Claude and Uli, who owned and operated Hilton Head’s La Normandie Restaurant for ten years, now hold forth in their Moss Creek Village restaurant, just over the Hilton Head bridge. Chef Clause, a native of Normandie, France, has cooked in some of the world’s best kitchens, including Maxim’s in Paris, the Connaught (Chef Saucier) in London and Ernie’s in San Francisco. Culinary school graduate Uli orchestrates matters in the dining room, welcomes guests and makes them feel very much at home.
Claude and Uli’s uses only the freshest and highest quality ingredients to create the wonderful food for which they have received numerous accolades. Winter is a great season here in the South. While we might not remember when it was snowing hard enough to count the snowflakes, we can enjoy some chillier days when we get to wear a sweater and crave some comfort food. The rest of the season can be still full of sunny days and even sleeveless shirts. The culinary scene is alive and well. Restaurants week starts end in January, followed by Hilton Head Island Wine and Food Festival March 10–15 (see pg 104). This year we are so excited for Fork & Fun to be presenting co-sponsor for the Hilton Head Island Seafood Fest April 4-5 (see pg. 120), established and presented by David M. Carmines Memorial Foundation. Mark your calendars now for these popular events. Thanks to the droves of visitors that come during vacation season, Hilton Head Island and nearby Bluffton have more than 300 restaurants to choose from. Here is the skinny on recently opened establishments. Orobello’s Bistro & Pizzeria
After working in local restaurants for more than 20 years, Jennifer and Aaron Dempsey decided to open their own place -- an Italian bistro and pizzeria called Orobello’s. Named after Jennifer’s grandparents, the restaurant specializes in fresh, homemade Italian cuisine infused with southern hospitality. Each pizza is hand-tossed. “We make our own dough,” Jennifer Dempsey said. “We never use anything frozen. Everything that we use is the highest quality ingredients. We don’t use any processed or canned items for our vegetables. When you get a mushroom pizza from us, you’re getting portobello mushrooms. When you get broccoli, it’s fresh-stemmed broccoli. We don’t cut corners.” Orobello’s is located in Buckwalter Place, between Palm & Moon Bagel and Hong Kong Chinese Restaurant. The restaurant was recently voted “Favorite New Restaurant” by readers of Bluffton Monthly magazine. It provides a warm and inviting atmosphere. Chris and Kim Gregory have opened Hilton Head Island’s newest pizza place at 1-B New Orleans Road, next to the Mattress Firm. Dough Boys specializes in pizza, salads and subs for dine-in, take out and delivery. “It’s a great spot in a great location, and who doesn’t love pizza?,” Chris Gregory said. “It’s a family friendly restaurant.” For Chris, it’s a return to his college days. owned a pizza place on campus at the University of Massachusetts and has brought the same concept to the island. “We’re going to focus on the real thin crust, like a St. Louis style pizza,” Gregory said. “We are also going to do a Sicillian style with a thick crust.” Dough Boys is offering three types of crust, all made from scratch, and three different styles of sauce. Each pizza will also have a unique cheese blend. The Gregorys have also renovated their building, which used to be Bravo Pizza. They’ve added a restroom to make it more dine-in friendly. The three have renovated the former One Hot Mama’s building, located at 70 Pennington Drive, and are ready to let the good times roll. “It’s a great building and it’s in a great location,” Aquino said. “It was awesome when it was Mama’s. Everybody has a lot of great memories here and we just wanted to try and rekindle that. It’s going to be like the Cheers of Bluffton.” Aquino describes the menu as “upscale bar food with a twist” with homemade stromboli, Philly cheese steak egg rolls, sandwiches, entrees and more. Most know Tim Singleton as a former standout player and coach for the local high school football team. In December, the native islander teamed up with his mother, Deborah Govan, to open a unique Southern-style restaurant on the north end. Ruby Lee’s, named in honor of Singleton’s grandmother, is the island’s newest hotspot for sports, blues and soul food. “I get excited just talking about it,” Singleton said.

A new European-style coffeehouse has opened in Bluffton. Located in Bridge Center, Pino Gelato Gourmet Café prides itself on fresh, high-end coffee drinks, desserts, chocolates, sandwiches, flatbreads and more. The coffee is fresh-roasted by Charleston microroaster Island Coffee each week. “Our coffee is the best in the area,” co-owner Krisztian Lonyai said. “(Island Coffee) imports beans from Costa Rica and Columbia, they roast them on Tuesday and they get here on Wednesday. That’s the main reason why our coffee is so good and fresh.” Chocolates are provided by DeBrand Fine Chocolates, a company that has twice been listed among “Oprah’s Favorite Things” in Oprah Magazine. Desserts are from a small pastry shop outside of Charlotte. “Nothing that we have has preservatives,” Lonyai said. “Everything is very healthy. Old Town Dispensary owner Thomas Viljac has partnered with Matt Jording, owner of Hilton Head’s acclaimed Sage Room, to give the popular bar a menu unlike any other in Bluffton. “We have super high-end bar food but it’s not super-high in price,” Jording said. “All of our ribeye and fillet we grind at Sage Room for our burgers here. Everything is made-to-order. A few big changes have come to The Big Bamboo Café. The popular restaurant and bar has expanded its outside deck on the second level of Coligny Plaza, adding about 50 feet to the front of the restaurant. Management also decided to upgrade its menu, focusing on fresh seafood items. The restaurant hired a team of culinary experts to help revamp the menu. Many fried items have been replaced with healthier grilled options, such as chargrilled chicken tacos. Preheat the oven to 350 degrees F. Place the chicken breasts on a baking sheet and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, or until cooked through. Set aside until cool enough to handle, then remove the meat from the bones and discard the skin. Cut the chicken into large dice. You will have 4 to 6 cups of cubed chicken. In a small saucepan, heat the chicken stock and dissolve the bouillon cubes in the stock. In a large pot or Dutch oven, melt the butter and saute the onions over medium-low heat for 10 to 15 minutes, until translucent. Add the flour and cook over low heat, stirring constantly, for 2 minutes. Add the hot chicken stock to the sauce. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper, and heavy cream. Add the cubed chicken, carrots, peas, onions and parsley. Mix well. For the pastry, mix the flour, salt, and baking powder in the bowl of a food processor fitted with a metal blade. Add the shortening and butter and mix quickly with your fingers until each piece is coated with flour. Pulse 10 times, or until the fat is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. Dump the dough out onto a floured board and knead quickly into a ball. Wrap the dough in plastic and allow it to rest in the refrigerator for 30 minutes. Preheat the oven to 375 degrees F. Divide the filling equally among 4 ovenproof bowls. Divide the dough into quarters and roll each piece into an 8-inch circle. Brush the outside edges of each bowl with the egg wash, then place the dough on top. Trim the circle to 1/2-inch larger than the top of the bowl. Crimp the dough to fold over the side, pressing it to make it stick. Brush the dough with egg wash and make 3 slits in the top. Sprinkle with sea salt and cracked pepper. Place on a baking sheet and bake for 1 hour, or until the top is golden brown and the filling is bubbling hot.
