We are located on the scenic May River Road in Bluffton, South Carolina – one mile west of Historic Old Town. Located on property purchased by Grandma Cahill in 1918, we contin continue to be a working farm. In-season vegetables are grown throughout the year. The best barbecue restaurant in Medina, Ohio, has opened a second location on Hilton Head Island. Bullies BBQ owners Tammy and Bob Sutton are confident their award-winning smoked ribs, pulled pork, pulled chicken and brisket will eventually be just as famous here as they are back in the Snowbelt. “We’ve only got five items on the menu and they’re all great,” said Bob Sutton, who cooks all the food himself. “We’re giving a different-sized portion than what people are used to down here; a healthy portion for a reasonable price.” A pulled pork or a pulled chicken sandwich will

set you back $5.50. The brisket sandwich costs an extra quarter. Bullies also offers jumbo sandwiches and dinner plates with french fries, cole slaw and jalapeño cheddar cornbread. Other sides include mac and cheese, Carolina cole slaw and kickin collards. Items are slow-smoked over hickory and mesquite woods on the Suttons’ jumbo-sized smoker and can be topped off with one of four original sauces. Sutton also sells his Memphis-style rub, which took more than 20 years to perfect. The rub and all the sauces can be purchased separately for $5.99. Counter service ensures a much quicker dining experience than the other sit-down barbecue restaurants on the island. Popular local bartenders Tanya Aquino, Brandon Capria and Benjamin Powers have opened a new hotspot in Bluffton called the R Bar & Grill. The three have renovated the former One Hot Mama’s building, located at 70 Pennington Drive, and are ready to let the good times roll. “It’s a great building and it’s in a great location,” Aquino said. “It was awesome when it was Mama’s. Everybody has a lot of great memories here and we just wanted to try and rekindle that. It’s going to be like the Cheers of Bluffton.”

A new casual elegant Italian restaurant has opened in the Village at Wexford. Longtime local Italian chef Michael Cirafesi has branched out with distinguished Philadelphia chef Nunzio Patruno to open Ombra Cucina Rustica. “All executive chefs want to eventually open their own restaurant,” Cirafesi said. “We all have that dream. We follow the rules of classic Italian cuisine. We will be set apart by our standards and who we are.” Cirafesi started cooking in 1991 under Patruno, who was considered one of the top Italian chefs in the country. The two have completely remodeled the building where Antonio’s was located, creating an environment similar to a rustic Tuscan farmhouse. Being of Italian heritage Chef Michael Cirafesi proudly promotes all of the foods and wines of Italy. He prepares all pastas, homemade gnocchi, desserts and breads daily as well as a large variety of fish, veal, beef and game additions using only natural and fresh ingredients imported from Italy. Most know Tim Singleton as a former standout player and coach for the local high school football team. In December, the native islander teamed up with his mother, Deborah Goban, to open a unique Southern-style restaurant on the north end. Ruby Lee’s, named in honor of Singleton’s grandmother, is the island’s newest hotspot for sports, blues and soul food. “I get excited just talking about it,” Singleton said. “We’re making everything fresh, to-order. A new European-style coffeehouse has opened in Bluffton. Located in Bridge Center, Pino Gelato Gourmet Café prides itself on fresh, high-end coffee drinks, desserts, chocolates, sandwiches, flatbreads and more. The coffee is fresh-roasted by Charleston microroaster Island Coffee each week. “Our coffee is the best in the area,” co-owner Krisztian Lonyai said. “(Island Coffee) imports beans from Coasta Rica and Columbia, they roast them on Tuesday and they get here on Wednesday. That’s the main reason why our coffee is so good and fresh.” Chocolates are provided by DeBrand Fine Chocolates, a company that has twice been listed among “Oprah’s Favorite Things” in Oprah Magazine. Desserts are from a small pastry shop outside of Charlotte. “Nothing that we have has preservatives,” Lonyai said. “Everything is very healthy. Hilton Head Island’s newest self-serve frozen yogurt, coffee, smoothie, breakfast and lunch café is a play on the words, “What you see.” As Watusi’s tagline states, “It is what it is.” “It’s kind of what you make of it,” owner Cheryl Klippel said. “It’s a friendly, laid-back place you can come and relax. You’re not rushed in and rushed out. We offer free Wi-Fi and encourage people to stay awhile.” Klippel also owns two Island Girl stores, which are women’s and children’s boutiques at South Beach, Sea Pines and Coligny Plaza, as well as a third store, at South Beach called The Pelican’s Pouch, a store filled with island treasures and unique gifts. Old Town Dispensary owner Thomas Viljac has partnered with Matt Jording, owner of Hilton Head’s acclaimed Sage Room, to give the popular bar a menu unlike any other in Bluffton. “We have super high-end bar food but it’s not super-high in price,” Jording said. “All of our ribeye

