Editor’s Message Welcome to the June issue of the Konect Directory. It's the countdown to summer and we've optimistically included an article this month on the best tools for BBQs, so here's hoping we get some BBQ weather. I've done a couple of interesting interviews this month. Reminded by the Five Sisters Zoo blaze of the work of the fire service, I paid them a visit to learn more about them and especially the behind the scenes work they do in the community - see the article on page 8. We also highlight a couple of “hidden gem” businesses, in particular the Coffee Cup Cafe in Deans – see the article on page 48, and call in to show a small local business your support by picking up a coffee or great value meal. Phoenix-I, Oriental Fusion Restaurant in Ladywell, is offering tapas for two this month for the crossword competition, so try the crossword on page 42. Congratulations to Ms B Milne of Dedridge who won the crossword competition in the last issue, and to John McDougall of Deans who won in the April issue. Scottish Fire and Rescue Service

Help! Fire! The local fire service has been in the news recently due to the devastating blaze at The Five Sisters Zoo (West Calder) in April. But putting out fires is only a part of their story – actually they would rather not be putting out fires at all. Today's Scottish Fire and Rescue Service has as its first goal to stop fires and other emergencies before they start. The other goal of course is to respond appropriately to emergencies when they do arise. I went along to the local headquarters in Howden Civic Centre to speak with Gary Laing, Local Senior Officer for West Lothian and Falkirk areas. Gary explains that his job as Senior Officer is to prepare and implement the West Lothian local fire plan. The primary aim of the plan is, simply, to prevent fire. Gary and his team identify the priorities within West Lothian i.e. the people and places most at risk of fire, and take action along with partner organisations to reduce that risk. Partner organisations include the police, NHS and social services and they share information to help each other prevent emergencies – if for example, the fire service is called out to a fire caused by someone living a destructive lifestyle (drugs, alcohol) they would flag this up to Social Services as someone potentially in need of help. The most common causes of domestic fires are unattended cooking pans, electrical fires and smoking. These risks are of course heightened when alcohol or drugs are involved, as if you are under the influence you are not only more careless in the first place, but less able to take sensible action if a fire does break out.

The rest of their calls are for domestic fires and roadside accidents, and more unusual non-fire related calls such as helping out other organisations with rescues and awkward access. I jokingly ask Gary if he has ever been called out to rescue a cat stuck in a tree – and yes, he has, just once a very long time ago! However, as he points out, cats are usually pretty good at getting down from trees themselves! The re-organisation of the service in April 2013 brings all the regional fire departments under one national organisation, with the aim of avoiding duplication of effort and better sharing of resources between areas. It is now called the Scottish Fire and Rescue Service. See www.firescotland.gov.uk. Free home fire safety check The fire service is all about prevention of fires, so they want to come out and check your home and advise how to avoid any obvious causes of fire. If you, or someone you know, would like a free home fire safety check, please call 0800 0731 999 or text 'fire' to 61611. Free smoke detectors are provided where necessary. The fire service attends galas and community events.

Gary's team has a daily meeting with partner organisations to review the previous 24 hours, discuss what incidents there have been, spot patterns and plan to avoid them in the future. The fire service attends 10 – 15 incidents per day in West Lothian. The most common call out is for automatic commercial fire alarms, accounting for around 50% 8

Mindfulness is paying attention, in the present moment, with an open heart and in the process discovering the inner qualities of kindness, deepening awareness and acceptance. In mindfulness we pay attention to whatever is in our experience, observing thoughts, feelings, bodily sensations and engaging our senses to anchor us in the present. By doing this we step out of reactivity of the automatic pilot of the mind that tries to seek a preferred experience. How would it be to allow all experience good or bad; to live life without seeking only good, without running away from what is bad and accepting what is present. Life is full of good times and challenging times and nobody can escape difficulties, but we can learn to live in each and every moment with acceptance and deeper awareness. In mindfulness we learn to observe our thoughts without judgment

and to see the connection between thoughts and emotions; “The seeing is the doing” Without seeing, nothing can change, patterns of reactivity continue. Discovering insight into our own mind habits, which we often repeat throughout our lifetime, gives us the chance to change them. When you discover how your thoughts can dominate your experience, how they impact on your emotions which then create reactions and behaviours, would you not agree that it's important to pay attention to what is arising in the mind? The Club has just completed a major project to completely replace the club house. The brand new building boasts a great bar and large dining area, function rooms for members'

