Hello neighbours Welcome to the February issue of the Konect Directory. With welfare reform and benefits cuts very much in the news, we’ve been looking into an historical benefits cut locally and the repercussions it had during the mining strikes in 1925 and 1926. West Lothian Council are actually running an awareness campaign at the moment to provide advice to people affected by welfare reforms this year, so we have provided details of this along with the historical article. We’re also starting a new column this month - a 60 Second Interview - along with our regular walk, food and charity features and of course the puzzle and competition. Benefits Cuts
How West Calder reacted
B
enefits cuts, austerity measures, local authority budgets stretched to the limit, households struggling to make ends meet, social unease bubbling over into demonstrations and strikes in some places.....sound familiar? The date is August 1926 and a group of protesters are gathered outside the council offices in West Calder to protest against benefits cuts – specifically the withdrawal of the subsistence food allowance paid to destitute mining families during the miners’ strike. At that time, payouts and benefits were still largely based on the “Poor Laws” that had been in place for centuries. The Parish Councils administered funds raised for “poor relief” payments, and although the beginning of the 20th century saw the introduction of many of the social services that developed into the modern welfare state, means testing still tended to be inconsistent and you had to be destitute before you would be eligible for any help. In the local mining industries – both coal and shale - times were very tough in the

years following the First World War, and the early 1920s also saw competition from cheap coal and oil overseas putting pressure on Scottish-produced coal and shale-oil. This pressure was transferred to the workers in the form of reduced pay and this led to unrest and striking. Some mines closed and competition for jobs was fierce. It was hard to get a job and when you did, pay was very low and working hours long. Quotes from former miners illustrate: “When I left school [in 1926], I waited about a year to get a job” and “ These were the times when you’d come up the pit, and there were five or six men standing and waiting and looking for your job.” In 1925 shale miners went on strike to protest against wage reductions, and the following year saw a general strike, initiated by the coal miners, who were protesting against pay cuts and increased working hours. This had a knock-on effect on the shale industry too as the shale industry depended on supplies of coal for heating the retorts. So the context was one of hardship and depression. The Scottish Board of Health told the Parish Councils of West and Mid Lothian that if a man “voluntarily abstained from work” (i.e. went on strike) he was not eligible to receive poor relief funds, but if his wife and children became destitute they would normally be eligible for relief under the Poor Act of 1845. So mining families in the West Calder had been receiving food vouchers to keep them from starvation during the strikes of 1925 and 1926. However West Calder Parish Council had paid out so much in relief to striking miners that it was heavily in deficit and decided, in August 1926 after reviewing its finances, to withdraw even this subsistence allowance in order to save money and try and balance its books.

The withdrawal of this relief in 1926 meant that families faced starvation. A certain Mrs Sarah Moore of Addiewell, who had previously petitioned the Council for an increase in relief payments in 1925, now arranged for a group of local women to gather in front of the Council offices for a peaceful protest. They were joined by a large crowd asking for relief, which was refused. There was shouting and stones thrown, and police were called to break up the protest with a baton charge. The outcome was that the Parish Council was told by the Board of Health that they must address the destitution in the locality, either by paying relief to the striking miners or by paying out of the poor funds on the basis that the families were medically certified to be destitute and “physically requiring relief”. It didn’t address the bigger picture and eventually the miners were forced back to work and obliged to accept less pay and longer working hours. Mrs Moore, or “Ma Moore” as she affectionately became known locally, went on to become a community leader and was one of the first female councillors, a pioneer of the labour party who worked tirelessly for social justice and for better working and housing conditions, and especially better conditions for children. Moorelands, in Loganlea, is named after her. The causes and effects of benefits cuts are very different today - and thankfully total destitution and starvation are no longer the bars to reach before help is available – but the question as to how society handles welfare is as relevant today as it has ever been. Thought for the Month: Neuroplasticity - re-wiring the brain By Tina Gilbert

s we start the New Year, how would it feel to intentionally create positive changes to your brain circuitry? Most of the time we are in automatic pilot, with habitual thoughts and behaviours; constantly in the doing mode and coping with our reactive patterns that we have often lived with for a lifetime. It is possible to change our neural pathways, but like any muscle within the body, change need motivation and working at but can come with many benefits. You can become more focused, resilient, resourceful, more present, kind and compassionate to yourself and others. It is known that the brain detects negative information much faster than it detects positive and therefore we need to work at positivity to strengthen it just like any muscle in the body needs or it wastes away.

