Leading by example

Hinsdale Magazine seeks out local stories of interesting, successful people and organizations, and we feature a few leaders in this edition.

Leading off, Mary Doten is a six-time national platform tennis champion who said "it's time" to retire from teaching the sport after decades of service to thousands of students of the game she loves.

Her impact on the greater Hinsdale platform tennis has been immeasurable and her professionalism and passion for the sports lives on through the many she instructed.

Another athlete, Jon Grzbek of Downers Grove, was recently inducted into the Illinois Hockey Hall of Fame. He, and his fellow hockey players and coaches, have helped make the young men playing for the Benet Red Wings extremely successful.

Adam Maycock, President, and CEO, UChicago Medicine Advent Health, maintains tradition while keeping up with significant changes in the world of hospital healthcare. He is doing it for both Hinsdale Hospital and La Grange Hospital to serve the healthcare needs in the greater Hinsdale area.

Sara Fix is a champion triathlon athlete and a champion in life. She is also battling cancer and bravely stated, "I do not dwell on my diagnosis. I keep rolling along." Misericordia hosted its annual Heart of Gold Benefit to support over 600+ residents. Hundreds gathered for a Wine, Women, and Shoes event to raise money for Bridge Communities, which helps 100+ homeless transition to self-sufficiency. In March, the Hinsdale Auxiliary of the Infant Welfare Society held its benefit luncheon. This year's theme, Deco at the Drake, celebrated Chicago's leadership in Art Deco design.

Another form of Giving Back is the preservation of the past. The Hinsdale Historical Society does its part by raising money for its effort through its annual Kitchen Walk luncheon, which took place in early March. The walk takes place on May 12.

Our last Giving Back story relates how the Elm elementary teachers and parents worked together to raise $65,000 for their school library and playground.

Because May is the month for Mother's Day, we share a tribute to mothers from famed life coach Jim Fannin, called "Women in the Zone". It is a free seminar on May 18 for the first 75 women who sign up.

One of the more interesting stories is about Sears's homes. It is a slice of Americana. From 1908 through 1940, one could buy a "kit" to build a home from a Sears catalog, with everything down to the last bolt. Many are still standing.

Lastly, we offer Spring To-Dos in the area, pairings of wines, and exotic summer vacations from Nova Scotia to Sweden for a memorable getaway!

Jon Grzbek earns a spot in hockey history

If you’re looking for a local hockey team to follow, the Benet Red Wings are your ticket to an exciting game! And it’s no mystery why. Coach Jon Grzbek, recently inducted into the Illinois Hockey Hall of Fame, has a lot to do with this team’s success.

Grzbek is a member of Amateur Hockey Association Illinois- the sport’s governing body. He is also a long-time volunteer for inclusion-promoting groups like Hockey is for Everyone (formerly Diversity Hockey).

Andrew Schlie and Drew Tierney are the other two legs of the well-balanced trio that lead the Red Wing squad. Each brings something valuable to the ice. Tierney met Grzbek and Schile when the duo joined in 2008. Tierney’s father, Jack, founded Benet’s hockey program in 1999.

Grzbek and Schlie met while playing at the pee-wee level for the Downers Grove Huskies. They went on to play as opponents for Marist and St Rita in the Chicago Catholic Hockey League (CCHL), into which they later brought Benet. When Grzbek’s path to the US junior hockey league after high school wasn’t what he had expected, he and Schlie met up again at DePaul. As college roommates, they played with DePaul’s inaugural hockey club in 1992. The team placed third in the nation in the American Collegiate Hockey Association their first year!

With a friendship that has spanned most of their lives, “We’re like an old married couple at this point,” Grzbek relayed, as he laughed. “We can predict the other’s next move. Sometimes we say stupid things and have to go back and apologize!”

Now, at 685 games co-coached, (and every play of every practice docu mented), the collective and varied experi ences of Grz bek, Schlie, and Tierney are a large part of the success that fuels Benet’s well-oiled machine.

They’re grateful for the unique oppor tunities that have come their way, from participating in events with the Blackhawks, to playing between college games, to winning the first Kennedy Cup in 2013- the holy grail of Illinois hockey.

Their biggest moment in coaching thus far, however, came a few years ago in the form of an invitation from the US Women’s National Team. Team USA was in Chicago training for the Four Nations Cup and needed to play a practice game. Unsure how to react to the invitation, Grzbek and Schlie reached back to their Husky roots and sought the advice of Downers Grove native and former Team USA Olympic Gold Medalist, Cammi Granato. The hometown first lady of hockey advised them to “Go for it!”

And they did!

