The magazine has a summery feel to it this month, so now we need just need the summer weather to make it all real. We’ve optimistically been looking at al fresco dining, hoping for it to be warm enough to actually eat outside! There is a huge range of eateries in the local area where you can eat outside or just socialise and relax with a drink - from breakfast through to late evening; see our guide on pages 8-9. We hope you find the magazine informative and entertaining. Al Fresco Dining Snatch a bit of the slow life this summer
There are so few days of the year when you can comfortably eat outside that you want to make the most of it when you can. There’s something about being outdoors and watching the world go by on a busy street as you enjoy a long drink, or being tucked away in a beer garden for a meal, that makes life seem to slow down for just an hour or two. Maybe it’s the association with the more leisurely approach to meals on the continent. So, optimistically hoping for some warm days and balmy evenings this month, we’ve been checking out where you can go locally for outdoors dining. Here are a few suggestions, starting closest home....
The Oatridge Hotel has a beer garden with

The Lime Kiln and Tony Macaroni, both on the boulevard in Livi, have tables on decking at the front. For somewhere completely different – Milk at Jupiter Artland is the cafe within the sculpture park near East Calder and is open to everyone, not just for the sculpture park customers. Blue Cheese Burger (gluten free)
Recipes from Hopetoun Farm Shop
BBQ Chicken Glaze Ingredients: 8 chicken thighs skin on Jar of lime chutney Tomato sauce Dark soya sauce Hopetoun honey Method: Take one sealable food bag and pour all ingredients into the bag. Throw in the chicken thighs, seal over and massage the chicken for at least 5 minutes. Refrigerate for 24 hours.
Ingredients: 500g lean Hopetoun Aberdeen Angus steak mince 1 onion Salt and pepper Kintyre Blue sheep’s cheese Chilli flakes (optional) Method: Blitz the onion in the blender until it forms a paste. Mix all ingredients together except the cheese thoroughly in a large bowl. Divide mixture into 12 golf ball size portions and shape into burgers. Lay out 6 burgers and add a tablespoon of blue cheese onto the centre of each. Place another burger on the top of each and mould together to form 6 burgers stuffed with cheese.
Preheat the oven to 220 and cook chicken thighs for 5 minutes then turn the temperature down to 180 degrees for a further 15 minutes.
Chill for at least 2 hours, preferably over night.
Finish off the thighs on a hot BBQ for 7-8 minutes turning once only.

Kitchen appliances have progressed somewhat in the past few years. Through the popularity of programmes such as The Great British Bake Off and Masterchef we’ve learned that maybe it’s not us who are wholly inadequate when it comes to making the perfect soufflé but rather the equipment you buy actually does make a difference. We’re not suggesting for a moment that you need to go all Heston Blumenthal and invest in a blowtorch that would be perfectly at ease in the welding scene from Flashdance. If however, you invest in a few additional items it could just make the difference between your fish turning out as a succulent masterpiece or something you could use to, pardon the pun, re-sole your shoes. Food Processor – You may have an un-loved and unwrapped wedding gift at the back of a kitchen cupboard. If so it’s time to discover the delights of a food processor. A good quality appliance from manufacturers such Kenwood and Miele really will transform your cooking experience. Most quality processors have around 40 different functions from blending- for those frozen Margaritas and smoothies – to kneading, if you enjoy making your own bread by hand. Sous Vide Oven – Traditionally the appliance of top restaurants a Sous Vide oven is basically a steam oven into which you place your food which is sealed in plastic bags. This method ensures that your meats and fish will be cooked to perfection.

Domino Hob System – Have you ever wished you had just one more cooking zone, especially when it comes to Christmas? A domino hob system could be the answer. Heated by gas,

Bread maker – Time for another trip to the depths of your kitchen cupboard to find that long-lost bread maker. A key factor in the war against obesity is the high number of artificial additives in processed foods rather than fat content. Supermarket bread is laden with the stuff so it’s always better – and more rewarding – to make it yourself. All you need is a bread maker along with wholemeal flour, olive oil, warm water, yeast, honey and sea salt and that’s about it. Good and wholesome it may not last as long as supermarket bread but the flavour and health benefits will more than make up for that.

