Winter bugs!

When Scarlet Fever struck Balerno By Emma Merchant

A

most unwanted and unpleasant visitor came to Balerno during the winter of 1934 and 1935. Jack McCaig of Glenbrook was then very young, but he still remembers. And well he might, for the visitor was Scarlet Fever. Scarlet fever is a bacterial illness that spreads rapidly in airborne droplets, especially in poorly ventilated and overcrowded conditions. Its victims are usually aged between three and eight. They may develop a very sore throat, high fever, vivid scarlet rash and a strawberry-like tongue. Historically, it was widely feared as one of the main causes of infant mortality. Although no preventative vaccine has been developed against scarlet fever, it is now quite rare. It no longer poses the same threat or causes the same alarm. With powerful modern antibiotics, it is now treatable, and most cases are relatively mild. In 1934, Jack was living in Balerno. A number of the village children contracted the disease that year. Once diagnosed, youngsters were quickly removed and quarantined for the duration of their treatment. It was a traumatic time for both the sick children and for their parents. Jack became ill too. He recalls how he and the other Balerno children were taken from their anxious parents and transported to the Fever Hospital at Drumshoreland, between Broxburn and Pumpherston. “There must have been more than twenty of us taken to the fever hospital,” Jack reflects. “I wasn’t yet old enough to start school when I became ill and went there to be quarantined. I remember being very hot, shocked and frightened to be taken away from home. Fortunately I wasn’t quite alone though. My brother and sister came too. We were all sick.

“We were kept in the hospital for at least a fortnight and we weren’t allowed contact with any visitors. But on Saturdays, when the mills shut at lunchtime, our parents would come by bus to Drumshoreland to see us.” This was almost worse than no contact at all. Visitors were allowed into the grounds, but not inside the hospital, and so could only wave frantically to their children through the windows. “I remember all the parents standing on the lawn in front of the hospital. All the boys and girls from our village were housed together in one ward. And there we were, inside, looking through the big windows at our parents outside. Everyone was crying.” Treatment for scarlet fever was mostly bed-rest, lots of fresh air, plenty of liquids and good food. Fortunately for Jack, he made a good recovery. “Once we began to feel better, we were soon all running up and down the ward. It was Bedlam!” Meanwhile, at home, the children’s houses were fumigated in an attempt to destroy the disease. It was a fairly dramatic event for the rest of the family. First the house was sealed. Drafts were stopped. Sash window gaps were filled with newspaper. Keyholes were plugged. “Then a coal bucket was half-filled with soil from the garden and placed in the


middle of the room,” recalls Jack, “A coal shovel was balanced on top to provide a platform and on that was placed a tin. Inside the tin was a candle made of sulphur-impregnated wax – a sulphur candle. The candle was lit, and everyone went outside for a few hours or visited a neighbour while it burned.” The fumes would seep into every nook and cranny, and when the family returned home they would find everything covered in a fine reddishyellow dust. Sulphur candles are still used by gardeners to fumigate green-houses. The sulphur-dioxide they produce helps to control spores, fungi and greenhouse pests. But sulphur-dioxide does not kill bacteria and would be ineffective against scarlet fever. It is therefore no longer recommended or endorsed as a home fumigator. It is a toxic gas, not to be inhaled, and smells very pungently of a just-struck match. “Our house smelt of sulphur for months afterwards,” Jack smiles ruefully. “It was much more difficult to arrange to see a doctor than it is today. With no telephones, you had to take a note to the Post Office instead of ringing the surgery. The doctor would drop in to the post office every day to see who wanted a visit, and then he would do his rounds. It cost half a crown (equal to thirty pennies) for every visit before the National Health Service began. That was a lot of money, considering mill workers took home only around eleven pennies an hour. If you were really sick, and perhaps you had been taken to the Royal Infirmary, then it was a real piece of village news, recorded in the Evening News and Dispatch. You could become a great conversation piece, with people chatting about you and proving that they could afford to buy a newspaper! “Our doctor was Dr Maitland Moir. He was a big tall man with very cold and bony hands. He was a member of the fishing club and used to fish in the reservoir. He was a good doctor.”

