WALK

M essag e f ro m t h e e d ito r to the first Konect Welcome of 2016! This issue is the usual eclectic mixture of all sorts of different articles that have one thing in common...the villages of Balerno, Currie, Ratho, Juniper Green and Baberton. Our cover-girl is a blacksmith from Ratho whom our writer Suzanne interviewed for the Village People column this month. And during January, when we’re preparing the February magazines for print, it’s always the season for Burns and poetry, so I decided to read up about local poets from the past – there are a few to chose from and came across the slightly-obscure Joseph Mitchell of Ratho. Our local police officers are writing a new column for Konect starting this month- you’ll find their first one on page 19. And you’ll find everything you need for house, family, garden and leisure on offer from the local businesses advertising in these pages, so do support the local economy and whatever your project is always get a quote from a local company first!

FEATURE

The Ratho Poet by Helen-Jane Shearer

A time of political movement; big questions and strong feelings over Scotland and England’s relationship; plus ça change.

But a character from Ratho made the most of tumultuous times via a moderate talent for poetry and better talent for smooth-talking, to climb all the way up into the pocket and patronage of Sir Robert Walpole, the first Prime Minister of the new Great Britain.

Joseph Mitchell was born in Ratho around 1684 (exact date not established), so his lifetime spanned the “Glorious Revolution,” the union of the parliaments and the Jacobite risings. His father was a stonemason in Ratho who worked for some of the titled nobility in the area (in particular the Earl of Lauderdale who owned the then-grand local Hatton estate) and through hard-work, ambition and possibly the patronage of these customers, managed to send his son to university. The intention was for Joseph to have a career in the church. Joseph, however, was more interested in literature and the arts, and headed to London to seek his fortune as a poet and playwright. If heading to London as a poet sounds like a risky strategy for making a fortune, it was. Joseph never got the recognition and fortune that he craved and spent most of his life poor. He must have had some personal charm and qualities though that kept him afloat - many literary friends as well as members of the nobility helped him out financially. Once, a fellow writer even wrote a play (or by some accounts he wrote part of it) for Mitchell to publish in his own name during a particularly hard time. The play went reasonably well and Mitchell did afterwards publicly acknowledge the real author. He was introduced to Sir Robert Walpole and moved in elevated circles considering his lowly birth. Confidence is everything though, and Joseph appears to have had it by the bucket-load. He addressed poems to Walpole with outrageous, tongue-in-cheek petitions for honour and positions in his government 8

– ranging from a place as Poet Laureate in Scotland, for the Office and Importance of Secretary of State for Scotland, to Superintendent of the next Public Lottery or the next General Assembly of the Kirk. And for the Government of Duck Island in St James’ Park. Walpole appears to have been fond of Mitchell who appealed to his sense of humour, but never elevated him above what seems to have been a kind of court jester role. He paid him a moderate amount of money which Mitchell squandered through bad management and extravagance. He shrugged off criticism of his poems and plays, dived into literary criticism of his peers, and turned out a body of work which was generally considered to be of average merit. What caught my eye though in researching Mitchell was that he published a work called “Ratho: A Poem to the King.” I went into the National Library of Scotland to read a beautifully bound copy of the poem published in 1728, hoping to find some nuggets of information about the village of Ratho itself at that time. I found however that rather than a work of history, the poem is one long appeal to the new King George II to cast his gracious eye on the village of Ratho – and in particular on one Joseph Mitchell – and to grant it “some mark of your Beneficence.” Mitchell’s description of Ratho is very fanciful; (in its early days he imagines it as a city, where “Columns, and Spires, and Palaces appear’d/ Domes crowd on Domes, and Fanes with Temples Vye!/And Courts and Castles tire the wondering Eye!”) He bemoans that Ratho has sunk into poverty and obscurity, and showers the king with all manner of flattery to convince him that his native village and its inhabitants are worthy of royal favour to restore the village to its apparent former glory. It’s hard to tell whether the lickspittling language of the poem is serious or Mitchell’s special vein of outrageous petition in an attempt to get the attention of the king himself. Mitchell impresses on the King that the people of Ratho were on the right side of every political question (where “right” is defined as Mitchell being in with a chance of recognition). He prefaces the KONECT