The game was epic! “Team USA owned the puck,” Grzbek admitted. “They outshot us 4-1, but we still managed to get goals,” he said. “Ultimately, although we were shorthanded, we scored in overtime and won 4-3!” he smiled, the memory still fresh. Schlie credits the win to the shots on goal being harder than Team USA players were likely used to.

Oddly, the historical, landmark event in the world of high school hockey, played in front of 4,000 spectators on Benet’s home ice- Seven Bridges- went

completely unacknowledged by the press. It was never covered by USA Hockey or any other news outlets. Although disappointed that the press went silent at their historic win, Grzbek, Schlie and Tierney manage to see the silver lining in the situation.

“Team USA went undefeated for a while after playing us,” said Grzbek. “We’re grateful for the experience.” Team USA not only won their tournament the day after losing to the Red Wings, but also went undefeated over the next two years. Obviously, the loss to Benet left a lasting impression.

While these exciting events make the job interesting, it’s the day-to-day coaching that keeps these guys going. All three hockey dads themselves, they incorporate their own experiences with the students. The trio have

evolved over the past two decades. They recognize the importance of reinventing and evolving with the game, as well as the students they coach. “As time goes on, we’ve adapted and grown with the players,” said Schlie. “Today, it’s more puck control and finesse. When Jon, Drew and I were playing, hockey was a lot more bump and grind.”

Part of building such a successful team starts with recognizing players as people. Each

season kicks off with Ignition-a process of going over goals for the season and resolving to frequently revisit them. The coaches meet with team members one-on-one to learn what motivates them and help them set personal goals.

The trio of coaches see- and appreciate- the team, as a group of individuals. They realize players might have other interests besides hockey. Grzbek, Schlie, and Tierney see the value of varied high school activities. “If players want to participate in another sport, band or something else, they should,” Schlie opines. “It’s their high school experience. We’ll adjust.”

Maintaining Tradition in Evolving Healthcare

Hinsdale Magazine recently had an opportunity to meet with Adam Maycock, President & CEO of UChicago Medicine AdventHealth Hinsdale and La Grange hospitals. The goal was to learn how the hospital focuses on providing whole-person care to the community.

As of January 2023, a new healthcare partnership was established. UChi-

cago Medicine (UCM) and AdventHealth joined forces. The partnership includes AdventHealth Hinsdale, La Grange, Bolingbrook, and Glenoaks Hospitals. What is unique about the agreement is that AdventHealth maintains business operations and, most importantly - cultural control of the four hospitals.

Hinsdale Magazine caught up with President Maycock to learn about the partnership and what is new at the

hospitals. As it happens, he has been employed by AdventHealth for over 20 years. Through two partnerships and the pandemic, Maycock has held a leadership position at AdventHealth Hinsdale and La Grange. He was raised with a strong Adventist faith; his father is a retired pastor.

Can you tell us more about your background?”

I was born in Tennessee and raised in Alabama, with a deep connection to

the Adventist church. Through my parents and religious beliefs, service is the space where I choose to dedicate my career to healthcare. I started at AdventHealth in market research and grew in the company through operations.

My wife, Khadja, is a nurse practitioner who has committed to raising our three daughters, who keep us busy! Hinsdale is now home, as it is such a welcoming community, much like the south where we are from.

How does the recent partnership benefit patients?

The partnership with UCM allows for optimal clinical collaboration between an academic hospital system

and community health. Patients do not have to drive past us; they can receive “downtown care’” in their backyard.

UCM AdventHealth Hinsdale and La Grange Hospitals have been serving the community for over 170 years collectively. Hinsdale Hospital was founded by the Seventh Day Adventists by David and Mary Paulson. La Grange Memorial Hospital became part of the AdventHealth System in 1999. Both hospitals have grown in part through the generosity of the community.

What are some examples?

The healthcare industry is constantly evolving to maintain quality care for patients and remain fiscally sound. Over the last ten years, Hinsdale and La Grange Hospitals have served their respective communities; however, they operate as one hospital with two campuses. We have reduced service line duplication and consolidated to be more efficient in serving those in need.

For instance, in 2019, we opened the Center for Advanced Joint Replacement at La Grange, a state-of-the-art facility dedicated to the finest orthopedic surgery. They replaced over 2,500 joints alone in 2022.

Hinsdale Hospital is known for its exceptional Women’s and Children’s department; generations of Hins-

daleans have been born at the hospital. The range of care includes a labor and delivery unit and a Level II Neonatal Intensive Care unit that is currently being renovated.

The Cancer Institute, located on Ogden Avenue, is well-versed in advanced cancer technologies and offers access to clinical research trials. They also are home to leading-edge imaging services to detect cancer at its earliest stages, radiation oncology therapies, minimally invasive surgical procedures, and breast reconstruction.