use and views over the course. The Club was delighted to welcome Ewen Murray, Sky Sports golf commentator, back to Baberton Golf Club last month to officially open the new building. Ewen was a junior member here at Baberton and gained various national titles as a young member before turning professional. But while the completion of the new club house is the exciting news of the moment, Baberton is, after all, all about the golf course itself. Club Secretary Keith Nicholson explains, “The course is maintained to a very high standard. Over the past few years all of the greens have been changed from clay-based to sand-based, meaning that they are a good surface to putt on all year round and are not prone to flooding. We've recently seen our membership steadily increase as the course has improved and with the introduction of the new clubhouse facilities.” The secluded 90 acre course has great views over the Pentland and Ochill Hills as well as the Edinburgh skyline, and challenges players of any level. There is a range of very flexible membership packages available so you choose a membership based on your circumstances and when you most need to play. They include a midweek membership and a six-day membership (Sunday to Friday) for which there is no joining fee, as well of course as the full membership. The Club is keen to promote young adult members, so for up to 30 year olds there is no joining fee and a reduced fee. If you don't play golf yourself but want to take advantage of the fantastic new facilities at Baberton, social memberships are available whereby you access the food and bar services and use the function rooms. All members can sign in up to 10 guests at a time. And if that isn't enough, you can try before you buy – a trial round is available for £10 so you can check out all that Baberton has to offer and see if it suits you.

A sport for children

Golf doesn't have such a high profile as a sport for children to take up as football or many of the martial arts for example, but the Scottish Government's ClubGolf programme aims to make sure every 9 year old has the chance to try golf. Baberton Golf Club hosts afterschool and Sunday golf classes which provide a taster of the sport, as well as offering a very reasonably priced children's membership. Starting at £75 per year from age 8, (no joining fee) children can play as often as they like. What better way to celebrate the good weather than to go outside and burn things? Barbecue season is back, and as ever there are all kinds of gadgets promising to make cooking in the great outdoors even greater. If you don't already have a barbecue you're spoilt for choice: you can spend as little as £20 on a charcoal kettle barbecue, or as much as £5,999 on a "Grill Centre" that's bigger than most people's kitchens. If space is at a premium, it's worth considering a portable one, such as Weber's clever little Smokey Joe barbecue (£59.99) or one of its many imitators. Wherever men are showing off you'll find firms offering gadgets to help them, and in outdoor cooking there are clever ideas such as the Grill Daddy Pro brush (about £14.99), which combines a typical grill brush with a steam cleaner to help shift tough burnton food and sterilise the grill racks. Alternatively, a quick scan of eBay uncovers plenty of motorised grill brushes for around £15 that promise to take the effort out of cleaning. If that isn't manly enough, the terribly-named Looftlighter (£69.95) is a guaranteed hit, blasting hot air out of the nozzle at a terrifyingly hot 680 degrees to light barbecues, fires and anything else that happens to be nearby. If you'd rather not spend nearly £70 on a glorified lighter - or if you already own a blowtorch - there are still plenty of tempting accessories from chimney starters to help you get things burning (£14.99) to griddle pans, woks, basting brushes, add-on tables,

The best tools for a great British barbecue digital thermometers, hot dog rollers (£12) and hamburger presses (£12). You can even get a beer can chicken roaster, which holds a can of beer inside a chicken while you cook it (about £8). It sounds like a daft idea but it really does work - as does the digital thermometer fork (from £16), which can help you avoid poisoning all your friends by telling you whether the meat is cooked through or if it needs a bit longer. Alternatively, an ovenproof thermometer will do the job just fine for around £6, but make sure it's rated for high temperatures: barbecues can be considerably hotter than the domestic ovens many thermometers are designed for. Poisoning isn't the only thing to watch out for: whether you go for an all-singing, all-dancing portable barbecue, a disposable aluminium one or a free-standing kettle model, remember that barbecues produce carbon monoxide, which can be fatal - and they continue to produce it long after you've finished cooking. Never use a barbecue indoors or bring it inside when it's still warm. We're not sure whether a Himalayan Salt Plate counts as a gadget - it's a block of salt - but it's an interesting add-on: instead of cooking directly on the rack you put the plates on the grill and the food on the plates, cooking and seasoning simultaneously. Expect to pay around £9 for a single one, which should last for lots of barbecues and which doubles as a nifty serving plate. Last but not least, there are plenty of LED-powered barbecue lights, such as the threeheaded Best of BBQ LED Grill Light. As much as we love our barbecues, we can't help thinking that if you're buying £40 accessories to barbecue in your own garden in the dark, you might be taking outdoor cooking a little bit too seriously.

Recently, a leading barrister claimed that the best way to deal with the recent sex abuse scandals that have been dominating the headlines is to lower the legal age of consent to 13 years old. There has already been widespread outrage at these claims -- how can any person in their right mind think that lowering the age of consent is going to solve sex abuse on our children. Would it not just be legalising peadophilia? Children all mature at different rates, but I have never once met a 13 year old who is emotionally mature enough to be able to deal with an adult relationship. There is a legal age of consent for a reason, and lowering this in order to save sex abuse cases should never even be a consideration.