But it could be rough treatment in those days, and we have much to be thankful for. Jack describes a girl who fell over a wall and cut her leg badly. She had to have stitches without anaesthetic. “ ‘I’m beginning to feel sick,’ she says. So the doctor puts her head between her knees and tells her, ‘You’ll no be sick in that position’!”

We may not see scarlet fever this winter, but there are plenty of other bugs we’d all like to avoid. Flu seems to be circulating currently in the Lothian area. We are all advised to help keep germs at bay by catching coughs and sneezes in a tissue, and by washing our hands regularly.

Lothian NHS also ask parents to be aware of the signs of meningitis which can be more common at this time of year. Symptoms include: High temperature Flu like aches and pains Stiff/sore neck or back Vomiting Dislike of bright light Skin rash that may not fade when pressed Drowsiness/loss of consciousness. 60 second interview with Tony Harper

T

ony runs Tony Harper’s Hair Salon in Balerno.

How long have you lived/ been working in this area? 54 years, I came down from Elgin to Currie in 1958, and opened my first unisex salon in Currie on the 4th June 1979 after being trained by Mr Tomi in Wilkie’s (Shandwick place). I moved up to Balerno about 17 years ago in what was then Smith & Saunders industrial units. There was a salon vacant in what used to be the offices of the coal merchants, which previously belonged to the mill. The whole site was demolished 8 and a half years ago and we had to go mobile until the new development was built and the council took charge of three industrial units. We moved back into our new salon in February 2006 and reopened for business in May 2006.

I love having my family around on Sundays whenever possible Jenny & Valerie (my daughters) One thing you’re looking forward to in 2013? Hmmm some sunshine would be good, so we are looking for a holiday abroad with some sunshine; the continuing good support from all our customers, the socialising with our customers on a Saturday afternoon; Oh! and losing 2 stone. There now I’ve said it so I will have to do it. One thing you couldn’t do without? I couldn’t be without my wife (Kathryn ) and my loyal staff, Susan, Jenny, Rhea & Sam. And all my gadgets.

What do you like about working in the Balerno area? The people in Balerno are warm and friendly and there’s a good community spirit that seems to bind people together. I particularly like the “ characters “ of Balerno, the people who have lived here all their lives and tell you what it was like working in the thrashing sheds of the mill or working up in the quarry at Torphin, being station master of the railway line which is now the walk way (I remember goods trains running from Cliftons in Currie to the coal merchants in Balerno which was on the site of the now Balerno High School). What do you do when you’re not busy running your business? When I’m not working I like to play golf, walking,cycling,motor cycling. I used to do scuba diving which took me to some wonderful exotic places like, Truk Lagoon, the Cayman Islands, the Great Barrier Reef and best of all Orkney (Scappa Flow). 16

n Scotland a piper is traditionally given a bottle of whisky for his services. I come from a long line of pipers and growing up I was captivated by my father’s impressive whisky collection. I will never forget the night we had our first dram together; we cracked open a bottle and talked to the wee small hours of everything and anything. y year always begins with a brisk walk on New Year’s Day – dragging myself and the whole family out no matter the weather or the latest of going to bed the night before! This year it was exceedingly late (or early) even for smallest child, so the rousting out of bed and into the fresh air was all the harder. However, once the precedent for the year has been established, it continues and although the troops always angle to stay home, once out they have a great time. One of New Year’s Day walks in the past has been to visit Roslin Glen Country Park where you can wander the paths, check out the chapel, visit an old gunpowder mill or go for broke and walk all through the Glen – a distance of around 7.9km which will probably take around 3 hours. The paths are all well trodden and include farm tracks and some public road or if you remain in the park, they are beaten earth so they can be muddy at this time of year.

If you decide to go attempt the lengthy walk, it will take you on a fascinating journey along the river North Esk. You leave the car park and walk around the walls of Rosslyn Castle which dates from 1304. As you continue along the river valley, you will come to Rosslyn Chapel, famous for its incredibly ornate and beautiful stonework although made even more famous by the Da Vinci Code – first book, then film. The chapel was built by Sir William Sinclair and work began in 1446 taking some 40 years to complete. You could spend many hours here, but when it is fresh air and exercise you are out for, a quick visit will suffice on this occasion. Therefore you can return to the main path and woodland. Dippers can be seen along the river banks and wood peckers in the trees. On the opposite bank of the river is Wallace’s Cave, which takes its name from William Wallace who took part in the Battle of Rosslyn on 24 February 1303. Nearby is Hawthornden Castle which is privately owned and now a retreat for writers. The path dips down and then climbs back up to cross over a sand embankment where you can spot sand martins at the right time of year. You will eventually reach Polton village, where you turn left up the hill and go through the first gap in the wall into Bilston wood, to the viaduct and across open fields.