One of the most remarkable features in St Mary’s churchyard in Ratho is related to Joseph Mitchell’s family. The large gravestone carved in the shape of a panelled coffin, prominent near the front of the church, is said to have been carved by Joseph’s father, John Mitchell. The date 1729 is engraved on one end. There is some doubt as to whether John Mitchell is buried there or not. It must have been used as a gravestone for a descendant of the family 80 years later as one side is inscribed: “Here lyes the Remains of Mr William Mitchell Preacher of the Gospel who in the flour of his age suffered an instantaneous death by a strok from a thrashing machine on the farm of Grays Mill in the Parish of collins town the 4th December 1809 his worth endeared him to his friends and his talents rendered him the ornament of his family.” Joseph’s own burial site is unknown.

poem, on behalf of all the inhabitants of Ratho: “We are unanimously attach’d, without mental Equivocation or secret Reservation, to the Protestant Succession in your august Family,” referencing the “late unnatual Rebellion” the Jacobite risings. Mitchell begs for Ratho “a Charter, constituting us really what we now are only in Idea and Desire -- or a yearly Fair and weekly Market, to bring Money and Meat among us----or a Turnpike or Toll, for Reparation of our Street and Walls, which Alas! lie buried like those of Troy---or whatever else your Majesty in your great Goodness, Wisdom and Power, shall think fit.” A moment of genuine reflection in the poem itself gives a flavour perhaps of the quality of work that kept him just within the attention of his literary colleagues:

Destroying Time and the devouring Grave Alike confound the Coward and the Brave! Distinction’s lost! no Marks of State adorn! And Ratho looks, like Troy, a field of corn! In the latter part of the poem, Mitchell begs the monarch to pay a visit to Scotland, describing the delight his Scottish subjects would have: “Let every Tongue with Transport sound his Praise/And every Eye, as on an Angel, gaze/ Who, like a God, in glory deigns to move/The publick wonder and the publick Love!” Then acknowledging that the Hanoverian king was not necessarily guaranteed warm reception everywhere “But howe’er a Rebel-Race behave,

Of ancient Ratho rear’d with Cost and Pain,

Open, ye gates of Ratho, to receive

How few and wretched Monuments remain!

The British king, your Patron ever dear!

Sometimes the Plough, from fields adjacent, tears The Limbs of Men, and Armour, broke with Years; Sometimes a Medal all effac’d is found, And mouldering Urns are are gather’d from the ground: But who, ah! who can decent Honours pay, Or sep’rate Vulgar from Imperial Clay? Dire Fate of Mor tals! Cottagers and Kings Promiscuous lie, alike unheeded Things! KONECT

Let grateful Gladness in each Face appear! He even entices the king by suggesting there would be a gold statue of George II on horseback erected at Ratho... There’s no evidence that the king took the slightest notice of Mitchell’s appeal. The poet died in 1737 or 1738 (exact date not established) in Islington having never received the patronage he craved. Ironically, in Mitchell’s vision of Ratho post-regal attention, “Bridges and Boats for pleasure crown the scene/And ne’er was Ratho known so sweet and clean!” - a picture that could describe Ratho today! 9

village people by Suzanne Green

“I can’t imagine doing any other job!

