Editor Dear reader, Welcome to our food issue. The evolution of Las Vegas into a food destination has been quite the epicurean treat. A constellation of star chefs have joined the desert vacation mecca as five-star resorts/casinos compete to add Michelin-starred chefs to their venues. On our cover, you will find Maine Day Boat scallops from Executive Chef Shawn McClain’s restaurant, Sage at Aria. Over the last 15 years Chef McClain has developed a collection of awardwinning restaurants. His innovative concepts have earned him multiple accolades, including James Beard Award nominations for Outstanding New Restaurant, and Esquire magazine’s “Chef of the Year.” He has appeared on Food Network’s Iron Chef America, which resulted in an epic win against Chef Marc Forgione. Join us as we interview Chef McClain as he redefines the American cuisine using only the freshest of ingredients. In this issue, you will want to curb your steak lust for a minute and enjoy our interview with Chef Kenny Chye as he transforms Asian cuisine with a vegetarian twist. April normally brings spring showers to announce to the world that it is time to rejuvenate your home and accessories. Last month, I spoke about how we can change our art and accessories to announce the new season into our homes. It’s our annual food issue, and the art of presenting meals is just as important as the food itself. When plated creatively, that food can excite your visual as well as your taste palate! Whenever my husband and I are on one of our trips, he can always find me if I’ve gone missing for a while. First, he checks the art galleries, as I love to explore what those talented people have created with brush or camera lens. If he doesn’t find me there, he looks for the nearest kitchen store. It’s not that I cook, I leave that up to him. I love dishes! I love glassware! I love fabric that I can create table cloths or place mats and napkins from. I love to change the look of my dining table often. It sparks my creative juices, and helps me visualize what I may want to do in my customer’s color scheme. So, there is a New Year’s table, a spring table, an Easter table, a summer picnic, early fall, Thanksgiving, early winter and Christmas! If you have not seen the advertisements for all the cute Easter décor, you have not been reading the magazines flooding into my office. But also, the newest craze, and something I can really get into, is the Blue Apron and Plated companies. They advertise sending a box to the consumer

with all the fresh food to provide a beautiful meal. When my generation was growing up, and moms took off their aprons and entered the work world, what the food industry came up with to feed us growing kids was…. frozen dinners in aluminum trays. Remember those? Who could ever consider those frozen, tasteless offerings as good food? Not my mom. She would get up early every Saturday and she would prepare the coming weeks meals for her family. As we got older, she tried to initiate her daughters into the art of food preparation. It worked on one of the three of us. My older sister, Cathy, is an expert in the kitchen and loves it. I gravitated toward the sewing machine and my design heart took flight. With the right amount of encouragement, and fabric, I would design the table cloths we would use for our meals. When mom had one of her many parties, she was always proud to show off her pretty tables. So, let’s grab this spring and summer by the colorful accessories offered in our local stores, and let’s get cooking! When Randy Char took on role as Senior Vice President of Operations at One Queensridge Place in 2012, he had one vision in mind and that was to revive the Las Vegas vertical market. Two base ingredients that make a celebrity chef are ingenuity and passion. Besides curating remarkable dishes, the culinary genius must envision a menu that will satisfy a multitude of palates. True to any gourmet masterpiece, this definition is simple yet masks the unmatched complexities proven by the fact that there are only a few members belonging to the elite class of well‐known chefs. Meet my friend and popular vegan/ vegetarian Chef, Kenny Chye. Chef Kenny lived in Southern California for 15 years, but is originally from Malaysia. While in California, he owned three restaurants. In 2001, he moved to Las Vegas and started a meat and seafood wholesale business. During this time, he supplied hotels and restaurants with fresh, high‐quality product. However, the job perk of eating a lot of meat resulted in Chye having high cholesterol. “I would sometimes eat 22-ounces of prime rib at a time. Now I don’t touch it,” explains Chye.

Resulting from the need to make changes to his lifestyle, Chye became vegetarian. “I wanted to open a veggie restaurant for my health, but also so I can help other people,” says Chye. “I know people are trying to be healthy, but want good taste and good texture, just no meat.” In Spring 2012, Chye opened Veggie House, a vegan/vegetarian Chinese restaurant boasting over 100 items on its menu. Only two years ago, I discovered this eatery full of familiar Chinese‐American favorites. Oftentimes, I take my carnivore friends to eat the creatively crafted dishes. Every time they are impressed by the taste and texture of the remarkable meatless fare. “I don’t like salad. I duplicate the food I like,” explains Chye. “I like sea bass. [Therefore,] we have sea bass on the menu [at Veggie House].” And when Chef Kenny decided he wanted a burger, he created Vege‐Way, Vegas’ first‐ever plant‐based fast food restaurant. Mirroring the success of Veggie House, combining taste and texture, he has created a burger joint out of veggies. In September 2016, he

