Spicy Lemon Chicken Kabobs Ingredients 1/4 cup lemon juice

1-1/2 pounds boneless skinless chick-

4 tablespoons olive oil, divided

en breasts, cut into 1-inch cubes

3 tablespoons white wine

2 medium lemons, halved

1-1/2 teaspoons crushed red pepper

Minced chives

1 teaspoon minced fresh rosemary Directions In a large shallow dish, combine lemon juice, 3 tablespoons oil, wine, pepper flakes and rosemary. Add chicken and turn to coat. Refrigerate up to 3 hours. Drain chicken, discarding marinade. Thread chicken onto six metal or soaked wooden skewers. Grill, covered, over medium heat until no longer pink, turning once, 10-12 minutes. Place lemons on grill, cut side down. Grill until lightly browned, 8-10 minutes. Squeeze lemon halves over chicken. Drizzle with remaining oil; sprinkle with chives. Add 3 cups blueberries. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat. Add butter, lemon juice and remaining berries; stir until butter is melted. Nunzio Restaurant + Bar Nunzio Restaurant + Bar is opening on New Orleans Road on Hilton Head Island this month, according to manager Maribel Patruno.

The restaurant’s owner, Nunzio Patruno, has seen success with New Jersey restaurant Nunzio Ristorante Rustico, which opened in 2003 and has been reviewed by The New York Times and other media outlets. “Adulation of fresh vegetables and seasonal ingredients may seem cutting-edge, but Nunzio Patruno grew up cooking this new old-fashioned way years ago, and he has the loyal hordes to prove it,” the New York Times article says. Maribel said staff at the Hilton Head restaurant is currently hiring, applying finishing touches and going through the last series of inspections. A 1,300 square-foot kitchen has been added to the 18 New Orleans Road location — a former Reebook Crossfit gym. The restaurant, able to seat about 200 people, also will have a large bar area and two outdoor seating areas. “We are not looking to be the special occasion,” she said. “There is something for everyone at every price point.” Angelo D. Patruno, Nunzio’s brother, will be the chef de cuisine, Maribel said. He was born in the Puglia region of Italy and attended the Culinary Institute of Italy. He owned Ristorante IL Melograno in Doylestown, PA for nearly 20 years. “Once you have a good ingredient and it’s fresh, it can speak for itself,” Angelo said “Keep it simple and use fresh ingredients. Delectable Desserts by Russ Lowcountry residents are finding a new spot to satisfy their sweet tooth in Bluffton. Delectable Desserts by Russ opened in November on Bluffton Parkway near the Enmark gas station. The bakery specializes in desserts like cannoli, German chocolate cake, coconut pie and cinnamon rolls; many types of bread also are available. Owner Russ Gardiner is from Windsor, Canada, and imports his flour and peanut butter from his home country. “It’s a big difference in flavor compared to what I can get here,” he said. “I have family who bring it in.” Delectable Desserts by Russ also does catering. Russ went to culinary school in Charlotte, North Carolina, and has also lived in Fort Mill and Aiken. Olive & Fig Mediterranean Kitchen Olive & Fig, a Mediterranean-inspired restaurant, opened its doors in Moss Creek at the former location of NEO. The menu has been carefully curated by owner and chef Munjid Yousif and incorporates many gluten free and vegetarian options. Yousif has 24 years of experience in the food industry, working in restaurants around the world, such as in Kuwait and Canada. He received his culinary degree from The Royal Academy of Arts in London, adding to his international culinary experiences. Though the inspiration for the menu is regional Mediterranean cuisine, there is also a focus on Lebanese and Greek dishes, including falafel, stuffed grape leaves, souvlaki, shish kabob and shawarma, along with assorted lamb and seafood dishes. “We serve imported Lebanese wine and beer that will complement the dishes,” Yousif said. “In addition, we have on our bar menu local and other imported wine and beer.” Located at 1533 Fording Island Road, Suite 326, the Olive & Fig promises to be a unique Mediterranean treat.