Ratho resident Shona Johnson is an artist blacksmith at Byres Forge. Her husband Pete Hill is also a blacksmith and their children are Josh (15) and Eryn (11). Am I the only one who thought that a blacksmith puts shoes on horses? “That’s the job of a farrier,” says Shona Johnson, master blacksmith and a partner at P. Johnson’s Byres Forge in Ratho. “I wouldn’t be allowed to shoe a horse!” Shona began training as a blacksmith in 1989, when her dad Phil Johnson split his plant hire business in order to focus on blacksmithing too. Shona, who had studied agriculture in college, had previously worked on farms in Perthshire, the Borders and Australia. But the change to her dad’s business sparked Shona’s interest and provided an avenue for her training. “It must be in my blood,” she says, “and from both sides of the family! My mum’s dad was a blacksmith at Henshaws in Edinburgh.” The team at Byres Forge – five partners and five employees – provide a bespoke service for private clients, the Council and private companies. The “artist blacksmiths” create unique pieces of furniture, gateways, and sculptures. Current jobs include restoration of the spiral staircase to the University of Glasgow bell tower, and a garden screen for a couple from Ireland and Scotland which features shamrocks and thistles. Shona explains that blacksmiths get together at events called “forge-ins” so that they can bounce ideas off one another and share information. “What we do is hard work,” she says, “so if someone has an idea about how to make something easier, we share it.”

Shona with her floor-standing candle holder 16

But such meetings are not all talk. The blacksmiths normally work too, focusing on a concept and trying to come up with the best way forward. In September Shona will travel to Belgium to take part in a large-scale forge-in. At Ypres 2016 hundreds of blacksmiths from all over the world will collaborate KONECT

to create a Cenotaph based on the Flanders Field Poppy. It’s obvious Shona loves her job. “There’s always a story behind whatever I’m asked to create,” she says. “For example, with the Irish/Scottish couple. When we deliver the completed garden screen, it will become part of their story … and stories are passed on. “I enjoy talking with clients and finding out what they have in mind, then discussing how we can achieve it. This summer we have a job in Orkney, creating a spiral staircase for jeweller Sheila Fleet. My work is always fresh and interesting.”

Shona at work

Will Josh or Eryn follow in their parents’ footsteps? “Both forge a bit,” says Shona. “Josh worked at the forge last summer and recently he and Eryn and a friend made and sold 100 keyrings, raising £395 for Macmillan Cancer Support. But there’s no pressure. I want them to do whatever inspires them and will encourage them to follow their hearts.” Visit www.rathobyresforge.co.uk for more information; go to www.ypres2016.com to learn more about the Ypres event. As we welcome in 2016, I am PC Stewart and along with my colleague PC Murdoch are the funded officers who cover, Ratho, Balerno, Currie, Juniper Green and Baberton.

In addition, there is now a new and emerging type of vehicle crime where thieves are removing full exhaust systems from Mercedes Sprinter vans. One of the suspected benefits is to get at the precious metal within the system and this can cause owners damage and replacement costs varying from £1000 to £3000.

We attend all the local Community Council meetings and deal with any issues you may have.

Always be vigilant for any vehicles that may look out of place in your neighbourhood or persons you may think are out of place and report this to the Police.

One of the current focuses for Police Scotland is theft by housebreaking. There is a current trend whereby homes are being broken into and car keys and vehicles are being taken. We would ask that all precautions are taken not to leave vehicle keys in plain sight or in the back of doors. If you have sheds please ensure they are properly secured so as to not to allow unwanted

Steeped in history, it’s also home to a lot of wildife and flora, and with wellmaintained paths is ideal for either a brisk circular walk or an aimless meander. There are many spots you can get into the Dell, but for this walk I chose to start from Bridge Road in Colinton and walk down the “Long Steps” - a very