Once you have made your way there, you can park in the country park car park but be aware there are no toilets here. 26

Turn right at Montmarle monument which commemorates the Battle of Rosslyn, then left in to Kill Burn woods where you will pass a walled garden. Continue to the main road, turning left to Roslin village and back to the car park.

If you are haven’t the time for this longer walk, or are suffering the complaints of small people, then you can spend your time walking along one or two of the various routes within the country park. There is plenty of wildlife to keep you amused in the park which is rich in biodiversity, but as well as the environment and wildlife, if you look behind the trees and flower meadows, you will also notice the legacy of Roslin’s rich industrial past, which benefited from the river – mills abounding down its length. The world famous Roslin Carpet Factory was once here, where exquisite tapestry carpets were produced and the atmospheric ruins of Roslin Gunpowder Mills can be also be found towards the southern end of Roslin Glen. Here, the protection of the deep, steep wooded valley proved to be an ideal site for Roslin Gunpowder Mills which started production in 1804 and continued

producing ‘Black Powder’ gunpowder until they closed in 1954. Getting there: Roslin is signposted from the A720, Edinburgh City by-pass at the Straiton Junction or take the Lothianburn Junction for the ski centre and head towards Peebles where you will pick up signs for Roslin.

Has Child Benefit gone? By Personal Money Management

T

here has been much publicity over the reduction or total loss of child benefit should either parent earn over £50,000, so is this the case? As ever the answer is not as straight forward as has been generally reported. NO: Provided neither parent’s ‘Adjusted Net Income’ (ANI) is greater than £50,000 they will continue to receive £20.30 a week for their eldest child plus £13.40 a week for any further children. The calculation to arrive at ‘Adjusted Net Income’ is not simple as it includes, amongst other things, grossed up pension payments and professional advice should be sought to attain a figure. YES: If either parent’s ANI is more than £50,000 then they will lose child benefit using a complicated calculation and again professional advice should be taken. The end result is their child benefit will be reduced in stages up to £60,000 and will be removed completely above £60,000. How can I retain my Child Benefit? The simplest and best method is to pay more into a company pension scheme or a private pension

scheme. Let’s say your ANI is £54,000, then by paying an extra £200 per month net into either scheme you will retain ALL of their child benefit, amounting to £1753 for a two child family. In addition you will have an extra £4000 added to your pension fund. If because of existing financial commitment it was not possible for the parents to make the additional pension payments then the children’s grandparents could pay the pension contributions. February Recipe and Food Notes Oranges and Lemons By Anne Pinkerton

T

radition has it that marmalade was first made as the result of the love of a bargain by Dundee merchant James Keiller and the thrift of his wife Janet. In the early 18th century a stormdamaged Spanish ship took refuge in the port of Dundee and Mr Keiller bought the perishable cargo of oranges very cheaply. To his horror he found nobody wanted his bargain because the fruit was bitter. Janet Keiller, not wanting to waste the investment, came to the rescue and tried cooking the fruit with sugar. Her experiments were a success and so the new preserve of marmalade was born. The orange marmalade caught on and by the middle of the century recipes began to be published in Edinburgh cookery books. By 1797 the Keiller jam factory was built. Later, in 1859, a Paisley grocer and his wife decided that the Dundee conserve was too bitter for modern taste and they produced the still famous Robinson’s “Golden Shred” marmalade. In 1870 Cooper’s Oxford Marmalade made its appearance because the wife of a Don at the university thought she might sell a few jars of the conserve she had known with her Perthshire family. This caught on and so another style of the bitter jam developed. Seville oranges are grown in quantity around the town in southern Spain which gave its name to the variety of citrus fruit. Most of the crop is exported to Britain and it is in season for about 6 weeks from mid-January to mid-February. Nowadays there are hundreds of recipes for marmalade using lemons, limes, grapefruit, ginger and almost any combination of all of them . Methods sometimes involve skilled and tedious work peering, slicing, squeezing, measuring pulp and precise temperature control. My marmalade I think has an especially good, rich but still proper bitter taste. It is also easy to make. When my Mother