You really do have the power to bring about positive change if you are prepared to work at it. Energy follows focus and therefore if your focus is negative you will attract more negative, if you work at the positive you will develop more positive. Here is a suggestion : why don’t you write down 3 good things that will happen to you today at the start of the day and at the end write down 3 good things that have happened over the day, no matter how small they are. How long have you lived/ been working in this area? I was born in Edinburgh in 1970 however I have stayed in Livingston my whole life! My first full-time job was with Mitsubishi Electric VCR as with many from the area. I spent a happy 14 years there. What do you like about working in the Livingston area? Having worked abroad and having a youngish family (4, 11 and 17) it’s good to be home. It’s also a very different place to live now with all the development of the town from the early 70’s to now. I remember the 2 screen cinema, the old multi storey car park, the ice rink and the Forum. We are now spoiled for choice with shopping/ things to do and choice of restaurants/ bars. What do you do when you’re not busy running your businesses? I am a regular gym user, enjoy walking and cycling (recently cycled around Scotland with friends to raise funds for CHAS) and am a big fan of Man Utd. I try and go to Old Trafford as often as I am allowed! When I’m not allowed I spend time with my family! One thing you’re looking forward to in 2013? Couldn’t decide on one so looking forward to going to Madrid for the first time this Feb (18th birthday treat for my eldest son) and business wise we are opening a new Dry Cleaners in Dalgety Bay (The Clean Team Scotland) which we hope will be the first of many! One thing you couldn’t do without? Either my family or wine! Actually it could also be curry or my iPhone!

A walk with features
Karen Murray finds a walk around the Scottish Korean War Memorial brings exercise with interest
T
he start of a new year is always a time for thinking about fitness and what better way to get fit than to take up walking. Be it a stroll en famille or a brisk walk alone or with friends, walking to work or going round the block a few times it is all exercise and good for you. But more than that, walking is good for the head as well as the heart - as getting out the office or house and doing something that is not computer-based is something we should all consider. As regular readers will be aware I am a regular walker - round the block and elsewhere - and when I am out in the car I am often keeping an eye out for somewhere different to walk, just for a bit of variety from time to time. One place that has always had me intrigued as I have driven by on many an occasion is the Korean War Memorial near Bathgate, so on a recent drive by I decided to take the time to stop and have a proper look. From Bathgate you take the B792 towards towards Torphichen, following the signs for Beecraigs Country Park - a great place itself for walking of course. The War Memorial can be found at Witchcraig, one mile up this road and there is a lay-by opposite to park the car in. Although a walk was what I had in mind, it is really worth taking the time to wander around this unique memorial before heading off for a walk - or why not walk and then take the time for a picnic after your exercise at one of the picnic tables. The walk begins at the memorial and follows a path uphill. You cross a stile and follow the signpost to the Refuge Stone and Witchcraig Wall. Here there is a viewpoint where you can see across the Forth over to the Campsie Hills. The Witchcraig Wall is an enclosure with 43 special stones built into it, collected from across Central Scotland, while the Refuge Stone is built into the wall behind this enclosure - another object of interest. I usually find that walks that
include features are more enticing if you are taking small people along! From the information sign follow the path north, walking downhill and through woodland - Witchcraig Wood. At the bottom of the hill the path veers left and after approximately 175 yards you should see a stile on your right. Cross this stile and follow the path to a gate, taking the right track. As you pass a metal gate take an immediate right to pick up a smaller path (Guthries Path) which takes you uphill. At the top, after a dip, take the path to your left until you reach a wider path. It is then first a left turn followed by a right turn onto a track signposted Balvormie. Follow the Balvormie sign and head through a meadow and along to the BBQ site at Beecraigs before reaching the road. You could make a picnic stop here or actually utilise the BBQ. There are also loos so a good place for a break (and if totally desperate you can mention the word play park - there is a large one across the road from the BBQ site). The Refuge Stone This stone is said to have been one of the ‘refuge stones’ that formed a circle at a distance of a mile around Torphichen Preceptory in medieval times. All of the area within the circle formed by these stones was as much a legal sanctuary as the church itself, and offered protection from the law to every criminal or debtor who entered and remained within the circle.
The Scottish Korean War Memorial The memorial comprises a small wooden pagoda, surrounded by 110 Korean pine trees (one for every ten Britons who died in the conflict), 1090 birch trees (one for each of the fallen) and picnic tables along a pathway named United Nations Avenue. This avenue is surrounded by 21 trees, representing the twenty-one nations involved in the UN force in Korea. The traditional Korean pagoda contains lists of those who died in the conflict, the vast majority of whom were young National Servicemen. Maintained by the Scottish Korean War Memorial Trust, the site opened on 27th June 2000, marking the 50th anniversary of the start of the war.
To continue the walk, turn right on the road and head up a tree lined avenue. At the top of the hill take the path to the right at the Beecraigs Country Park boundary sign, which will take you back onto Guthries Path. You can then retrace your route back to the War Memorial. This route is about 4km and will probably take you around 1.5 hours. If however you are short of time or maybe trying to fit in a bit of exercise in your lunch hour, then you can walk up to the Witchcraig Wall, across to the Refuge Stone, enjoy the view and make your way back down again. It doesn’t matter how short the walk - you will still see the benefit. Current research shows us that we are all living far to sedentary lives and that we sit in front of computers all day not even taking a break to walk around. So why not start 2013 with a view to taking more exercise and grab the opportunities for fresh air and exercise when they arise.