Looking up the Long Steps from Dell Road 28

old stairway linking the main part of the village to the parish church in the Dell below. It’s the start point for a trail commemorating the association of the author Robert Louis Stevenson with the village of Colinton. Stevenson’s maternal grandfather, Lewis Balfour, was the parish minister here from around 1823 and Stevenson is known to have spent many childhood summers with his grandfather at Colinton Manse. There are some of his poems on plaques as you go down the steps. At the bottom of the Long Steps, the road crosses the Water of Leith. You’ll see a fairly new bronze statue on your right of a young Robert Louis Stevenson with his Skye terrier; this was erected only a couple of years ago. Walk past Colinton graveyard and you’re into the Dell itself and right next to the river. Stay on the path near the river (rather than branching up left onto the old railway line walkway) which fairly soon takes you over the river at Colinton Weir, and you’re walking between the river and a mill chase that formerly fed Redhall Mill – just one of many mills that were on this stretch of the river in its industrial heydey. There were few signs of spring when I did this walk in January, but in the spring you’ll find the banks are covered with wild garlic and the Dell bursting with life. The next path junction is at Kates Mill. The path straight ahead was closed for maintenance, so I crossed the bridge here and carried on towards Slateford on the other side of the river. You pass through what appears to be a clearing in the wood, but is in fact the site of the former Bogs Mill. There was a mill on this site from as early as 1598, and in 1735 the first banknotes manufactured in Scotland were produced here - 20 shilling notes for the Bank of Scotland – apparently under the watchful eye of “a picquet of soldiers mounted guard in the cottage on the bank above.” The path of the mill lade is still visible in the grass. Carrying on you pass the old stone Bogs Bridge, walk alongside an allotment site and come to a KONECT

walled garden. This is Redhall Walled Garden, 18th century kitchen gardens for Redhall House and still used as gardens today – now run by the Scottish Association for Mental Health (www. samh.org.uk) who offer training here. Cross the river over the small wooden bridge that you come to, and turn left. You’ll shortly pass an odd little stone building, which is one of two “ladies grottos” in this area. It’s thought they were built about 1830 for the owner of Craiglockhart House to provide shelter for ladies whilst walking in the Dell. Around 300 metres further you arrive at the side of the Blue Goose Inn on the A70 - (http:// thebluegoosecountrypub.co.uk) a great place which is also dog-friendly to stop for a bite to eat before retracing your steps back through the Dell to Colinton. KONECT

When the paths are fully open it’s possible to do this walk as a circular route going from Colinton to Slateford on one side of the river and back on the other side. You can vary it by taking some sections on the Balerno-Edinburgh old train line walkway which runs parallel for some of the way, and you can pop up and down from railway to riverside at various points. Back at Colinton, before you climb the Long Steps, pay a visit to the “Swing Cafe” at the Parish Church. It’s open Mon to Friday from 10am to 2pm. The name is a reference to Robert Louis Stevenson’s poem The Swing, said to have been inspired by the swing he played on as a child here, which hung from the yew tree you can see in front of the building. See www.colinton-parish.com /the-swing-cafe.html 29

MONEY MATTERS

The £1M Pension Trap

by Personal Money Management

What is the Lifetime Allowance? (LTA)

It is the maximum amount you can build up in a pension before being taxed at a rate that could be as high as 55%.

How much can I save before being taxed?

The current limit is £1.25m but is reducing to £1m in April 2016.

Will my pension exceed the LTA?

You may think that the limit will only be reached by wealthy bankers and chief executives but you would be wrong. For instance, many people with Defined Benefit pensions who are in their 40s and 50s will find they have breached the £1m limit, or certainly will do in the future.

How is the LTA calculated? This depends on the type of pension you have.

1) With a personal pension plan it is simply the value of all the pension pots. 2) With a final salary pension you multiply your pension by 20. Many final salary schemes also pay a lump sum and this must be added in. Additionally, any Group Life Cover provided by the employer will be included for the LTA should death occur. Very few employers are aware of this. If you have started taking your pension the calculations are more complicated and advice should be sought.

What can I do?

If you think you might be affected by the lower allowance you can apply for protection against a potential lifetime allowance charge. However, this is not something that should be done without serious consideration as there are ramifications to taking protection.

A Close Encounter of the wet furry kind Reader Brian Mason of Currie sent us this piece about an extraordinary encounter in his garden... On the morning of Wednesday 25th November, I opened the back door to allow my dog access to the garden. I noticed movement in my small garden pond, closely followed by a wet furry head watching the dog, and me from the relative safety of the water. I don’t know which of us got the biggest surprise, the dog, the European Otter or me! I called my dog back and rushed to grab my camera. Quickly changing the camera lens, I hoped to get back in time to take at least a single photo. My hurry proved unnecessary as the following two hours were a once in a lifetime experience for me. One after the other, the otter would discover another frog, carry it across the garden towards me, and take it behind my garden shed to devour it.

