Many Tattie Returns! By Emma Merchant

I

f you drop in to the Balerno Scout Hall on Saturday 10th March between 10am and 2pm, you’ll find Balerno Village Trust (BVT) singing the praises of ... potatoes! Last year’s Tattie Day was such a success that they have decided to repeat the event.

Fir Apple’? This potato was once nearly extinct but is now popular again. Some potatoes are named after their locality. We even have our own ‘Pentland’ potato! And during the war, potato varieties were given names like ‘Home Guard’, or ‘Arran Victory’.” she adds.

BVT’s Alison Whitaker, one of the organizers and a potato enthusiast, says, “There are literally hundreds of different potatoes. On Tattie Day there will be over 400kg of seed potatoes for sale, ready to plant at home, and lots of varieties to choose from. There are the ‘earlies’, which take only a few weeks to produce perfect tiny new potatoes (you can’t find these anywhere in the shops!), lovely floury ‘maincrop’ tatties, salad potatoes, and big varieties perfect for baking. Some are really beautiful gleaming red, gold, purple, or blue. And some have distinctive coloured ‘eyes’.” The potato is the nation’s favourite vegetable, whether roasted, mashed, baked or boiled. Whichever variety you decide to try, Tattie Day guest expert, Alan Romans, will be happy to advise you on how to grow your potatoes successfully at home. And while potato themed activities entertain younger visitors, hot soup, potato treats, home baking and refreshments will keep everyone else warm and happy! Entry is free and all are welcome. Growing your own food is fun, good exercise, and great for getting the whole family outside. It saves money too, so with grocery bills rising, what better excuse is there to excavate the spade from the shed, pull on your wellies and get digging? As Alison points out, “A couple of seed potatoes only cost a few pence and will give you several delicious meals.” “Potatoes have great names. We all know the chippy’s favourite, ‘Maris Piper’, but have you heard of a ‘Pink

During the Second World War, when Britain was blockaded and imported foods were scarce, potatoes were an important source of nutrition, not just locally, but nationally. Rationing made it increasingly difficult to put meals on the table, so, fearing that British families would starve, the Ministry of Food encouraged everyone to ‘Dig For Victory’. Over ten million instruction leaflets were distributed, explaining how to grow and cook almost every imaginable thing and encouraging people to be as self sufficient as possible. The campaign was highly successful, and the nation planted enthusiastically. Vegetables popped


out of every conceivable garden space. Flowerbeds, shrubberies and lawns were quickly transformed into rows of onions, sprouts and cabbages. Barrels and buckets, boxes and bowls all became container gardens. Even the roof of an Anderson air-raid shelter could be piled up with soil for growing. And for those without gardens, sports grounds and factory gardens were divided into allotments too. It is estimated that during the war, around 1.3 million tons of food were produced by ordinary gardeners.

At potato harvesting time in Scotland, children as well as adults were brought in to help until relatively recently. Local school pupils today enjoy the Autumn Break holiday, but for previous generations of Scottish children, the Tattie Holidays meant time off school in order to work. Following a cart through the muddy potato fields, children bent down to scoop up tatties and throw them on the cart. ‘Tattie Howking’ (potato pulling) was back-breaking work, but an important community task upon which everyone depended.

BBC Scotland on Film* includes several potato picking reminiscences. One contributor, Fraser MacDonald from Perth, describes finding the work hard going as a child: “… even during the 70s and 80s the October holidays were called the ‘tattie holidays’, … Back breaking work for little in the way of pay, it was tantamount to slave labour.” www.bbc.co.uk Whereas local John Kermack of Juniper Green www.junipergreen.org.uk didn’t mind. He remembers: “... going down to Duns, probably for a fortnight, at the autumn half-term and picking potatoes by the bucket load. There would be as many as 100 folk or more, sleeping in dormitories overnight and the children would receive a visit from their parents in the middle weekend. The work was hard but not excessive and (I) enjoyed it.” And so can we! Do make the most of Balerno Village Trust’s Tattie Day. Get yourself some seed potatoes, and join in the fun.

The potato was regarded as a particularly valuable high-energy wartime food, so Potato Pete was the Ministry of Food’s cartoon character of choice. Created by the ministry to persuade children to eat their vegetables, Potato Pete and his friend Dr Carrot led the ‘Dig For Victory’ e campaign. Potato Pete had his own them song and even wrote his own potato recipe book. ‘Food Flashes’ were short films with yet more encouragement to do the right thing. End of year Tax Planning by Personal Money Management

F

rom a tax point of view March is the most important month as it offers many tax opportunities which if not taken will be lost forever.

