ob and Tracey Wilson started Dripping Springs Chocolate Company to sweeten up life for people – on both sides of the equator. In 2014, when the couple traveled to Nicaragua on a mission trip with the Hill Country Bible Church, they were struck by the poverty they found there and wanted to do something to help. Charity would be good, they thought, but what the people there really needed was jobs, they realized. The Wilsons, who have owned and run a globally-marketed business for years, researched likely exports from tropical regions and were interested to discover that cacao (the chocolate plant) grows only within 10-15 degrees

of the equator. They also learned that the worldwide chocolate industry is notorious for using child slave labor. Buying chocolate beans from small farmers who ethically grow their crops seemed the perfect answer for their objective. After conducting multiple taste tests and quality checks and researching supply availability, Bob and Tracey chose organic chocolate beans from Ecuador. All of the beans they use are certified by the Rain Forest Alliance to be organically grown, ethically sourced and raised on plantations that don’t disturb the rainforest to produce them. Through research, trial and error, and lots of tasting with (very willing) family and friends, they arrived at a 65 percent dark chocolate made in five varieties: Plain, Almond and Sea Salt, Dried Cherries, Coffee, and Spicy. More recently, Bob and Tracey have added a new Tactical Line with 75% cacao, plain and with added cocoa nibs. They’ve also come up with seasonal varieties, such as the Pumpkin Spice and

Pecan bar they premiered this fall. At Dripping Springs Chocolate Company, the raw chocolate beans go through six different processes to transform them from “bean to bar.” First, they’re roasted, then cracked. The husks are winnowed away, then the remaining nibs are coarsely ground and put in a melanger machine to conch (outgas) and refine for 18-45 hours, until they’re transformed into a smooth chocolate. Lastly, the refined chocolate is tempered and poured into molds. Some of the

chocolate-making equipment they purchase; others the Wilsons innovatively engineer to meet their specific needs and avoid the high costs of importing specialty equipment. The melanger machine is an industry standard; Bob spent months designing his own cracking machine, winnower and continuous flow tempering machine. “We’ve now figured out at least 35 ways NOT to temper chocolate,” he says See DRIPPING SPRINGS CHOCOLATE, page 3

Since much of the final tempering depends on weather (humidity/ambient temperature) and the ratio of ingredients in each chocolate, they do a lot of tinkering to come up with final processes for each variety of bean and bar. Once their product was ready, the Wilsons tested the market at a booth at the Dripping Springs Farmers Market last August. That evening, they posted on Facebook: “Thank you…to everyone that came out and supported us today. You all exceeded our expectations and we enjoyed talking with everyone, sharing our love of chocolate and getting some feedback and experience.” Tracey and Bob also sell their gourmet chocolates at local fairs and events. The Wednesday afternoon Dripping Springs Farmers Market, however, remains their primary sales location. Local wedding venues and wineries are clamoring to get their own custom-labeled, small-batch chocolates made by Dripping Springs Chocolate Company. In recent experiments to pair their chocolate with a local wine, the Wilsons

custom-matched a muscat wine with a ginger chocolate. “It was delightful!” says Tracey.

At present, the Wilsons are producing all their chocolates from home, but they’ll soon move Dripping Springs Chocolate Company to a large facility they’re building on Sportsplex Drive. The new space will feature a commercial kitchen, along with a (future) retail area. Healthy Parks, Healthy People launched in Dripping Springs

ripping Springs has five beautiful parks – and now a new parks program that aims to get people out into nature and living healthier lifestyles. Healthy Parks, Healthy People – Dripping Springs, an adaptation of the National Park’s program by the same name, was launched by Dripping Springs’ Parks and Rec Department this November with a Kids Ride Day at Dripping Springs Ranch Park. Nicknamed the “Mountain Bike Mash Up and Swap Meet,” the event was co-sponsored by the Dripping Springs Mountain Bike Team and provided bikes and gear so kids could try out mountain biking for free. Parks and Rec plans to partner with community groups that focus on health and fitness for the monthly events. They’ll rotate among the city’s parks and highlight a different health topic each month. Five Star ER of Dripping Springs has stepped up to be the program’s main sponsor. On Saturday, December 10, Hike It Baby Austin, a non-profit group dedicated to getting babies and their families out into nature, will lead a Family Hike at Charro Ranch Park. Hike coordinator Sarah Maxwell has years of experience leading family hikes in southwest Austin

and the Dripping Springs area. North Hays County Fire and Rescue will host a Fire Fighters Fitness Day at Dripping Springs Ranch Park on January 21 as part of the program. The firefighters will lead adults through a CrossFitlike workout and have special physical activities for kids. For February’s event, Parks and Rec is planning a running clinic. Participants will receive a “Health Passport” they can have stamped at each event. At the end of the year, stamped passports can take part in a drawing for prizes such as a Yeti cooler. Healthy Parks, Healthy People – Dripping Springs got its start when DSRP director Lynne Dickinson came across a similar program while she was on a trip to the Northeast. She brought the idea back to Dripping Springs and promoted it to the city. Just Bates, head of the Austin Families in Nature program for the NPS (and served on Dripping Springs’ Master Trail Plan committee last year) also helped to get the Healthy Parks, Healthy People program started in Dripping Springs.
