Hays County Livestock Show January 24-26

ripping Springs’ roots are deep in animals and agriculture – and nowhere is that more celebrated than at the Hays County Livestock Show, January 24-26 at Dripping Springs Ranch Park. Long-time ranching residents and new urban transplants alike will want to come see the goats and rabbits, sheep, swine, chickens and cattle being bathed, brushed, primped and paraded before the judges in this county-wide competition. The beefiest bovines and prettiest pigs will be on display for everyone’s appreciation – along with the husbandry skills of the 4-H and FFA members who raised the animals and handle them in the show ring for the judges. There will also be competitions in Ag Mechanics and Home Skills divisions – with an opportunity for visitors to taste some of the delicious Home Skills entries.

All participants in the Livestock Show are Hays County youth between the ages of nine and 18 (third graders to seniors), members of their local 4-H and FFA Clubs. While many might live in sidewalk subdivisions, at the Livestock Show it’s all cowboy boots, Carhartts™ and caring for farm animals. “The Hays County Livestock Show educates Texas youth on how to responsibly raise a market-ready animal. This process instills important life and business values that the participants will have for a lifetime,” says the group’s Mission Statement. The weeks-long event begins Saturday, January 14 with the Horse Show – a riding competition featuring both western and English saddle events. (Bids at the auction are honorary – a way of helping the youth feed and care for their animals until they compete at Terminal shows in Austin, San Antonio or Houston later in the spring - where the animals actually change hands after the auctions.) After the food exhibits are judged Wednesday afternoon, visitors can sample all the entrants in the Home Skills food competitions for a $5 tasting fee. “That’s a great bargain,” says Livestock Show head organizer, Jeff Dodd, with a hungry smile. Friday is a preparation day for Saturday’s presentation of the Livestock Show Queen, Princesses, and Duchesses; scholarship winners; home skills awards winners; and horse show winners. After the awards, the (honorary) auction raises money and recognizes the efforts of the 4-H and FFA youth that have spent so much time and effort on their projects. The Dripping Springs Ag Booster Association will bring $32,500 to spend at the auction this year, says Board member Lisa Alba. The Hays County Livestock Show is a

county-wide competition involving kids from all over Hays County – including San Marcos, Buda, Kyle and Wimberley but is heavily represented in the past few years by Dripping Springs youth. They make up almost half the contestants in the competition, says Jeff. He credits that active involvement with the great support they receive from Dripping Springs schools. FYI • The Hays County Livestock Show gets underway Saturday, January 14 with the Horse Show at Dripping Springs Ranch Park. It is followed on January 21 with a Buyers Appreciation Banquet at the Ranch Park, and the main Livestock Show on Tuesday, Wednesday, and Thursday, January 24 – 26. Those events are followed on Saturday, January 28 by the announcement of the Queen’s Court, winners of the Home Skills competitions and the Horse Show, and recipients of 2017 Scholarships. t’s time to enact those New Year’s resolutions – exercise more, eat better….but wouldn’t that be easier if it were just a little bit more fun? Hawk’s Shadow Winery has figured out how to make that happen with Vinyasa at the Vineyards – the perfect pairing of yoga classes with their Hill Country wines! Beginning January 2, certified yoga instructor Lisa Reed will lead Vinyasastyle yoga classes Monday and Wednesday mornings at Hawk’s Shadow Winery on McGregor Lane near Dripping Springs. Classes will be held in the main Tasting Room, whose large windows offer a magnificent view of hills and valleys rolling down to the Pedernales River. The new Tasting Room has ample floor space in its artful wood and steel construction, with a balcony for relaxing après yoga. Lisa’s vinyasa-style class combines conscious breath work with an ongoing flow of “asanas” (yoga postures) which she describes as “energetic.” Lisa began giving classes at the Vineyard last October and, after taking a Christmas break, is ready to get back to her small but dedicated group of yoga students. There’s always room for more, she adds. Two of those students are husband Tom and his brother, Doug Reed – co-owners (along with Chip Concklin) of Hawk’s Shadow Winery. “Tom and Doug keep

Yoga class participants will be amazed to find out that the floor of their yoga studio is also the ceiling of a massive underground wine cellar dug into solid rock fifteen feet below their mats. Accessible via a winding circular staircase, the 2,500 square-foot cellar maintains an ambient temperature of about 58° yearround – the “sweet spot” for aging barrels full of Hawk’s Shadow wine, says Doug. Humidity is maintained in the 70 to 90 percent range, which prevents evaporation from the oak casks. The cellar is strategically situated to enable the wine barrels to be filled by gravity-flow from the wine production room uphill. Gravity flow is the preferred Old World method for transferring wine from press to aging casks, says Doug. “The impeller of pumps can shear molecules of the wine,” he explains. “Gravity feed is much gentler.” Among the 160-plus barrels in the aging cellar is a long dining table, used for wine pairing dinners held in the cellar itself. (Each chair is draped with a large red fleece wrap, to keep its occupant cozy in the cool cellar temperatures.) The Hawk’s Shadow team pairs their wines to caterers’ menus to offer the perfect blend of food, wine and atmosphere. Hawk’s Shadow Winery has been producing fine wines since 2011, but their story begins twenty years earlier when Doug and wife Carol purchased the 76acre ranch northwest of Dripping Springs. They worked hard clearing and working the land, and raised herds of longhorn cattle on it. In 2003, they built a home on the ranch’s hilltop, overlooking what would become their vineyard site. In the mid ’90s, Doug, Tom and Chip

Photo courtesy Hawk’s Shadow Winery. planted a few grapevines in the rich soil along the lower creek bed. To their astonishment and dismay, the grapes did not flourish in the rich alluvial soil. Years later, they gave viticulture another try – this time in the dry caliche soil on the hilltop near Doug’s house. To their surprise and delight, the grapes didn’t just grow – they flourished in the unforgiving limestone. In 2009, they celebrated their first harvest. By 2010, the trio had launched Hawk’s Shadow Winery. At present, the vineyard covers more than seven acres with Grenache, Syrah, Mourvedre, Tempranillo, Sangiovese Aglianico, and Nebbiolo vines which are used for their estate red wine, “HSV”. Hawk’s Shadow blends grapes from other Texas vineyards to produce their line of white wines, red wines, and rose. Doug See VINYASA, page 5
