Happy New Year, and I hope you are off to a great start in 2020. How time flies! I remember when the year 2020 conjured up images of a world like the the cartoon “Jetson’s,” where our cars could fly and we lived in the sky! I am sure some of you can relate. But here we are in the new ’20s and, (thank goodness) we are still enjoying the beautiful land on which we live, with lovely hills to climb and hike with breathtaking views of our amazing Hill Country. Our trees (other than the cedar at the moment), wildflowers and wildlife add beauty like no other to our area. And of course, our sunsets in the hills and wide open Texas skies are hard to beat! I wouldn’t want it any other way and I sure don’t want to take all we have for granted. Whether you live in the area or just passing through, get out there and explore our Hill Country. …there’s plenty to discover with so many interesting people, places and events all around you. Have fun and Happy 2020!

L
os Olivos Market has been a popular destination since its grand opening in 2018. Rafael and Rebecca Varela, father and daughter team, purchased the shop —formerly as “Taste Buds” — because they are passionate about the Hill Country and what the store means to visitors and locals alike. The market retains all its original charms, now with its own unique flair. You can still sample Texas gourmet products and enjoy a wine tasting or relax with a craft brew, wine or a Winea-Rita, and now also indulge in shareable plates or lunch. Check out the Charcuterie Board, Smoked Duck Caesar Salad, Bruschetta, or Merguez Meatballs with Chimichurri sauce. Los Olivos also serves “sweet bites” – gelato or a Sugar Shack croissant sticky bun. The shop is an ideal destination for lunch or happy hour, with both indoor and outdoor seating. Los Olivos Market also offers their own private label of Texas gourmet foods, with around 150 products to choose, including glazes and jellies, dips, sauces, pickled products, olives, salsas, olive oils, plus nuts and chocolates. Fresh samples are served up daily, so you can taste before you buy. The newest product — Garlic Funk Sauce — can’t seem to stay on the shelves! And gourmet food products from local producers are also available — including Fredericksburg Farms, New Canaan Farms, Soberdough Brew Bread, Silverleaf International, Deep River Specialty Food, Fischer & Wieser, Classy Delites and San Saba River Pecan Company. “We’re passionate about the Texas Hill Country, good wine, and delicious food,” Rebecca smiles. “We started the business because we have seen first-hand the amazing growth in the central Texas area and wanted to share our experience. Phenomenal producers are being born here, SEE Los Olivos, page 7

and there is nothing else like the beauty of the Hill Country.” A generous selection of wines, complete with all the accessories you can imagine, plus local brews from Oasis Brewing Company, Rahr & Sons Brewing, Shiner, Real Ale, and 5 Stones Brewery and more are available at Los Olivos. The shop’s popular Wine-a-Ritas are available in four flavors. Try a sample to help you choose your favorite flavor, and purchase a koozie bottle to enjoy your drink while strolling the Wimberley Square. You can also select from your favorite gourmet foods, wines and more to create a beautiful gift basket to enjoy in your room or with your loved ones. The shop’s name “Los Olivos” came about naturally, in hon-
or of Rebecca’s grandfather. “My grandfather was from Madrid, but a true Texan at heart. One of his favorite quotes was ‘You may all go to hell and I will go to Texas,’ by Davy Crockett,” she explains. “He lived on our ranch in Dripping Springs for eight years before he passed away. During this time, my aunt brought him two olive trees for the property, which he planted, giving us the idea of naming it Los Olivos Ranch. We immediately fell in love with the name and when we took over the store, we knew from the beginning what the name had to be.” Rafael and Rebecca have plans to open a second location by year’s end in Buda. “At our new location we’ll have around 300 varietals of wine and approximately 75 to 100 different kinds of craft beer, including 12 on tap,” Rafael explains. “We’ll also have our Wine-a-Ritas and retail, but we’re most excited about our full kitchen and a butcher shop.” The Buda location will be in the Buda Mill & Grain Co. on South Main Street. Los Olivos Market also hosts events with live music, food, and drinks. If you’re looking for a place to celebrate a birthday party, book club, or gather with friends, Los Olivos Market has a large table available to reserve. Rebecca smiles, “Come and relax and stay awhile.” Los Olivos Market is located on the Wimberley Square at 13904 Ranch Road 12 in Wimberley. Hours are Monday to Friday 11:30 am to 8 pm, Saturday 10:30 am to 8 pm, and Sunday noon to 7 pm. For more information, visit the website at losolivosmarkets.com, follow Los Olivos Market on Facebook or Instagram for a list of upcoming events, or call 512-847-7771.

