elcome to the first Konect of 2016!
This issue is the usual eclectic mixture of all sorts of different articles that have one thing in common...our villages and the surrounding area. I decided it was high time we ran an article on one of West Lothian’s most amazing figures – James Young Simpson. I hadn’t realised how incredibly significant he was in medical history until I started researching for this article, but he really did change the world. See his story on pages 8-10. The local walk feature this time is a long walk in the Pentlands – likely to be a bit boggy by now with all the rain. And all our usual columns are here. You’ll find everything you need for house, family, garden and leisure on offer from the local businesses advertising in these pages, so do support the local economy and whatever your project is always get a quote from a local company first!

JAMES YOUNG SIMPSON
THE Bathgate Baker’s boy who changed the world by Helen-Jane Shearer
The face of Bathgate bairN Dr James Young Simpson is painted on the “pioneering spirit” route 20, 21 and 22 First buses. What is not painted there is a patient strapped into a surgery chair, or held down screaming while the surgeon cut, because Simpson made all that obsolete with his discovery of an effective anaesthetic. The full story is extraordinary. Before anaesethetic the quicker a surgeon (“a savage armed with a knife”) worked the better the patient’s chance survival. One doctor wrote to Simpson, “a patient preparing for an operation was like a condemned criminal preparing for execution.” Many died from the shock of pain, and exploratory surgery was out of the question. Patients’ desperate attempts to anaesthetise themselves with drugs and alcohol was fraught with danger. Surgeons were often traumatised themselves, and like many aspiring doctors James Simpson almost abandoned medicine altogether after witnessing his first operation. But he was so deeply affected by the suffering he saw that his driving motivation became “Can nothing be done to prevent this suffering?” James was the youngest child of Mary Jarvey of Balbardie Mains, descended from refugees who fled to Scotland during the French Huguenot persecution; and of David Simpson, who ran a struggling bakery in Main Street, Bathgate. A few days after baby James was born on 7th June 1811, Mary found out how bad things were in the business and took it in hand. She must have been a remarkable woman - having just given birth to her eighth child, she took on the failing business and turned it into a success, so James’ early days were spent helping out with the bakery. A sweet-natured child, he was fondly called “the bonnie callant” at Balbardie House where he delivered hot breakfast rolls. Bathgate was a weaving village, and James used to hang around a group of weavers who were experts in natural sciences and absorb their conversations about geological finds and biological specimens. He had a thirst for
knowledge and an extraordinary memory. His grand uncle Jarvey (who ran a brewery in Bathgate) was a keen historian and also shared his knowledge and interests with young James. (Jarvey Street is named after him). James’ mother, who had a huge impact on his formative years, died when he was just nine. Simpson’s daughter writes in her biography, “His mother gave him freely of the treasures of her mind, and her earnestness, her contentment, her firm God-fearing faith, ever lived in his memory.” Mary’s dream was for her youngest to get a university education – an ambition that her husband and all their older children shared, realising that he had the best prospects of all his siblings. His eldest brother Sandy once warned him against the temptation to drink like most boys in Bathgate which was a village of hard-drinkers, “Others may do this, Jamie, but it would break all our hearts and blast all your prospects were you to do it.”