Then straight back to the pond to slide in and search for the next one. An otter’s main diet is fish and eels but it will supplement this with amphibians, insects, birds, small mammals and crustaceans, so my garden frogs would be a tasty breakfast meal. A single otter will commonly range over a distance of 11 miles from their “holt” or den which can be a hole under the river bank or in a hollow tree with the entrance being under water, and I would expect their range to extend up and down the river, so to find this one in my garden at more than half a mile distance from the Water of Leith possibly quite unusual. It would require the crossing of Lanark Road and then to negotiate numerous other streets and gardens before ending up in mine. As a final note, two days later I discovered a single frog, still alive in the pond and apparently uninjured. It must have been well hidden. Photos by Brian Mason

Now that the days are getting longer, we are often planning for new things for the house and garden or for holidays and special events. This all takes deliberate budgeting so that we don’t get into unmanageable debt. Before the end of the tax year, we may want to put some savings away in ISAs for ourselves, our children or grandchildren. So many demands and how to take them all into account and still keep our financial head above water?

Budget, Save, Spend! by Pat Banfill

At this time of year some of us are still paying for Christmas due to credit card bills coming in, so we need to be careful about our spending in the early months of the year. The other things that can trip us up are paying our tax liability, due at the end of January, or annual subscriptions which we may have overlooked.

Falling in Love with Your Home by ecko

If you’re a first time home owner who’s just moved in you’re no doubt going through a whole range of emotions. You’re clearly excited but if it’s pre-owned it may not be, shall we say, exactly how you’d like it. In fact during the viewing you maybe had to put on your best fake smile and give your well-practised ‘it’s really lovely’ speech while inwardly thinking ‘good grief that wallpaper’s hideous!’ But budgets are tight and now you have to decide what needs changed right away and what can wait. So, here are some suggestions from Ekco to help you fall in love with your home as it is, warts and all, and prioritise any upgrades you’d like to make.

1

If the wallpaper really is not to your taste and you feel you can’t look at it any more then visit your local salvage yard. You’ll always find old mirrors and photo frames at bargain prices. Cover up as much of the main wall as you can with images that make you feel warm and fuzzy until such times as you can attack it with a steam scraper and get the look you really want.

2

Providing your kitchen is usable you could just give the room a quick makeover. A fresh lick of paint, some cheap glass storage jars, some growing herbs on the window and hey presto you’ve created urban chic right in the middle of

suburbia. You can even change over your cabinet doors while keeping the current worktops for next to nothing and you’ll be amazed at the difference this will make.

3

Flooring is another area that can be given a quick makeover while you save up to have real oak boards fitted. If the carpet is reasonable but a bit grimy then hire a carpet cleaner for the day (or borrow one from a friend) and give it a good going over. Some allergens are caused by mites living in carpets and while your mites are okay and maybe even regarded as part of the family (and cheaper to feed) other people’s mites are anything but.

4

You already love the idea of having your own garden and some outdoor space to relax in. You could however, bring the outside in by replacing the old patio doors with bifold doors which fully open up to create the illusion of one complete space. Plus, you get some fresh air without even stepping over the threshold which is great for the less active among us!

5

When it comes to the bathroom the most important thing is to make sure that the bath, sink and toilet are in good working order. Then, get out the Marigold’s and give everything a good scrub. If there’s a carpet then invest in a piece of linoleum or other vinyl flooring instead to tide you over until you’re ready to upgrade your bathroom suite and flooring at the same time.

KITCHENS | BATHROOMS | BIFOLD DOORS | SUNROOMS

Many ideas, one solution At EKCO we’ve been supplying and installing top quality Pronorm German-built kitchens and bathrooms since 1999. We’re also one of Scotland’s top suppliers of Origin bi-fold doors which are designed to open fully and allow more fresh air into your home. And, if you need some extra space or simply a place to relax and unwind then we can create that lifestyle sunroom you have always dreamed of.

