Editor’s Message Konect is all about all things local, so I decided this month it was time to pay a visit to a local organisation that is an important part of the community for many people – our local football club, the Livingston Football Club. They are offering a very exciting prize for Konect readers - a chance to win a matchday hospitality table for four at a game next season! So turn to the feature on pages 8 and 9 and check out the competition details! Another local organisation, Howden Park Centre, is also running a ticket competition in the Konect Directory, and this month the tickets on offer are for the show “Austen's Women.” So if theatre is your thing, turn to page 19 for this ticket competition. Livingston Football Club

For an afternoon's live entertainment put on for you by 22 professionals, going along to watch a match at your local football stadium is a good option. “What's exciting about a football match is that you never know exactly what you're going to get – that's part of the entertainment of going to watch your team. It can bring some surprises” says David Stoker, one of the Directors of Livingston Football Club. “You don't know how the game is going to turn out - sometimes your team is fantastic and sometimes they're not.” David is the elected director for the Livi for Life Supporters Trust. I'm talking with him at the Club's 10,000 seat stadium off Alderstone Road in Livingston, and we discuss briefly the entertainment value of a football match compared to other live shows you could go to for a similar price. “As with music or theatre, it's not necessarily something you will be hooked on from going to one match, but as you get involved and learn about the players and follow the fortunes of your team, you get more out of it as a supporter.” Football is one of very few ways in which our town is represented on a national level, so whether you're a member of the football fraternity or not, it doesn't hurt to know a little about Livingston Football Club. This is one of the points David makes. “I'm involved in football for many reasons,” he says, “and amongst them there is an element of civic pride.” Livingston Football Club, or the Lions as it is nicknamed, are also West Lothian's only senior professional football club. Interestingly, this local identity is relatively new. Whilst several of the full time professional players are locals who have come up through the Club's youth training programmes, the Club has achieved this in a relatively short

time. It didn't start out as a home-grown club in Livingston; its origins are as an amateur team from the Ferranti works in Edinburgh in 1943, called the Feranti Thistle. They were a successful club which were elected to the Scottish Football League's second division as Meadowbank Thistle in 1974. The move to Livingston and the name change to Livingston Football Club, after much deliberation, was in 1995. Painful though that change was to many fans at the time, we now have a strong local team, named after the town they play in, with a good number of players trained up from within the local community. It's been a chequered history to get to this point though, with a roller-coaster ride since 1995 taking them from SPL (Scottish Premier League) to Third Division, financial difficulties and rescue operations, and back up to First Division where they currently play. Now on a better financial footing, they are putting their difficulties behind them and focusing on long-term sustainable growth. The Club is a partner (along with West Lothian Leisure and others) in the Livingston Youth Foundation which promotes football amongst youngsters – boys and girls - in the local area through after-school coaching clubs and holiday clubs. The Club's involvement with the Foundation replaces their own in-house youth training programmes, as they can do more by pooling resources with other sports organisations to offer a comprehensive range of classes for children to get them involved in football. And ultimately of course they are looking out for youngsters showing promise who can be offered a chance to progress to a professional level. See the Club website at www.livingstonfc.co.uk.

The breath is always with us and it is the thread that connects all moments in our lives. We can live for days without food or water but deprive us of breath and we die in minutes. In view of this is it quite incredible how little attention or importance we give the breath and breathing correctly. Proper breathing brings vital oxygen to the blood and all parts of the body nourishing and providing vital energy. The breath can be a barometer at any moment. Each breath has a flow and rhythm and as we bring awareness to breathing we start to notice how the breath changes our mood. Our state of mind can be reflected in our breath - when we are stressed, anxious, fearful, our breath can feel rapid, shallow, tight and restricted; when we feel calm our breath can feel slow, deep and full. Equally you can control your breath to bring about changes in

your mood when you practice breathing exercises. The breath can be an anchor to ground us in the present moment as you become aware of the sensations of breathing, the quality of the breath. Did you know that you breathe approx. 21 6000 breaths per day and so properly attended to, the breath is an opportunity to relax and let go of tension. Technology isn't just something you use at home - it can be handy when you're out and about too, even if your idea of out and about means going far off the beaten track. One of the most useful kinds of outdoor technology is GPS, the satellite system that can work out where we are and help us find where we want to go. There are all kinds of dedicated GPS receivers, ranging from cheaper devices such as Garmin's £100 eTrex 10 to more expensive navigators such as Magellan's Explorist 710, which currently costs around £350. You don't necessarily need to invest in stand-alone GPS kit, however, especially now that smartphones and tablets can run very accurate mapping apps - although if you're taking a phone or tablet into the wilds, onto a boat or anywhere else nature can destroy it, it's a very good idea to invest in some protection. You can spend ridiculous sums on all-weather protection, but cases such as Griffin's Survivor (around £25 for phones, £29 for tablets) - something Griffin admits is "ridiculously over-engineered" - wraps your device in military-spec protection for a very reasonable price. It isn't pretty, but it's tough - and that's what really matters here. Technology has even made its way into the humble torch, which these days boasts LED illumination and innovative designs. Nite Ize's BugLit LED (around £13) has low, high and strobe modes, is visible from a mile away and has rubber feet that you can twist to attach to almost anything, while headmounted LED lights range in price from around £35 to well over £100. Petzl's Nao Headtorch (£135) is a bit over the top for the odd walk in the woods, but for serious running and other sports its sensor ensures a uniform level of brightness irrespective of how light or dark conditions become.