”He was less flattered by the Queen’s appointment as her physician, than by the fact that he had delivered a woman without pain.” Bathgate parish school education concluded at the age of 14. Whereas most left for work or an apprenticeship locally, it was a foregone conclusion that James would go to university. He described later in life his bewilderment at finding himself in Edinburgh “very, very young and very solitary, very poor and almost friendless.” He lived frugally so as not to be too great a burden on his family, sharing lodgings with two Bathgate men, John Reid and Mr McArthur, both older than him, who were studying medicine. Sometimes as a treat John Reid would take him to one of Dr Knox’s (of Burke and Hare fame) lectures in the evening. He spent all his holidays back home in Bathgate helping out with the business. And despite the
stress of nursing then losing his beloved father just before his final exams, James passed and became a member of the Royal College of Surgeons before he was out of his teens. Too young to become a medical doctor immediately, he lodged with his brother in Stockbridge and took a couple of jobs including assistant to a Professor Thomson, who was the first person to suggest the field of obstetrics to him. It was at that time the lowest of medical arts, still somewhat shrouded in mystery, but James took it up with his customary thoroughness and obstetrics went on to became his professional speciality. Finally, before settling down to open his own medical practice, his brothers funded him for a three-month tour of Europe. He sent regular letters home to Bathgate recounting and commenting on all he saw. He opened his first practice in Edinburgh, living frugally, conscious as always of the burden he placed on his family in Bathgate. His sister Mary sent him boots, as he said “Bathgate ones last the longest”, walking many miles to see patients day and night. When he wasn’t seeing patients his insatiably curious mind was reading, learning, and writing papers on medical and other topics. His early patients were too poor to pay him, but in time, betterheeled, paying patients were attracted by his growing reputation. He never discriminated – he treated the paying and non-paying patients alike. His career flourished as his reputation grew, and he became a popular lecturer in archaeology, religion, medicine, geology and more. A Professor at the shockingly young age of 29, he was appointed to the Midwifery Chair at Edinburgh University (first getting married, apparently an essential requirement!) Papers from his prolific output include a history of leprosy in Scotland; ideas on hospital reform; an improved design of forceps – still called the Simpson Forceps today – and other things. With nobility and aristocracy among his patients he often travelled to London, but preferred being near his beloved family in Bathgate, taking refuge there from his hectic professional life. But Simpson always believed it was his duty as a physician to alleviate pain. On hearing about ether trials in America he enthusiastically adopted it, delivering the first baby with ether for the mother on January 19th 1847. At the same time he was appointed Queen Victoria’s physician – and he wrote to his brother that he was less flattered by the queen’s appointment than by the fact he had delivered a woman without pain.

Chloroform - not a good choice for criminals... The chloroform-soaked rag is the weapon of choice of vintage crime fiction anti-heroes. But in reality.. it takes around five minutes of inhalation before it knocks you out. Do not try this at home! Chloroform is dangerous. Its use was eventually discontinued when it was proven to cause respiratory and cardiac failure.
But ether was not a viable solution for various reasons. Throughout 1847 Simpson and his friends Dr George Keith and Dr Matthew Duncan would settle down after work every evening at Simpson’s house at 52 Queen Street to sample various narcotic drugs. A neighbour came in every morning to “see if the experimenters had survived!”
Pass-out party! On 4th November 1847 they were trying various drugs at Queen Street in the usual manner. Simpson pulled out a phial of chloroform he had ordered some time previously but not been inclined to try. The three took it simultaneously, and were “all under the table in a minute or two.” Simpson’s wife and three other family members who were in the room at the time were pretty used to these experiments, but were alarmed by this – the speed they passed out and how thoroughly unconscious they were. When Simpson came to on the floor he noted that Dr Keith was under the table, kicking confusedly as he came to; and Dr Duncan was still out to it. He realised straightaway that he had found something “far stronger and better than ether.” The night turned into quite a party as they took chloroform to knock themselves out again and again until 3am! Many people welcomed the discovery, but it was also met, incredibly, with opposition and
prejudice. While abhorring the pain of surgery, people were suspicious of pain relief, believing that to avoid pain was in some way unnatural and wrong. And pain-relief for childbirth was definitely contrary to the God-ordained course of nature! But Simpson battled on, spending hours answering his detractors with thorough and educated responses over many years. He collected extensive statistics to prove the reduced mortality rates, and chloroform gradually won over. Friends in high places helped - Queen Victoria used it for delivery of her eighth child in 1853, and again for her ninth. It revolutionised the operating theatre where it reigned for nearly 100 years. By the time it was eventually replaced by safer anaesthetics, massive advances had been made in surgery as a result and many lives saved. Simpson never forgot his Bathgate roots, or how much he owed to the help of his loving family. He instigated a prize for the best darner in Bathgate school – in memory of his mother who had once taken him on her lap to darn a torn sock, and said to him “My Jamie, mind when your mither’s awa’ that she was a grand darner.” Bathgate’s public library is called the “Simpson Library.” With his ceaseless reading and love of learning, I think James would approve.