BlufftonBrauHaus Brothers Alfred and Volker Kettering pursued different career paths — Alfred is the seasoned chef and owner of Alfred’s, a popular Hilton Head Island restaurant, while Volker worked for a German corporation — but both have restaurants in their DNA. Their grandparents had a sizeable brauhaus and their parents also ran a restaurant in their hometown of Kaiserslautern, Germany. So it’s only fitting that the brothers continue the family tradition, by opening the Bluffton Brauhaus. The brothers’ restaurant offers some German classics, like Wiener schnitzel, sauerbraten, roasted duckling with spaetzle and red cabbage. There’s also a “Bratwurst Experience” section with Thüringer-, Nürnberger- and Müenchner-style sausages, as well as salads, vegetables and fish dishes. There is also a selection of decadent desserts. “We have a strudel, a German chocolate cake and a few more desserts,” Volker said. And the “brauhaus” part? The Lowcountry is home to many barbecue joints, and locals and visitors often engage in heated discussion about which is the best. Most of the restaurants offer a choice of pulled pork, ribs, chicken, or brisket with sauce. There are many different ways to make pulled pork: with a smoker, in a conventional oven, on the stove or in a slow cooker. The term “pulled” refers to the meat being tender enough, after a long cooking time, to be pulled apart or shredded using a fork. Sauce is typically added to the warm meat just before serving, but some barbecue restaurants serve a choice of sauces on the table and let the diner add their own to “naked” meat. And, of course, sauce leads to a heated discussion of its own: South Carolina is known for its mustard-based sauce—a tangy, spicy and subtly sweet blend of yellow mustard, ketchup, vinegar, honey, sugar and spices. There are entire aisles at the grocery store devoted to bottled barbecue sauce, but few can match a homemade one. Lathered on whole-hog barbeque, it is the epitome of stick-to-your ribs comfort food served with sliders, sandwiches, nachos, tacos, beans, mac ‘n’ cheese and cornbread and in omelets — the possibilities are endless. Just be sure to have plenty of napkins on hand. Other sauces that deserve mention and are very popular in South Carolina are tomato-based sauces or vinegar-pepper sauces. The art of barbecue is seriously hardcore business. The Southern South Carolina Barbeque Association is a training ground for certifying judges who judge ’cue cookoffs around the state. The Southern BBQ Network also trains people who judge contests that raise money for charitable causes. Judges must learn the technique of judging appearance, aroma, taste, texture and tenderness. It’s a hard job, but somebody’s gotta do it!

The Smokehouse CELEBRATES 20 YEARS

S

taying power in the restaurant business on Hilton Head Island requires a smorgasbord of ingredients. Tenacity and consistency probably top the list, along with great customer service, high quality food, a loyal staff, a friendly vibe, a refreshing and inviting environment, and amenities for enjoying two hours or three with friends and family on game day or any day. Add a daily happy hour with a bar menu, live music, Sunday brunch and catering…and, fresh from the smoker, you have The Smokehouse at 34 Palmetto Bay Road. Celebrating its 20th anniversary of serving locals and tourists the best baby-back ribs and chicken wings this side of the ocean, The Smokehouse began at the corner of Coligny Circle across from the beach in 1999. Surrounded by the public parking lot, the town bought the property early in the early 2000s and owner Jerry Leonard was on notice for years that he eventually would have to move. So he bought the building and property that was then called Sticky Fingers in 2009 on Palmetto Bay Road, after two previous tenants failed to establish a foothold at that location. He opened his relocated Smokehouse in 2010 after a major renovation and it’s been successful ever since. Staying power, indeed. “My goal is to make my customers happy,” said Leonard, who has been an islander for 30 years. “I like cold beer, good ribs, good TVs, nice music, and a clean environment.” The restaurant’s longevity is rare on the island. But good things happen to a restaurant when it is good, really good. “We’ve been strong in the community ever since we’ve been here,” he said.

OMBRA Cucina Italiana is a pioneer of the Italian wine movement By Carrie Hirsch

ince opening in 2013, OMBRA Cucina Italia has been recognized as a top restaurant for fine Italian cuisine and wine. Chef Michael Cirafesi and his wife, Lauren, who co-own the restaurant, continue to garner awards, serve their loyal base and attract new customers. “Ron, our manager, does the front of the house. Lauren runs the business side,” the chef said. “We’ve been extremely busy — summer’s been here since the end of March.” On the menu, diners will find dishes that highlight the bounty of the season. For example, Cirafesi said summer dishes will feature watermelon and local peaches. “Right now, we’re serving veal with morels or with chanterelles because they’re in season,” he said. “Soft-shell crab season is not over — they are still in season in Georgia and that’s a hot item; we just got some in this morning.” The chef said he’s noticed an increase in demand for glutenfree pasta, and he’s happy to accommodate these requests: “I tried a couple of different gluten-free pastas and the one I use is from Florence.” The award-wining wine list focuses on esoteric Italian wines, and this is where his true passion lies. Cirafesi has been a pioneer in the movement to showcase Italian wines and selects each new addition. “Many of our customers know fine wine — some can even tell you about the soil and the altitude,” he said. “Our wine list is up to 250 selections and we’ve got some heavy hitters upwards of $800 to $900 a bottle, including Dal Forno Romano Amarone della Valpolicella Classico 2010, Masseto Toscana ‘Masseto’ 2013, Gaja San Lorenzo Barbaresco, Damilano Barolo Cannubi Riserva “1752” 2008 and Valdicava Brunello di Montalcino 2010.”

