Message from the Editor Prepare for winter and enjoy! Whether you are a lover of winter or not, it is most certainly here and all indications would seem to suggest a re-run of last year’s rather hard winter. Personally I like the frost and snow, but I accept that there are those who are not with me on this. This issue covers both December and January and we look forward to the celebrations of the work of our national poet Rabbie Burns with a look at the history of the Burns Clubs in Balerno as well as the characters involved, past and present.

The Making of the Supper Karen Murray found out a little of the history of the Burns Clubs of Balerno as well as those who established them and attend them today.

S

cotland’s national poet, Robbie Burns, is treasured and revered by most Scots, his life and work being celebrated the world over, most notably of course on or around the anniversary of his birth - 25 January - when Burns’ Suppers are held globally. Informal suppers are held in many a household with the partaking of traditional haggis, nips of whisky and recitals of the poets’ work along with making merry. I have certainly hosted and attended many a lively evening of celebration. However, there are much more formal suppers held and these are eagerly anticipated by the true admirer of Burns who will have spent time on a waiting list to get into the official Burns’ Club of his choice. These exist all over Scotland with Balerno being in the fortunate position of having not one but four Burns Clubs. I was given an overview of the clubs by a real Burns aficionado who has somehow managed to become a member of all four one Jack McCaig. The original of the four is the Balerno Burns Club, established in 1881 and affectionately entitled ‘Let it Blaw’, due to the weather conditions at the time of its founding - a snowy January afternoon when a few of the village ‘worthies’ were enjoying a glass at Henderson’s Inn, now the Grey Horse. Mr James Pearson a joiner from Ravelrig, Mr James Fairbairn, a joiner from Balerno, Mr George Henderson a coal merchant from Balerno and Mr William Garlick, manager of the Hannahfield Quarries were the men in question. They were discussing the Bard and how to celebrate his birthday, when they were joined by Mr James Wales,

a butcher from Currie. He was having the same thoughts and further discussion led to the forming of the Balerno Burns Club, the first celebration supper being held on 25 January 1881 with the attendance of 23 gentlemen. Membership grew and suppers have been held every year since with the exception of the war years. There are now around 100 members and each year they sing ‘The Balerno Song’ - a ‘bothy ballad’ first sung on that inaugural supper. Mr McCaig had been an admirer of Burns for many years and all through the fifties had been trying to get into the club to no avail. At this time you could only get a drink on a Sunday in Scotland if you were a bonafide traveller. That meant hotels were the place to get a drink and on one such Sunday Jack discovered that someone had got into the club ahead of him. The premise of the club is that there are no hierarchies; everyone is a ‘cronie’ and no one is treated differently to anyone else. Jack was not happy and decided he would simply found an alternative Burns Club. Hence the formation of Balerno’s second club - the Marchbank Burns Club. It was 1959, the bicentenary of the Bard’s birth, so it seemed fitting to hold their first supper then and legend has it, it was so good that everyone wanted to be a member of the new club!

The founder members were Jack McCaig along with Bill Ramsay (aka Loppy), Tommy Napier and Archie Dickson, the landlord of The Marchbank where the Suppers would be held. Members were mainly locals but Archie had many friends who came from all over to the supper - ‘frae a’ the airts’ - so that song became the song to kick off the suppers every year. They soon became three suppers to attend. Sadly Jack is the only remaining founder member of the Marchbank Club but the club goes on as strong as ever and Jack remains as enthusiastic as ever. The suppers were and still are formal affairs with a programme drawn up and adhered to but the evenings always include much hilarity. ‘Loppy’ took to dressing up as the ‘Kinleith Ghost’ and hanging around outside the hotel while the piper would walk off into the distance playing so the sound got fainter and more ghost like. Several poor folk were somewhat terrified if they ever came across this scenario unexpectedly. Both Let it Blaw and the Marchbank are men-only clubs but there are others that allow women, including the other two Balerno Burns Clubs, run by the SNP and Folk Club respectively.