Simpson, Keith and Duncan try chloroform for the first time. Wellcome images.

LOCAL CHARITY
Could you be a befriender?
The Cyrenians Befriending Service is delivered to people over 50 who have been identified by a health professional (e.g. Social Worker, Physio or District Nurse) as being socially isolated or at risk of becoming isolated.
Cyrenians buddies Helen Donnely and Kathryn at the farm in Kirknewton.
The highest numbers of referrals come from the Livingston area. The service is delivered by volunteers who give up a small amount of time weekly/fortnightly or monthly to help somebody regain their confidence and re-connect with the local community.
We are always on the lookout for more volunteers!
Statistics from an Age UK report submitted to the Scottish Parliament earlier this year stated that two in five older people in Scotland regard the television as their main form of company. Indeed, loneliness has now been identified as being as bad for your health as smoking 15 cigarettes a day.
We offer a variety of volunteering roles, including short term befriending for a period of 3-6 months, long term up to 9 months and telephone befriending. We also urgently need drivers and volunteers who are able to help with local group activities.
Many of our clients may be suffering from low mood, anxiety, depression, been recently bereaved, may have had a fall and recently returned home from hospital or have mobility issues. They are usually living distant from their family - or have no family and their social network often consists only of health professionals. Those who are very lucky may have some support from neighbours or friends but many, sadly just don’t have anyone at all.
All of these roles enable our clients to maintain their independence, become more active in their local community, make a positive contribution to their quality of life, health and sense of well-being and help them stay connected.

of change ahead and what that means for better and for worse. Life will change whether you want it too or not but it’s the way you approach that change that makes all the difference. A simple change to your way of thinking can be – “I am NOT going to diet but I am going to change the way I eat” “I am NOT going to stop smoking but I am going to change how much I smoke”
Change Ahead
“I am going to help others but first have to change my life to make time”
By Tammy Wood, Happiness Works
Don’t give yourself unnecessary pressure as this consumes your life and can give you added stress; take things easy and enjoy life and welcome change.
The start of a new year always brings with it reminiscence, emotions and a chance for a fresh start, an excuse to stop all our bad habits and make amends to things we regret. New Year resolutions however seem to be such a pressure and never last, so this year I have decided to look at the new year in a different way. Instead of putting pressure on myself to do and stick to a new year resolution I am instead looking at the prospect
Think about the changes you want to make and write them down so that you can refer back and see if you successfully accomplished them. Remember it’s your life so be selfish and make changes to you, don’t try to change others. Have a Happy New Year.

village people by Suzanne Green
“I can’t imagine doing any other job!