Both hospitals continue to have basic community services, such as Emergency and Surgical services.

Tell us about the staff surrounding you and their ability to adapt.

I cannot overstate the high quality and expertise of the doctors, nurses, and support team at Hinsdale and La Grange hospitals. Their ability to navigate a pandemic and a changing healthcare landscape is impeccable. I attribute this to their dedication to our mission of Extending the Healing Ministry of Christ. The team thrives on our mission and continues to foster our commitment to whole-person care. For us, it is about patient care; we want to maintain our patient experience and great outcomes. ■

Sara Fix - triathlete, business owner, and momdoesn’t let cancer slow her down

Sara Fix is one of the fittest people around. The first time you meet this fifty-something Clarendon Hills resident, you see a stunning, world-class athlete. Recently, she returned from Puerto Rico, where she placed second in a half Ironman competition (a normal length Ironman is a 2.4-mile swim followed by a 112-mile bike ride, followed by a full marathon, which must be completed in under 17 hours). It’s nothing new. She has placed 7th in the Ironman World Championships more than once.

You’d never know she spends two days at the hospital every three weeks to keep the neuroendocrine cancer that covers her insides, at bay. She was diagnosed a year and a half ago.

From becoming a triathlete in her thirties, to owning and coaching Endure It triathlon club and stores, to competing in 50-plus Ironman races, to being a mom, one thing is abundantly clear: cancer is only a footnote.

And there it shall remain.

Still coaching online and training herself, she takes it a little easier these days. But she’s never been near the sidelines. She’s not going to start now. While her family went to Europe on spring break in March, she randomly packed up her bike and dogs and drove to Chattanooga to ride the hills.

She has mentored countless uber-conditioned athletes while running a

wildly successful business, and simultaneously raising three beautiful and talented children. And while she takes more time to focus on herself lately, she refuses to give in to her diagnosis. It’s not going to rule her life. Or have a say in how she spends her days.

Sara has a takeaway message she hopes to make clear to everyone she meets, which she recently conveyed to a crowd at Go Brewing Brewery in Naperville. They unveiled a new IPA, Sunshine State, in honor of her recent race, and asked her for a few words. “If you have pain or notice something wrong, make sure others are listening,” she stressed. “You must be your own advocate. Don’t ignore the whispers.”

Like anyone who receives a cancer diagnosis, her initial reaction was fear. A 12-hour surgery, including a full hysterectomy and removal of her gall bladder and parts of her liver, and intestines, as well as several lymph nodes, cleared the cancer that was initially visible to her doctors. Subsequent testing revealed the presence of small, spot-like tumors on her heart, lungs, brain, spine and bones. “They’re tiny; about the size of freckles,” Sara said. “So, every 21 days I undergo treatment to be sure they don’t get any bigger.”

To deal with the fear, she has changed her mindset. Sara admits that it’s not always easy, but she has learned to retrain her brain, a practice in which she thoroughly believes and one she has employed to help with her physical training over the years. She likens it to not letting herself off the hook for workouts. “You have the intensity to program your brain to do what’s expected,” she said. “It’s very possible to do.”

When dark thoughts come, she promptly pushes them away, and

breathes through it- part of the brain retraining.

This is someone who has built a life in helping others cross the finish line. It’s a big part of how she finds her joy of existence. The way she sees it, maybe cancer is an even bigger opportunity to help others. “I’m wondering if cancer is just another way I can help and encourage others in the same situation in a more profound way,” Sara said.

“Don’t get me wrong, I have my moments,” she said, thoughtfully. “I get scared. But I don’t live in those moments anymore.” And though she wishes the cancer were gone, when she gets down, she reactivates her new mindset. “Well, it’s here,” she says to herself. “This is it, so don’t dwell on it. Just keep rolling.”

And with another Ironman approaching next month, it seems like her mind is made up! ■

Q: What is a dermal filler?

A: Dermal fillers restore facial volume to smooth skin lines and wrinkles as well as enhance areas like the lips, chin, or jawline. This is done with gel-like materials that dermatologists inject under the skin at different depths. Fillers are seemingly unlimited when it comes to applications. They can be used to lift cheekbones, improve hollowness of the facial skin in areas like the temples and under the eyes. Moreover, fillers can be used to treat areas like the neck and chest to restore skin health and diminish the appearance of finely wrinkled and thin skin. Lastly, fillers can also be used to rejuvenate the hands.

Q: What is in a dermal filler?