Broxburn, the centre of the solar system The Kirkhill Pillar

The Kirkhill estate in Broxburn was home in the 18th century to an unusual project – a model of the solar system as it was understood at that time. This was the inspiration for another model of the solar system to be created locally about 10 years ago. Known as the Kirkhill Pillar Project, it consists of 10 art installations across West Lothian representing the sun and 9 planets– you may have seen some of them dotted around and wondered what they are… The slightly eccentric 11th Earl of Buchan who lived here, David Steuart Erskine, fancied himself as a patron of the arts and part of the Scottish Enlightenment – he took it upon himself to offer poetry writing advice to Robert Burns, and when Walter Scott was ill in 1819 the Earl busied himself with funeral plans! Scott later graciously commented that Buchan’s “immense vanity bordering upon insanity, obscured or rather eclipsed, very considerable talents…” So it’s perhaps no surprise that he decided to tackle a scale model of the solar system. Completed in 1776, it consisted of the sun and larger known planets made from stone, and the smaller planets from bronze. He also made a stone pillar, carved with Latin inscriptions and recording the astronomical equations he used for
Kirkhill Pillar.
the size of the planets and their relative distances from the sun. The pillar had a belltower and cross. The Earl also predicted the position the planets will be in on 20th May 2255 (No-one knows why he picked this date, but it may be to do with the transit of Venus). He used a scale of 12,283 miles 23/100 to an inch for his model, an odd scale but the astronomical information on the pillar is apparently quite accurate. This pillar is all that remains of the model; it stood in the garden at Kirkhill in a bad state of repair until it was rescued and relocated to Almondell Country Park and renovated in 1988. It stands in front of the Visitor Centre. (This locations was chosen as Almondell House was built by Henry Erskine, the Earl’s younger brother). At the centre of the modern model is the sun – a lightbox with a diametre of 1.83m on Broxburn Academy - appropriately cited as the Academy is close to Kirkhill House, the site of the original model. 10 sculptures representing the planets are distributed to scale across West Lothian in their orbits. The furthest planet Pluto is represented by a plaque (“I could be”) in Beecraigs Country Park – to be to scale with the 1.83m sun, Pluto would be 3mm in diameter. Brock Garden Centre Tucked away behind the Strathbrock Partnership Centre (the health centres in Broxburn) is a little garden centre that is open to the public all year round selling bedding plants, hanging baskets and perennials and, later in the year, Christmas wreaths, bird tables, decorative garden accessories and winter pansies. The difference between this and other garden centres is that it exists not for profit but for the benefit of people with ongoing mental illness. It’s a social enterprise aiming to be self-funding via sale of plants and other garden items, and provides a great environment for people with mental health conditions who benefit from the therapeutic activities of gardening. It is managed by James Hughes who has been seconded from his post at Mental Health Worker to set up the garden centre. I strolled around it with attenders there on a sunny day last month and it’s a small but peaceful oasis with lovely features that they have crafted. As one garden centre attender said “the bottom line of how it helps is that it brings you away from the daily pressures and provides a nice environment. It doesn’t cure anyone but definitely helps a great deal. I think day services are a vital part of treatment and I feel that they are at the frontline of people’s care and sometimes aren’t given enough credit”. Although the garden centre has only been open in Broxburn for three years, it traces its history to Bangour Village hospital. When Bangour closed they relocated to the Crofthead Community Centre in Dedridge but when that closed due to budget cutbacks in 2011 they had to find a new home again. The small plot of land behind the Strathbrock Partnership Centre was identified and is an ideal location. Within the Mental Health Resource Centre
Brock Garden Centre itself there is a fully-equipped workshop where service users who are handy in woodwork create bird tables and planters for sale in the Brock Garden Centre. David Bathgate General Builder
Broxburn resident David Bathgate has been running his building and renovation business for 13 years, since moving to Broxburn from Livingston. Starting off working for his uncle’s building business, over years he has built up experience in most trades (except for roofing and rough casting). “I spend a lot of time at this time of the year on landscaping, driveways, monoblocking,” he explains, “and we do a lot of kitchens and bathrooms too. Over the winter we tend to do drainwork.” He prefers smaller projects and renovation work. Interview: Ian McLeod
When Ian McLeod turns up to quote for your new windows, doors or home extension project, his name may ring a bell with you if you know anything about Scottish boxing. And yes, sure enough, the Ian McLeod now running Weathertight is the former professional boxing legend who was British No 1 in the eighties. Ian grew up in Livingston, and only discovered his boxing talent by accident; he walked in on a boxing match in Craigshill one day, along with some friends, and ended up doing some sparring for fun; the champion boxer he was up against couldn’t believe Ian had had no previous training – he was a natural. He took the sport up with enthusiasm and by the age of 16 became the youngest ever Scottish boxer competing at an international level - a record that still stands. So how do you get from being a professional boxer to running a home improvements business? It turns out that Ian served a carpentry apprenticeship as a young man - “although at that stage I wasn’t interested in it, I just wanted it over and done with as quickly as possible so I could get back to fighting” he says. It’s just as well someone made him go through with the apprenticeship though, as it meant he had another skill to fall back on when he left boxing. “I started off in sales, selling sheet materials,” he says, (and I reckon Ian is as much a born talker as he is a born fighter) “and moved on to set up a security