is not alone however, as there are a number of men who belong to at least the two main clubs. Rivalries between the clubs eventually subsided and harmony now reigns with the Suppers arranged not to clash each year. As well as the actual Suppers and the meetings held to organise them, the clubs hold other events throughout the year, not least the very important post mortems. In the case of Let it Blaw, the get-together is called ‘the picking of the baines’, while the Marchbank call theirs ‘the hash’. The other important aspect of the Clubs is to encourage the younger generation to enjoy and appreciate the Bard. The Balerno Burns Club runs a school competition to this end - a tradition that reaches way back to the beginning. The first prizes were given by the club to the children of Balerno School in 1893 but the competitions became more regular under the guidance of Fred Belford, the headmaster from 1922 to 1932 who was himself a club member. Mr Belford was in fact made the first ever Honorary Life President of the Burns Federation in 1978. The schools competitions have continued at Dean Park Primary School with both the Marchbank Club and the Balerno Burns Club sponsoring the prizes and judging the various competitions.

The clubs are thriving but the current members are keen to get young blood involved to ensure the traditions continue. Preparations are now in swing for the 2011 Suppers, which will take place over a three week period around 25 January. It would be good time to brush up on your Burns, get on the waiting list and maybe you’ll be a fully fledged ‘cronie’ by 2012.

IPER (Parent’s in Partnership Eco Reps) is an innovative model established by parents at Currie Community High School to effect behaviour change on the issues of climate change and Sustainability. The emphasis of the group’s activity has been to work with Eco-Schools and to develop two new concepts of Eco-Homes and Eco-Communities. As a sub group of the Parent Council we received funding from the Pentland Neighbourhood Partnership and the Scottish Government’s Climate Challenge Fund. The employment of a full time Project Consultant, who is also known as Professor Pongoo, and further resources has enabled the PIPER model to be rolled out to all six schools in the communities of Currie, Balerno and Juniper Green. We’d like to thank Currie, Dean Park, Nether Currie and Juniper Green Primary Schools who have distributed folders to all of their pupils containing pledges, a DVD and surveys. PC Viruses

The scourge of modern computing

L

ike it or not we all seem to rely on our PCs to some extent, some more heavily than others.

Most of us consider our IT knowledge to be somewhere close to minimal at best and are happy to be able to switch the thing on, check emails and switch it off again! Sometimes even the most basic problem can have you tearing your hair out. Hopefully the following will help you alleviate some of these, and if not, Sort My PC is always on call to help you out. Viruses are the scurge of modern day computing and keeping on top of day to day ‘housekeeping’ for your PC can help keep it safe and some basic tips, covered here, may help keep it on the straight and narrow without having to call for help. Always make sure you have antivirus software installed, and up to date. An expired or out of date antivirus or security suite is almost as much use as not having one at all. Also make sure the antivirus software runs scans on a regular basis, ideally weekly. • Never open any email or attachment unless you are certain of its origin. Even if you know the sender, if the message looks unusual or in a strange format, delete it and confirm with the sender whether they meant to send it. • When browsing the internet, be wary of dialogue boxes that appear unexpectedly, especially any offering antivirus or security packages OR any that claim you have infected files and prompt you to download some software.

Sawpit Wood Walk By Karen Murray

A

walk in the woods is the most perfect way to enjoy a beautiful Autumn or Winter’s day.