A: Fillers are made with FDA approved substances injected beneath the skin. These include Hyaluronic Acid, Calcium Hydroxylapatite, and Poly-L-Lactic Acid. Poly-L-Lactic Acid also known as Sculptra is Dr. Steil’s favorite dermal filler. It is biocompatible, which makes it completely safe to use. It is a totally biodegradable synthetic substance,which means it dissolves. Lastly, it works by stimulating skin to rebuild the natural collagen resulting into smoother skin and greater volume.

Almost 20 years ago, Dr. Steil learned from the best, Danny Vleggar, MD. He was a trained Poly-L-Lactic Acid Specialist who taught her how to apply the filler like an expert. Q: How long will fillers last?

Six-Time National Champion and Hall of Fame Inductee Mary Doten retires

umble,” “passionate,” “kind,” and “loyal” are just a few of the words used to describe Mary Doten, known to many as the GOAT of Paddle Tennis. Three decades of coaching and competing in paddle tennis have ended because, according to Doten, “it’s time.”

“My job has been a gift. I feel blessed to do something I love and call it work. Now it’s time to pass it along. I would not have stayed this long if I did not love what I do,” said Doten of her decision to retire now. Doten believes the lyrics by the country singer Jordan Davis say it best: “Find the one you can’t live without…find something you love and call it work.”

A LITTLE HISTORY

In 1961, Doten was born in Oak Lawn, Illinois, the youngest of four girls. Her family moved to Western Springs two years later and has been there ever since. She started playing tennis at age eight and continued her career at Lyons Township High School, playing singles all four years.

Doten’s successful career in high school led her to play tennis at Wake Forest University in North Carolina. It was there she met her husband, Gary. They married in 1984 and returned to Western Springs to raise their two sons and daughter, and many yellow labs along the way. Now their family is expanding, with

Picking up a paddle for the first time in 1993, Doten had no idea how it would change her life forever. “I was hooked from the very first time I played,” said Doten. The more she played, the more fun she had and the better she got. Along with fellow paddle players, Doten competed in the North Shore because there were no leagues in the western suburbs. Doten soon changed that.

In 2003, Doten and her doubles partner, Susie Keane, stunned the paddle world by winning the American Platform Tennis Association (APTA) National Title. What was the secret to their win? “No pressure,” said Doten. “We came in with no expectations of us and managed to beat five out of the top eight seeds to win the event.”

The next seven years of play led to five more National Titles, and little did Doten know, she would change the world of paddle right here in the western suburb of Hinsdale. Doten grew the sport of paddle, especially for women, and her program more than quadrupled in size during this time. It was the start of a new paddle era.

The Hinsdale Paddle Movement Hinsdale Paddle Club (HPC) is busy with paddle players at any given time and during any given weather. Even on the coldest days of the winter,

preferably snowy for many avid players, the courts will be filled with lessons, drills, and matches, most of which are led by Doten.

Twenty years ago, only two courts were available for play at Byrnes Park in Hinsdale. But now, with the following Doten has brought over the years, six courts are available at HPC, and two more will be added this fall.

Doten is most proud of “growing the program from 200 to 600 people, over half of them being women.” During the 2022- 2023 season, she coached nine women’s teams, along with coaching non-league drills, small group, and private lessons. If you were looking for Doten, you knew exactly where to find her.

“Whether it was during a team drill or a private lesson, I learned something new from Mary every time I stepped on the court. During my matches, I often ask myself ‘What Would Mary Do?’” said Katie Ramoley, a series five player for HPC.

WHAT’S NEXT?

Doten plans to spend most of her newfound time with her husband and her yellow labs at their second home in Sanibel Island, while also coming back to visit her grandchildren. What does she look forward to most? “Not teaching in the 10-degree and rainy weather,” she laughed.

ment. “I do not like to sit around all day and definitely am always up for a challenge,” said Doten.

The Dotens also plan to continue to sponsor children through the Common Hope organization and have already planned a trip to Guatemala this winter.

THE FUTURE SUCCESS OF HPC

Doten would like her legacy to continue to carry on at HPC and see the program’s success continue both on the courts and behind the scenes. “Mary Doten has been instrumental in the explosion of women paddle players. They come to HPC because of everything she brings to the court,” said Kelly Kelly, a series nine team player and current board member of HPC.

Doten has always been an advocate for women and would like to see more women become involved off the court. “Mary encouraged me to get involved, and help represent our women’s membership, which continues to grow day by day,” Kelly added.

What best advice can Doten leave to beginner and advanced paddle players on the court? “Patience. Always be willing to hit one more ball than your opponent.”

