2 lbs fresh Brussels sprouts, cut in half lengthwise 1 medium red onion roughly chopped 6 cloves garlic peeled and roughly chopped 1 teaspoon kosher salt 1 teaspoon freshly ground black pepper Red pepper flakes (to taste) 2 Tablespoons extra virgin oil 8 slices uncooked thick-cut bacon cut into 1/2 inch strips
Directions
Preheat oven to 425 degrees F. Line a sheet pan with foil. Spread the Brussels sprouts, onions and garlic on the pan. Sprinkle the sprouts with the salt, pepper and red pepper flakes, then drizzle with olive oil. Toss the sprouts with clean hands until well coated. Arrange the Brussels sprouts in a single layer. Sprinkle the cut bacon pieces over the pan evenly. Bake for 20 to 25 minutes, until the sprouts are fork-tender. Taste and season to taste.

Carolina Gold Rice Is Delicious Living History BY KEITH PANDOLFI
R
ice is an overlooked culinary component, often viewed as a necessary, but not particularly flavourful, staple to a meal. It’s a supporting cast member to the star on the plate, the designated driver of all things delicious. But then there’s Carolina Gold rice – a product so sought after in the 18th and most of the 19th Centuries, both in North America and in Europe, that it made the Lowcountry and Charleston, South Carolina, one of the richest areas in the United States for a time. In the mid-18th century in Bluffton, rice fields sprawled throughout much of the forested land south of the May River, as the grain became the South Carolina colony’s most lucrative crop. Carolina Gold rice was named for the unique rice fields, which turn a gleaming gold when ready to harvest. “What I love about Carolina Gold,” said chef Michelle Weaver, who specializes in Southern cooking , “is that it’s the most diverse rice I’ve ever worked with. It can

work as sticky rice, in porridge, in risotto, whatever you need.” Despite a subtle nuttiness, the rice is not particularly aromatic, which means it inherits the flavours it’s sharing the plate with. Some have called Carolina Gold the world’s greatest rice. But the crop nearly disappeared in the late 19th and early 20th Centuries. First, the Civil War wiped out many of the ancient rice fields. Then two massive hurricanes swept through South Carolina in 1910 and 1911, destroying the 30% of the rice industry that had managed to recover. Finally, the Great Depression in 1929 was the knockout punch, putting an end to commercial harvests. “Then, in the 1950s, [the brand] Uncle Ben’s comes in,” said chef Sean Brock of Husk, one of Charleston’s most acclaimed eateries. “That’s when rice went into [a] mass produced, total mechanized phase of production.” As a result, Carolina Gold disappeared for most of the 20th Century. Until, that is, Dr Richard Schultz, an eye doctor from
Savannah, found Carolina Gold seeds sitting unloved and unused in a USDA seed bank in the mid-1980s. He mainly wanted to find a rice to use as bait in his duck-hunting hobby, but eventually produced enough to begin selling it to the public. By 1998, Anson Mills, which specializes in heirloom southern grains and vegetables, began planting it. Essentially, the rice industry in South Carolina – and the rest of the U.S. – mirrors what happened to the US beer industry. Large-scale corporations had wiped out small businesses by the mid-20th Century, only for artisanal methods and small-batch production to re-emerge in the late 1990s. Small, local breweries are now enjoying a full-on, trendy resurgence.

Scrape seeds and any attached fibers from pumpkin using a large metal spoon. Place seeds in a colander and rinse well to help separate seeds from fibers. Set seeds aside. Cook seeds in a medium saucepan of boiling salted water until beginning to look translucent, 5-7 minutes. Drain and transfer to a paper towel-lined baking sheet; pat well to dry.