For this tax year the overall annual contribution is £10,680 of which no more than £5,340 can go into cash with the balance being invested in a stocks and shares ISA.

Independent tax planning Where one spouse pays a lower rate of tax (or no tax) than the other spouse it can be tax beneficial, subject to practical considerations, to transfer investments to the lower tax paying spouse to save income tax and possibly capital gains tax. Transferring between married couples will not incur any inheritance tax nor will there be any capital gains tax.

If you do not use your ISA allowance in this tax year it CAN NOT be carried forward to a future tax year.

Tax efficient investments With the current relatively high rates of income tax and capital gains tax it is most important for people to invest in the most tax efficient way. Every one 16 years can take out an Individual Savings Account (an ISA) this is the main method of investing savings with freedom from income tax and capital gains tax without giving up the flexibility of access to their investments.

Pensions Nobody likes to pay tax but if you pay tax at 50% then any pension contribution will attract tax relief at 50% i.e. if you put £50 into a pension fund then the government will add another £50 giving you 100% return. Even if you are a basic tax payer the government will add £12.50 for every £50 you contribute. i.e. a return of 25%. Nowhere else can you get a guaranteed rate at this level. Thought for the Month: Coping with stress by Claudia Goncalves

S

tress affects all of us in a variety of ways: sometimes subtly, sometimes in quite obvious ways. Stress is the body’s way of communicating, telling us to slow down, relax, retreat or let go of a situation or experience. It is a call to change our way of living. How can we create more opportunities for stress free, positive health and wellbeing in our lives? Research has shown that movement, stretching, meditation, breathing and relaxation produce important and significant positive results for heath, well-being and resilience to stress. Meditation, combined with breathing and relaxation is a simple and effective technique to deal with stress. Just allowing the self a “quiet moment” where we pay attention to our breath creates an automatic relaxation response

in the body. Observing the breath slows down the breathing and just that has an immediate effect in the body and stress can be released in an effortless manner. We can then gradually increase the “quiet moment” from perhaps a minute to 3 minutes, from 5 minutes to 10 minutes and so on. Sometimes just a few minutes of “giving ourselves a quiet moment” are all that is required to bring back the sense of calmness and well-being. In the morning, before getting out of bed, think of something beautiful and positive, anything which radiates positivity and serenity. Allow that to be a source of tranquility and joy for you during that day. Over 50? Worried about managing your affairs and care home costs? By McQueen Legal

I

t is horrifying to the public to discover that, if you do not have a Power of Attorney granted while you are capable of doing so, it could cost around £4,000 for the Court appoint a Guardian. Does this worry you? This can be avoided by taking action now. As you will be aware, continuing care costs are substantial. If you have assets (including your house unless a carer is still living it) of over £23,500, you have to contribute to care home costs until your assets reduce to this level. This means that your beneficiaries will receive very little from your estate after your death. As 60% of Scottish care homes charge between £23,400 and £25,948 a year, you will see that the first thing likely to be required is the sale of your home. If you do not have a Power of Attorney and, by this point, you are unable to give instructions for the sale due to Alzheimers or stroke or any other reason, the only way in which your house can be sold is to apply to the court for the appointment of a Guardian at a cost of about £4,000. The alternative is much more palatable. If you grant a Power of Attorney, at a cost of around £250, your Attorney will be able to make decisions for you. This way you have control over who is appointed and you can make your views known to them while you are still able.

It is extremely difficult to avoid your assets being used to provide your care. We are currently looking into alternative ways to protect your assets or a part of them for your beneficiaries. We would advise that it is not possible to avoid continuing care costs by transferring your assets to your children. Since 1983, if you intentionally deprive yourself of any of your assets, be that your house or money in the bank, in order to avoid care costs, the local authority can require that these be clawed back into your estate. There is no time limit as to how long after any asset is given away that a Local Authority can still take them into account, so even the suspicion by the Local Authority that this could have been the reason for disposing of the asset could mean that gifting assets away fails. Having said all that, we have become aware of an Annuity scheme whereby you pay in a sum calculated taking into account your age and state of health and we are told that your care home costs are paid for life from this sum. We would be happy to prepare Powers of Attorney for anyone reading this article and would be happy to give a 25% reduction in the fees payable.

