On a figurative flight Let me tell you a quick story: I started writing this note on a plane to Singapore. My playlist was on shuffle and suddenly Eraserheads’ “Alapaap” came on. There’s a line in that song that I’ve been particularly obsessed with these days: “Buksan ang puso at isipan, paliparin ang kamalayan.” It’s still a timely statement; sad as it is to admit, despite being decades since this song first hit the airwaves, many people remain close-minded. That’s to be expected if you remain stuck in your own world. It is, after all, through travel that we gain experience and discover ideas apart from our own. But travel need not always be a physical traversing between spaces. Traveling is easier now: through the internet, through books, through art, and even through food. In this issue, we take a few journeys ourselves: Around the metro, we’ve visited a few new restaurants, shops, and collaboration spaces. We’ve also taken a figurative food tour around the Philippines, Greece, and Italy with three new dining concepts. We make a stopover at the studio of contemporary artists Isabel and Alfredo Aquilizan, whom you might know because of their recent The Center Will Not Hold exhibit with pieces made out of cardboard and balikbayan boxes. The studio also acts as their home when they’re in the country. We hope that what you find within our pages this quarter take your mind on a journey, and inspire you to actually go and take that first step out. (And if you’re wondering how to actually get to your destination, we’ve listed a few transportation options, too.) That said, “handa ka na bang gumala?”

In 2017, the Capitol Theater, a 1935 Art Deco structure by Juan Nakpil in Escolta, was revealed to have been gutted to give way to a high-rise development. The National Commission for Culture and the Arts and the National Historical Commission of the Philippines greenlighted its demolition despite the fact that it is over 50 years old and designed by a National Artist— both requisites for a structure to be declared as important cultural property. Such is the fate of most cultural heritage structures in the country, despite the existence of the National Cultural Heritage Act of 2009, which is supposed to protect them.

Stop Kiss Jul.12 to 14, Jul. 19 to 21 Stop Kiss, a 1998 play by AsianAmerican playwright Diana Son, will be staged at the Power Mac Center Spotlight in Circuit Makati. The play centers on two queer women and their lives before and after a hate crime is committed against them. It will be directed by Ed Lacson Jr. and will star Missy Maramara and Jenny Jamora.

Fête de la Musique Jun. 22, 28, and 29 Fête is an annual music festival held around the world on the 21st of June (or at least, the weekends nearest that date), in appreciation for all kinds of music—which is why the local Fête sets up multiple stages around Metro Manila to represent different genres. This year’s Fête, co-produced by the French Embassy, Alliance Française de Manille, and B-Side Productions, Inc., will take place on Jun. 22, 28, and 29, and will have stages in Makati, Intramuros, Baguio, and other provinces.

There is more to Italian cuisine than pizza at Osteria Daniele

The first thing we are served upon settling down at this new upscale Italian restaurant is not pasta or pizza. In fact, it isn’t even edible. The chef lays down before us a smoking gun and combustible bits of hickory wood. Puzzled, I ask: “What do we have here?” To which Dani Aliaga of the Bistronomia group says, “You will see.” In comes a plate under a glass cover. And before we can see what’s inside, the chef is already busy pumping smoke into the dome. Aliaga takes photos of this gastronomic trick—lots of photos. He even checks if our crew has a good shot, which takes three batches of hickory burning to achieve. By the time we have a stunning photo, the chef says the smoke has gone overboard. But that’s okay, Aliaga says. We agree. In the end, the burrata with prosciutto, anchovies, and a pepper emulsion turns out fine—if not better with that extrastrong hickory aroma.

EATS Bistronomia is mostly known for its Spanish concepts like Rambla and BCN Wine Gastro Bar. But for Osteria Daniele, the group has decided to go another direction. Aliaga, who is Spanish, says it was only natural for them to gravitate towards Italian cuisine since it is the closest to their culture. But something seems to be intentionally left out of the menu. While there are a decent number of dishes under three classifications— mangiamo (mains and appetizers), bevanda(beverages), and dolci (desserts)—one instantly notices the absence of pizza. “We don’t have pizza,” Aliaga says matter-of-factly. “We realized that there’s no need to have pizza in order to be Italian. There can be many other ways to do an Italian restaurant without offering pizza.” And many other ways there are indeed. Next to the creamy and spicy burrata aperitivo, there’s the insalata de pulpo, a warm salad of grilled octopus, potato balls, and blanched green peas, snow peas, and French beans in bagna caudasauce. The tangy, balsamic vinegar-based garlic-and-anchovies sauce is usually consumed àla fondue in Italy, but in this dish, it does a superb job of tying together different textures and tastes. Then there’s the seared foie gras on top of the cheesy risotto al limone. The risotto by itself, infused