Westwood House
Do you know where this local mansion is?
T
his is Westwood House, built between West Calder and Addiewell during the 19th century as the graceful country retreat of a wealthy Edinburgh lawyer named Smith. The estate changed hands a couple of times, and in the late 19th century belonged to Captain Steuart, who was a prominent supporter of the Linlithgow and Stirlingshire Hunt. Westwood was one of the meeting places for the hunt, and from here the pack would tear across the fields and woods of Harburn, Hermand, Bellsquarry and Breich. The lands of the estate, whilst not particularly rich agriculturally, contained deposits of shale and the Westwood Shale Oil Company began manufacturing crude oil on Captain Steuart’s estate in the 1860s. Under one company or another, shale was extracted from Westwood until the closing of the works in 1962. As the shale seams on the estate were opened up, Westwood House was in the way of the works. And its rooms, which once echoed to the sounds of family and socialising, began to echo to the sound of shale being dumped on the advancing bings....and the house was eventually engulfed by the piles of spent shale from the Westwood Works. This mansion now lies buried under the Five Sisters bing. 34
Two farms are buried under the Addiewell Bing, one of which was called Clash-me-Doon (or Bridge End Farm). Whilst our bings may have smothered bits of history, they have themselves become sites of ecological and historical importance. They are home to locally rare species of plants and animals, and in some ways are the only monuments to the industry and the people who worked so hard to build the communities we have today.

Charity of the Month The Larder
T
he Larder Cook School is a new and exciting social enterprise based in Livingston. Registered as a Scottish charity, the aim is to use cookery and other food-related skills to train disadvantaged or unemployed young people, build their confidence and help them to secure work.
training kitchen/cook school will be opened in Livingston by the summer of 2013. This facility will enable The Larder to build on their work with young unemployed people and support them to build a range of skills for life that will take them into a career in the food industry.
In April 2010 The Larder started delivering cookery courses for young people to enable them to raise funds to support their charitable aims. Since then, the Cookery School has gone from strength to strength with courses and workshops being offered during all school holidays. In October 2012 they ran a West Lothian Junior Master Chef competition which was a great success. In these courses children from 5 years up learn skills that they can take through life. They cook everything from burgers to sushi and apple crumble to ice cream. Classes range from two-hour workshops for 5 to 8 year olds, to week-long holiday courses for 9 to 12 year olds. They learn cooking skills like cutting, chopping, slicing, dicing and heating, frying, grilling and baking. Most of all they have fun whilst developing skills for life.
Volunteers play a crucial part in both the cooking courses and the work with young people. As 2013 will see real growth in both areas of work a range of new and additional skills will be required for the organisation. They are interested in hearing from anyone who would like to volunteer, particularly in the following areas:

Khushi’s Indian Restaurant Review

F
eeling in need of a post Christmas pickme-up lunch in January, my colleague Jenny and I headed to Khushi’s Indian restaurant in Mid Calder for a mid-week lunch. Stepping out of the drizzly January day into the bright and welcoming restaurant, we were greeted promptly and shown to a table. Since neither of us had eaten much in the morning in anticipation of our lunch out, we opted for a starter each - a range of pakoras – as well as the main. When you think about it, the pakora is just made for the Scottish palate – we like to deep-fry just about anything. Khushi’s chicken tikka pakora came with a delicious dipping sauce of coriander, mint and mango chutney. The vegetable pakora with its dipping sauce was mild and perhaps less flavoursome than the chicken ones, but still nice as a light starter. The mid-week lunch menu at Khushi’s is a thali – a selection of chicken curries served with rice and nan (plain or garlic). I like fairly mild creamy curries so opted for a passanda and a chasni, while Jenny - already a fan of Khuhis’s excellent saag - prefers a more spicy flavour so she decided to try the bhuna and dansak. The dishes are prepared fresh – Khushi’s do not run a buffet where the food is pre-prepared and kept warm, but they cook your meal to order. There are two chefs on duty at lunch time, one who specialises in the curries and one exclusively on the tandoor oven turning out the nans. The food arrived in good time considering it’s made to order, with the hot nan straight from the oven. My passanda was delicious – a perfect creamy almond flavour, although if I had to chose my favourite of the two it would
be the sweet chasni. The chasni is apparently a Scottish-born curry, developed in Glasgow in the eighties to cater for those who like the Chinese sweet/sour flavour but with Indian spices. Khushi’s version was delicious; I was full from the generous-sized lunch before I’d finished, but couldn’t resist finishing it all anyway. Meanwhile, Jenny was enjoying the thick tomato-based bhuna and the medium hot dansak with its rich lentil-based sauce. Her verdict was that both dishes met the high expectations she had of Khushi’s having been a regular customer for years. The texture of the generous chunks of chicken in all the dishes indicated that only fresh chicken is used – there was no tell-tale spongy texture of frozen chicken. We chatted to owner Rashid afterwards. He told us that everything is made from scratch as far as possible, using fresh local ingredients. He uses vegetables in season from Dixon’s farm shop in East Calder whenever possible and they also grow their own salads and vegetables in the poly tunnel and organic garden behind the restaurant. Some spices are purchased ready-ground, some are ground onsite for maximum freshly-ground flavour. The restaurant is BYOB (wine and beer) with no corkage charge. At £5.95 for the main course lunch, it was filling, quality food and definitely good value. Service was prompt so it would be suitable for popping in for lunch even on a working day. What about a working lunch there with a couple of colleagues? I thoroughly recommend you treat yourself to a meal out at Khushi’s in the near future!

February Recipe and Food Notes Oranges and Lemons By Anne Pinkerton
T
radition has it that marmalade was first made as the result of the love of a bargain by Dundee merchant James Keiller and the thrift of his wife Janet. In the early 18th century a stormdamaged Spanish ship took refuge in the port of Dundee and Mr Keiller bought the perishable cargo of oranges very cheaply. To his horror he found nobody wanted his bargain because the fruit was bitter. Janet Keiller, not wanting to waste the investment, came to the rescue and tried cooking the fruit with sugar. Her experiments were a success and so the new preserve of marmalade was born. The orange marmalade caught on and by the middle of the century recipes began to be published in Edinburgh cookery books. By 1797 the Keiller jam factory was built. Later, in 1859, a Paisley grocer and his wife decided that the Dundee conserve was too bitter for modern taste and they produced the still famous Robinson’s “Golden Shred” marmalade. In 1870 Cooper’s Oxford Marmalade made its appearance because the wife of a Don at the university thought she might sell a few jars of the conserve she had known with her Perthshire family. This caught on and so another style of the bitter jam developed. Seville oranges are grown in quantity around the town in southern Spain which gave its name to the variety of citrus fruit. Most of the crop is exported to Britain and it is in season for about 6 weeks from mid-January to mid-February. Nowadays there are hundreds of recipes for marmalade using lemons, limes, grapefruit, ginger and almost any combination of all of them . Methods sometimes involve skilled and tedious work peering, slicing, squeezing, measuring pulp and precise temperature control. My marmalade I think has an especially good, rich but still proper bitter taste. It is also easy to make. When my Mother 42
made her marmalade she had to make the year’s supply all at the same time because the fruit does not keep for long. Now I buy all I will need for the year’s breakfasts in February then freeze the Seville oranges till supplies run low and I make another batch. Seville Marmalade 8 Seville oranges, washed 2 unwaxed lemons, washed Granulated sugar Method The good thing about this method is that you can leave it at almost any stage till you have time to carry on. Pack the fruit in a pan and just cover with water. Put a lid on the pan and bring to the boil. Cook slowly till the fruit is soft, about 1 ½ hours. If you are using frozen fruit proceed as above, cooking the fruit from frozen. Remove the fruit from the pan, cool and then cut in half, roughly scooping the pips and flesh into a fine cloth. Tie the cloth up. Measure the quantity of liquid, and for each pint you need 450gm of sugar. There will be about 3 ½ pints. Warm the sugar if you can, this helps it dissolve better and keeps the jelly clear. Cut the peel to whatever thickness you prefer (easy because it is soft). p44