Bankersmith, Texas A A road tripper’s delight, the charming little town of Bankersmith, Texas — a historic Texas Railroad Town established in 1913 on Old Highway 9 (now known as Old San Antonio Road)— boasts a saloon and dance hall, where you’ll find regular live music. Hungry visitors can grab a delicious “Big Texas” burger, or choose from a variety of tasty burgers, pulled pork sandwiches, artisan pizzas, gourmet hot dogs, pork ribs (smoked or fried) and more at Feed and Seed, open weekdays at 4 pm and weekends at noon. Bankersmith also has a full bar with amazing cocktails, beer and wine. Once a ghost town, this lovely property nestled between Luckenbach and Fredericksburg is also home to Bankersmith Hall — a live music dance hall, wedding reception venue, and corporate retreat center. The charming landscape accommodates more than 500 people and has two bars and an additional outside stage. The property provides plenty of parking and serves as a truly unique backdrop for events and occasions of all kinds — from weddings, private parties, promotional events and corporate shindigs to classic car shows, cookoffs and washer tourneys. The old homestead-turned-wedding and event venue has a totally unique style. Designed in the style of a classic wooden barn and Texas dance hall, the hall is 4,700 square feet, lovingly built from reclaimed church wood. The indoor venue comfortably seats 300 plus guests (700 when standing). Bankersmith was established in 1913 as a train station along the Fredericksburg and Northern Railroad, and named after Temple Doswell Smith, a Fredericksburg banker who financed the railroad. Once home to a U.S. Post Office and a local general store, during the 1920s, the town reached a peak population of about 50 residents. At the time of its founding, Bankersmith was near one of Texas’ only railroad tunnels (and the only railroad tunnel in the state at the time), now part of Old Tunnel State Park, where from May to October, visitors can watch millions of bats emerge nightly at sunset. The Fredericksburg and Northern Railroad ceased operations in 1942, abandoning the line running through the town of Bankersmith. Soon, the post office was gone and the town all but deserted, though some residents remained until the 1960s. Today, there’s something for everyone at Bankersmith, with plenty of outdoor space — including a large grass patio area with lawn games and benches and an open-sided bar pavilion for outdoor celebrations, plus a standalone bar and the general store, and on site catering options for weddings and events (from barbecue to farm-to-table). There is also a small farm on the property loved by children and adults alike. Guests can wander the property for fabulous photo opportunities—including a visit to see the baby pygmy goats or Stella, Judy and Wallace, the farm’s darling miniature-breed donkeys. Sit in a rocker on the porch, listen to a picker’s circle, enjoy a cocktail while watching a family of chickens scratch away. Lov-

ing Beer Burros live on the property and are available by request. There is even an old tour bus on site for photo opportunities embellished with a ‘Texas is my Happy Place!’ mural. Upcoming events include: the Snow Crab Festival January 25, January 31 and February 7; Crawfish Fest February 15 and March 21; Texas Washers Tournament February 22; Fredericksburg Cheese and Wine Fest April 10; and the Texas Peach Festival June 5. A shuttle service is available to safely shuttle event guests to and from Fredericksburg. Bankersmith, Texas, is located at 7905 Old San Antonio Road in Fredericksburg. Hours are Monday through Wednesday from 4 pm to 8 pm, Thursday and Friday from 4 pm to 10 pm, and Saturday from noon to 10 pm. The dance hall and entire property are available for events. Hill Country Wildlife
A COLUMN by C.J. WRIGHT
The interesting effects of colors on wildlife
I