SPOTLIGHT ON... Gary and Laura Hogg, with Tigger

A thoroughly local family business

“I like to do things my way” is how former Balerno High School pupil Gary Hogg describes the reason he set up Autocare Solutions in Camps Industrial Estate last year. “I had been working for a large dealership, and had to take nine weeks off work sick. It was at this point I realised that it was going to be now or never to take that leap.” Autocare Solutions opened its doors one year ago last month and has been extremely busy for most of its first year in business. It seems there is still a strong demand locally for good garage services and Gary, along with his wife Laura, are working hard to keep up with demand. I get a hint at what might be behind this success: “We charge very competitive rates for excellent service,” is Gary’s summary. “And an honest service. I’ve been known to turn work away rather than take on a job that I didn’t think needed doing,” he adds. So with a good understanding of customer service, a lot of hard work and the family team pulling together - we have the ingredients that keep customers coming back, and recommending their friends. When Gary and Laura took over the unit last year, they worked hard to get it the way they wanted. Along with the help of Laura’s father they brought it up to scratch, equipped the workshop and created a welcoming reception area – and a warm waiting room with a free drinks machine. There is a friendly atmosphere about the place - you’ll be greeted by Laura when she is there most days, and likely along with the family dog Tigger who is a favourite with customers. The day I was there for this interview, their preschooler Libby was on the premises too – she is apparently showing an interest in mechanics, along with her big brother, Kyle. With an increasing workload, Gary’s father will lend a helping hand in the evenings after his own demanding job. Without the help of their family and

friends, Gary admits, he “wouldn’t be where he is today without them”. What does the future hold? “I’m hoping to get time to do some training this year to keep up with the ever-moving changes in the automotive industry. Fleet work and trade customers are also welcome – no matter how big or small a business is – whether it be one man and a van or one company and ten vans!” And what does he do outside of work hours? “I don’t have ‘outside of work’ hours yet!” Gary grew up in Kirknewton and went to Balerno High School; Laura is from East Calder, so they both have very local roots. It was a pleasure to meet this hard-working family. If you’re wondering where to take your car for its next service or repair job, do give them a call.

Computer Love What do you get the gadget fan who has everything?

1

2

It’s easy to get Valentine’s Day wrong: nothing says “I love you” less than uncomfortable pants in the wrong size, some wilting flowers or whatever chocolates were half price in Tesco. But if your soul mate is a gadget fan, it’s very easy to get Valentine’s Day right. One of the problems of buying presents for gadget fans is that they tend to have the big things already, so for example if they fancied an Apple Watch or a Samsung Galaxy S6 they’ve almost certainly bought it for themselves. But that’s an opportunity rather than a problem, because there are stacks of accessories and add-ons that can enhance what they’ve already got. Take the Apple Watch, for example. There’s a huge range of straps including tanned and coloured leather, metal and fun coloured silicone that can completely transform its looks. Apple’s own ones are fairly nice and predictably expensive, but you don’t need to pay quite so much: metal straps from the likes of Hoco (£48) and leather ones from Nomad (around £70) look and feel fantastic, and having multiple straps means the Watch fits with any outfit from ultra-casual to seriously formal. It’s a similar story with smartphone and tablet cases, where there are some fantastic designs to choose from. A woven Ted Baker case for the iPad Mini is £35, while Pipetto.co.uk’s clever Origami cases are around £30. You’ll find all kinds of household names making phone and tablet cases including Radley, Michael Kors and Aspinal of London, with prices ranging from around £12.50 for