Ratho resident Shona Johnson is an artist blacksmith at Byres Forge. Her husband Pete Hill is also a blacksmith and their children are Josh (15) and Eryn (11). Am I the only one who thought that a blacksmith puts shoes on horses? “That’s the job of a farrier,” says Shona Johnson, master blacksmith and a partner at P. Johnson’s Byres Forge in Ratho. “I wouldn’t be allowed to shoe a horse!” Shona began training as a blacksmith in 1989, when her dad Phil Johnson split his plant hire business in order to focus on blacksmithing too. Shona, who had studied agriculture in college, had previously worked on farms in Perthshire, the Borders and Australia. But the change to her dad’s business sparked Shona’s interest and provided an avenue for her training. “It must be in my blood,” she says, “and from both sides of the family! My mum’s dad was a blacksmith at Henshaws in Edinburgh.” The team at Byres Forge – five partners and five employees – provide a bespoke service for private clients, the Council and private companies. The “artist blacksmiths” create unique pieces of furniture, gateways, and sculptures. Current jobs include restoration of the spiral staircase to the University of Glasgow bell tower, and a garden screen for a couple from Ireland and Scotland which features shamrocks and thistles. Shona explains that blacksmiths get together at events called “forge-ins” so that they can bounce ideas off one another and share information. “What we do is hard work,” she says, “so if someone has an idea about how to make something easier, we share it.” But such meetings are not all talk. The blacksmiths normally work too, focusing on a concept and trying to come up with the best way forward. In September Shona will travel to Belgium to take part in a large-scale forge-in. At Ypres 2016 hundreds of blacksmiths from all over the world will collaborate
to create a Cenotaph based on the Flanders Field Poppy. It’s obvious Shona loves her job. “There’s always a story behind whatever I’m asked to create,” she says. “For example, with the Irish/Scottish couple. When we deliver the completed garden screen, it will become part of their story … and stories are passed on. “I enjoy talking with clients and finding out what they have in mind, then discussing how we can achieve it. This summer we have a job in Orkney, creating a spiral staircase for jeweller Sheila Fleet. My work is always fresh and interesting.”
Shona at work
Will Josh or Eryn follow in their parents’ footsteps? “Both forge a bit,” says Shona. “Josh worked at the forge last summer and recently he and Eryn and a friend made and sold 100 keyrings, raising £395 for Macmillan Cancer Support. But there’s no pressure. I want them to do whatever inspires them and will encourage them to follow their hearts.” Visit www.rathobyresforge.co.uk for more information; go to www.ypres2016.com to learn more about the Ypres event. feature Their new home - basic with no water or electricity - but a home.
Think Big and Build Someone a House by Feri Ross
How about volunteering at the foot of Kilimanjaro and helping to construct a basic small home for a marginalized Tanzanian family affected by AIDS/ HIV during your two weeks there? Five of our local teenagers are doing that this summer! A charity called the Vine Trust, based at Leith Docks, organizes regular work parties of 2030 people. Over 10 days or so you dig foundations, make bricks, mix cement, paint etc alongside a family nominated by Vine Trust’s local Tanzanian partner charity. Work parties have also helped build larger homes for vulnerable children and orphans. At the end, the group gets to go on a 3 day safari in the main safari area of the Ngorongoro crater. There’s plenty of time to play with the children too – since all high school education is in English, it’s an advantage for younger kids to learn it early. There’s a huge fund raising effort involved so please support the ambition of these characters if you know them…Sandy Buchan from Kirknewton,
Finlay Taylor of Currie, Murray Baxter, Ishbel Ross and Lyn Ross of Balerno, some of them as part of their Duke of Edinburgh Gold Award. They will make connections on this trip with people with quite different life expectations, which will likely impact both sides throughout their lives. Vine Trust also operates two medical ships offering primary medical care – one on Lake Victoria, Tanzania to the islands there and one in Peru on the Amazon, likewise to remote communities. Jubilee Hope, launched in 2014 by Princess Anne, will see 100,000 people a year who have no other access to fundamental healthcare. The project has inspired local Tanzanian companies to get involved to support the many communities around Lake Victoria. Both floating clinics are staffed by medics, dentists and other health professionals, mostly from the UK and US, who volunteer 2 weeks holiday time. So first, please encourage these young people! And if any of this strikes a chord with you, do google www.vinetrust.org/ for information including video clips. Or you’re welcome to contact me too at keithferi.ross@googlemail.com. Wouldn’t it be brilliant?

Falling in Love with Your Home by ecko
If you’re a first time home owner who’s just moved in you’re no doubt going through a whole range of emotions. You’re clearly excited but if it’s pre-owned it may not be, shall we say, exactly how you’d like it. In fact during the viewing you maybe had to put on your best fake smile and give your well-practised ‘it’s really lovely’ speech while inwardly thinking ‘good grief that wallpaper’s hideous!’ But budgets are tight and now you have to decide what needs changed right away and what can wait. So, here are some suggestions from Ekco to help you fall in love with your home as it is, warts and all, and prioritise any upgrades you’d like to make.
