Al Fresco Dining Snatch a bit of the slow life this summer

There are so few days of the year when you can comfortably eat outside that you want to make the most of it when you can. There’s something about being outdoors and watching the world go by on a busy street as you enjoy a long drink, or being tucked away in a beer garden for a meal, that makes life seem to slow down for just an hour or two. Maybe it’s the association with the more leisurely approach to meals on the continent. So, optimistically hoping for some warm days and balmy evenings this month, we’ve been checking out where you can go locally for outdoors dining. Starting here in the villages here are a few suggestions...

The Grey Horse Inn has a pleasant secluded beer garden with flower border. Bar lunches are served 12noon – 2.30pm every day. Customers of Paul’s Chinese Restaurant adjacent are welcome to take their meal into the beer garden too. Drive through the stunning Jenks landforms that are part of the artland, and make your way to the courtyard where there is full table service in a covered outdoors area (great for when it’s warm but drizzly) or a small sun trap garden. Heading across into West Lothian and a little further afield....

Exciting news from EQHQ in Livi– they are opening their “0506” Kitchen and Bar on 28th June, and have large garden at the back of the club with BBQ facilities and full bar service, where you can take your meal. As owner Darren enthuses “with outdoors drinking, the food has to be the focus....” With their own bespoke burger and fantastic grill and rib selection, and chef coming from a Harvey Nichols restaurant background, this sounds like one to definitely check out this summer. And for special atmosphere in the evening, they have installed new outdoors lighting, and also outdoors music. It’s a perfect space for a meal or just a drink. Kitchen appliances have progressed somewhat in the past few years. Through the popularity of programmes such as The Great British Bake Off and Masterchef we’ve learned that maybe it’s not us who are wholly inadequate when it comes to making the perfect soufflé but rather the equipment you buy actually does make a difference. Food Processor – You may have an un-loved and unwrapped wedding gift at the back of a kitchen cupboard. If so it’s time to discover the delights of a food processor. Sous Vide Oven – Traditionally the appliance of top restaurants a Sous Vide oven is basically a steam oven into which you place your food which is sealed in plastic bags. This method ensures that your meats and fish will be cooked to perfection.

Domino Hob System – Have you ever wished you had just one more cooking zone, especially when it comes to Christmas? A domino hob system could be the answer. Heated by gas,

electric and even ceramic induction a domino hob is a set of cooking zones you can add to. For example, you can have a set of standard burners but you can add a wok burning domino hob, Teppanyaki cooking zone and so on which all sit side by side.

Bread maker – Time for another trip to the depths of your kitchen cupboard to find that long-lost bread maker. A key factor in the war against obesity is the high number of artificial additives in processed foods rather than fat content. Supermarket bread is laden with the stuff so it’s always better – and more rewarding – to make it yourself. All you need is a bread maker along with wholemeal flour, olive oil, warm water, yeast, honey and sea salt and that’s about it. Good and wholesome it may not last as long as supermarket bread but the flavour and health benefits will more than make up for that.

She takes the cake Former Currie resident Claire Dixon works as a secretary at Flora Stevenson Primary School in Edinburgh. She is married to Scott and they have two children, Ben (11) and Libby (6). “Cakes can say so many different things,” says Claire Dixon. “They say thank-you to your child’s teacher at the end of term, they bring comfort to someone who is ill, they say ‘I love you’ to your granny. Or you can give a cake for no reason at all – they are very easy to give!” For the past four years Claire has been delighting family and friends with novelty cakes. But she has only fairly recently returned to baking. Although she enjoyed the hobby in her teens, Claire didn’t make many cakes as a young adult. Perhaps this was because creating and preparing food was what she did as a job, working in London for the Master Chef judge John Torode.

“I did a stint in the pastry kitchen, which I just adored,” says Claire. “I made pavlova, crème brulee, cheesecake and a stodgy Thai rice pudding. I also learned how to make different types of bread: focaccia, flatbread and others.” But eventually, told “your personality is too big for the kitchen”, Claire was moved into a more “customer-facing” position. And she stopped baking. When her son Ben was approaching his first birthday, Claire wanted to make him a cake. “I decided on a hedgehog,” she explains. “I made two attempts, and both looked like road kill!” Disappointed, Claire settled for a store-bought monkey cake in the end. But when her nephew Alex turned one, Auntie Claire provided the “Marv the Robot” cake. And she has gone from strength to strength from that point. Other creations include a pirate ship, fire engine, dinosaur/dragon, a horse’s stable (with horse’s head peering out), a hand-painted “Doc McStuffins” cake, a vegetable garden and a flowery man’s shirt. “The better you know the person, the better the resulting cake,” says Claire, “because you know exactly what will mean the most to them.” Claire obviously gets a lot of joy from seeing the look on a child’s – or an adult’s – face when they are presented with one of her cakes. “It’s such a pleasurable hobby,” she comments. “And I like the fact that I can make a creative cake for someone who can’t really afford to pay for a professionally made one.”