introduced to the world his two‐year dream to create the vegan version of In‐N‐Out Burger. How does he do it? “Fresh is always the best, no shortcuts. I get a lot of word‐of‐ mouth,” Chye speaks to his success. “I help the vegan community with events, like donating food to fundraisers for animal charities. We donate food to the homeless every month. I talk to people. I tell them what the good things to eat are, what type of work we should be doing for our health, the environment and animals.” Once upon a time, Las Vegas was the land of all‐you‐can‐eat‐buffets and a single gourmet room in each hotel. Fast‐ forward 30 years, Vege‐Way, in its first week, attracted massive crowds and sold more than 3,000 burgers. Chef Kenny’s continuing and growing success is certainly, a testament of the importance of vegan/vegetarian food to the landscape of Vegas and how he has changed the local dining scene. ROASTED SQUASH AND PUMPKIN SEEDS MOLE BOWL It is a delicious meal for your guests, and serves as a power pack dinner loaded with proteins and fiber. This vegetarian squash bowl is so hearty and full of flavor. (Serves 4)

Ingredients 1 large butternut squash, peeled and cut 3 tbsp. olive oil 1/2 c. raw shelled pumpkin seeds, plus more for garnish 1/2 tsp. cumin seeds 1/2 tsp. dried oregano

Directions

1/2 onion, cut into wedges

1. Preheat oven to 350 degrees and add squash with 2 tablespoons olive oil, salt, and pepper. Arrange on baking sheet; roast 35 min or until squash is tender.

2 cloves garlic, halved

2. Meanwhile, in a skillet, add pumpkin seeds, cumin seed and oregano on medium 3 minutes or until fragrant, stirring. Remove from heat; set aside. In same skillet, heat remaining 1 tablespoon olive oil on medium. Add onion, tomatillos, garlic and jalapeno; cook 5 minutes or until slightly browned. Place vegetables, pumpkin seeds and spice mixture in blender or food processor. Pulse a few times; then add stock, coconut milk, parsley, cilantro, 3/4 teaspoon salt and 1/4 teaspoon pepper. Process until smooth. Makes 3 cups. 3. Return mixture to skillet; simmer on medium, 15 or until slightly thickened. Divide rice and squash among 4 bowls; add sauce. Serve remaining sauce on the side. Garnish with cilantro and lime wedges.

1 jalapeno chili, sliced 3/4 c. vegetable stock 1/2 c. coconut milk 1/2 c. parsley, chopped 1/4 c. packed cilantro, chopped, plus more for garnish Lime wedges, for garnish (About 440 calories)

CREAMY VEGAN LINGUINE WITH WILD MUSHROOMS You can serve your guests with this delicious entirely vegan pasta enriched with essential nutrients. (Serves 6)

Ingredients 1 lb. linguine or fettuccine 6 tbsp. olive oil

Directions 1. Cook linguine as label directs, reserving 3/4 cups pasta cooking water before draining. Return drained linguine to pot. 2. Meanwhile, in skillet, heat oil on medium-high. Add mushrooms and garlic; cook 5 minutes or until mushrooms are browned and tender, stirring. Transfer to pot with cooked, drained linguine along with nutritional yeast, reserved cooking water, 1/2 teaspoon salt and 3/4 teaspoon coarsely ground pepper. Toss until well combined. Garnish with green onions.

12 oz. mixed mushrooms, thinly sliced 3 cloves garlic, finely chopped 1/4 c. nutritional yeast 2 green onions, thinly sliced on an angle (About 430 calories)


Ingredients 2 red bell peppers

3 tablespoons extra-virgin olive oil 1 cup chopped onion 2 teaspoons ground cumin 1 teaspoon crushed red pepper 1 teaspoon paprika

It contains black beans, pink beans, and edamame along with broth. The platter is fully loaded with proteins, fibers, and micronutrients that will entertain your taste buds. (Serves 4)

1/4 teaspoon salt 4 garlic cloves, thinly sliced 2 cups organic vegetable broth

Directions 1. Preheat oven. 2. Cut bell peppers in half lengthwise. Remove and discard seeds. Place pepper halves, skin sides up, on a foil-lined baking sheet. Broil 20 minutes or until blackened. Place pepper halves in a zip-top plastic bag; seal. Let stand 15 minutes. Peel and chop peppers. 3. Over medium-low heat, add oil and onion; cook 15 minutes, stirring occasionally. Stir in cumin and next 4 ingredients (through garlic); cook 2 minutes, stirring frequently. Add bell peppers, broth, squash, and tomatoes; bring to a simmer. Cook 20 minutes, stirring occasionally. Add beans; simmer 25 minutes or until slightly thick, stirring occasionally. Add with green onions.