The best way to deal with sexual abuse against our children is to make sure that those committing the crimes are brought to justice and dealt with as they should be, endangering our children further isn’t even an option in my opinion. It is worrying that someone in a position of remote power has spoken out about such an opinion on a public platform. We need people in this kind of position to speak out against such topics instead of standing up for those committing said crimes. It’s time that we started dealing with the roots of abuse instead of making the victims feel like they are in the wrong.

Spotlight on: Coffee Cup Cafe

I

It's one of very few independent cafes in Livingston run by a local family, which makes the Coffee Cup Cafe in Deans extra special. There are plenty of other things that make it special though, as I found when I went along to find out more. The cafe is run by Val Munro who is a long-term Deans resident and is on the Deans Community Council. She has been involved in catering all her life - her first assignment when she was 16 years old was the catering for her sister's wedding! Her career has taken her into other industries but she had always wanted to run her own cafe and had a clear vision of how it should be. So when the opportunity came up with a premises close to her home in Deans, she snapped it up. “I wanted to give something back to the community,” she explains. “Cooking has always been my passion, and I realised that there was nowhere in the Deans area for people to meet up for a coffee or snack in a nice environment.” So she set about creating the Coffee Cup Cafe. The hallmark of the cafe is generous sized, quality meals at a really affordable rate. Val's full breakfast, for example, is a nine-item meal plus tea/coffee and toast for just £4.50. I spoke to some regular customers who were just finishing their breakfast when I went in, and they gave it full marks! There is of course a range of coffees, cakes and snacks. Val does all the cooking and baking on-site herself and uses good quality ingredients (real butcher's sausage for example in the sausage rolls – we tried one and it passed the taste test!). All the cakes are freshly baked from scratch. “The emphasis is on the quality of the food - every meal has to be prepared with the same care.” When you enter the cafe, the kitchen area behind the counter has a homely 48

welcoming look - more like a domestic kitchen than a commercial premises. This is deliberate, as Val explains, “The room was a shell when I took it on. I wanted it to look like home from home. So the kitchen is a homely domestic kitchen look, then there is the dining area with the tables, and a cosy corner with sofas and some kids' toys.” Every month there is a special themed night where a particular style of cuisine is offered, for example Mexican, Chinese or Italian. A three course meal for one of these nights is for just £10 per person and you bring your own wine. The serving sizes are generous, and tables at these nights are usually booked up quite quickly so if you want to reserve a place for the June events call the Cafe and book now! At first glance the notion of flowers as food is a little odd, but we eat some flowers without a second thought. Purple sprouting broccoli is a well loved vegetable, so is cauliflower. Elderflowers are added to gooseberries and served as fritters. Violet flowers and rose petals have been crystallized and used as decorations on cakes and puddings. Dandelion and cowslip flowers have long been used to brew wine and without the flowers of hops life would have been much more sober. Jasmine tea is made by adding and blending the strongly scented flowers of the climbing plant to large leaf green tea. Chinese food stores usually sell packets of the real thing with flower heads mixed in the tea, not just tea to which jasmine oil has been added. It is the most refreshing drink to take with a Chinese meal. Several herb teas are infusions of flowers which we now, for practical reasons, only see dried. Chamomile, lime flower or hawthorn all used to be gathered and used fresh in season. By drying them they are available all year. To round off this list, what image more evokes traditional high summer than a tall glass of Pimms decorated with mint leaves and bright blue borage flowers?

In the last 10 years or so cooks have again become interested in more uses for flowers in food, not only as decoration but also experimenting with the subtle flavours they can bring to traditional dishes. Lavender, because it is of itself sweet, goes wll in biscuits, scones and shortbread. The leaves and flowers of some scented geraniums can

be used to make a delightful real sponge cake and the flowers should be used in the decoration to indicate the taste to expect. Marigold flowers are good in egg dishes and they are also pretty scattered in a green leaf salad. Marigold Omelette Allow 2 eggs per person. Buy the best you can - for such a simple dish were the egg’s flavour is important chose organic freerange if you can. Beat the eggs with a fork in a mug or small bowl with a dash of water, mix in some finely cut chives, a pinch of salt, a grind of black pepper and the petals of a whole marigold flower. (You can use dried flowers in winter, Napiers in Edinburgh sell them). Have a small frying-pan ready, heated on the hob and melt a knob of butter over the heat. When the butter is foaming pour in the beaten eggs and with the fork, gather the cooked edge of the mixture to the centre of the pan. Continue doing this until all the mixture is cooked to your personal taste. Many people prefer their omelette well cooked, others say an omelette should be still just runny in the middle. Do as you please, eating is a pleasure as well as a necessity. With a salad and a glass of wine the perfect omelette satisfies hunger and stimulates the other senses. Nasturtiums are exuberantly coloured, exotic looking flowers and they are good to eat. They have a peppery taste. The flower buds are also delicious in salads because they add a sharp taste. The Cyrenians, who farm in Humbie Holdings in Kirknewton, included these flowers in their salad packs last year. They also included snap-dragon or antirrhinum flowers with mixed leaves. They sell their produce at the Farmer's Market in Balerno. Do visit the market and see what other food pleasures you can find, there is sure to be something new and interesting. If you are having a summer party and would like to make a centre-piece for a buffet this can be made weeks in advance and stored in the freezer till you want it.