21 with lemon and saffron, is already rich in flavor, but with the meltin-your-mouth duck liver, the dish altogether is an explosion of flavors, a battle of textures in the mouth. After all three courses, one could nearly forget pizza, or that it is quintessential Italian fare. Aliaga may be right after all. Located at the corner of 9th and 26th Sts. in Bonifacio Global City, Osteria Daniele is far from the usual barrage of dining establishments in the area. Instead, it is sandwiched between a residential and a corporate building. Men with blazers hung over their arms come in throngs, presumably from the same building. By 5 p.m., an hour before their dinner service, guests donning formal evening wear arrive—a stark contrast to the laid-back 9-to-5 crowd lounging by the half-moon bar. And this is how Aliaga and his partners envisioned it: the bar on the right side filled with patrons having an afternoon drink, and bigger crowds like families having dinner by the booth with suede backrests and solihiya finish. As the warm light of the sunset filters in through the large windows rendering the Pompei-inspired interiors a golden hue, dessert is served. The dessert’s flavor is reminiscent of fruit popsicles sold in the summer, only creamier and not quite frozen–a fitting palate cleanser after the foie gras. Then again, there are the drinks to end the day and the dining experience. The Fior d’Alpi is a milky-looking concoction of bourbon, amaretto disaronno, grapefruit juice, fresh lime juice, Angostura bitters, egg yolk, and sugar syrup. It’s an after-hours drink, says our photographer, who is better versed in liquor than I, a person who’s likely to order a drink because it has a vibrant hue like the Aperol in all its orange glory. Looking back at the menu, I see that the Aperol originated in Venice in the 1950s prior to becoming a staple in the Italian diet. “Crisp and refreshing, the cocktail can be seen in the hands of Italians all over Italy!” the menu reads. It doesn’t get any more Italian than that.

Private dining is not a new concept, but there are always new players attempting the field. In fact, more and more private dining “establishments” have gone beyond the hard-lined walls of restaurants and hotels and moved into far more personal territory: the home. Is it because “private” and “personal” are synonymous? Maybe. One thing is for sure, though. Chefs and home cooks alike are taking the gastronomic experience (complete with linen-lined tables and artfully folded napkins) to personal spaces, while at the same time elevating humble meals using innovative culinary techniques and five-star platings.

The influences are clear the very moment the dishes come out of Don Baldosano’s open “kitchen” (actually located in his home garden). Having trained at chef Jordy Navarra’s Toyo Eatery and with Locavore’s chef Mikel Zaguirre, Baldosano’s creativity and playfulness in presenting Filipino flavors is evident in each of his 16 plates. Take the Lupa, their version of the classic potato onion soup, but using ube and garlic, topped with bits of fermented mushroom and green onions. Or the Boodle—the main course served on a banana leaf as is custom—which has pork
and ensaladang talong served over palapa (dark rice cooked with toasted shredded coconut, a staple in Maranao cuisine). Even desserts get the same creative treatment. The Maja Blanca, for example, looks more like the street favorite turon. But once you bite through the crispy thin, mildly sweet lumpia wrapper, you get to the namesake coconut-based kakanin. Although presented on small plates like your classic fine dining restaurant, it’s the literal homey vibe of Linamnam paired with the familiarity of its flavors that make this a more approachable private dining experience.

Against the steely open kitchen backdrop is an ornate table setting that rests on century-old acacia. The flowers, curios, and tableware are handpicked according to clients’ preferences and the theme for the evening. Asis has always entertained guests at home and can whip up meals from almost any cuisine. But since she describes her kitchen as “a place for no pretensions,” she doesn’t serve what she hasn’t tried and tested. She doesn’t weigh her plates, either, because she wants to serve the best dishes made from the best ingredients. The favorites among her guests are Italian and Thai. The Test Kitchen is an extension of Asis’s house and her clients’ extension of theirs. The space is limited—it can only fit up to 14 people—but it surely makes up for it with the cozy ambiance that completes an intimate gathering.
Another refreshing starter is her simple watermelon salad with olive oil and topped with feta and parsley.