This particular walk is just a short one but perfect for filling in a half hour wait while son or daughter is at a sports class or if you don’t have much time but want some fresh air. I was in the former situation on a gorgeous Sunday morning and a walk in the Sawpit wood fitted the bill perfectly. It begins at Balerno High School and heads off towards the entrance to Malleny Gardens on Bavelaw Road. Walking past Malleny House up the Lymphoy Road, you turn right towards the sign for the car park for Malleny House, then a quick left up the lane and into Sawpit Wood. With the sun shining through the golden leaves on a bitterly cold bright morning, the wood simply sparkles. Try and make a trip while the autumnal colours are still there as they can be quite dramatic. Just up the lane you will come to a bridge over a stream over which the lane takes a left turn and then you simply follow the path through the woods. You will get glimpses of Balerno down to the right with views over fields to the left. Sawpit Wood takes its name from the forestry work undertaken there since the 1880s, saw pits being the earliest form of timber gathering technology, comprising principally of logs being sawn over pits using cross cut saws. The pits were designed to protect the teeth of the saws from blunting on the ground as the wood was cut up. The technique continued to be used well into this century. The wood has a wide variety of trees from beech and silver birch to sycamore and ash as well as the occasional Scots Pine. If you have patience you will also spot or at least hear sparrow hawks, long tailed and coal tits, song thrushes and carrion crows, all

of which makes a simple walk all the more pleasurable. Once through the wood, you come to a black gate which leads to houses on Harlaw Gait. This takes you back to Bavelaw Road where you turn right, but as soon as you are on the road you will see a narrow path on the right leading down to the river. Take this and walk alongside the river for a while. It is worth stopping and taking in the view as the river can be quite spectacular especially after heavy rain, water rushing over the weir. I was rewarded with a fabulous view of a heron just rising off the water in front of me and heading off to pastures new. The path peters out and you have to step back onto Bavelaw Road following it back to where you set out, but not quite all the way, as you can take another narrow path on the right that heads over a narrow bridge and then up a series of steps taking you back to Sawpit Wood. Back where you entered the wood, you can take the left path and walk down to Malleny House. If you have limited time, you can head back to the High School from where you began, but if you do happen to have time on your hands, it is well worth stepping into Malleny Gardens - at any time of year. (Owned by the National Trust for Scotland, the entrance fee is £3 for adults, £2 for concessions and children).

Recipe

Sausage, Chesnut & Herb Butter Turkey Stuffing Pork or venison sausage can be used in this delicious turkey stuffing recipe. Serves 6. Herb Butter Ingredients 125g unsalted butter, softened 2 sprigs of fresh thyme leaves 1 sprig of fresh chopped rosemary leaves 1 tbsp fresh chopped parsley leaves 2 garlic cloves, finely chopped Salt & ground black pepper Turkey Ingredients 3kg small sized free range turkey 2 good quality thick pork or venison sausages

Method Pre-heat your oven to 180°c/gas mark 4 To make the stuffing, melt butter in a large frying pan. Gently sauté the onion and garlic for five minutes or until soft. Stir in the herbs and then add the breadcrumbs to absorb the butter. Add the lemon zest, chestnuts and seasoning and cook over medium heat for about 5 to 10 minutes until they turn golden brown. Cool and put mixture in fridge. Once cooled, roll stuffing into golf ball sized balls and put back in fridge until later. To make the herb butter, mix the herbs, garlic and butter together to form a paste. Season and put in fridge. To make turkey, remove legs and wings from the turkey (you can roast or confit these at a later date). Take out the wishbone by lifting up the breast skin with your fingers and separating it from the flesh. Rub the herb butter between the two breasts. Stuff the sausage meat evenly between the two breasts.

Stuffing Ingredients 100g white breadcrumbs 65g butter 1 finely chopped onion 1 large sprig of chopped thyme leaves 3 fresh sage leaves ½ zest of lemon 25g chestnuts 1 ½ tbsp fresh chopped parsley ½ tsp sea salt Ground black pepper 1 garlic clove, chopped

Cook the turkey at 180°c/gas mark 4 for approximately one hour remembering to baste every 10-15 minutes. 10 -15minutes before the turkey is ready, add the stuffing balls from the fridge. The turkey is cooked when the juices run clear. Leave to rest for 20 to 30 minutes. Serve with all the trimmings for a delicious Christmas Dinner.