1
If the wallpaper really is not to your taste and you feel you can’t look at it any more then visit your local salvage yard. You’ll always find old mirrors and photo frames at bargain prices. Cover up as much of the main wall as you can with images that make you feel warm and fuzzy until such times as you can attack it with a steam scraper and get the look you really want.
2
Providing your kitchen is usable you could just give the room a quick makeover. A fresh lick of paint, some cheap glass storage jars, some growing herbs on the window and hey presto you’ve created urban chic right in the middle of
suburbia. You can even change over your cabinet doors while keeping the current worktops for next to nothing and you’ll be amazed at the difference this will make.
3
Flooring is another area that can be given a quick makeover while you save up to have real oak boards fitted. If the carpet is reasonable but a bit grimy then hire a carpet cleaner for the day (or borrow one from a friend) and give it a good going over. Some allergens are caused by mites living in carpets and while your mites are okay and maybe even regarded as part of the family (and cheaper to feed) other people’s mites are anything but.
4
You already love the idea of having your own garden and some outdoor space to relax in. You could however, bring the outside in by replacing the old patio doors with bifold doors which fully open up to create the illusion of one complete space. Plus, you get some fresh air without even stepping over the threshold which is great for the less active among us!
5
When it comes to the bathroom the most important thing is to make sure that the bath, sink and toilet are in good working order. Then, get out the Marigold’s and give everything a good scrub. If there’s a carpet then invest in a piece of linoleum or other vinyl flooring instead to tide you over until you’re ready to upgrade your bathroom suite and flooring at the same time.
KITCHENS | BATHROOMS | BIFOLD DOORS | SUNROOMS
Many ideas, one solution At EKCO we’ve been supplying and installing top quality Pronorm German-built kitchens and bathrooms since 1999. We’re also one of Scotland’s top suppliers of Origin bi-fold doors which are designed to open fully and allow more fresh air into your home. And, if you need some extra space or simply a place to relax and unwind then we can create that lifestyle sunroom you have always dreamed of.

SPOTLIGHT ON... Gary and Laura Hogg, with Tigger
A thoroughly local family business
“I like to do things my way” is how Pumpherston resident Gary Hogg describes the reason he set up Autocare Solutions in Camps Industrial Estate last year. “I had been working for a large dealership, and had to take nine weeks off work sick. It was at this point I realised that it was going to be now or never to take that leap.” Autocare Solutions opened its doors one year ago last month and has been extremely busy for most of its first year in business. It seems there is still a strong demand locally for good garage services and Gary, along with his wife Laura, are working hard to keep up with demand. I get a hint at what might be behind this success: “We charge very competitive rates for excellent service,” is Gary’s summary. “And an honest service. I’ve been known to turn work away rather than take on a job that I didn’t think needed doing,” he adds. So with a good understanding of customer service, a lot of hard work and the family team pulling together - we have the ingredients that keep customers coming back, and recommending their friends. When Gary and Laura took over the unit last year, they worked hard to get it the way they wanted. Along with the help of Laura’s father they brought it up to scratch, equipped the workshop and created a welcoming reception area – and a warm waiting room with a free drinks machine. There is a friendly atmosphere about the place - you’ll be greeted by Laura when she is there most days, and likely along with the family dog Tigger who is a favourite with customers. The day I was there for this interview, their preschooler Libby was on the premises too – she is apparently showing an interest in mechanics, along with her big brother, Kyle. With an increasing workload, Gary’s father will lend a helping hand in the evenings after his own demanding job. Without the help of their family and 38