company with my brother which we ran for many years.” He sold out around seven years ago and has been back in the home improvements business since. After working for a couple of other companies, he set up Weathertight, along with George Graham, and a team of fitters. He located a suitable site at Standhill Industrial Estate and set about building the showroom himself. Weathertight opened their doors for business in August last year. So what’s different about Weathertight? It’s a competitive market with a lot of businesses serving the local area, how does Ian think he can make a difference? “It’s about having proper values. You don’t pay until you are happy with the work we have done, and so far we’ve not had a single unhappy customer. We have a premises here in Bathgate with a showroom that you can visit, so you know who we are and where to find us. You’ll be dealing with either George or myself, so you know where you stand. We come to your house, measure up and give you a quote, it is a simple as that. There is no hard sell where you can’t get us out of your kitchen until you have signed up, or any nonsense like that.” Besides doors and windows, Weathertight sell UPVC roofline, A rated boilers, sliding wardrobe doors and larger projects such as sun lounges and garage conversions. They also supply made to measure blinds - the finishing touches for your project. Ian has maintained his interest in boxing, participating in various charity fights, and taking part in the Commonwealth Games last year. He is planning to open a boxing gym in Livingston in the near future. It sounds intriguing but I couldn’t get the details out of him as the project is still under wraps, but his motivation is clear – to help local young people the way he was helped through boxing. “Boxing was my life from the day I walked into that ring in Craigshill until I retired at 30.” He wants to provide professional coaching using his network of contacts in the boxing profession, and pass on his skills. “Who knows, I may have been on the streets without that outlet. Maybe now I can help other young people.

Karen Murray takes a stroll along the Forth
A walk along the shoreline of the Firth of Forth is always a fabulous way to blow away the cobwebs, clear your head and chill out, particularly during the summer months. Pick a sunny day and take a picnic. There is nothing more satisfying than packing up your hamper (rucksack/plastic bag) with some yummy delights and finding a great wee spot to enjoy your picnic, and a beach walk, with a couple of historical interest features thrown in, offers plenty of spots to stop. The thought of a picnic conjures up summer days of yesteryear getting friends and family together (although growing up in my family meant picnics in all weathers. We have enjoyed a sandwich or two under a tree in the snow on occasions). So why not head out from your own home and explore and if you have time, pack the rug and the picnic and relax? When I had a chance to sneak out of work a bit early and catch a couple of hours to myself, I decided to head to the Forth and take a walk. You could of course walk for miles but I didn’t have long on this occasion so I decided on Blackness toward Bo’ness. There are a couple of lovely beaches at Blackness with great views over the water, towards the Ochil Hills. The dramatic 15th century Blackness Castle provides the scenic backdrop (and if you have time it is an interesting, historic place to visit with ruined parts and complete rooms, turrets and towers and lots of room for exploring) with the beaches and the village spread along the shoreline. With no time to linger, I planned a stroll along the shore towards Bo’ness, enjoying the peace and tranquillity. Heading west away from the castle, you follow a track above the shore which is really for access to the owners of the houses along there that all have spectacular views. At the end of the track a narrow path continues in the same direction and you can wander along it enjoying the views across the water. The Rail Bridge can also be seen and admired. You don’t have to stay on the track however, you can step down onto the shore and walk along there. I love 34
Carriden Church walking right on the shore as close to the water as possible, but you might find it a bit stony and prefer the path. The choice, as they say, is yours. After a while you will have to walk on the path above the shoreline, going straight ahead at a signpost. You will come to some denser woodland, where the path splits. Keep to the path closer to the shore which veers close to the beach as you get near to Bo’ness. At a fork, stay right following the water. The path eventually leaves the Firth of Forth to go left behind Carriden Boat Yard. This brings you to an access road where you go right to busier road, then left. You can take a little diversion here if you fancy and walk up to see Carriden Parish Church and then further up the hill, the ruins of an older church. If you have made the ecclesiastical diversion, then retrace your steps to where the path left the shore and ultimately back to Blackness. You could continue on away from the shore and into the town of Bo’ness and then grabbing public transport back to Blackness to pick up your car later, but the round trip although it is not a circular walk is a satisfying one and more views over the water on the way back are always going to be different than those on the way there as the light changes so much. The round trip is about 5 miles and will take between 2 to 2.5 hours depending on diversions to churches, visits to castles and general taking in of views… KONECT

As the nation celebrated National Picnic Week recently it raised the question of what type of ‘picnicker’ are you? Upon chatting with some of Hopetoun’s farm shop staff and customers we discovered most people fall into one of the following categories: The Sarnie Pro: Out comes the carrier bag, the squares of tin foil folded neatly around the square sandwiches cut into triangles filled with all manner of fillings. Add the multi pack of crisps, cans of juice and a token bit of fruit. All eaten off the knee of course. The Food to Go Pro: Lays out a lavish spread in the form of salads, humous, baked crisps, cooked meats and sliced fruit all served in the dishes they came in at the local supermarket - with the bonus of cute little plastic forks. The Picnic Pro: Out comes the wicker hamper, the plates, cutlery, napkins and cups followed by artisan mini pies, homemade salads, quiche and pickles washed down with freshly squeezed fruit juice or even a few bubbles. Whatever type of ‘picknicker’ you are there’s nothing better than enjoying a wonderful outdoor lunch

There is equine action at the Jousting at Linlithgow Palace on 4th & 5th July, Scotch Hop (also at Linlithgow Palace) on 15th, 22nd & 29th July, 5th & 12th August.