Is this really the final goodbye to Mary Doten and her paddle career? “It is not a goodbye, but see you later,” said Doten, and always, “Paddle on.” ■

WINTER BAND CONCERT

Hinsdale Central students perform winter concert

On February 21, the Hinsdale Central High School bands performed at their winter concert. With directors Grace Adduci and Matt Kurinsky, all four bands pulled off an amazing night. Hinsdale Central offers a place for everyone, consisting of four bands of varying experience levels: Concert, Symphonic, Wind Symphony and Wind Ensemble. In total, over 170 students participate in the Hinsdale Central Band program.

In the following weeks after the winter concert, each band participated in a local band festival. Each of these festivals provided incredible experiences performing in different venues and receiving feedback from big names in the band education world. Concert and Symphonic Band took a trip to Elmhurst University, Wind Symphony attended Northeastern Illinois University and Wind Ensemble took part in the John Hersey Band Festival.

MOM: World’s Greatest Coach

From the moment I took my first breath, she was there….smiling ever so brightly. Her voice soothed me. Her touch guided and comforted me. She was the first person I saw when I opened my eyes and the last person when I fell asleep. She coached me day after day to be the best I could be.

After all these years, I’ve realized the motherly impact on my life. All my thoughts were formed from the mirror image of her care and concern. She molded my manners and hygienic routines. She coached my ability to communicate. Most of all, she filled my mind with possibilities. My dreams have been fueled by her belief in me!

She placed me on a pathway of ultimate self-discipline. She yelled, pleaded, begged, demanded, punished, rewarded, hugged, and kissed her ways of living into the fabric of my mind. My decision-making ability today was born and reared by her.

She helped me focus my energies on the tasks at hand and made me realize when I was off-track. She planted seeds of belief, expectancy, and knowing. She helped me grow into the confident person that I am.

She let me fail many times, only to pick me up after the lesson was learned. These moments were her greatest gifts. Through my failings and her guidance, I learned the dynamics of risk and reward that I still use today.

Mom, you taught me about family and tradition, and I value them because of you. You made the holidays special, and they radiate in my memory like they were yesterday.

You have been behind the scenes in the reality movie of my life. You were

the producer and director. You helped me write and re-write the script. With every chapter of my life that ended, you were always there at the beginning of the next one. And through each page until now, you have never asked for credit. You always let me be the star. Your sacrifices mostly went unnoticed, and not once did you complain or demand attention.

I placed you on a roller coaster of emotions as you watched me grow. Even though I tested you in every way, your intuition never wavered in its relentless pursuit of my overall well-being. Today, I see this as nothing short of amazing.

You were at every major event in my life. You cheered for me when I was failing and beamed with pride when I was a success. You have been the one constant in a world of variables. Your consistency is remarkable.

Several years ago, I booked a speaking tour in Europe and was told by my mom about her upcoming surgery. She said, “Don’t be alarmed, but I’m having a stent placed in my heart while you’re gone. Please know I’ll be fine.” Much to her disapproval, I postponed the tour and flew to Kentucky to be by her bedside. After a successful surgery, I waited patiently for her recovery.

Hours passed. Sensing something was wrong, I demanded to see her. After two hours, I learned my mom was dropped off her operating room table, and her kidney was sliced, leading to kdney failure. My mother looked me in the eye from her deathbed and commanded with a whisper, “Take S.C.O.R.E.® to the masses. Promise me.” And with a heavy heart, I proclaimed, “I will, Mom. I promise. I will.” With that said, she died.

The mission became very clear within weeks of the passing of my mom.

On the evening of March 11, parents and teachers from Elm Elementary gathered at The Elm in La Grange for their annual spring fundraiser. It was a night to remember with dueling pianos by Howl2Go and a live auction featuring school parent John Rante. Elm Principal Sara Olson and District 181 Superintendent Dr. Hector Garcia welcomed all guests and thanked the parents for their support and PTO for their hard work. Deco at the DRAKE

The Hinsdale Auxiliary of the Infant Welfare Society held its annual benefit luncheon

Tablescapes 2023: Deco at the Drake on Sunday, March 12. More than 400 generous guests packed The Drake Oak Brook Hotel for an afternoon of lively shopping, bidding, and dining. This year’s theme celebrated and honored the city of Chicago, which is home to the most stunning examples of stylish and elegant art deco design.

“We are excited to share that it was a spectacular fundraising success! We are grateful to our amazing venue, sponsors, donors, boutiques, food demo partners, local businesses, and live entertainment who created a memorable experience for our guests,” said Laura Preusser, President of the IWS Hinsdale Auxiliary. “It would not have been possible without our 47 powerful volunteers who spend all year planning for Tablescapes, our namesake event.”