friends, Gary admits, he “wouldn’t be where he is today without them”. What does the future hold? “I’m hoping to get time to do some training this year to keep up with the ever-moving changes in the automotive industry. Fleet work and trade customers are also welcome – no matter how big or small a business is – whether it be one man and a van or one company and ten vans!” And what does he do outside of work hours? “I don’t have ‘outside of work’ hours yet!” Gary grew up in Kirknewton and went to Balerno High School; Laura is from East Calder, so they both have very local roots. It was a pleasure to meet this hard-working family. If you’re wondering where to take your car for its next service or repair job, do give them a call. KONECT

WALK
Threipmuir/Nine Mile Burn Circuit
By Ross Mackey, Walk Across Scotland
This month’s walk feature is a long walk contributed by Ross Mackey of Walk Across Scotland www. walkacrossscotland.co.uk. This circular route dissects the Pentland Hills from north to south, starting in Balerno at the Threipmuir Reservoir car park, heading as far as the hamlet of Nine Mile Burn on the A702 road, before returning via the North Esk Reservoir. The walk is relatively easy going as it does not scale any of the Pentland peaks, however the ground underfoot can become very boggy in places so you need decent walking shoes. The walk follows well-established Pentland paths farily well waymarked. I would always recommend taking an Ordnance Survey map in case you find yourself off the beaten track. DISTANCE: 11.5 Miles DURATION: 5 - 6 Hours DIFFICULTY: 2 – Mild hill climbs/Boggy underfoot STAGE 1: THREIPMUIR CAR PARK TO WEST KIP 2.60 MILES At the Threipmuir car park entrance there is a ‘Scottish Rights of Way Society’ signpost for Nine Mile Burn (4 miles). Follow the tarmac road, cross the bridge over the narrow part of the reservoir and head straight up the hill. At the top of the hill, the road reaches a T-junction. Turn right and continue for approximately 50 metres until you see another signpost for Nine Mile Burn. Turn left and continue through the gate. The path soon leaves the treeline onto the open hillside. Before long, the grassy hillside is left behind, making way for more rugged terrain – the well-worn path snaking through the purple heather, skipping over small burns and rivers. The path climbs gradually into the heart of the Pentland’s, eventually reaching the base of the West Kip (551m), where a distinctive path to the summit appears like a scar on the hill *. At this point, a further signpost points the way to Nine Mile Burn. 42
North Esk Reservoir * Although this walk does not climb any of the surrounding peaks, there are many alternative paths in the area which lead across the highest points. STAGE 2: WEST KIP TO NINE MILE BURN - 1.80 MILES From the signpost, cross the fence and follow the path in a westerly direction. There are two or three paths at this junction so be careful to follow as directed by the signpost. After an initial, gradual climb to the brow of the Cap Law hill, Nine Mile Burn comes into view. The path follows the contours down off the hill towards farmland. Please be aware of any sheep and cows grazing in the surrounding fields. Another signpost will direct you over a stile towards Nine Mile Burn, which is now only a short distance away. The faint path follows the wall on the east side of the field and eventually turns right where a gate takes you into the village itself. Continue west along the road until you reach a signpost for North Esk Reservoir and Spittal Farm. STAGE 3: NINE MILE BURN TO NORTH ESK RESERVOIR - 1.70 MILES This stage has the steepest climb (140m) of the walk, where the path follows a well-established farm track to its highest point, dissecting Patties Hill (470m) and Spittal Hill (526m). At the highest point, leave the main track to the left onto a smaller path. Continue down the hill along the path and to North Esk Reservoir. At first glance, it seems nothing more than KONECT
a big pond, until eventually the larger expanse of water appears from the other side of Spittal Hill. On reaching the water, the path heads along the south side of the reservoir, passing the jetty which leads out onto an old water shed. STAGE 4: NORTH ESK RESERVOIR TO PATH JUNCTION – 2.4 MILES Continue to the cottage which sits at the corner of the reservoir. Cross the stile and turn in a northerly direction so that the reservoir is on your right hand side. The path will eventually lead away from the reservoir in a more NNE direction, where it follows the small, meandering Gutterford Burn. The path leaves the hills which encircle the reservoir, with the all-familiar heather and open hillside once again the dominating factor. The path reaches a high point or ridge, which is landmarked by an east-west stone wall. Cross over the wall is negotiated via another stile. This point is known as Bore Stane. The path then descends gradually for 0.8 miles to a junction in the path, which leads across the hill and towards the tarmac road near the start of the walk. STAGE 5: PATH JUNCTION TO THREIPMUIR CAR PARK - 3 MILES At the junction, turn sharply right onto the wider, more distinguished track. Follow the track as it