58

a simple Radley iPhone case to £250 for an Aspinal iPad case. Accessories aren’t just about fashion. If your beloved has a smartphone, tablet or laptop they might appreciate some Bluetooth accessories, such as Bluetooth wireless headphones - around £50 for a set of Jabra Move headphones, rising to around £200 for high-end sets from Bose - or wireless speakers, which are great for streaming music from the likes of Spotify or Apple Music at home, in the garden or on the beach when Summer finally returns. We’re big fans of the Bose Soundlink Mini (£169), but you needn’t spend that much to get great sound: Sony’s SRS-X2 is around £60, while JBL’s Flip 2 is about £50 and TDK’s tough Trek Flex is £55 - £69 depending on your choice of colours. If you’d rather give a more traditional gift, technology can still help: the Lastminute.com, Laterooms.com, Expedia.co.uk, Kayak and SkyScanner apps can all help you find the perfect romantic getaway at the right price, while the 5pm and OpenTable apps make it easy to book a restaurant for a romantic night out - although if you’d rather impress by cooking something spectacular at home, celebrity chef apps from the likes of Jamie Oliver and Nigella Lawson can give you not just recipes but videos on how to prepare the perfect Valentine dinner. Tech can even help if you don’t currently have someone to share Valentine’s day with: online matchmaking services such as Match.com have smartphone and tablet apps to help you find Miss or Mr Right, while famous apps such as Tinder (for everyone) and Grindr (for gay or bisexual men) use location awareness to help you find potential partners near you. If that sounds a little bit scary, apps such as Hitch enable friends to play matchmaker, limiting the pool of potential suitors to people your friends already know.

CHARITY Their new home - basic with no water or electricity - but a home.

Think Big and Build Someone a House by Feri Ross

How about volunteering at the foot of Kilimanjaro and helping to construct a basic small home for a marginalized Tanzanian family affected by AIDS/ HIV during your two weeks there? Five of our local teenagers are doing that this summer! A charity called the Vine Trust, based at Leith Docks, organizes regular work parties of 2030 people. Over 10 days or so you dig foundations, make bricks, mix cement, paint etc alongside a family nominated by Vine Trust’s local Tanzanian partner charity. Work parties have also helped build larger homes for vulnerable children and orphans. At the end, the group gets to go on a 3 day safari in the main safari area of the Ngorongoro crater. There’s plenty of time to play with the children too – since all high school education is in English, it’s an advantage for younger kids to learn it early. There’s a huge fund raising effort involved so please support the ambition of these characters if you know them…Sandy Buchan from Kirknewton,

Finlay Taylor of Currie, Murray Baxter, Ishbel Ross and Lyn Ross of Balerno, some of them as part of their Duke of Edinburgh Gold Award. They will make connections on this trip with people with quite different life expectations, which will likely impact both sides throughout their lives. Vine Trust also operates two medical ships offering primary medical care – one on Lake Victoria, Tanzania to the islands there and one in Peru on the Amazon, likewise to remote communities. Jubilee Hope, launched in 2014 by Princess Anne, will see 100,000 people a year who have no other access to fundamental healthcare. The project has inspired local Tanzanian companies to get involved to support the many communities around Lake Victoria. Both floating clinics are staffed by medics, dentists and other health professionals, mostly from the UK and US, who volunteer 2 weeks holiday time. So first, please encourage these young people! And if any of this strikes a chord with you, do google www.vinetrust.org/ for information including video clips. Or you’re welcome to contact me too at keithferi.ross@googlemail.com. Wouldn’t it be brilliant?

Bread Recipe & Food Notes

by Anne Pinkerton

Your best gadget for bread making is a hand whisk with a dough hook. Even better might be a Kenwood mixer because it’s powerful, but all this can be (and has been since the beginning of baking) done by hand. 750g white flour 750g wholemeal flour 4 teaspoons salt 4 tablespoons oil (I prefer olive oil, but any will do except perhaps sesame which has too positive a flavour for daily bread.) 3 heaped teaspoons dry yeast, started in a mug of blood-warm water with a spoon of sugar. It’s ready to use when frothy and looking alive. Warm water about 1 pint METHOD: It’s best to make bread in as warm a room as practical as this helps the yeast do its work. However flour is best kept cool so that the natural oils don’t go rancid, so let the weighed flour warm up while everything else is gathered ready by putting the bowl near a radiator or cooker, if it’s on.