Frozen Flower Bowl You need: 2 bowls which when resting inside each other leave a gap of approximately an inch (2.5cm). A larger gap is better than a smaller one. Flowers or flower petals: Chose by the colour you would like, such as roses, violets, pansies, carnations or pinks, lavender, marigolds, snap-dragons, nasturtiums, lovein-the-mist, jasmine, sweet-pea, cornflower, primula, cowslips or primroses. Some crushed ice cubes. Cold boiled water. At the bottom of the larger bowl put some crushed ice. Set the smaller bowl on the ice and make the gap between the bowls equal all round. It is worth while taking some care at this stage because this defines the shape and strength of the final object. Pour in some water and put the whole thing carefully in the deep-freeze. Using boiled water means there will not be any air bubbles and the "bowl" will be crystal clear. When the first lot of water is solid start building your bowl. Place some of the larger flowers or buds down the gap between the bowls, pour in just enough water to cover the flowers, no more because they will float, but cover the flowers because they may go brown if frozen uncovered. This would spoil the effect. Carry on layer by layer till you have a complete bowl with a finishing rim of clear water. This will take time but designing the bowl can be fun and it will store for weeks until you need to use it. To un-mould the bowl pour a little hot water into the inner bowl and swirl it about. Release the mould. Holding the flower bowl upside down on a cloth, to stop it slipping or your hand being freezer burnt, run a little hot water over the larger mould bowl. It will release quite quickly. Keep in the freezer till you are ready to

Flower jelly or flower scented vinegars are good accompaniments to different foods. Lavender goes well with lamb and chicken; fennel with fish and sage or marjoram with pork. Flower Jelly 2kg cooking apples washed chopped whole (skin, pips and all) 6 or so tablespoons of strongly scented lavender flowers 3 pints water 3lb sugar Cook the apples with the flowers, covered, slowly in the water till they are a mush. Transfer the fruit to a jelly bag, hang it up and let it drip overnight. If you don't have a jelly bag use a clean muslin or fine cloth to strain the liquid. Measure the collected liquid and use 1 pound of sugar to each pint of juice. Heat slowly till the sugar has melted and then boil rapidly till setting point is reached. Pot, cover and label. You can use this method to make mint, geranium or marjoram jelly. Violet Flower vinegar This is a sweet vinegar which can be used in the same way as balsamic vinegar. Try a little on strawberries. Loosely fill a screw-top jar with the petals of Parma Violets. Fill the jar with good white wine vinegar, and steep the petals until the liquid is a delicate blue. Set the jar in a sunny place for 3 or 4 weeks, this helps the process. Strain and keep in a cool place. N.B. be careful about the jar lid because vinegar will rot any exposed metal. To avoid trouble put a layer of cling wrap over the jar before tightening the lid. Other flowers can be used to flavour vinegar - try dill or marjoram or chive. There are many cook books on herbs and flowers but I still much enjoy my copy of The Edible Flower Garden by Kathy Brown. The pictures alone will inspire you I hope.

New members are very welcome. Wednesdays 10am – 12noon, £2 per week Fit to Live Fit to Live programme provides education, information and support for individuals who want to lose weight. The group provides a safe environment where members are encouraged to make changes to their eating and exercise habits and are given the necessary support. Thursdays 10am – 12noon, £1 per week Befriending One of our befrienders may visit someone in their home for a cup of tea and a blether, assist on shopping trips or going out socially. There are many different people who might benefit from having a befriender - lone parents, stay at home Mums, people new to the area, the disabled and the elderly are just a few. A befriending relationship is two-way - our clients benefit from practical help and support and the volunteer has the potential to gain new skills and experience. The friendships which develop as a result of a befriending relationship are of immeasurable benefit to all those involved.

Practical Help We offer practical help, where we have volunteers with appropriate skills, with small jobs that most of us take for granted but which for many people become difficult because of illness or reduced mobility – such as moving a bed, changing a light bulb or fixing a fence. West Lothian Toy Appeal Ladywell Neighbourhood Network is one of the organisations which takes referrals for the West Lothian Toy Appeal. If you know of a family in need of help this Christmas please contact us. Lunch and Social Club The Lunch Club meets in St Paul’s Church Hall at 12.30pm on Mondays to share a two course lunch. The social club begins at 1:30pm and we provide a varied programme of activities, entertainment and outings. Transport is provided for individuals with mobility problems, an additional charge is made for this.