t’s a bright, mild January day and bare, deciduous tree limbs appear bleached in the noonday sun. With hunting season all but over, white-tailed bucks occasionally emerge from their hiding, nervous and skittish as they chew grass, starting whenever the breeze kicks up dry leaves. Cardinals, juncos, and White-throated Sparrows land in flowerbeds searching for seeds. Ruby-crowned Kinglets zip from branch to branch, chatting as they go, feeding upon goldenrod seeds and the lovely, blue-gray seeds of wax myrtle. Soon the juncos leave the beds to feed on black oil sunflower seeds scattered on the deck floor beneath feeders. Because it is a FeederWatch day, I go to the window to count only to see the juncos dive into nearby bushes, their outer tail feathers flashing white. Glancing down, I realize my mistake and change my white sweater for a red one. For wildlife, white signifies danger. This is never more obvious than among white-tailed deer that raise their startlingly white tails as an alarm to others. (While does flag, often to warn their fawns, bucks—having no attachment to either doe or fawn, and all about self-preservation and not drawing attention—often tuck their tails and run.) As with juncos, several bird species such as Northern Mockingbirds, use the white in their plumages to raise an alarm. White plays an interesting role among Barn Owls, nocturnal birds of prey found the world over. Within their populations, there are owls with red undersides and others with white. Researchers, while for twenty years studying a Swiss population of Barn Owls, thought that regardless of color, on bright moonlit nights the owls’ hunting success would be limited because their prey could more easily detect them. They found, however, that while the offspring of red Barn Owls received less food, gained less weight with the youngest having a lower chance of survival, the white Barn Owl young received the same level of food as when the nights were dark, and they grew at a normal rate. Upon studying common voles, the primary prey of these owls, the researchers discovered that when voles spied a white Barn Owl, they reacted as usual: they froze. However, they remained frozen longer, dazed by the ghost white plumage that reflected the moonlight and shone like a beacon. This is thought to explain why Barn Owls with white feathers—a rarity in nocturnal animals—evolved. And what about other white plumages? Albinism has been defined as a genetic mutation that results in the lack of an enzyme essential to produce melanin. Albinism in birds is expressed by white plumage, red or pink eyes, and colorless bills, legs, and skin. (Some may show yellow or orange coloring in bare areas.) However, white birds that show pigment or normal color in some of their plumages, and have eyes, bills, and bare areas of normal color, are leucistic birds—a condition sometimes mistakenly called partial albinism. There is no such thing as partial albinism. Because birds tend to rely on their plumage to blend into their habitat, a bird with albinism is a target for predators, especially hawks and falcons. In addition, because white feathers lack melanin, they
wear down more easily. This is especially true of flight feathers, making flying an energy drain for the bird. And when it comes to mating, birds depend on colorful feathers when courting, making the life of a bird with albinism a rather unhappy one and its lifespan shortened unless captured and kept in a sanctuary. Animals see white, but what about colors? Scientists can examine the cones of an eye to estimate the colors of light an animal might see, but not how the animal’s brain perceives them. Some findings conclude that our pet cats or dogs see mostly greys with some blues and yellows. That red cape could be any color, for bulls are color-blind. It’s the movement that catches their attention. Bees see ultraviolet, blue and yellow; pit vipers see some color and infrared; squirrels see blues and yellows. Birds have a decent range of color, possibly seeing five to seven colors. Nancy Burley of the University of California, Irvine noticed that her zebra finches preferred mates with pink, red or black leg bands and avoided any with green or blue bands. Burley theorized that her birds were drawn to mates with plumages with colors like their own. She theorized further that this helped them avoid hybridization. Burley coined this “species-confidence hypothesis”. Another researcher, Breanna Putnam of the University of California, and the Natural History Museum, both in Los Angeles, tested this hypothesis out on western fence lizards. She wore various colored t-shirts and measured how close she could get to a lizard before it darted away. She also gauged how easy they were to catch. After she put each color through 30 trials, Putnam found that the lizards preferred dark blue, the color males flash on their throats and bellies to communicate. This finding is important to birders and anyone who enjoys