Country Lane Encounter By Karen Murray

ake the most of living in a rural setting to enjoy the myriad country lanes around

They say walking is good for the body and the mind, but I tend to think also heart and soul. A brisk walk will raise the heart rate and get the blood pumping and is great exercise that can be done anywhere, any time. Just as importantly, a peaceful walk can give you some headspace and allow you to relax – and a walk on a crisp, sunny day can boost the soul too. It can make your heart sing, lift a bad mood and make you glad to be alive. A walk is a walk is a walk if you are simply walking for exercise’ sake alone, but if you have your mind and soul to think of too it’s preferable to walk somewhere a little more inspirational than round the block. However, it is is not always convenient to don all the hiking gear and head to the hills. A perfect compromise is a good, long road walk along country lanes that are not likely to be busy and will afford some good views along the way. Road walking is also perfect if you are beginning to get the training in for the next charity walk coming up - the season for charity walks is not long off and it’s good to have a few routes up your sleeve!

it suits you best but one place to begin is Cockburnhill Road. This is a single track road off Johnsburn Road with fields either side. With a low sun slanting across the top of the hedgerow, a brisk pace will soon get the cold air moving through the lungs and put a smile on your face. This road continues to twist and turn through the countryside, with not much in the way of buildings, but some remote farms. Just like woodland paths, these rural roads tend to criss-cross through the countryside making a network of roads and lanes and you could of course simply walk along any of them, although you might find yourself helplessly lost - something I have been known to do on occasion. So sticking to Cockburnhill Road, after a couple of miles, you will come to a fork in the road where you take the left fork and continue to walk briskly along the road. You are now heading towards the Pentland Hills although they are 

the right and farmland on the left, the views are pleasant and the road is easy going underfoot although you are now beginning to go uphill and it can be quite steep. Eventually you will come to end of the road. A beautiful vista of the Pentland Hills lies before you - the day I was there they were snowcapped which always adds to the beauty. There is a farm track straight ahead, but you will turn left and continue along the surfaced road keeping the Red Moss nature reserve and the hills on your right with the woods and farmland on the left. This is a pretty long straight road and eventually brings you down to Mansfield Road with the entrance to the nature reserve on the right, the road down to the left heading back to Balerno itself.

Carry on down Mansefield Road past the Animal Welfare Shelter on the right and Malleny Millgate and when you reach the bus terminal, you take the right into Cockburn Crescent. This part of the route is built up but follow the road around and it will take you back to the start of Cockburnhill Road, completing the circular route. I haven’t checked the mileage but this is fairly long route and is perhaps one you would build up to on a training schedule. Of course you can simply walk smaller stretches of these roads and retrace your steps. The main thing is to get out there and walk and realise you don’t have to go far from your doorstep to find somewhere to get body, mind (and heart and soul) together.

March Recipe and Food Notes: Pancakes By Anne Pinkerton

P

ancakes are not only for Shrove Tuesday! Pancake races are fun; tossing a pancake on the run is a skill but the food value of the leathery subject of all the activity is pretty low! The reason for eating pancakes at the beginning of Lent is to use up rich ingredients before the 40 days of fasting as preparation for Easter. The end of winter used to be a time of hardship before modern methods of food preservation. Now we have fresh food from all over the world in great variety, so we may have lost touch with the importance of the old food rituals. However let’s not forget the pancake. They are cheap, versatile and make a good supper or lunch dish. The simple pancake is really easy to make. It is a little time consuming to start with but pancakes freeze well and you can make a stack and then have reserves stored for quick meals when you are busy. Crepe Suzette are the luxurious cousin of the Scots drop scone and Yorkshire pudding, but all are made from the same ingredients: flour, egg, milk and water and a little oil or butter. Pancakes can also have potato flour, buck-wheat flour or a purée of starchy vegetables enriching the batter and making them more filling. They can be savoury or sweet; in fact they are a very versatile Basic Batter 120gm plain flour 10gm melted butter or sunflower oil, 1large or2 small egg walnut or other flavoured oil depending on the flavour you want. ¼ pint or a little more cold milk Method Sift the flour into a bowl - this helps to prevent lumps. Make a well in the middle and crack in the egg(s) and add a little of

the milk and the oil or melted butter. Mix to a smooth, thick batter. Do this with an electric hand-whisk, balloon whisk or wooden spoon. By adding only some of the liquid at first you are more likely to avoid lumps. Then mix in the rest of the liquid. Leave the batter to rest, at least ½ hour or up to 4 or 5 hours.