The bread most of us eat today is factory-made by a very sophisticated automatic process. Even “instore baked” bread is only cooked in the shop - all the dough is made in bulk, its contents controlled by price and technicians. There’s a growing movement to take bread back into the hands of the small artisan baker using local ingredients. However we can take it one step further by baking our own loaf. This isn’t difficult. It’s a matter of selecting good flour and using some basic techniques. Bread machines are the answer for some as you can programme them to have a loaf ready for breakfast. The most important thing is that YOU are in control of what goes in so you’re eating top quality fresh food that is to your family’s taste. If you have a bread machine lurking at the back of the cupboard, drag it out and use it! BASIC BREAD: I make three loaves at a time. This is economical with the oven and bread freezes well. At the moment I’m using flour from East Lothian, St Mungo’s Well. It’s organic, locally milled and14% protein. Supermarkets all sell good organic bread flour. Chose from whole wheat, white, spelt (an ancient grain), or rye. Or when you get confident mix them as you please.

Put all the ingredients in the bowl and mix. If it seems too dry add more water little by little. You’re aiming at a stiff dough, not a sloppy mess. Kneed until you see stringy structures showing up in the stretched dough. 5 to 7 minutes should get there. Let the dough rest in a warm place till it has doubled in volume. This could take up to 2 hours depending on the yeast and the temperature of the room. Knock the dough down and turn it onto a floured surface. Use either of the bread flours, not cake flour. Kneed the dough into a long sausage shape and cut into 3 equal lumps. It should not stick to the work surface - if it does it needs more mixing till it comes away cleanly from the surface. Have ready 3 similar sized tins. The traditional loaf tin is nice but any cake tin will work. Brush the whole surface with oil to prevent sticking. If you feel brave you can bake the bread as cobs - round shaped lumps on a baking sheet. They will spread. One for each shelf in the oven will be fine. Set the oven to 220c or 9 for gas. The bread needs to double in size, by then it will be ready to cook. Bake for 35 minutes. Test by listening. If it’s silent and drops from the tin easily the bread is cooked. Cool on a wire rack.

CHARITY

H o w t h e L OO P s P h o n e l i n e P r o j e c t h e l p s people 65+ to ‘Get Oot The Hoose’ LOOPs (Local Opportunities for Older People) is dedicated phone line to help improve the quality of life of over 65s in Edinburgh. If you are over 65, or a health worker or family member of someone who is, call us free of charge to speak to a friendly advisor for information about activities and clubs in your area. We provide a unique service tailored to the individual needs and interests of our clients. How do we help? We had a call from a 77 year old lady who lives with her son in Balerno and has a diagnosis of dementia. Although her daughter visits her daily, she is often left alone while everyone is working and is unable to go out unaccompanied. How she be less socially isolated? LOOPs had the answer. We contacted a number of services for adults with diagnosed dementia that would provide the care and enjoyable companionship that our client needed. We offered information on clubs including The Palm Café’s Tuesday arts and crafts session for those with dementia, and the Currie Senior Citizens’ Monday Club as these would allow our client to get out and enjoy the company of others in a safe and caring environment.

A man with a passion for fishing is hindered by his wheelchair so calls the LOOPs phoneline for assistance. He explains that he needs help returning his wheelchair to his house when leaving for fishing trips and assistance on his return. How could LOOPs help him? With our client’s specific needs, this was complicated but the friendly LOOPs team worked tirelessly to find the solution. We contacted LCiL, Community Connecting and others. Lengthy conversations were had and organisations visited to better understand the situation and spoke with the Occupational Therapist. Eventually, our conversations led to the discovery of a volunteer who, coincidently, is also a keen fisherman and now happily assists him twice a week! Result. One happy LOOPs client. Another recent caller stated: “I was pleased with how the LOOPs Phoneline answered my enquiry and felt it was helpful and friendly. I would certainly recommend this to anyone in my area.” Speak to a LOOPs advisor today on 0131 603 8311. Alternatively, email us for information: loops@ volunteeredinburgh.org.uk. Find us on Facebook: LOOPs NWSE www.nwse.org.uk