COMEDY MAGIC CABARET IS GOOD, CLEAN FUN By Tim Watson Kerry Pollock walks on stage at Comedy Magic Cabaret on Hilton Head Island like he built the place — because he did. Pollock’s passion for both comedy and magic lured him away from his original career as an engineer, one gig at a time. Pollock is gifted at crafting jokes and illusions — and the settings where performers present them. His half-bowl, 88-seat club in the South Island Square shopping center feels like a classic jazz club; there’s not a bad seat in the house. Corporate events, private parties and celebrations of life have taken place in this homey, intimate space. In addition to setting the stage for laughter and amazement on Hilton Head, Pollock has built stages and performance spaces for others in the entertainment industry. Audiences at Comedy Magic Cabaret have grown about 20% since the club opened, as word spread across the Lowcountry and beyond about Pollock’s “Funny Not Filthy” entertainment. Much of the credit for the club’s success belongs to his wife, Kelly, who is a breath of fresh air, tirelessly working the front and back of the house. Many guests become repeat customers — and close friends of the couple. Friends and fans are quick to sing Pollock’s praises. Among them are Rich and Janice Ross, who have also seen him perform at The Magic Castle nightclub in Hollywood. “The other comics told us that no one interacts with an audience better than Kerry,” Rich Ross said. As Hilton Head guests enjoy the show, they can also order food and drinks — Comedy Magic Cabaret serves simple Southern cuisine with a twist: pork and chicken sliders, paninis, and a variety of desserts. A
re you in town for a girls weekend? Hilton Head has got you covered. Are you golfing with the guys and don’t know where to go after hole 18? Then this is the right article for you. Let us help save you some trouble by giving you an insider look into nightlife on Hilton Head and point out some things you may have missed if this is not your first trip to our little island. If you just got in and you’re looking for something to do tonight on Hilton Head, you should start off on the South End of the island at Coligny Beach. The world famous Tiki Hut beachfront is the go-to spot for sand, tunes and late night eats. Enjoy music and drinks on the beach! If you are 22 or 62 this is the spot for flip floppin’ and beat droppin’ to start your evening off right. The Big Bamboo is a stone’s throw away in Coligny Plaza, where a huge new outdoor deck awaits you. Music is always happening at Bamboo, so pop in and experience a big Monday night throwdown with musical acts like GTA, a local band that throws down some serious 90’s grooves. There is no need to dress up, because the Boo’s crowd is usually in shorts and casual wear. A nearby restaurant, Fish, is a new spot in Coligny Plaza featuring live outdoor music, an extensive seafood menu and plenty of TVs to watch the game on. In the mood for a burger? Head over to Park Plaza by the entrance to Sea Pines Plantation. Char Bar always satisfies that burger craving and entertains with music on the deck outside. Would you prefer Mexican? Holy Tequila has you covered and is conveniently located in the same plaza. The Jazz Corner, located in Wexford Plaza, features local jazz and R&B on weeknights. Make a reservation and say hi to Marvin on a Monday night! Big Jazz Cats play on the weekend, so wear something spiffy. Porter and Pig is a neat little place close to the Jazz Corner if you just want to watch some sports and chill, with music a few nights a week. At Porter and Pig you can hear anything from acoustic solos to full-on bands in a cozy space that can get a bit tipsy after sundown on the weekends. Continuing on the Southend of the island, visit Ruby Lees -- a great spot for live R&B music. Slick dress is a must! Mid-Island features some spots you won’t want to miss. Fish Camp on Broad Creek is a fairly new spot just a hop and a skip off the cross island bridge, with music and beautiful creekside views. Comedy Music Magic is the place for those with a ticklish funny bone. Black Marlin, an outdoor spot with music and frozen drinks in Palmetto Bay Marina, is where families can hang out -- or mix it up and hear fishing stories from local salt bros. Dress up a little and hit Santa Fe to enjoy their rooftop bar. Stop in at Shelter Cove Towne Center and get a drink at Poseidon, where big regional music acts are always coming through so make sure to check their Facebook page.
On the north end you won’t want to miss Hudson’s. They have great local seafood on the docks with seasonal music. Catch the sunset and some entertainment on the Boathouse’s outside deck. A new seafood spot, Dockside, is right between Hudson’s and the Boathouse and offers seasonal outdoor music. Try them all whether you’re wearing searsucker or sandals. Looking for something to do after 10 p.m.? You need to head over to “The Barmuda Triangle” -- a nightlife hotspot consisting of five bars. Munch on great food at One Hot Mama’s, chug local brews at The Hilton Head Brewing Co., or hang with the locals at Reilley’s. All three have regular entertainment. The Boardroom has become a favorite late night music destination featuring local and not-so-local solos and bands that play on way past 11. I’ve heard the Lodge next door gets exciting, too. There is always lots of things happening at the Triangle. When the clock strikes midnight, shoot over to Hinchey’s Chicago Bar & Grill (located in Circle Center off of Pope Avenue) for some late-night fun. If music isn’t really your thing, Callahan’s has been here forever with pool tables and yokels gabbin’ about games. Maybe you’re looking for some healthy snacks and just want to bike over to Whole Foods and grab some sushi and a 6 pack. Don’t worry, they’re open till 9. We’ve also got a few theatres here on the island if you want to take it easy in Park Plaza or Coligny on the south end. Coligny Theatre is also starting live concerts so be sure to check their facebook page for updates! My last little piece of advice? Head over the bridge to Bluffton at least one night while you’re here. Be sure to check out places like the Roasting Room Lounge -- a listening room in Bluffton that brings in big acts and serves you fine bourbon simultaneously. There are many great food spots and music is everywhere in the Promenade area. Check out the Calhoun Street art galleries and the Farmer’s Market while you’re there. Bluffton is not a place you want to miss. Have fun and be safe in the Lowcountry! 51
Restaurant News Stellini celebrates 30 years
Nunzio Restaurant + Bar Nunzio Restaurant + Bar is opening on New Orleans Road on Hilton Head Island this month, according to manager Maribel Patruno. The restaurant’s owner, Nunzio Patruno, has seen success with New Jersey restaurant Nunzio Ristorante Rustico, which opened in 2003 and has been reviewed by The New York Times and other media outlets. “Adulation of fresh vegetables and seasonal ingredients may seem cutting-edge, but Nunzio Patruno grew up cooking this new old-fashioned way years ago, and he has the loyal hordes to prove it,” the New York Times article says.
Owners Joe Pesce and his daughter Elise and her husband Kyle Parlagreco opened Stellini Italian in 1989 on Executive Park Road, serving New Jersey-style Italian fare. To celebrate the restaurant’s 30th anniversary, the original 1989 menu and its original prices will be offered for a week in January. “We have to thank our customers – that’s why we’ve been here for 30 years,” says Elise.