photographing wildlife, for by wearing colors that mirror the subject, one just might get a closer look or photo. We know that hummingbirds are drawn to the colors pink and red. Perhaps you’ve sat on your porch, wearing a red shirt, watching hummingbirds zoom in, and had a hummer fly within a foot of your face to check you out. While the air and ground are still cool, it’s time to plan for the native plants we want to add to our landscapes. It’s important to include both early and late bloomers. Also, think of brightly colored flowers that attract bees and other insects upon which many birds will feed. Female monarchs seek milkweed on which to lay eggs. Hummers are drawn to red flowering plants like autumn sage and Turk’s cap. Add berry, nut, and fruit- bearing plants for birds, squirrels, and deer. Avoid plants that produce white blossoms unless they happen to be moonflower vines that bloom at night and attract hummingbird moths. Hill Country Parks An outdoors New Year’s resolution: Visiting the state parks I haven’t seen
A COLUMN by SUZY MOEHRING MALLARD
R
ecently, I haven’t been really big on New Year’s resolutions. For what seems like decades, I resolved to lose those 30 pounds. Well. But in 2019 I realized that life was way more fun than focusing on a thing that I apparently didn’t really want to do. So in 2019, my New Year’s resolution didn’t have anything to do with the way my clothes fit or how I felt when I bent over to tie my sneakers. My resolution was to howl at every full moon. I have always loved watching the moon phases, knowing what the moon was doing each day, and I thought it was a special gift to me when I saw that golden ball rising in all its full gloriousness. So all last year I stood in my back yard in Central Austin on full moon nights and howled. And howled. Some full moon nights were cloudy and I couldn’t see the full moon, but I knew it was there. And I liked howling. My 2019 New Year’s resolution was a lot of fun to do. My daughter and her family went west from Cedar Park after Christmas to find some snow for the seven-year-old to play in, and they found it in Ruidoso — lots of it. Already on the ground and fresh snow falling. Mission accomplished. But in accomplishing that snow mission, along the way from Central Texas to New Mexico, they made lots of stops, and some of those stops were at parks. An old fort in San Saba. Davis Mountains. Barbeque in Llano. Oh, wait, that’s not a park. Anyway, what their trip reminded me as I followed my travelers in texts and photos is that there is a whole lot of Texas to see. And that’s my New Year’s resolution: In 2020 I’m going to visit 12 state parks that I have not seen. We’re lucky in Central
Hill Country SUN 12 January/February 2020
Texas to have so many state parks close by. I will be able to visit many new parks with a day trip: Old Tunnel State Park, for instance, and why haven’t I already been there? South Llano River State Park. Blanco State Park. Easy peasy day trips for a little outdoors time. I think the park I’ll spend some time at first is Seminole Canyon State Park and Historical Site because I want to see those pictographs and I love the wide open spaces. I’ve been talking for years about making a big trip to Yellowstone National Park. Maybe these Texas state park trips will help me get out of the talking stage and into doing it. Or at least I’ll see new Texas places while I keep on talking about a big ol’ Yellowstone trip. I’ll check with my cousin Sheryl and see if I can talk her into taking the four-hour ride southwest to Seminole Canyon State Park, and maybe sweeten the pot for her with a promise to check out Langtry and Judge Roy Bean, a place she wanted to see when we went to Big Bend a couple of years ago. Get Outside in 2020: That’s what Texas Parks and Wildlife Department’s website says, and what better places than our state parks. Here’s the lowdown on Seminole Canyon State Park. It’s on U.S. Highway 90 near Comstock between the Pecos River and the Rio Grande, it has camping sites, a visitor center with a store and museum-type display of pictographs in the park, guided tours at 10 am and 3 pm to pictographs Wednesdays through Sundays every month through May, half-day and day rugged guided hikes in the spring and fall, a scenic overlook that seems doable to a woman of a certain age, but I’ll find out later this month. And I’ll keep howling at the full moon in 2020, too.