Wine — especially Italian wine — long has been a focus for Cirafesi. Over the past year, he said, OMBRA has increased its wine selection by 50 bottles with an eye on variety: Even though the restaurant focuses on Italian cuisine the wine list includes a few vintages from California. Cirafesi said he’s especially excited to bring new wines to the island. “I have introduced Italian wines in this market that even the sales reps didn’t sell here, although they had them in their portfolio,” he said. “We have Italian wine makers come from Italy, and I’ll do five or six Italian wine dinners throughout the year. The last one was with Guido Damilano. We prepare the food from the same region where the wine is made.” Both the restaurant’s wine and food win lavish praises. At one recent wine dinner, Cirafesi said a guest from Veneto, Italy, gave him the ultimate compliment: “This is better than what my grandmother makes,” he whispered. Don’t over-indulge on dinner and wine, however; guests will want to save room for one of OMBRA’s popular desserts. Pana cotta, a classic molded dessert from northern Italy made of sweetened cream and flavorings, is a favorite and gives the chef another chance to serve seasonal fruit, which he adds to the top of the dish. “We’ve turned into a semifreddo world,” he said. “Semifreddo is a cross between a mousse and a gelato. We’ve been making one with limoncello, an Italian lemon liqueur, which has even overtaken our entire dessert list, along with the chocolate soufflé and the tiramisu.” Guests know their meal will always be as stellar as the last time they came to OMBRA because Cirafesi never takes a vacation. “We already live at the beach!” he said with a smile. 63

Salmon Rillettes Ingredients 2 cups dry white wine 1 tablespoon minced shallot 1 pound skinless salmon fillet (preferably wild), cut into 1-inch pieces 3 ounces smoked salmon, cut into 1/4’ pieces 1/2 cup (or more) mayonnaise 2 tablespoon thinly sliced fresh chives 1 tablespoon (or more) fresh lemon juice Fine sea salt and freshly ground white pepper 1 baguette, thinly sliced, toasted Instructions Bring wine and shallot to a boil in a small saucepan over high heat. Reduce heat to low; add salmon. Gently poach until salmon is barely opaque in center, about 5 minutes. Using a slotted spoon, transfer to a paper towel-lined plate to drain. Strain poaching liquid through a fine-mesh sieve; set aside shallot and discard liquid. Place salmon and shallot in a large bowl; cover and chill until completely cooled. Add smoked salmon, 1/2 cup mayonnaise, chives, and 1 Tbsp. lemon juice to salmon and shallot. Gently mix just to combine (salmon will break up a little, but do not overmix or a paste will form). Season to taste with salt, pepper, and more mayonnaise and lemon juice, if desired. DO AHEAD: Rillettes can be made 1 day ahead. Cover and chill. Serve rillettes cold with toasted slices of baguette. G

reat chefs spend years learning their craft — but some of them get an earlier start then others. Chef Chad Newman of Sea Grass Grille found his calling very early. He got his first taste of life in the kitchen on the farm in Michigan where he was raised, cooking with his grandmother on a wood-burning stove. “We had an apple orchard, cherries, pears and peaches. My mother’s mother was a good cook and my father was a good cook,” he said. A black-and-white photo of that farm hangs on the wall of the Sea Grass Grille, where it feels at home as part of the restaurant’s upscale Lowcountry and coastal vibe. But Newman didn’t jump straight from the farm into the restaurant world. First, he enrolled at the world-class Culinary Institute of America in New York. Life eventually led him to Hilton Head Island, where he teamed up with dynamic islander Kathy Jannott and her husband, Peter, to open Sea Grass Grille. With its open kitchen and inviting atmosphere, Sea Grass Grille evokes the warm feeling of dining at home. And for many longtime customers, it is — and they often celebrate life’s milestones there: private parties, wedding rehearsal dinners, corporate parties. It’s a family affair. Most of the kitchen staff has “been with us since day one, and some people in the front of the house also,” Kathy said. “Last summer, the grandchildren of some longtime customers brought in their babies. We’re seeing the fourth generation of families dining here.” Sea Grass Grille has been named “Favorite Seafood Restaurant” for seven years by readers of Hilton Head Monthly and The Island Packet. The grouper piccata is the most popular entrée — diners can’t get enough of the flaky fish sautéed with wine, lemon, butter and capers. Those looking for something besides seafood also will be happy. House specialties include veal scaloppini, filet mignon and breast of duck. The menu also offers vegetarian and gluten-free options. Nightly specials reflect seasonal items, especially in summer, when seasonal produce shines. “One of my favorite summertime features is our watermelon gazpacho, made with fresh peppers, cucumbers, celery, onion, jalapeños and, of course, watermelon,” Kathy said. “It’s a little bit sweet and a little bit spicy and 100 percent refreshing.” The restaurant’s popular tomato pie — made with vine-ripened tomatoes, basil and a medley of cheeses— is also stellar in the summer.

The dessert menu is full of stand-outs: Rick’s Baked Alaska is a front-runner, as is Chad’s Seasonal Cobbler and the Bananas Foster Cake. Chocoholics recommend the chocolate pâté. Wine is an integral part of the dining experience at Sea Grass Grille, where Kathy makes the selections for the restaurant’s extensive wine list, which has won an Award of Excellence from Wine Spectator and features varietals from top-producing regions in the U.S., Europe, Canada, Australia and New Zealand.