and fillet we grind at Sage Room for our burgers here. Everything is made-to-order. It’s the same high-quality food but in a bar atmosphere.” Along with gourmet burgers, the new menu offers several unique sandwiches and sharable foods, such as nachos and oyster shooters. The renovation of The Beach House included a complete remodel of the hotel’s restaurant. Big Bamboo
A few big changes have come to The Big Bamboo Café. The popular restaurant and bar has expanded its outside deck on the second level of Coligny Plaza, adding about 50 feet to the front of the restaurant. Management also decided to upgrade its menu, focusing on fresh seafood items. The restaurant hired a team of culinary experts to help revamp the menu. Many fried items have been replaced with healthier grilled options, such as chargrilled chicken tacos. The appetizers and side items are also more sophisticated, from blue cheese coleslaw to citrus cerviche. The Big Bamboo has also added to its live music schedule with lunch and dinner shows played on the new outside deck. Don’t fear the artichoke Enjoy the fresh taste, health benefits of this Mediterranean favorite By Lance Hanlin
A
member of the thistle family, the artichoke can be an intimidating vegetable to look at. The immature spiky buds from the dinosaur-like plant have long been a staple of Mediterranean cuisine, used in main dishes, side dishes, appetizers, soups, dips, sauces and more. Here at home, though, many bypass fresh artichoke in the produce section in favor of the canned variety sitting on store shelves. That decision is based on one of three questions: How do you cook them? How do you eat them? What can you do with them? With artichoke season in full swing, now is the perfect time to find out. “You can actually eat a lot of the artichoke, even though it does look quite intimidating,” said Lindsay Martin, a wellness coach and dietitian at Hilton Head Health. “From a nutrition standpoint, it’s exceptionally good for cardiovascular and digestive health.” Artichokes are a rich source of Vitamin C, Vitamin K, potassium and fiber. Plus, they have more antioxidants (believed to fight cancer-causing cells) than red wine or chocolate. Most are grown in California and the peak season is April through June, when they are widely available in local grocery stores. The edible buds are a tight cluster of individual leaves arranged around a central “choke,” which protects the tender heart of the vegetable. They come in various sizes, ranging from a golf ball to a softball. “The leaves themselves can be eaten, but you would have to steam or boil them,” Martin said. “Those outside leaves have a pointed end so you need to snip those off before cooking. The most flavorful part, the part most people enjoy, is the artichoke heart.” To reach the heart, Martin suggests tearing away the outer leaves with a pairing knife until you are left with just the center of the bud. The fuzzy choke sits on top of the heart. “You actually don’t want to eat the choke,” Martin said. “You want to take a spoon and scrape that out.” You will be left with the heart, which will be either light green or white in color. Much like an avocado, it will quickly brown after being introduced to air. To bring the natural color back, Martin recommends boiling the heart with a bit of lemon and salt. Once prepared, the cooking options are endless. “There is a lot of really good things you can do with them,” Martin said. “We like to use them on fresh pizza and we make a very good spinach artichoke dip.”

You say TOMATO... I say bring on those summer Southern belles BY SALLY KERR-DINEEN
S
ure tomatoes are available all year round from various corners of the country, grown in various ways, picked at various times and coaxed into ripeness by various means, but true tomatoes they are not. Let’s face it, it’s not even fair to compare our local grown tomatoes plucked from a sun-warmed vine, pungent in smell and heavy in the hand to their poor relations stuck in the supermarket baskets trying to turn themselves red. We are spoiled in the summer. Ask any Southerner as I did. Born and bred in the South, my gal-pal Terri wouldn’t let an out of season tomato cross her kitchen counter let alone appear in a salad, pie, tart or sandwich. “A home-grown tomato sandwich reminds me of summer and my grandmother, one slice would cover an entire piece of bread. As kids we’d have her tomato pies and fried green tomatoes until the vines were empty. After being spoiled like that, I don’t even think of eating a hot house fake…ever.” Well there you have it and I agree. When you pitch up to our local farmers markets, in Bluffton and on the Island at Honey Horn, tables are stacked and chocked full of the most stunning shiny skinned heirlooms and hybrids in a tomato rainbow of, red, orange, yellow, green, and violet. Sure these babies lure you in with
their vibrant colors but beauty is more than skin deep. It’s not only the outside that entices you, it’s also what you get on the inside; flesh that’s a little acidic and a little sweet at the same time. And it’s no wonder the South produces some of the best specimens, for one thing, our warm humid summers (which wreak havoc on the hair), do provide the perfect environment for vigorous crops. It’s also where the first tomatoes were spotted. In 1710 William Salmon, an herbalist, clearly with a keen eye, spied the first tomato plants right here in what is now South Carolina according to the American Culinary Federation and Clemson University. While it took another two hundred years, or so, before the originally misunderstood tomato transitioned from, primarily, an ornamental plant to one of America’s favorite “vegetables” as declared by the US Supreme Court in 1893 (Nix v. Hedden), I think it’s safe to say that William Salmon could be called the original Lowcountry locavore. So, if you fancy rosy slices on top of mozzarella, drizzled with olive oil; red, orange, purple and yellow tomatoes chopped in a salad; or a thick beefsteak round on top of that grilled burger; head to our farmer’s markets for the best of the summer’s bounty.
