The Mercantile serves up wine, tapas, more

rought to you by the same people who named a brew pub “The Barbershop,” comes Dripping Springs’ new wine and tapas bar, The Mercantile. What owners John McIntosh and Dave Niemeyer may lack in naming exactitude, they more than make up for in creating atmosphere and cuisine. Their newest venture has a distinct style and menu very different from its sibling business just two doors down on Mercer Street. The focus of The Mercantile is wine and food, with an emphasis on national and global selections, says John. “We wanted to fill in the wine bar gap after Dudleys Wine Bar closed,” he says. The addition of tapas (small snacks or appetizers, well-known in Spanish bars) to the business plan came after that. “There are so few places in Dripping that serve
late,” he observes. “And I’m a small plate eater. I like to try small amounts of different things, and not be married to a huge serving of a single $25 entree.” The interior of the limestone building has been totally remodeled to make room for a full commercial kitchen where chef Chris Hoffman (of The Goodnight Diner and, most recently, Blair House in Wimberley) cooks up the price-friendly small wonders. These delights feature ingredients such as shiitake chicken liver pate with fig port marmalade and crostini; dolmas stuffed with bulgar, apricots and mint w/ tahini aioli; red wine braised beef short ribs with rosemary polenta and arugula pesto; and shallot croustade with house smoked bacon jam, sunny-side-up quail egg and micro greens. tile: delights such as pulled pork sandwiches, Philly cheese steak, and BLTs are prepared in The Mercantile kitchen and wheeled over to the neighboring business in a stainless steel food cart, with steam compartments to keep the food hot and fresh. While the menu for the two businesses is distinct, chef Chris’ commitment to excellent taste carries over to the cart cuisine. Chris and Jana’s bright jars of pickled quail eggs, green beans, watermelon rinds and other pickled delights line the walls of The Mercantile and can be purchased.. A long granite bar runs almost the length of the main room, with long tables and booths on the opposite side of the open floor plan. Multi-colored cedar planks cover the walls and earth-toned tiles pave the floor. Etched glass and eclectic art work add to the calm interior. Most of the decor features reused/refurbished materials, says The Mercantile’s new manager, Jolene Stietz. After years working very late hours managing bars in Austin, Houston and
Key West, Jolene says she’s thrilled with the earlier hours The Mercantile offers in fact, she recently moved to Dripping Springs to make her commute even easier. Her staff of four servers are fully trained in wine lore and have the knowledge to pair wines with the tapas, she assures. Regular patrons of the Barbershop Bar may recognize a familiar face in the back of the kitchen. John’s son, Fischer, is serving as chief dishwasher and cook’s helper. The Mercantile is open Wednesday through Sunday. Happy hour begins at 4 pm, with $1 off featured wines. Four craft beers are always on tap and tapas are available until closing, around 11 pm. Back and front patio areas will be opened next year, with occasional live music on the back patio. The Mercantile will also serve as one of the venues for the Dripping Springs Songwriters Festival, this October 17 and 18. DRIPPING SPRINGS H The Dripping Springs Trails Plan Advisory Committee is working on a master plan for trail development in the city and its surrounding area and currently is seeking community input on a variety of issues, including route alignments and use patterns. The initial trail plan was approved in 2012 and this past March, the city received a grant to further efforts through the Rivers, Trails, and Conservation Assistance program. Since then, staff and the committee have been working closely with National Parks Service to develop a more vibrant trail system to link residents with parks, shops, schools and various points of interest throughout Dripping Springs. Creators envision a world-class trail system with a network of routes that allow residents and visitors to walk, bike, run or hike. Proposed routes will provide a variety of trail experiences, from paved multi-use paths to natural hiking trails, connect destinations beyond Dripping Springs and will take advantage of opportunities to reach the Violet Crown Trail and other regional trails and parks. Most importantly, the Dripping Springs Trails System will include design that is welcoming and safe for diverse users and will provide opportunities for all ages, abilities and levels of mobility. Dripping Springs wedding destination, scenic city

o add to its other recent honors, Dripping Springs has been named the official Wedding Capital of Texas and earned a gold-level Scenic City award. Sherrie Parks, executive director of the Dripping Springs Chamber of Commerce, recently counted more than 30 wedding venues within a 15-mile radius of Dripping Springs. “The measurable growth of local wedding commerce has played an integral part in the rapid development of tourism and the economic life in Drip-
ping Springs,” she claims. To recognize this fact, the Chamber recently filed for — and was awarded— the trademark “Wedding Capital of Texas.” With a variety of distinctive wedding venues, from rustic to elegant, Dripping Springs offers something to suit every theme and budget, says Chris Henchion, Chamber chairman. “With full support services available locally, including wedding planners, florists, photographers, caterers, event rentals, bakeries, ministers and (of course) romantic honeymoon getaways, plus our good old-fashioned hospitality,
the city has become the popular wedding destination that it is today,” he says. Dripping Springs also recently joined the ranks of only 52 Texas cities to be designated a “Scenic City” through Scenic Texas’ City Certification Program. Scoring 275 points out of a possible 338, Dripping Springs earned a Gold Award for implementing high-quality scenic standards such as a sign ordinance, a landscape and tree-planting program, parks and trails, public spaces, maintained sidewalks, and unity of design standards for storefronts. The city earned bonus points for its water quality protection ordinance, conservation design subdivision ordinance, agricultural heritage preservation program, downtown historic district listed on the National Register of Historic Places and for its recognition as the first International Dark Sky Community in Texas. In bestowing the award, Scenic Texas reports it has found a direct correlation between the success of a city’s economic development efforts and the visual appearance of its public spaces. Dripping with Taste Wine and Food Fest

he 7th annual Dripping with Taste Wine and Food Festival offers the chance to get really into wine with both feet! The area’s premier wine and food-tasting event, held September 13 at Dripping Springs Ranch Park’s Event Center, will offer participants a chance to stomp grapes (bare feet and all) and then emblazon a t-shirt with a wine-colored footprint testifying to their feet’s feat! Twenty-seven Texas wineries, three regional distilleries, six craft breweries and sixteen area food vendors will be on hand all afternoon, serving up samples of the best tastes that Texas has to offer. For the first time this year, that includes distilleries showcasing vodka, rum, gin and bourbon. Altogether, more than 90 drinks will be available for tasting, says Pam Owens, director of the Dripping Springs Chamber of Commerce Visitors Bureau, sponsor of the event. “It’s the best chance to taste the most Texas wines under one roof,” she advises. Sixteen restaurants and specialty food producers will be offering samples of their wares, including smoked salmon from Celtic Seafood, cookies from the Cookie Fairy, crepes from Crepe Crazy, goat cheeses from Pure Luck Dairy, tapas from The Mercantile, and meatballs from Juicy Jay’s. Art and food vendors — 26 in all —will sell handmade creations at their booths on the hard-pack floor of the arena. Event organizers recommend appropriate footwear (such as boots or sneakers) for walking that area.