back into a large, or jelly pan, and bring slowly to the boil till the sugar melts. Set the pan aside to cool and hang the bag of pulp above so it drains into the pan, leave dripping over-night or till the bag is dry. Add the cut peel to the pan and bring back to the boil and then boil rapidly till setting point is reached. Test by putting a little of the liquid on a cold saucer and see if it jells in a few moments. Cool a little and pot up in glass jars whilst still hot. Should make 7 or 8 lb.jars. I prefer to use traditional cellophane covers and elastic bands always on sale at Lakeland Plastic. You can use cling film and the screw tops of your jars. Cover the jars while the marmalade is hot to ensure a sterile seal. Seville oranges can be used to good effect in savoury food. Cheats Duck with orange. 1 Duck leg joint per head or2 breasts for 3 people. Salt, pepper and caraway seed Glass of red wine Pudding spoon marmalade Method Rub the seasoning into the skin of the duck. Heat a heavy-bottomed frying pan. Put the duck, skin side down, in the pan and cook till the fat begins to flow, lower the heat a little and cook for 4-5 minutes. Turn the joints over and cook for 5-6 minutes or till the meat is a pink as you like. The legs need a little longer than the breasts. Dish the duck and keep warm. Reheat the pan and add the wine, reduce till half volume and add the marmalade to make a rich sauce. Serve with watercress, sweet orange and chicory salad and small potatoes cooked in their skins. The juice and grated rind of Seville oranges is a good flavour to use in beef stews, casserole of pigeon and venison.

If you make a pot of juice and rind and freeze it you can add depth to the taste of these dishes later in the year. Part of the pleasure of these fruits is that they are only available for a short time, about 6 weeks between Christmas and February. Marmalade can be used in lots of puddings. Add a spoonful when you poach older rhubarb, put some at the bottom of the dish when you make a baked custard, mix some into rice pudding before it is put in the oven or use some in treacle tart. However a steamed marmalade pudding served with handmade custard is one of the best for this time of the year. Steamed Pudding 2 large eggs, their weight in butter, selfrising flour and sugar 2 heaped table spoons of marmalade. Method Butter a 2 pint pudding basin. Cut a silicon paper circle to the size of the top of the bowl. Set a pan, large enough to take the bowl, on the heat with about 2inches of water; bring to a slow boil. While the water is getting ready make a cake mixture. Cream the butter and sugar, add the flour and eggs alternately and if the mixture seems very dry add a little milk to get a dropping consistency. Put the marmalade in the bottom of the bowl and then spoon the cake mixture on top. Cover with the paper circle and a lid of foil loosely crunched over the rim. Using a tea towel as a sling put the bowl into the pan of boiling water. Loosely fold the edges of the tea towel over the top of the dish. Cover with a well-fitting lid and steam gently for 1 ½ hours. Every now and then make sure there is enough water in the pot. If not add hot water from the kettle. Using the tea towel lift the pudding from the pan and invert the pudding on to a dish. The marmalade will fall down the sides of the pudding. You can make this with any jam or even lemon curd. Very 1950’s but delicious!