People have told Claire she should go into business, but so far she has resisted. “I’m afraid if it was a business, a job I did every day, I would lose the joy I find in making these cakes,” she says. “So I will probably just keep it the way it is: making cakes for the people I love. “And remember,” she says with a smile, “a cake baked with love has no calories.”

Balerno Dental Practice You might have been wondering what is going to happen to the former RBS building in the centre of Balerno since the bank moved out... Balerno Dental Practice is delighted to be moving into this important local building this summer. In keeping with the central and prominent location practice owner Brian Clough is determined to make it much more than just a dental practice. “Given this opportunity to expand our current premises, where we are bursting at the seams, I didn’t want to create just another standard dental surgery,” explains Brian. “This is an opportunity to do something unique.” A London-based designer, Mehbs Yaqub, has been involved to upgrade the external look of the building and inside has helped create a stunning, modern, high quality, state of the art practice. Brian takes a holistic approach to dentistry and the new centre he is creating will help him to offer the full range of services that he envisages. There will be therapists on site who will be able to help with a range of issues such as phobias, anxiety, smoking cessation, stress and weight loss - all of which either relate directly to dental health (stop you getting dental treatment) and which can have a wider impact on your health and quality of life. There will be a dietician within the practice too. With the age we live in, more demands are placed upon us and this can impact on our health and wellbeing. Teeth tend to be one of the first things which get neglected, and a deteriorating dentition can lead to wider health implications. “We will also be opening the surgery early mornings and late evenings as well as Saturdays, to help those people

The practice will also be used for community projects such as hosting children’s educational groups to play at being a dentist and learn about dental health, and to get involved with local schools. This will aim to improve the dental health and education amongst the young as well as increasing the awareness of the importance of having a great smile and healthy teeth. How to save tax – legitimately

As with past articles in Konect the advice is relevant to people who live and work in the UK. This article applies to people who are higher tax payers and are willing to take a risk with some of their investments. The Strategy The idea is to put money into a pension plan in order to bring your marginal tax rate down to basic tax rate e.g. someone earning £50,600 would have a single persons relief of £10,600 leaving taxable income of £40,000. Of this £40,000, £8,215 would be taxed at 40% but a pension contribution of £6572 would eliminate this.

This person now pays tax on the £40000 but at 20% i.e. £8000. They now invest the appropriate amount in either a Venture Capital Trust or an Enterprise Investment Scheme to reclaim the £8000 back from the tax man. We considered the advantages and disadvantages of VCT’s in last month’s article so we now concentrate on the benefits of EIS’s. EIS’s The benefits of an EIS are threefold. First, you get tax relief at 30% on your investment. Second, if you keep an EIS for 2 years and you still own it on your death then the value is outside your estate for Inheritance Tax. The third benefit is if you have made Capital Gains then you can roll them over into the EIS. Again, should you own the EIS at death any Capital Gains are wiped out. This strategy is not for the average person but for someone who fits the criteria it is an excellent method to pay no income tax legitimately. Naturally, this type of tax planning requires specialist professional advice.

In search of the perfect picnic place Karen Murray shares some of the secrets of the Wednesday Walkers.

Kirknewton is home to a group of dedicated walkers imaginatively entitled the “Wednesday Walkers” as that is when we walk, who explore the surrounding countryside while getting some much-needed fresh air and exercise. I thought it was about time to share some of our walking adventures rather than simply suggest a walk. The idea is that with some encouragement you will go out and find your own favourite walking route. Alternatively you might decide we sound like an interesting bunch of walkers and join us – and you would of course be more than welcome. Our walks are evening walks so we don’t tend to stop and picnic – although we have been known to enjoy a glass of something at the top of a hill! However, if you head out on any of the routes suggested or explore the hidden woods and fields of Kirknewton yourself, you can always go on a sunny day and take a picnic. There is nothing more satisfying than packing up your hamper (rucksack/plastic bag) with some yummy delights and finding a great wee spot to enjoy your picnic. The thought of a picnic conjures up summer days of yesteryear getting friends and family together although growing up in my family meant picnics in all weathers. We’ve enjoyed a sandwich or two under a tree in the snow on occasions. The raison d’etre of the Wednesday Walkers is to get exercise for the body and strength of the soul. The walking is important but equally so is the chat: exorcising the demons, while exercising the muscles. The light nights make for adventurous routes and in our rambles we’ve discovered some perfect picnic places. The more adventurous we get in search of new views, we realise how lucky we are to live in such a lovely village with myriad walking trails leading to fabulous panoramic vistas. A regular trail is to head over the hill into the parklands behind the village. Head down Smithy Brae which is the wee lane off the main next to the graveyard. Through the ‘kissing gate’ at the bottom 50