Cook the pancakes in a thick-bottomed oiled or lightly buttered pan. Regard the first pancake as a test run. You can judge whether the heat is correct and tell if you need to thin the batter. Thin lacy pancakes are nicest so just add a little cold water. Cook till the batter changes colour and looks a bit transparent, then turn with a palette-knife and cook the other side. Tossing is not expected. If you are making to freeze, pile the pancakes 2 by 2 interleafed with clingwrap or grease-proof paper. Then you can defrost as many or as few as you need. This amount should make 10 or 12, depending on your pan size! Fillings : Orange juice and sugar with a little marmalade. Slice banana onto the pancake before turning and roll up with brown sugar. Fill with stoned cherries or good cherry jam and grated chocolate. Maple syrup and whipped cream. Or, my favourite….Add crispy bacon and drizzle with black treacle as in Holland. 

March Recipe and Food Notes: (Continued)  Chocolate Pancakes 150gm plain flour 2 tablespoons cocoa powder 2 large eggs 300ml milk 50gm melted butter + extra for cooking Nutella warmed for spreading. Make the batter in the usual way and leave to rest. Cook in a non-stick pan if you have one. Be careful about the temperature, do not burn the chocolate. Spread with warm nutella, roll up and serve with cold whipped cream. Not for slimmers, but wonderful.

Other fillings such as chicken and peas, mixed seafood, smoked haddock with cheddar, tuna and sweet corn or spinach with feta are also delicious.

Savoury supper pancakes Leek and ham. 4 leeks sliced, half cooked and squeezed dry 125gm ham or bacon bits rough chopped. White sauce made with 10gm butter, 1015 gm plain flour and ½ pint milk, salt, pepper and mustard or lemon juice to taste. Mix the leeks and ham into the sauce and fill 4 pancakes, roll them up and, lay them in an oven-proof dish. Grate a little cheese over the top and bake in 160oC oven for about 30mins, till bubbling and hot all through. Mushroom and onion 2 large onions sliced fine 10gm butter and 10gm oil 450 gm mushrooms slice or rough chopped A pinch of dried thyme or mixed herbs 10-15 gm plain flour 1/2pt milk Salt and pepper and a taste of sherry or white wine if liked. Fry the onion in the oil and butter till golden brown, drain and then fry the mushrooms in the same oil. Return the cooked onions to the pan and use the 44

Pentland Friends

T

he Friends of the Pentlands is a society that aims to promote the conservation, protection and enhancement of the Pentland Hills, with particular emphasis upon recreational quality, public access, cultural heritage, landscape and biodiversity. Each year we organise a programme of walks as well as one or two talks. The walks are of varying length and difficulty. Some have an educational theme, e.g. birds, social history, fungi, while others are simply to enjoy the countryside and the company of like-minded walkers. The talks are on topics related to the Pentlands, such as biodiversity and history. The society also undertakes environmental projects, and in recent years we have replaced a footbridge, undertaken a major way marking project, restored a wildlife pond, replaced a bird hide, planted trees, and put up bird boxes. During 2011 we devoted 6,042 volunteers’ hours to conserving, protecting and enhancing the Pentlands – a new record. Our last walk of 2011 was a short circular based on Swanston and combined with tales of Henry Cockburn at Bonaly and RLS at Swanston. Starting with bacon rolls at Swanston proved popular! Our January ‘Winter Warmer Walks’ attracted 30 walkers and ended with mince pies and mulled wine at Harlaw - a good start to the year. We have had two attempts to clean the board walk to the Bavelaw bird hide but both had to be abandoned due to frost. We will be back soon! The landowner at Swanston has kindly given us permission to establish a mini arboretum just above the village and alongside the path. Work to clear the gorse at the site has begun but it will probably be the autumn before the trees are planted. We hope to be able to plant fourteen varieties of species that can be found within the Pentlands. Plans are being made for Open Access Events on Friday 11th and Saturday 12th May. These are for groups with disabilities. Last year’s event was well attended and much appreciated by those taking part. This year we plan to include events suitable for children. We see this event as an opportunity to demonstrate that the Pentlands have something to offer to everyone that is healthy, free, uplifting and can promote friendship and a sense of community. It’s good for hills to have Friends!