winds and undulates across the hillside in a north easterly direction until it reaches the same woodland from early on in the walk. Continue through the gate into the trees and turn right where the path meets the tarmac road. Continue along the road, turning left down the hill and to the car park. Walk Across Scotland Summary A very pleasant walk, perfect for a day out with friends and family, although it can be complicated if you take your dog - I had to lift Buddy over a number of stiles and gates. It would be unfair to say it is not a dog-friendly route (there is so much freedom in the hills to run around), however if you have a particularly heavy dog, you may want to think twice before bringing it along. Please also be aware of farm animals in the area surrounding Nine Mile Burn. This farmland section can also be very boggy.

Bread Recipe & Food Notes
by Anne Pinkerton
Your best gadget for bread making is a hand whisk with a dough hook. Even better might be a Kenwood mixer because it’s powerful, but all this can be (and has been since the beginning of baking) done by hand. 750g white flour 750g wholemeal flour 4 teaspoons salt 4 tablespoons oil (I prefer olive oil, but any will do except perhaps sesame which has too positive a flavour for daily bread.) 3 heaped teaspoons dry yeast, started in a mug of blood-warm water with a spoon of sugar. It’s ready to use when frothy and looking alive. Warm water about 1 pint METHOD: It’s best to make bread in as warm a room as practical as this helps the yeast do its work. However flour is best kept cool so that the natural oils don’t go rancid, so let the weighed flour warm up while everything else is gathered ready by putting the bowl near a radiator or cooker, if it’s on.
The bread most of us eat today is factory-made by a very sophisticated automatic process. Even “instore baked” bread is only cooked in the shop - all the dough is made in bulk, its contents controlled by price and technicians. There’s a growing movement to take bread back into the hands of the small artisan baker using local ingredients. However we can take it one step further by baking our own loaf. This isn’t difficult. It’s a matter of selecting good flour and using some basic techniques. Bread machines are the answer for some as you can programme them to have a loaf ready for breakfast. The most important thing is that YOU are in control of what goes in so you’re eating top quality fresh food that is to your family’s taste. If you have a bread machine lurking at the back of the cupboard, drag it out and use it! BASIC BREAD: I make three loaves at a time. This is economical with the oven and bread freezes well. At the moment I’m using flour from East Lothian, St Mungo’s Well. It’s organic, locally milled and14% protein. Supermarkets all sell good organic bread flour. Chose from whole wheat, white, spelt (an ancient grain), or rye. Or when you get confident mix them as you please.
Put all the ingredients in the bowl and mix. If it seems too dry add more water little by little. You’re aiming at a stiff dough, not a sloppy mess. Kneed until you see stringy structures showing up in the stretched dough. 5 to 7 minutes should get there. Let the dough rest in a warm place till it has doubled in volume. This could take up to 2 hours depending on the yeast and the temperature of the room. Knock the dough down and turn it onto a floured surface. Use either of the bread flours, not cake flour. Kneed the dough into a long sausage shape and cut into 3 equal lumps. It should not stick to the work surface - if it does it needs more mixing till it comes away cleanly from the surface. Have ready 3 similar sized tins. The traditional loaf tin is nice but any cake tin will work. Brush the whole surface with oil to prevent sticking. If you feel brave you can bake the bread as cobs - round shaped lumps on a baking sheet. They will spread. One for each shelf in the oven will be fine. Set the oven to 220c or 9 for gas. The bread needs to double in size, by then it will be ready to cook. Bake for 35 minutes. Test by listening. If it’s silent and drops from the tin easily the bread is cooked. Cool on a wire rack.