of Smithy Brae, follow the well-trodden path over the hill, across the stile at the top and into a field full of sheep. From there the world, as they say, is your oyster. Recently we have been crossing the field and taking a right turn to head toward Kirknewton House as it is Rhododendron season and they are simply stunning along the bank of the loch. I realise when you read this the rhodies may be over but no matter, there are gorgeous sights at any time of year. In fact one of my favourite and newly-found routes is the bluebell wood – beautiful when the bluebells are out and equally so when they are not. For this route, you veer off to the left, once you have headed over the field and turned right. Just up the path you will find another wee stretch of water with yet more rhodies, ducks (and ducklings if you time it right). If you are ready for your cheese roll, this would make an ideal spot. If not, admire the view then carry on to an opening in the hedge and another turnstile gate leading into a wonderfully wooded area. Bluebells abound at the right time of year, as well as wild garlic, primroses, a babbling brook – a veritable fairy grove perfect for a picnic with kids. Wander through the woodland, over a bridge and turn left, following the slightly overgrown path as it twists and eventually comes out on the metalled path that leads up through a farm from the old Dalmahoy Road. There are once again several choices of route back to the village. You can wander the road all the way back or you can hike back over the sheep field and retrace the way you came. Other walks so far this summer have included the summits of the Dalmahoy Crag and the Kaimes Crag taking in the remains of the forts once built there and of course enjoying the 360 degree views. Perhaps this is the spot for the romantic picnic. So why not head out and explore and, if you have time, pack the rug and the picnic and relax. We don’t always know where we are going but we figure it out as we go along. If you fancy joining us we walk on Wednesday evenings at 7pm meeting at the graveyard in the village. KONECT

As the nation celebrated National Picnic Week recently it raised the question of what type of ‘picnicker’ are you? Blue Cheese Burger (gluten free)

Recipes from Hopetoun Farm Shop

BBQ Chicken Glaze Ingredients: 8 chicken thighs skin on Jar of lime chutney Tomato sauce Dark soya sauce Hopetoun honey Method: Take one sealable food bag and pour all ingredients into the bag. Throw in the chicken thighs, seal over and massage the chicken for at least 5 minutes. Refrigerate for 24 hours.

Ingredients: 500g lean Hopetoun Aberdeen Angus steak mince 1 onion Salt and pepper Kintyre Blue sheep’s cheese Chilli flakes (optional) Method: Blitz the onion in the blender until it forms a paste. Mix all ingredients together except the cheese thoroughly in a large bowl. Divide mixture into 12 golf ball size portions and shape into burgers. Lay out 6 burgers and add a tablespoon of blue cheese onto the centre of each. Place another burger on the top of each and mould together to form 6 burgers stuffed with cheese.

Preheat the oven to 220 and cook chicken thighs for 5 minutes then turn the temperature down to 180 degrees for a further 15 minutes.

Chill for at least 2 hours, preferably over night.

Finish off the thighs on a hot BBQ for 7-8 minutes turning once only.

Talk to your children about how much they think is a reasonable weekly sum for recreational activities over the summer holidays, and then when you have recovered from the shock, try to negotiate with them to make it more realistic. It’s good to encourage them to plan and save for the more expensive activities and to choose some cheaper but still fun things to do.

Summer holidays offer an opportunity to help young people learn to take more responsibility for managing their money. It will take some thought and skill from parents to set this up.

Some ideas of cheaper activities include bus, tram or train trips, including the open top bus in Edinburgh. Visiting art galleries, museums and Summerhall in Edinburgh is much more fun if you do it without an adult, and they might also visit friends or relatives on their own. If they really want to do the more expensive things, you could let them earn money for doing chores at home, or babysitting for family friends if they are responsible enough. Helping with gardening or mowing the lawn for neighbours can earn a bit too. Encouraging young people to give to charity might be a hard discussion to have with them, but we do want to help our young people to learn to be generous as well as good managers, don’t we! In West Lothian this summer there is plenty for all the family. There is equine action at the Jousting at Linlithgow Palace on 4th & 5th July, Scotch Hop (also at Linlithgow Palace) on 15th, 22nd & 29th July, 5th & 12th August. Party at the Palace is back on the 8th and 9th August and also in Linlithgow visit the Canal Centre for their annual Fun Day on 16th August; the highlight of the afternoon is the Cardboard Boat Race.

Summer Tours of Kirk of Calder A hidden gem in West Lothian, the Kirk of Calder in Mid Calder is open free of charge to visitors from May to September, 2 - 4 o’clock. Guided tours are available, although visitors are free to look around on their own or simply enjoy the peace and tranquillity. Kirk of Calder on Main Street, Mid Calder was built in 1541 replacing an earlier 12th century church; a stone Celtic cross from the original building and carved circa 1160 can be seen in the present church. The reformer John Knox is believed to have preached both inside and outside the Church, James Paraffin Young and his family were regular attendees and the composer Fredrick Chopin is known to have visited. The interior of Kirk of Calder is a stunning mix of pre reformation and Victorian architecture and the skills of a number of stone masons over the years is evident. A number of memorials to the Sandiland family illustrate the long association the Lords Torphichen have had with the Church. The Church has links to the Robert the Bruce, Mary Queen of Scots, the Covananters and Witch Trials. Kirk of Calder has a number of striking stain glass windows depicting a variety of biblical scenes and considered to be of the highest quality, two sets were gifted the family of Paraffin Young.