Thirty years from now, over 60 percent of the Filipino population is expected to reside in Metro Manila and other urbanized cities. It is estimated by the World Bank that at least 45 million Filipinos have moved into cities in the last decade further overpopulating what little piece of land is left in livable conditions. Vertical housing through condominiums, seen as the next frontier to provide space for the growing population, is at an all-time high, proving just how lucrative and competitive it is for urban dwellers. In 2017, over 50,000 units were sold, 24 percent higher than the number of previous condo uptake in Manila and other fringe locations.
One solution suggested by city planners and economists is the decentralization of jobs from major Metro Manila-based central business districts to city outskirts and other regions. In Alabang, stable growth of commercial businesses continues and with it the rise of upscale residences to cater to migrating families and individuals seeking to establish a new life on their own or with their loved ones. Cathay Land’s Anantara Square, soon to rise along Alabang-Zapote Road in Las Piñas, is one of these developments. Its first tower, a 20-storey building, will have 687 studio units and one-bedroom suites. The residence’s recreational and leisure amenities give more reasons to enjoy living in this condo community. The Aquatrium, featuring a lap and a kiddie pool, and a pool deck, along with the pocket gardens and an open-air courtyard are a perfect spot to bond and unwind with the family. Anantara Square will have a strip mall for residents to shop and do errands without the need to leave the building. With shrinking spaces, it seems high-rise condominiums is the direction at which modern urban dwelling is inevitably headed. 36 Isabel and Alfredo Aquilizan are migrants. As influential contemporary artists gallivanting around the world from one art show to the next, they might not be migrants in the typical sense of the word, but this sense of displacement has deeply influenced their work and the materials they use. Cardboard, for one, appears frequently in their pieces, and with good reason: You can find it anywhere, it’s easy to carry, and it
LIVING THINGS carries a special history, connoting images of balikbayan boxes and moving days. This is especially significant in their Project Another Country series, where they build small cardboard houses and boats that keenly bring to mind issues of migration and living spaces. “The way we use materials, we use it as part of the meaning of the work,” says Isabel. This take-what-we-can-get attitude combined with a respect for
history carries over to the Aquilizans’ studio in the country, the Fruit Juice Factory. In its previous life in the ’70s, the compound off Los Baños used to house, well, a factory that processed fruit juice and nata de coco. The artist couple honored that by preserving the factory structure, as well as christening the space with that name. It helps that Fruit Juice Factory is reminiscent of “the idea of squeezing creative juice,” they add. They’ve also adopted it

as a moniker for the community of artists they’ve fostered and the spaces abroad they craft pieces in, turning the physical space of the studio into a social (and global) one. Why this off-the-grid space in the province? “You can see the lights of Manila from here at night,” Isabel says, pointing to the view past their GI sheet gate. Later, Alfredo takes us to the back of the compound and points to a stretch of hills above the roof. “You can see Makiling from here,” he says. It’s idyllic, but with a certain je ne sais quoi that keeps it from being obvious. For the mostly-Brisbane-based couple, the factory

38 warehouse-turned-studio acts as their home when they’re in the country (inside the same compound, the Aquilizans’ son Miguel and his wife Jess—who are also artists—use a little shelter as a studio and living space). Going around it, you get a sense of comfortable haphazardness to the way they’ve arranged their space. There’s no pretense from separating the boundaries of their art and their personal life. Two mountain bicycles are hung on the wall almost like art pieces; their actual art pieces (like a collection of used toothbrushes from Japan, Philippines, and Chile) are scattered like normal décor. All the while, their numerous dogs (a Langit, one of the Aquilizans’ dogs, a Peruvian and Mexican hairless mix

LIVING THINGS puspin, a beagle, and Mexican and Peruvian hairless dogs) freely run in and out of the warehouse. It’s not a normal studio, they admit, and it’s part of their lifelong struggle to demystify art. “Art and life can never be separate,” Isabel maintains. That explains the way the studio is set up but also the materials they use. All of their pieces are made with lived objects, objects that have been used and are imbibed with meaning, and that are “relevant to our life and society,” Alfredo stresses. Some of their pieces are also made with items from separate artworks, both theirs and by other artists. Alfredo shows us a framed piece by Mabini artist Antonio Calma, which was part of their Mabini Art Project featured at the 2016 Art Fair Philippines, back when they headlined the art gathering. They wanted to critique the institution by framing a Mabini artist’s works, which would typically be excluded from such an event and dismissed as “lowbrow,” and presenting them as art. Mabini art is an art style that traces its roots back to Fernando Amorsolo himself. Once a bustling art movement, it fell out of favor with the art world when younger artists fresh from studying abroad brought Expressionism onto the scene. From then on, Mabini art
became associated with outdated, kitschy, and lowbrow. He says there is a need to question who gets to decide what is art or not. The project also served as a way to bolster local art (Mabini art is experiencing its own small renaissance thanks to the ongoing project). The couple recalls bringing Calma to the opening night and seeing his joy at being recognized by the art world. This isn’t a one-off thing for the Aquilizans. The Fruit Juice Factory as a social space’s raison d’être is to collaborate and share art with others. Aside from establishing connections with other visual artists, they’re always in close

communication with a marginalized community or a group of local artisans or craftsmen, whether in the Philippines or in their makeshift studios abroad. And the couple helps these groups by showcasing their products in art pieces. An example of this is their Commonwealth installation, which featured wearable crowns made of oil cans recycled by local artisans.

Predictably, the Aquilizans have a lot of projects in the pipeline (one of which involves a sculpture in the Facebook headquarters in San Francisco), but their vision for the Fruit Juice Factory hits closer to home. In three to five years’ time, Isabel wishes they could transform the compound into an artists’ commune, translating the Fruit Juice Factory’s social aspect
into a concrete one. It’s already materialized in their eyes, and as they talk about it, you can clearly see it, too. A veranda could be a place where the artists could dine, while the green lot near the gate can be the site of a café; their son’s current studio will be demolished, and in its place will be a bigger studio for other artists, or a small school.
