he magazine has a summery feel to it this month, so now we just need the summer weather to make it all real. We’ve optimistically been looking at al fresco dining for this month, hoping for it to be warm enough to actually eat outside! There is a huge range of eateries in the local area where you can eat outside or just socialise and relax with a drink - from breakfast through to late evening; see our guide on pages 8-9. In the theme of outdoors eating, the recipe this month is a BBQ recipe. Make sure you check the What’s On pages for plenty of holiday activities nearby. We hope you find the magazine informative and entertaining. If you’ve got something interesting and different going on that you’d like to share with the local community, do get in touch and we may be able to feature your story in an upcoming issue. Al Fresco Dining Snatch a bit of the slow life this summer
There are so few days of the year when you can comfortably eat outside that you want to make the most of it when you can. There’s something about being outdoors and watching the world go by on a busy street as you enjoy a long drink, or being tucked away in a beer garden for a meal, that makes life seem to slow down for just an hour or two. Maybe it’s the association with the more leisurely approach to meals on the continent. So, optimistically hoping for some warm days and balmy evenings this month, we’ve been checking out where you can go locally for outdoors dining. Starting here in Livi, here are some suggestions... Exciting news from EQHQ in Livingston– they are opening their “0506” Kitchen and Bar on 28th June, and have large garden at the back of the club with BBQ facilities and full bar service, where you can take your meal. The garden seats around 120 and, as owner Darren enthuses “with outdoors drinking, the food has to be the focus....” With their own bespoke burger and fantastic grill and rib selection, and chef coming from a Harvey Nichols restaurant background, this sounds like one to definitely check out this summer. For somewhere completely different – Milk at Jupiter Artland is the cafe within the sculpture
park near East Calder and is open to everyone, not just sculpture park customers. Drive through the stunning Jenks landforms that are part of the artland, and make your way to the courtyard where there is full table service in a covered outdoors area or a small sun trap garden. Kitchen appliances have progressed somewhat in the past few years. Through the popularity of programmes such as The Great British Bake Off and Masterchef we’ve learned that maybe it’s not us who are wholly inadequate when it comes to making the perfect soufflé but rather the equipment you buy actually does make a difference. We’re not suggesting for a moment that you need to go all Heston Blumenthal and invest in a blowtorch that would be perfectly at ease in the welding scene from Flashdance. If however, you invest in a few additional items it could just make the difference between your fish turning out as a succulent masterpiece or something you could use to, pardon the pun, re-sole your shoes. Food Processor – You may have an un-loved and unwrapped wedding gift at the back of a kitchen cupboard. If so it’s time to discover the delights of a food processor. MH Developments A man’s home is his castle…
If you have driven up the M9 on a regular basis over the last few years, you may have noticed in the distance a castle covered in scaffolding. That castle is Duntarvie Castle near Winchburgh and it now finally has a roof thanks to the fantastic efforts of MH Developments of Livingston. Owner Martin Hood and his team, including Michael and Daniel Anderson, won the work and are justly proud of what they have achieved so far. “The castle has been a ruin with no roof for nearly 200 years,” says Martin, adding that it was an exciting prospect to be involved in restoring the castle to its former glory. It is of course an ongoing project but things are moving along nicely.

Having started life as an apprentice mechanic, Martin fell into joinery work and just loved it, never looking back. Establishing his own business is the icing on the cake. Of course, it can’t all be about joinery and down time for Martin is football. For the last number of years he has been coaching the under 13 team at Livingston Football Club. “I love football and being able to coach the youngsters is great,” he smiles. He is also partial to a game of golf. Covering over 79km of river length and flowing through West Lothian, Falkirk and Edinburgh, the Almond and Avon Rivers were at the forefront of the industrial revolution stimulating the rise of mills, mining and agriculture and shaping the communities along their banks.

The River Forth Fisheries Trust (which advances the environmental protection and improvement of all rivers which enter the Forth Estuary and the Firth of Forth) has received initial support of £1.55 million from the Heritage Lottery Fund and the Scottish Environment Protection Agency’s Water Environment Fund for an exciting project that will reconnect local communities with the Almond and Avon, and improve the natural heritage for both wildlife and community enjoyment.
Rugby Club Weir next to Almond Park Over the next year the Trust will engage with volunteer groups, community councils, landowners and members of the community to make sure everyone has a chance to have a say about the projects (see box below for list of projects). Local communities will be involved in essential conservation work to restore and protect the rivers for aquatic wildlife, such as migratory fish like salmon and sea trout, as well as other species which rely on the water environment. Paths will be improved to create better access and interpretation produced in conjunction with local heritage trusts. There will also be awareness raising events, skills training with accredited qualifications, and volunteer events to promote and enhance the natural heritage. As an example, the River Almond Barriers project will look at ways to help migratory fish over the manmade barriers on the river - there are 57 suspected obstacles in the Almond catchment alone and seven main barriers that are causing the most impact for migratory fish and the river connectivity. The Trust will engage the community view on options from full removal of weirs to creation of fish paths. Recipes from Hopetoun Farm Shop
BBQ Chicken Glaze Ingredients: 8 chicken thighs skin on Jar of lime chutney Tomato sauce Dark soya sauce Hopetoun honey Method: Take one sealable food bag and pour all ingredients into the bag. Throw in the chicken thighs, seal over and massage the chicken for at least 5 minutes. Refrigerate for 24 hours.
Blue Cheese Burger (gluten free) Ingredients: 500g lean Hopetoun Aberdeen Angus steak mince 1 onion Salt and pepper Kintyre Blue sheep’s cheese Chilli flakes (optional) Method: Blitz the onion in the blender until it forms a paste. Mix all ingredients together except the cheese thoroughly in a large bowl. Divide mixture into 12 golf ball size portions and shape into burgers. Lay out 6 burgers and add a tablespoon of blue cheese onto the centre of each. Place another burger on the top of each and mould together to form 6 burgers stuffed with cheese.
Preheat the oven to 220 and cook chicken thighs for 5 minutes then turn the temperature down to 180 degrees for a further 15 minutes.
Chill for at least 2 hours, preferably over night.
Finish off the thighs on a hot BBQ for 7-8 minutes turning once only.

David Bathgate General Builder
Broxburn resident David Bathgate has been running his building and renovation business for 13 years, since moving to Broxburn from Livingston. Starting off working for his uncle’s building business, over years he has built up experience in most trades (except for roofing and rough casting). “I spend a lot of time at this time of the year on landscaping, driveways, monoblocking,” he explains, “and we do a lot of kitchens and bathrooms too. Some sellers feel that if they have “missed” the spring market, they should wait until September before selling their property; but there are solid reasons for marketing your home during the summer. How beautiful it is in the springtime and summer months, have you stopped to really notice? The leaves have all opened out, the plants growing out of the ground, suddenly everything is green, fresh and beautiful. The sound of the rain, the warmth of the sun, the clear blue sky and how big are the bumble bees! Over the course of the last week have you paused to feel the moment when someone was kind to you; perhaps made you a cup of tea, gave you an unexpected hug, a genuine smile or gave you their time to just listen. How did it feel? When was the last time you were kind to someone, what was that moment and how did that feel, did you even notice? Perhaps more importantly when was the last time you were kind to yourself? Do you ever stop to even consider being kind to yourself? Life passes us all by so very quickly, we are almost in the middle of the year already! In our fast paced frantic lives that most of us lead, it is so important to take a moment for the simple things in life, the small pleasures are gifts that are part of everyday existence that we miss most of the time. Stop now as you read this, pause and reflect on these questions.