Established in 1913, the Auxiliary is comprised of nine chapters and nearly 600 members throughout the Chicagoland area. Since its inception, the Auxiliary has donated more than $140 million to IWS and due to the unwavering dedication of members and supporters – is the clinic’s largest single donor each year. One hundred percent of the proceeds generated from Tablescapes will go toward the Infant Welfare Society of Chicago Angel Harvey Family Health Center.

Nut butter filled dates are changing the snacking world… for Realsy

It’s tough to find healthy snacks these days. You wander up and down grocery store aisles looking for items presented as health food that aren’t, in reality, good for you. There are many “greenwashed” brands, falsely marketed as more natural, wholesome or free of chemicals than their competitors. Often, it’s hard to find the real deal.

Enter Sophia Karbowski, former Hinsdale resident and co-founder of Realsy Snacks. Karbowski and business partner, Austin Patry, got tired of searching for a grab-n-go snack that was even remotely nutritious. “We walked around the grocery store searching for something healthy, but always ended up back in the produce section trying to piece together a snack,” Karbowski stated. “Often, we bought some type of nut butter on the side to make it more substantial, but a lot of those products have seed oils and other fillers in them. It negated the quality of a fresh fruit snack.”

Constantly finding themselves back at square one, they brainstormed a healthy snack that combined produce with protein. The result is a fresh, pitted, medjool date filled with almond butter, peanut butter or a peanut butter/cocoa mix to create a chocolate taste. They are sold three to a resealable pouch unit for $3.99 in fun, retro-colored packaging. The dates are quickly gaining traction with those seeking better snacking alternatives.

Their roadmap of the route from a good idea to a prototype to an actual product is an interesting tale.

Karbowski and Patry met as business students at Texas Christian University (TCU) in Fort Worth about a decade ago. “Austin and I were constantly trying out new recipes, just for ourselves, because we both love to cook,” said Karbowski. Both realized the serious lack of healthy food options offered by the university. There weren’t any healthful choices in the school’s vicinity, either. As classmates in an entrepreneurial major, they decided they could solve the lack of healthy food issues them-

selves. So, they did just that.

They began testing their concoctions on friends. Their acai bowls- a Brazilian fruit puree, mixed with various ingredients such as other fresh fruitwere a huge hit. They literally decided to put the show on the road and started with a food truck. After raising funds through an Indiegogo Campaign (an online fundraising platform), the pair bought a used pickup truck and trailer and learned how to hook it up and move it around. Acai bowls on wheels became Rollin’n Bowlin’, their first joint venture. They parked the food truck down the street from TCU campus. It gained instant popularity.

Eventually, additional items such as smoothies and avocado toast were added to the product line.

The partners shrewdly made themselves available to the university chancellor and others in decision-making positions. “Our professors and TCU in general were very supportive. They hired us to cater campus events,” Karbowski relayed. “There were students lined up for blocks waiting for the truck, before we ever pulled up.” A year after graduation, the university allowed them to open a brick-and-mortar space in the student recreation center and accept meal plan dollars.

This was a game-changer. They gathered food service contacts at higher education institutions across the country and reached out to other schools. Tulane, Loyola (Chicago), University of Denver, SMU, Baylor and Notre Dame took them up on it, offering campus space to set up shop. All rolled along smoothly until COVID hit.

Unable to access their campus locations due to the lockdown, Karbowski and Patry were forced to make changes to their business model. To stay relevant, they realized the need to pivot. Within six weeks of the start of the shutdown, they created a packaged line of their campus store smoothie

recipes and learned how to ship frozen product across the country on dry ice. Customers ordered products right to their doors during the pandemic through a subscription model. Soon after, they launched this line of single-serving smoothies into retailers nationwide.

“From there, we signed on with a natural foods distributor that helped us navigate and learn,” said Karbowski. They applied to a program for new and exciting businesses, which helped increase their visibility and therefore got them into natural stores across the country. The program minimized the legwork of getting in front of buyers who were able to learn about their products through distributors.

Meanwhile, COVID had slowed and most of their campus locations had reopened. Although their frozen business was growing, food and labor costs had risen significantly from the time they started. Also, the snack idea whispered to the partners. Realizing that snacks were more the avenue they wanted to pursue, they rebranded Rollin’n Bowlin’ to Realsy, their up-and-coming snack line.

They taste-tested snack ideas among friends. The result is a medjool date filled with nut butter. It’s a delectable,

no-sugar added, healthy snack, consisting only of dates and nutbutter. Nothing else. The texture, as well as taste, is like a soft, filled, caramel.

As before, the pair wanted to source the healthiest possible ingredients. They located an organic, family-run date farm in Mexico. Workers literally harvest the dates and fill them themselves, using organic nut butters created and shipped over from another family-owned nut farm. Patry has been to the farm and participated in roasting nuts to create different levels of saltiness. He sends Karbowski samples for her input. Final decisions are made together.

