people, and has become a regular participant in the recent outings with our CHHS Hikers for Hounds. This sweet canine would make a loving family dog – all she needs is a loving family. Dolly has been spayed, microchipped, up-to-date on vaccinations and flea/heartworm preventative, and her adoption comes with 30 days of free pre-paid

94 | December 2015 | thelaurelmagazine.com

pet health insurance and a free starter bag of food. Hero Pets like Dolly are the longer-term CHHS residents who are happy, healthy and completely adoptable – they’re just a little more picky when choosing their human companion! CHHS Hero Pets have reduced adoption fees of only $25. For more information on how to adopt Dolly, please contact CHHS at (828)-743-5752, email info@ CHhumanesociety.org or visit us online at CHHumanesociety.org. Established in 1987, Cashiers-Highlands Humane Society is a 501(c)(3) non-profit animal shelter that receives no state or county tax dollars, and no funding from any national animal organization. CHHS relies solely on donations, grants, bequests, and special events to further our mission of rescue, compassionate care, spay/neuter, and finding forever homes for abandoned and neglected animals. Our no-kill shelter is located on Highway 64 in Sapphire, two miles east of the Cashiers Crossroads and is open 10:00 A.M.-4:00 P.M. Monday through Saturday.

It’s a Wonderful Life Contributed by Kathleen Bub, President Forever Farm Juno’s story is the perfect embodiment of the Christmas Spirit and a marvelous testament to the good graces of Forever Farm.

A

ll the special animals at the Forever Farm will be warm and happy this holiday season, and hopefully know that they are safe and loved. Some of our lucky residents over the years have been adopted into homes where they will be celebrating the holidays with loving families. Juno is one of those adoptees. Juno was named after the month that she was found stuck in the tar in the Lake Toxaway area when they were paving the highway. A very compassionate employee of Haywood Electric rescued the little kitten and brought her to the Forever Farm. Juno was very lucky to not only have survived her dilemma unscathed, but was soon adopted.

96 | December 2015 | thelaurelmagazine.com

Juno is five now, and she is absolutely sure that the tree brought into the house every December is for her pleasure. Every year she camps out in the Christmas tree, and claims it as her own, occasionally rearranging the decorations to suit her moods. And, she has been known to open presents meant for other family members. Shame on her :) If only all homeless animals could end up with such a wonderful life. If you would like to help support our mission of helping senior and special needs animals during this holiday season, please send your tax deductible donation to Friends for Life, P.O. Box 340, Sapphire, NC 28747. Donations can also be made online at friendsforlifeforeverfarm. org. Call us at (828) 508-2460.

Planting Seeds for Reading GIVING BACK

Contributed by Tonya Hensley, Literacy Council of Highlands The Literacy Council of Highlands is powered by a trio of dynamic, indefatigable women.

A

s we near the end of our 23rd year of service to this community, I’ve been reflecting on the past year and how thankful I am for our three new employees – Brandy McElroy, program director; Kathryn Buckley, education director; and Carol Waldroop, program coordinator. These three ladies have immersed themselves into the heart and soul of this organization. With their outstanding experience, impressive credentials, and tons of energy, they’re most impressive. Brandy and Kathryn have epitomized what it means to work as part of a team, happily dedicating themselves to their jobs and to the children of the Literacy Council. Carol, whose base in is Franklin, has singlehandedly wrangled 25 volunteer tutors (and is aspiring for 50) for our new Franklin-area Schools Tutoring Remediation program. December is a fun month here at the council. The Highlands Olde Mountain Christmas Parade gives us the chance to stroll through our

beautiful downtown and distribute books to children. Last year, thanks to our partner, First Book National Book Bank, and a children’s book grant from the Episcopal Church of the Incarnation, we handed out 750 books! This year, we are doing things a little differently. Rather than handing books out along the parade route (which is a very difficult task, I assure you), we will have a table set up at town square so children can come by and choose a book. Be sure to bring your little ones out to enjoy the festivities on December 5th! Also in December is a family literacy event based on the book “The Nutcracker” for kindergarten through third graders, to be held December 11th from 5:30 to 7:30 P.M. The evening’s festivities include food, reading tips, and activities for the family. All children will receive a book and other special treats. Word on the street is that there may even be an appearance by Santa himself! Spaces are limited, so call (828) 526-0863 or e-mail Brandy at brandy@highlandsliteracy.com to make your reservation today!

Highlands School, where the first meeting of the Highlands Chamber of Commerce was held in the school auditorium on the second floor on September 13, 1923.

Chamber’s Beginnings by Donna Rhodes | Photo Courtesy Highlands Historical Society Archived documents spotlight the genesis of the Highlands Chamber of Commerce.

I

n 1923, long before the Visitor’s Center, Chamber-sponsored events, and a cohesive town voice, a fledgling Highlands Chamber of Commerce was laying the groundwork for the remarkable township we cherish today. Thanks to Ran Shaffner and the Highlands Historical Society’s Archives, founding members’ words are part of our historical record. Here are minutes from the Chamber’s first organizational meeting: “Notice went out for a meeting of the citizens of Highlands to be held at the school auditorium, Thursday evening Sept. 13 1923 at 8:00 P.M. for the purpose being to form a Chamber of Commerce. Mr. H.W. Bascom, as Mayor, opened the meeting explaining the purpose for which it was called.” (Guest Speaker, Mrs. Frederick W. Altstaetter gave a rousing oration encouraging women to go into politics.) “At the close of Mrs. Alstaetter’s speech about fifty people had assembled. Mr. Bascom called for nominations for officers to act until such time as a permanent organization could be affected: Miss. Charlotte B. Elliott was nominated secretary Miss Albertina Staub, treasurer Mr. H.M. Bascom, Chairman Mr. Bascom, Mr. Davis, and Mr. Sloan all expressed themselves as

to the benefit to be derived from a Chamber of Commerce. Mr. Sloan said it was the only way a community could get together, discuss questions, hash them out, and the community as such, express itself. A Chamber of Commerce was formed to attend to everything in the community not of political nature. Mr. Sloan expressed the hope that the Highlands Improvement Society would see its way to merging its identity and work into that of the Chamber of Commerce, and all work together, thereby accomplishing greater good for the community.” A three-person committee was appointed to seek membership. $2.50 dues would be collected from each member. A committee on organization was appointed. Future meetings were to be held in the high school auditorium. Minutes were taken by Charlotte B. Elliott, Secretary Pro Tem. If you’d like to view the original materials establishing the Chamber, refer to 2010.29.1 (1923) at the Highlands Historical Society by appointment or when it reopens in late spring. You can also reference Ran Shaffner’s “Heart of the Blue Ridge” in the library. Or why not purchase the tome online as a wonderful holiday gift for your favorite Highlander history buff?
