Dripping Springs is crazy for new business

lmost every European country has its own version. In France, it’s called a crepe; in Russia, it’s named a blitz; in the Ukraine, everyone knows it as a blini. Most recently, folks in Dripping Springs have started referring to it as that wonderful new food at Crepe Crazy. At their small restaurant on Highway 290, Sergei and Inna Giterman cook up the favorite food of their native Ukraine for the numbers of enthusiastic Texas crepe lovers and a steadily growing crowd of curious converts. Sergei uses his grandmother Babushka’s original recipes to create the luscious flatcakes that only the uninitiated would compare to pancakes. Crepe Crazy offers five breakfast crepes to choose from, ranging from a G’morning Parfait crepe filled with

vanilla yogurt, bananas, strawberries, toasted almonds and honey; to the hearty Fiesta crepe stuffed with scrambled eggs, jack cheese, chorizo, black beans, cilantro and homemade salsa. Ten savory lunch and dinner crepes include the Scandinavian (smoked salmon, pickled red onions, whipped cream cheese, capers, lemon and dill), the Caprese (sliced buffalo, mozzarella cheese, basil pesto, tomatoes and balsamic reduction glaze), and the Mediterranean Medley (sun-dried tomato pesto, hummus, feta cheese, fire-roasted red bell peppers, red onions, cucumbers, and spinach with optional grilled chicken). In addition to crepes, Crepe Crazy’s menu features sandwiches (including a Panini), salads, a daily seasonal soup and a kids menu. Sergei sources many of Crepe Crazy’s ingredients from the area, shopping at farmers markets in Dripping Springs and Austin. This summer’s popular peach cobbler crepes were made with Fredericksburg peaches, he says. Service in the restaurant is incredibly quiet - in fact, silent. Sergei and Inna, along with many of their employees, are

Phone-in orders are simplified by the use of Video Relay Service (VRS) that connects customers and restaurant personnel in real time through a sign language interpreter. Seven tables inside the restaurant can seat 22 people; more can be accommodated at tables outside under the shade of an awning. Before setting up shop in Dripping Springs, Sergei and Inna had Crepe Crazy on the road, selling at outdoor festivals from Tennessee to Texas. To get their favorite crepes regularly, Austin customers begged Sergei and Inna to set up a physical restaurant for Crepe Crazy, and the couple decided Dripping Springs was the ideal location. “We have customers who regularly drive from Austin for crepes,” reports Sergei. “They find it’s easier to get to Dripping than to north Austin,” he says. They just finished a weekend at the Texas Book Festival and the Fredericksburg Food and Wine Fest. In December, they’ll spend three weeks at the Austin Trail of Lights. Community comes together for Senior Citizen’s Thrift Store

he Hill Country Senior Citizen’s Thrift Store has been showing the Dripping Springs community for years that what’s trash for one person is treasure for another. With the events of the last few weeks, Dripping Springs is now showing the Thrift Store that what was a problem for one person can become an opportunity for the whole community. October 9, manager Chris Kelley posted on Facebook that the Thrift Store had a visit from a City employee, following a complaint he received about donated items being visible from the street As a result, Chris’ post said, the Thrift Store would be forced to greatly reduce the number and types of items it could accept in the future. This was going to greatly affect what the store had to offer, he pointed out. “It’s amazing how one person can hurt so many, but what is done is done,” he said with finality. Then came the community response. Chris’ post on Facebook the next day had a different ring to it. “Thank you everyone for the amazing show of love and support for our little shop. I met with Randy Peterson today and we have a plan to move forward. We will need to raise about $8000 with the GoFundMe, but we will provide detail as it comes available....” In the weeks since, plans to build an outdoor enclosure covering and expanding the donation/sorting areas have been progressing as quickly as the contributions pouring into the GoFundMe website to pay for it. Labor and materials have been volunteered and the response has been so positive that Chris and crew have expanded their plans to include an entire rearrangement of the store’s interior. Chris waves his arms in large gestures as he describes the plans. “Basically, we’re moving everything that’s in the back room to the front of the store,” he explains. “That leaves the entire back room for clothing and new dressing rooms.”

Larger items (furniture, home decor and electronics) will be in the front room, with small inexpensive items moved to new bins in the enclosed area outside, he says. Work will be ongoing through the next few weeks, he says, and help of all kinds is still being sought. Chris admits to being a little overwhelmed by the generosity of the community’s response. “We just feel so blessed to be part of this great little town!” he shakes his head in amazement. harlie Harris, owner of Storied Firearms outside Oak Hill, is wearing a big belt buckle and an even bigger grin these days. This past June, Charlie was awarded the buckle and a trophy as a world champion at END of TRAIL — The World Championship of Cowboy Action Shooting in Edgewood, New Mexico. Charlie - better known in Cowboy Action Shooting circles as “The Phantom” - won first place in the 49ers Division (competitors ages 49-59), beating out dozens of rivals bearing such aliases as Colorado Blackjack and Snake River Bill. Charlie also placed seventh in the event’s Final Overall Results category, against close to 550 other competitors. Part marksmanship competition, part Old West role-playing — mixed with a lot of good fun - Cowboy Action Shooting is the fastest-growing outdoor shooting sport in the country. The competitions not only test shooters’ speed and accuracy, but also re-create the days of the Old West and celebrate of the cowboy lifestyle. All contestants use firearms typical of those in the Old West: single action revolvers, lever action rifles and double barrel shotguns. The shooting competition is a timed sport, where speed and accuracy both count and the steel targets are often in motion. Shooters compete in different divisions based on age and experience, on a course with twelve different shooting stages. Winners take home buckles, trophies and bragging rights. And all are in costume! Each participant adopts a shooting alias appropriate to a character or profession from the late 1800s, a Hollywood western star, or a character from fiction. They then develop a costume to flesh out their new identity. For many

Competitors come in all ages and from as far away as New Zealand and Australia. “There are seven- and eight-year-old kids competing, along with an 88-yearold grandmother that was shooting right next to me!” says Charlie. Cowboy Action Shooting boasts the largest percentage of female contestant of any shooting sport, he adds. While it is a competition, the main idea, Charlie insists, is to have fun. “It’s hard to take yourself too seriously when you’re dressed up as Roy Rogers,” he jokes. This was Charlie’s 10th competition and he’s gotten wiser and developed better strategies over that time, he reports. “I stuck with a game plan and it worked out for me,” he says triumphantly. Charlie and wife, Cherie, are dedicated to documenting and preserving the history, big and small, that each seasoned firearm carries with it. “People come in with a gun they’ve inherited from their dad or another relative,” Charlie explains, “and they don’t know exactly where it came from or the whole history behind it.” That’s a tantalizing challenge for Charlie, who’s as much history buff as gun lover.