TECHNOLOGY
Computer Love What do you get the gadget fan who has everything?
1
2
It’s easy to get Valentine’s Day wrong: nothing says “I love you” less than uncomfortable pants in the wrong size, some wilting flowers or whatever chocolates were half price in Tesco. But if your soul mate is a gadget fan, it’s very easy to get Valentine’s Day right. One of the problems of buying presents for gadget fans is that they tend to have the big things already, so for example if they fancied an Apple Watch or a Samsung Galaxy S6 they’ve almost certainly bought it for themselves. But that’s an opportunity rather than a problem, because there are stacks of accessories and add-ons that can enhance what they’ve already got. Take the Apple Watch, for example. There’s a huge range of straps including tanned and coloured leather, metal and fun coloured silicone that can completely transform its looks. Apple’s own ones are fairly nice and predictably expensive, but you don’t need to pay quite so much: metal straps from the likes of Hoco (£48) and leather ones from Nomad (around £70) look and feel fantastic, and having multiple straps means the Watch fits with any outfit from ultra-casual to seriously formal. It’s a similar story with smartphone and tablet cases, where there are some fantastic designs to choose from. A woven Ted Baker case for the iPad Mini is £35, while Pipetto.co.uk’s clever Origami cases are around £30. You’ll find all kinds of household names making phone and tablet cases including Radley, Michael Kors and Aspinal of London, with prices ranging from around £12.50 for

a simple Radley iPhone case to £250 for an Aspinal iPad case. Accessories aren’t just about fashion. If your beloved has a smartphone, tablet or laptop they might appreciate some Bluetooth accessories, such as Bluetooth wireless headphones - around £50 for a set of Jabra Move headphones, rising to around £200 for high-end sets from Bose - or wireless speakers, which are great for streaming music from the likes of Spotify or Apple Music at home, in the garden or on the beach when Summer finally returns. We’re big fans of the Bose Soundlink Mini (£169), but you needn’t spend that much to get great sound: Sony’s SRS-X2 is around £60, while JBL’s Flip 2 is about £50 and TDK’s tough Trek Flex is £55 - £69 depending on your choice of colours. If you’d rather give a more traditional gift, technology can still help: the Lastminute.com, Laterooms.com, Expedia.co.uk, Kayak and SkyScanner apps can all help you find the perfect romantic getaway at the right price, while the 5pm and OpenTable apps make it easy to book a restaurant for a romantic night out - although if you’d rather impress by cooking something spectacular at home, celebrity chef apps from the likes of Jamie Oliver and Nigella Lawson can give you not just recipes but videos on how to prepare the perfect Valentine dinner. Tech can even help if you don’t currently have someone to share Valentine’s day with: online matchmaking services such as Match.com have smartphone and tablet apps to help you find Miss or Mr Right, while famous apps such as Tinder (for everyone) and Grindr (for gay or bisexual men) use location awareness to help you find potential partners near you. If that sounds a little bit scary, apps such as Hitch enable friends to play matchmaker, limiting the pool of potential suitors to people your friends already know.

With the exciting new national tourism theme of 2016 being ‘Innovation, Architecture and Design’, it’s time to start looking at new and fresh ways of celebrating your Valentine’s Day with loved ones. West Lothian provides one of the best shopping experiences in Scotland. Therefore, if you’re struggling for a gift idea this Valentines, there are plenty of options to choose from, including designer products from the Livingston Designer Outlet or a fresh, new fragrance from one of the department stores. Also, for those who like a couple of drinks afterwards there is the added attraction
of having a number of welcoming and stylish bars and clubs within the area.
