Winter is a great season here in the South. While we might not remember when it was snowing hard enough to count the snowflakes, we can enjoy the occasional chilly days when we get to wear a sweater and crave some comfort food, with plenty of sunny days left spent sleeveless on the beach. The culinary scene is alive and well, the Lowcountry is home to hundreds of great restaurants, ranging from secret hideaways to delightful full-service, high-end hotspots. You can enjoy regional fare such as local seafood and farm-to-table restaurants and international cuisine from all corners of the world: American, French, German, Italian, Mediterranean, Brazilian, Greek, Asian, Mexican and Southwestern cuisine right here in our paradise. Native Hilton Head Islander Chef David Young has opened Burnin’ Down South restaurant, named after his cookbook. Chef Young established himself at the ever popular Sea Shack on Hilton Head Island, then later opened Roast Fish and Cornbread where he and his team ran a very popular eatery and built up a loyal clientele over the years. At Burnin’ Down South, he continues to cement his reputation as one of the top chefs specializing on Lowcountry cuisine, There are four separate menus for lunch, dinner, vegetarian and brunch with dozens of signature offerings including potato hummus platter, Ethiopian lentil salad, Lowcountry sweet potato pancakes served with sweet potato syrup, Gullah Bowl, “Good as Grandma’s” shrimp gumbo, black and blue salmon sandwich, whole roasted flounder, and lamb stew. Desserts include homemade cheesecake, key lime pie and fresh fruit parfait. The staff is able to accommodate most dietary requests. Local Pie is opening this fall to the delight of oven-fired pizza aficionados. Chefs Lee Lucier and Jack McNulty and partner J.R. Richardson understand it’s all about their dedicated culinary team – and the ‘double 00’ flour. Translated from the Italian dopio zero, the ‘double 00’ refers to the ultra fine grind of the wheat flour, powdery and silky in texture, used in making the sourdough starter for the restaurant’s pizza dough. The custom pizza ovens (affectionately called “the twins”) are designed to make pizzas with thin, crisp, crusts the signature of Neapolitan-style pizza. Diners will enjoy the open kitchen layout. Their duck prosciutto, bacon, sausages, as well as fresh-water mozzarella are all made in-house. Wine and cocktails are innovatively served on draft and local craft beers in kegs. Local Pie combines the spirit of Naples’ pizza with the hand-crafted, creative influences of the Southeast. Kathy Watson became the new owner of 843 in a way we have all fantasized about. After spending more than two decades visiting as a tourist, she decided to become a full-time Hilton Head Island resident in November 2013; she started looking for a business to buy and discovered her favorite restaurant, 843, was available. She purchased the popular farm-to-table restaurant and now spends her days overseeing the day-to-day operations. She also makes 843’s legendary desserts, next to some of the top cooks in the Lowcountry. Head chef Bill DeRoche, a native of Hilton Head, has worked on Hilton Head Island and in Charleston as a chef and restaurant consultant. Directions:
Pre heat oven to 425 Make a roux: melt butter in a saucepan. Stir in an equal amount of flour and cook the mixture for just under a minute. Set aside. In a separate pot, lightly sauté onions, celery and garlic. Add 8 cups of water. Add Roux. Dissolve crab and lobster bases in water. Add crabmeat, pepper and seasoning. Bring just to a boil. Turn off heat. Add Sherry and serve. 31