made her marmalade she had to make the year’s supply all at the same time because the fruit does not keep for long. Now I buy all I will need for the year’s breakfasts in February then freeze the Seville oranges till supplies run low and I make another batch. Seville Marmalade 8 Seville oranges, washed 2 unwaxed lemons, washed Granulated sugar Method The good thing about this method is that you can leave it at almost any stage till you have time to carry on. Pack the fruit in a pan and just cover with water. Put a lid on the pan and bring to the boil. Cook slowly till the fruit is soft, about 1 ½ hours. If you are using frozen fruit proceed as above, cooking the fruit from frozen. Remove the fruit from the pan, cool and then cut in half, roughly scooping the pips and flesh into a fine cloth. Tie the cloth up. Measure the quantity of liquid, and for each pint you need 450gm of sugar. There will be about 3 ½ pints. Warm the sugar if you can, this helps it dissolve better and keeps the jelly clear. Cut the peel to whatever thickness you prefer (easy because it is soft). p46

back into a large, or jelly pan, and bring slowly to the boil till the sugar melts. Set the pan aside to cool and hang the bag of pulp above so it drains into the pan, leave dripping over-night or till the bag is dry. Add the cut peel to the pan and bring back to the boil and then boil rapidly till setting point is reached. Test by putting a little of the liquid on a cold saucer and see if it jells in a few moments. Cool a little and pot up in glass jars whilst still hot. Should make 7 or 8 lb.jars. I prefer to use traditional cellophane covers and elastic bands always on sale at Lakeland Plastic. You can use cling film and the screw tops of your jars. Cover the jars while the marmalade is hot to ensure a sterile seal. Seville oranges can be used to good effect in savoury food. Cheats Duck with orange. 1 Duck leg joint per head or2 breasts for 3 people. Salt, pepper and caraway seed Glass of red wine Pudding spoon marmalade Method Rub the seasoning into the skin of the duck. Heat a heavy-bottomed frying pan. Put the duck, skin side down, in the pan and cook till the fat begins to flow, lower the heat a little and cook for 4-5 minutes. Turn the joints over and cook for 5-6 minutes or till the meat is a pink as you like. The legs need a little longer than the breasts. Dish the duck and keep warm. Reheat the pan and add the wine, reduce till half volume and add the marmalade to make a rich sauce. Serve with watercress, sweet orange and chicory salad and small potatoes cooked in their skins. The juice and grated rind of Seville oranges is a good flavour to use in beef stews, casserole of pigeon and venison.

If you make a pot of juice and rind and freeze it you can add depth to the taste of these dishes later in the year. Part of the pleasure of these fruits is that they are only available for a short time, about 6 weeks between Christmas and February. Marmalade can be used in lots of puddings. Add a spoonful when you poach older rhubarb, put some at the bottom of the dish when you make a baked custard, mix some into rice pudding before it is put in the oven or use some in treacle tart. However a steamed marmalade pudding served with handmade custard is one of the best for this time of the year. Steamed Pudding 2 large eggs, their weight in butter, selfrising flour and sugar 2 heaped table spoons of marmalade. Method Butter a 2 pint pudding basin. Cut a silicon paper circle to the size of the top of the bowl. Set a pan, large enough to take the bowl, on the heat with about 2inches of water; bring to a slow boil. While the water is getting ready make a cake mixture. Cream the butter and sugar, add the flour and eggs alternately and if the mixture seems very dry add a little milk to get a dropping consistency. Put the marmalade in the bottom of the bowl and then spoon the cake mixture on top. Cover with the paper circle and a lid of foil loosely crunched over the rim. Using a tea towel as a sling put the bowl into the pan of boiling water. Loosely fold the edges of the tea towel over the top of the dish. Cover with a well-fitting lid and steam gently for 1 ½ hours. Every now and then make sure there is enough water in the pot. If not add hot water from the kettle. Using the tea towel lift the pudding from the pan and invert the pudding on to a dish. The marmalade will fall down the sides of the pudding. You can make this with any jam or even lemon curd. Very 1950’s but delicious!