Aside of being the healthiest way to create the snack, both the nut and date farms employ working mothers, thereby contributing to the area’s local economy. “Aside from it being the healthiest and most cost-effective way to create the snack, we like that it’s not just transactional,” said Karbowski. “They want us to do well and we’re glad to partner with them.”

The filled dates are the first product on the Realsy line to hit the market. And hit, they did! They’re a huge success and can be found locally at Fresh Thyme and Kramer’s in Hinsdale. Customers can also order directly through the website, eatrealsy.com. Next, the duo plans to reinvent popular snacks with healthier ingredients than what currently occupies grocery store shelves.

This summer, get far away from it all

Travel, of any kind, enhances us as people. It’s a great way for kids to learn. It’s an opportunity to see firsthand that our way of life is just one of many, and for all our differences, there are quite a few commonalities. The very act of getting up and leaving familiar surroundings forces us to learn new things, dabble in different languages and do as locals are doing.

Nova Scotia/Cape Breton/ Prince Edward Island (PEI), Canada

The Canadian Maritimes are a great place to spend some time in the summer. Nova Scotia’s fresh air, miles of windswept coastline and buckets of ship-to-shore seafood make this picturesque area a beautiful but not-too-touristy destination for families. To the east, Celtic traditions abound on Cape Breton via its copious opportunities of Gaelic music and dance and stunning Highlands National Park. On PEI, one of Canada’s oldest settlements, kids will enjoy running on the red sand beaches, climbing the lighthouse near Charlottestown and visiting the iconic Anne of Green Gables house and museum.

Archipelago of Stockholm, Sweden

Made up of thousands of little islands in the Baltic Sea is the Stockholm Archipelago. It’s truly where modern architecture meets its historical, outdoorsy counterpart of Nordic roots. First spend a few days touring this crown jewel of a cosmopolitan city, then get your Viking cap on to explore the 150 settled islands. Hop on with a tour company to see the highlights or rent a kayak for the ultimate escape into nature. Either way, wooden houses dot small coastal towns and charming villages.

Disko Island, Greenland

Largely covered in ice, Greenland is the world’s largest misnomer. Except for Disko Island, off the west coast, which is very green. It also has the distinction of being the biggest island off the coast of the world’s biggest island. The island’s main town, Qeqertarsuaq, was settled by whalers in the 1700s and is one of Greenland’s oldest settlements. There is a hotel, café, museum, and art gallery. Go whale watching or dogsledding, even in summer! It’s a great place to watch- and listen to- the Northern Lights. Get there before the rest of the world finds it.

Belize

Once known as British Honduras, Belize is easy, because it is English-speaking. Mexico Rock is an ideal spot for snorkeling, swimming, fishing and relaxing. While exploring the colorful town of San Ignacio, feed iguanas or learn how to turn raw cocoa beans into drinking chocolate. Hike up Mayan ruins at Cahal Pech, then drive 35 minutes to Chaa Creek, where you can visit the nearby Morpho Butterfly farms to see the rare, blue butterflies. Observe toucans, or hundreds of other species of birds as you ride horseback through the jungle. ■

Instead of looking online or working with a realtor to find your ideal home, imagine being able to order it from a catalog. Choose the number of bedrooms, room dimensions and finishes to meet your specifications, all within your personal price point. If you were looking to buy from 1908 through 1940, the Sears Modern Homes Catalog would have been the guide to your dream home.

Caveat emptor: you had to assemble it yourself! Or hire someone to do it for you.

Building a home from a kit was a massive challenge, but one gladly undertaken by thousands of that era. In a

period in which quality wood and labor were scarce, the kit circumvented the need for skilled carpentry. All studs, screws, lumber, and framing members were numbered and keyed to a detailed guide. It was all ready to be put together. The homeowner would (simply!) take their leather-bound instruction book, onto which their name was embossed in gold on the cover- and follow the exact directions of assembly.

According to the catalog, buyers who wished to assemble their own homes needed only an “elementary understanding of construction techniques.” The instruction manual sagely forewarned the customer to follow only their handbook and “not take any-

one’s advice as to how this building should be assembled.”

Elmhurst residents, Tom and Whitney Pasquesi, feel lucky to have found a Sears home in a beautiful neighborhood. For Tom, it’s his second time calling one of these architectural treasures home. He grew up just a short distance away in another Sears homethe appropriately named Elmhurst model.