When most people hear the word “hamburger” they think fast food such as McDonalds or Carl’s Jr., and could never fathom a hamburger that cost $40. However, Las Vegas has become the hamburger capital where top chefs from around the world compete for the crown of the best gourmet burger. One of the leading contenders as of this article is Guy Fieri. You might remember Guy from his Food Channel show “Diners, Drive-Ins, and Dives.” Guy has several restaurants bearing his name in Vegas, but for the Burger Bucket List we visited Guy Fieri’s Vegas Kitchen and Bar adjacent to the popular Carnival Court and The LINQ’s main entrance. We had to try the Mac & Cheese Bacon Burger - the burger that crushed its competition in New York City’s 2013 Burger Bash! Built with crispy Applewood bacon, six-cheese mac, plus more super-melty cheese between garlic toasted brioche buns. The burger looks like a Frankenstein creation, but after the first bite, I was sold on the multitude of flavor. The meat is seasoned to perfection and overall, an excellent burger. I didn’t think it was possible to have fries, which are usually a side dish, outshine the burger. However, the Vegas Fries did just that. The sidewinder cut fries are tossed in spicy buffalo sauce, topped with blue cheese crumble and served with Guy’s blue-sabi sauce. I rate these as the best tasting fries to date. Just a word of precaution, if you try the fries, and by all means do because they are that amazing, make sure to bring gum, a toothbrush and mouthwash otherwise you and everyone around you will get to experience dragon breath. If you are the kind of person that loves burgers as much as me, and also loves the good ol’ fashioned 50’s diner style burger and shake, the best thing to do is take a drive over to Steak ‘n Shake. They have 2 locations in Las Vegas. We went to the one at South Point Casino, and their other location is at UNLV. Everything is fresh and delicious. They are the original creators of the Steakburger, and for 80 years they have continued to provide top quality Steakburgers and milkshakes. They make their burgers from 100% fresh top quality ground round, sirloin, and even T-bones, with no preservatives or artificial ingredients. Their milkshakes are unbelievably scrumptious too! I ordered their newest specialty item on the menu, which was a double Philly Steakburger topped with American and Swiss cheese, grilled peppers, and onions with a garlic mayo sauce, and served with shoestring fries. Combining a Philly Cheesesteak and a traditional hamburger might sound odd at first, but it was fantastic! It was a delightful mishmash of two American favorites - I give it five stars!

And since Steven loves jalapeños, he ordered the Jalapeño Steakburger, which is a double Steakburger, with pepper-jack cheese, fresh jalapeño’s and salsa, French-fried onions with a chipotle mayo; served with fries. He also ordered a side of chili, which is the best darn chili this side of the Mississippi! And for a milkshake, Steven got the Reese’s Peanut-butter chocolate shake, which was a specialty shake that they were promoting. This was a real winner! Needless to say, we wobbled out of there very satisfied. They have a diverse menu, so even if you have guests that are not big on burgers, they are sure to find something they love to eat. It all started 15 years ago, with just one child, Frideric Prandecki. He was six years old at the time and the first thing he told Marty, or Morty as he’d call him, was, “I’ll never be as good as my sister.” His sister ice-skated throughout Europe.

Ryan Wolfington and Marty Hennessy met in 2004 and were united by the passion to help kids. There were no big plans, no big agenda, but a simple love for tennis and their need to change lives for the better, create a future and inspire children.

For those who have a liking for an adrenaline rush or cliff jumping, Nelson’s Landing might be the perfect experience you are seeking. Believe it or not - it’s family friendly. There are no sharp rocks below the cliffs, so you don’t have to worry about hitting anything. There are cliffs of different heights, so even young children who know how to swim, or who have a life vest on and are accompanied by an adult, can have a good time jumping off of the smaller cliffs. For those who really like to have a long jump it’s only a short walk out to the higher cliffs. There are coves all around and shallow swimming areas that are shaded by the high rocks. This location is really “Off the Beaten Path.” Most people do not even know about these cliffs, but once you make the drive or boating trip out there you will want to go back. HOW TO GET THERE BY WATER: Nelson’s Landing is on the Nevada side of Lake Mohave, about 16 miles north of Cottonwood Cove by water if you go by boat. Although there is no launch ramp nearby the cliffs; the closest boat ramp would be Cottonwood Cove, but you can have a great boating trip getting over to the cliffs by boat. You can call ahead to rent a boat for day use or you can make a weekend of it and rent a houseboat from Cottonwood Cove Marina. For those who are driving out for the day, there is a paved road that takes you within a half mile of the lake, and then it turns into a


dirt road and continues all the way down to the lake edge. Nelson’s Landing is about 25 miles from Boulder City by road. HOW TO GET THERE BY CAR: Just South of Boulder City. Going southeast as you leave Las Vegas, just past Henderson and before Boulder City, take a right turn (going South) on highway 95 South. Approximately 10 miles, you come to the road marked 165; it will be on your left, look for it there are no signs that tell you to turn there. At that intersection is a Monument, Nevada Centennial Marker #9 that is the road that follows El Dorado Canyon, through the El Dorado Mountains past the private mines on the right side of the road to the Public Recreation Area. You will enjoy this drive as you go down the long and winding road, which is a downhill grade from there. The road ends at a spectacular overlook at the Colorado River. Added bonus, when you are driving out to Nelson’s Landing, you will drive through the old town of Nelson which is now an old Ghost Town and you can stop and take pictures and explore all around the area. This was one of the first major gold strike areas in Nevada, several million dollars of gold, silver and copper came from these mines in the late 1800’s. If you are going with children, please use caution and keep them close to you as old mines can still be dangerous if a child unknowingly went into one.