Maribel said staff at the Hilton Head restaurant is currently hiring, applying finishing touches and going through the last series of inspections. A 1,300 square-foot kitchen has been added to the 18 New Orleans Road location — a former Reebook Crossfit gym. The restaurant, able to seat about 200 people, also will have a large bar area and two outdoor seating areas. “We are not looking to be the special occasion,” she said. “There is something for everyone at every price point.” Angelo D. Patruno, Nunzio’s brother, will be the chef de cuisine, Maribel said. He was born in the Puglia region of Italy and attended the Culinary Institute of Italy. He owned Ristorante IL Melograno in Doylestown, PA for nearly 20 years. “Once you have a good ingredient and it’s fresh, it can speak for itself,” Angelo said “Keep it simple and use fresh ingredients. Ingredients
2 ounces blanco tequila Juice of 1 whole lime ½ ounce triple sec, preferably Cointreau Salt for rim Lime wedge, for garnish
Directions
Place some salt on a small plate. Rub rim of an old-fashioned or rocks glass with lime (reserve for serving); dip in salt. Fill with ice and set aside. Combine tequila, lime juice, and simple syrup in a cocktail shaker. Fill shaker with ice, cover, and shake vigorously until outside of shaker is very cold, about 20 seconds. Strain cocktail through a strainer or a slotted spoon into reserved glass. Garnish with lime wheel.