The Pasquesis feel their current home, the Barrington model, is unique when compared with modern homes today. They have enjoyed fixing it up and making it their own. During a renovation, they uncovered a brick chimney used for incineration, which was original to the house. Wedged in with baseball player Frank Robinson’s 1964 card, they also found the home’s bill of lading- the boxcar’s receipt of the home kit when it arrived at the railroad station- a century ago.

Originally marketed at $2,606, the Sears Modern Home Catalog described the Barrington model this way:

The Barrington retains the dignity of an old English home and has the practical interior of modern American architecture. Whether you consider economy, beauty, or convenience as of first importance, the Barrington home assuredly meets these and every point of merit with satisfaction. Exterior features at once stamp the mark of quality. The well-balanced projection at the front forms the entrance, leading to a tapestry brick terrace, guarded by a decorative railing. Sided with wide shingles and exposed fireplace chimney.

Timing, as they say, is everything. The housing market is no exception. In the period the Barrington home was built, people were just starting to work their way out to the suburbs. It is estimated that in 1900, only about 8,000 Americans owned cars. One decade later, Ford introduced his Model T, enabling

people to get out of the city and head to newly developing areas.

By the end of World War I, housing analysts predicted the need for at least a million new homes to keep up with the flood of immigrants through Ellis Island. Sears Modern Home sales skyrocketed in the 20s, when their largest catalog was published. With more than 450 available house designs, there were outhouses, garages, barns, and chicken coops to boot.

At that time, Sears and Roebuck claimed one buyer in four as a current customer. Existing faith in a recognized brand played a large part in the success of a mail-order home that came to symbolize the iconic American dream. While other companies such as Montgomery Ward and Aladdin Homes had offered house-building kits since the late nineteenth century, their numbers paled in comparison. Sears held the advantage of brand recognition.

Customers selected a design from the Modern Homes catalog and sent in a dollar, which bought them a full set of blueprints and estimated bill of materials. When the buyer placed the order, the dollar was applied toward the purchase price. Working blueprints and the exact bill of materials followed.

Shortly after the paid home order was received, a loaded boxcar, sealed in wax from Sears’ forty-acre mill in Cairo, IL, arrived directly at the customers’ local railroad station. Each community handled the deliveries differently, but in most towns, the railroads allowed buyers 24 to 48 hours to break the seal, take inventory of the contents, and unload the tens of thousands of pieces. That was a lot of trips by wagon or, if you were lucky, Model T, to the building site! This is why so many Sears homes are found within a two-mile radius of railroad tracks.

Certain communities had the advantage of a switching roundhouse and railroad sidings, and customers were therefore afforded more time to unload. At times, there was room on the track for the car to remain seven to ten days while being unloaded. Such is the case in several communities with a high number of Sears homes.

Sears estimated the average assembly time of a house to be 90 days, although most took longer. About half of the buyers built the homes on their own, often with the help of family and friends. Other less courageous buyers hired carpenters or builders to assemble the home for them.

Masonry was not included in the kit price. Block, brick, cement and plaster were additional costs borne by the homeowner. The bill of materials

advised how much of each input was necessary, depending on the particular model. Electrical, plumbing and heating equipment were not included in the kits, either, but were available from Sears for an additional cost, at three different price points for the “good, better or best,” grade.

Many zip codes in Illinois, as well as Michigan and Ohio, can offer the address of at least one Sears home.

The exact numbers are unknown, due to an unfortunate purge of records when the housing department closed. Elgin had the largest known collection of Sears homes in the country, with more than two hundred.

Sears homes were named after cities in the Midwest, with 107 names having originated from Illinois cities and villages. One such model, the Elmhurst, is featured here. It is unclear whether the home model was named for Elmhurst, IL or Elmhurst, MI. House models were first named in the 1918 Sears Modern Home Catalog- the bungalows, foursquares and colonials were previously numbered.

The largest order Sears ever received for its homes was placed by Standard Oil in 1918 in the amount of $1 million. This sum bought 192 modest two-story homes for refinery workers and miners in Carlinville, Wood River, and Schoper, IL. Two thirds of these homes are still standing today-a testimony to their standard of quality and craftsmanship.

Sears’ sales hit its pinnacle in 1929 at $12 million. There were 48 sales offices from Washington to Chicago. Despite its hugely successful operation, 1932 marked the beginning of the end of the housing division, as the Great Depression took hold and plummeting sales ensued. By 1940, the department was completely shuttered, and the plant sold to its employees. Shortly thereafter, they began building crates for shipping large aircraft overseas for the war effort.

Over decades, some have been repurposed into anything from funeral homes to boutiques to taverns. Unlike other homes which define moments of history, such as the unique but short-lived, steel Lustrons, Sears homes are anything but oblivious. They have earned a place in American housing history. ■