Shrimping in the

S
ome say commercial shrimping in Beaufort County will disappear eventually, but Larry Toomer believes that the combination of an evolving market and creative local solutions could save the business that he loves and is in his blood. “I get satisfaction from figuring out where they are,” he said. “I love the feeling of ‘Got you!’” For decades, Toomer’s family has been in the business of catching and selling local shrimp. These days, his 75-foot trawler, “Daddy’s Girls,” is one of only a few large shrimp boats left in the area. No one would have predicted the demise of this iconic Lowcountry industry just a few decades ago, when docks would fill up with trawlers each morning before dawn. Now, only a few boats leave from commercial docks, including those at Bluffton Oyster Co., Benny Hudson’s Seafood on Hilton Head Island, Gay Fish Co. on St. Helena Island and 11th Street in the town of Port Royal.
The problem, Toomer said, isn’t that there are fewer shrimp off the South Carolina coast. And it isn’t that demand for shrimp is down. In fact, shrimp is the most popular seafood in America, according to the National Oceanic and Atmospheric Association. Rather, foreign shrimp have flooded the market and driven down prices. Most shrimp eaten in America today come from farms in Asia rather than U.S. waters. The competition from imported shrimp has led many local shrimpers to hang up their nets. “It costs more to do business in the U.S.,” Toomer said, citing the high costs of fuel, boat repairs and labor. Seasonality and weather always have created fiscal inconsistencies shrimpers cannot control, but shrimpers are getting out of the business because it’s not as profitable as it used to be. Adjusted for inflation, the state’s average annual catch values are now lower than they were in the 1970s, according to NOAA data.
The number of trawler boat licenses issued in the state is about one-fourth what is was in the 1980s, with only a little more than 400 issued this year, the South Carolina Department of Natural Resources reports. Instead of large trawlers, more shrimpers are using smaller boats. Toomer is one of a lucky few who are still doing well. The farm-to-table movement, driven by consumers who want to know where their food comes from — and want it to be fresh and hyper-local — is benefitting him. “Most of my customers live here and buy from me because they want to know what they’re getting,” he said. Unlike many local shrimpers who sell their catches right off the dock, Toomer owns his own retail outlet, Bluffton Oyster Co., where he processes and sells shrimp that he and other local shrimpers catch. “I rarely wholesale any shrimp,” he said. The Toomer family also serves

Toomer believes that the survival of the local shrimp industry depends on bigger sales and new ways to make local seafood profitable. He would like to see the construction of a processing and frozen storage facility nearby, which would help local shrimpers get better prices for their catches and help them earn a steadier year-round income. Fresh, chemical-free shrimp expire quickly, so they must be sold quickly. A shrimp processing facility that washes, processes, packages and freezes shrimp would give local shrimpers more control, Toomer says. He has spoken with Port Royal officials about this idea, and “they were interested,” Toomer said. The town took over daily operations of the 11th Street shrimp dock —which is owned by the S.C. State Ports Authority — in 2009, in an attempt to keep a vestige of the coastal shrimping industry anchored there. Fresh, wild shrimp from South Carolina waters are a delicacy. In addition to getting a delicious product, people who buy local shrimp are helping to preserve an important part of the Lowcountry’s history, Toomer said. “Shrimping has provided jobs and food,” he said. “It has been a huge part of our local economy.”

Twice Roasted Sweet Potatoes Ingredients 3 medium sweet potatoes or garnet yams, scrubbed (about 3 pounds) 1 Fresno or other red chiles, thinly sliced ¼ cup honey 4 tablespoons unsalted butter Kosher salt 2 tablespoons apple cider vinegar Directions Preheat oven to 350°. Poke holes all over sweet potatoes and wrap each in foil. Place on a foil-lined rimmed baking sheet and roast until potatoes are tender, 60–70 minutes (if you have one, use a cake tester to poke right through foil). Unwrap and let sit until cool enough to handle. Increase oven temperature to 450°. Meanwhile, combine chile, honey, and butter in a small saucepan; season with salt. Bring to a simmer over low heat, stirring to combine. Remove from heat and stir in vinegar. Smash sweet potatoes with your palm, then tear into bite-sized pieces (including skin), the more irregular, the better. Place in a large bowl and add half of hot honey (do not include chile as it will burn); season with salt. Arrange pieces, skin side down, in a single layer on an unlined rimmed baking sheet and roast until browned and crisp around the edges, 20–25 minutes. Drizzle with remaining hot honey with chile.

E
very day, starting at first light, brothers Andrew and Austin Harter head out from the Alljoy public dock in their SeaArk, aiming for a little slice of the May River where their 200 oyster cages float. It’s their first trip of the day, but usually not their last. They’ll go out two or three more times to check on their oysters and haul in the ones that are ready for market. Andrew, 27, and Austin, 31, are partners with their uncle, Brad Young, in May River Oyster Co., one of the few oyster farms operating in the Lowcountry. Their venture began in September 2015, after they bought out their uncle’s former partner. Now they make their livelihood on the river where they spent their childhood playing, fishing, crabbing and shrimping. “We grew up on this river, spent our entire lives on this river,” Austin said. “We want to do anything we can to keep it as healthy as possible.” The Harters are devoted to the sustainability of the May River and to producing the best-tasting local oysters — oysters that in turn help keep the river clean.

May River Oyster Co. leases from South Carolina the rights to shellfish in approximately 70 acres of the May River — between Hilton Head Island, Daufuskie Island and Bluffton, an area called Middle Marsh. The brothers buy approximately 200,000 to 250,000 seeds — baby oysters — a year from a hatchery on Lady’s Island. “We buy them as singles,” Andrew said. “We put them in the river and raise them until they are the quality and size that we want, and we sell them to restaurants.” While they’re growing, the oysters are helping to keep the May River clean. “Our oysters are filtering water all the time,” Andrew said. “An adult oyster can filter up to 50 gallons of water a day. So our farm is filtering millions of gallons of water a day.” “And that’s adding to the environment,” Austin added. By farming oysters, the brothers are not depleting the wild stock that can be seen throughout the Lowcountry at low tide. “Farm-raised oysters are sustainable,” Andrew said. “We’re putting in as much as we’re going to take out. You’re never going to run out.” The brothers have learned a lot since they began, they say. “We thought we knew more than we did,” Andrew said. That first year, many, many oysters died. “A baby oyster, just like any other young animal, is very susceptible. The shell is very soft. It’s not super hardy. It’s not super strong. It kind of needs to grow up. All your crabs, all your fish, want to get at it to eat it.” But now: “We’ve gotten good at keeping those numbers down.” The brothers will harvest more than 100,000 oysters this year. It takes anywhere from nine to 24 months to grow an oyster to the perfect size — the brothers look for a deep, round cup, which is what their chefs want. Once the oysters are harvested, they’re immediately refrigerated and then delivered the next day. May River Oyster Co. counts among its customers 10 local chefs in Savannah and Bluffton and on Hilton Head who order regularly; there are several others who order occasionally, as well as caterers. “With us, they’re getting the freshest oysters, the most local, and sustainable,” Austin said. “We have personal relationships with each and every chef we deal with.” Just as wine is identified by its terroir — the particular climate and soil that affect the taste of the wine — oysters have their merroir, Austin said. “Every oyster is going to have its distinct flavor and taste based on where it grows.”

And theirs is the May River — briny, crisp and clean. An oyster connoisseur, the brothers said, can taste the difference among oysters harvested in Charleston, Beaufort and Bluffton. Thanks to a change in regulations from the South Carolina Department of Natural Resources a couple of years ago, the brothers can now harvest their oysters year-round, no longer having to stop during warmer months, as recreational harvesters must do. That’s because their oysters grow in the water column, where it’s much cooler, and don’t bake in the heat on banks and the muddy flats at low tide. “Our oysters never see the surface. So they’re kept cool and they’re constantly flushing themselves,” Andrew said. After investing thousands of dollars in equipment, and logging hours on the water, the brothers say their business is “getting close to where we want it to be.” May River Oyster Co. is growing and winning over new Lowcountry chefs. “We’ve always had the demand; it’s about expanding the product,” Andrew said. “I’m sure we’ll be bigger than we are now, but we’ll probably always be local.”