The gadgets that make the great outdoors even greater The most famous outdoors gadget is probably the Swiss Army Knife with its array of tools, but these days you're more likely to carry a Leatherman or one of its many imitators. With prices ranging from around £30 to £100 for originals and considerably less for clones, the range offers all-in-one devices with tools such as pliers, knives, saws, bottle and can openers, wire cutters, screwdrivers and even scissors. If you're planning to be outside for a long time, you'll need to eat - and gadgets can help you with that too. Jetboil's Zip Stove (£75) is a gas stove given a hightech twist: its heat exchanger means it can boil half a litre in just over two minutes, and its neoprene jacket keeps things warmer for longer. Meanwhile the BioLite CampStove (£150) takes the humble campfire into the 21st century: as it burns twigs, bark or pinecones it generates electricity, which powers a fan, which fans the flames for better heat efficiency and less smoke - and there's enough power left over to recharge your lights, phone or MP3 player. If you need to recharge gadgets but don't fancy lugging a stove around, no matter how portable, you might be better off with a monkey - and by monkey we mean a Powermonkey, such as the Powermonkey Discovery. Charge it before you go, and when your phone or other digital device runs out of puff the Powermonkey can recharge it twice if it's an iPhone and three to four times if it's a standard mobile phone. Expect to pay around £45.

Herbs are the green parts of plants which add flavour and interest to dishes. You can grow enough for one household’s cooking in one large planter. The key herbs in British cooking (in my opinion) are parsley, chives, thyme, sage and rosemary. Planted together in a large, well-drained pot of good compost and set in a sunny spot by the door they will always be ready to use when you need them. The only other herb I really like is mint. Don't plant it with other plants though - it grows on creeping roots which strangle everything in its path and needs to be contained by something like a bottomless bucket sunk in the earth. Until the industrial revolution the growing and use of herbs was the province of the mistress of the household. Herb gardens were a source of pride and often a place of tranquillity and relaxation. Herbs were used in medicines, cosmetics, cleaning and in food and brewing. Visit Annet House at Linlithgow where the gardens of a typical merchant’s house of the 17th century are still cultivated. There has been a considerable revival in the interest in growing herbs; from the pot of ready grown parsley brought with the weekly food shop to beautifully designed gardens, some very grand, for example, the Millennium Garden at Alnwick Castle in Northumberland. The Botanics in Edinburgh have test gardens where herbs and vegetables are grown to inspire the visitor or would –be gardener. It's not possible for everyone to grow their own herbs but the plants from the supermarket will live on a well-lit windowsill for a couple of weeks, if you remember to water them. 44

Dried herbs, bought in small quantities, are good too. They are more intense in flavour than fresh leaves so use with caution. Some herbs such as rosemary, sage, bay-leaves or dill can over-power a dish. Parsley (petroselinum crispum) is often used just as a decoration, and it does look attractive but this under-sells a valuable plant which adds a really good flavour needed in stews, sauces for fish and vegetables, egg dishes and salads. Parsley butter was the height of sophistication in the 1960s on grilled steaks, and jolly good it tastes. Curly parsley has been the traditional plant used in our cooking but now it is easy to find flat leaved parsley which has a slightly stronger flavour and is traditional in Turkish, Moroccan and other further eastern cuisines.

Sage (salvia officinalis) is traditional with goose and pork and is found in Lincolnshire sausages and in sage and onion stuffing. There is no shame in admitting to enjoying Paxo stuffing. It is quick and easy to make up and can be used in small quantities if you are cooking for yourself. A stuffing patty sets off a grilled pork chop with a little apple and mashed potato and peas for a quick evening meal. Rosemary (rosmarinus offcinalis) is perfect with grilled lamb and good with walnut in bread such as focaccia. You can p46

meat or vegetables and it imparts a gentle flavour to the food, it has a strong heavy sent and it is better when used subtly. Chives (allium schoenoprasum) The fresh green hollow leaves are a pleasure in sour cream on baked potatoes or on warm drop scones, they mix into soft cheese and can then be used as a spread or try them in herb butter melting on newly grilled meat or vegetable kebabs. Sliced and quickly boiled courgettes become an interesting side dish if lots of chopped chives and a little butter are added just after draining and then served immediately. Chives are good in mixed leaf salad and if added as a garnish to butternut squash or other smooth soups, look attractive and bring out the taste of the dish. Chive omelette makes a quick lunch with a salad and a chunk of crusty bread and they are vital to potato salad. The pale mauve starry flowers are beautiful and are edible. Add them to summer salads or break them up and scatter them on fish, which you are going to bake in the oven in foil with a little white wine or lemon juice. Mint (menthe piperita) is a very British herb. It is not till you travel as far as Turkey that a cuisine seems to understand how good mint can be in both sweet and savoury food and drinks. There are many different mints;- spear, eau-de-cologne, pepper, pineapple and apple are just a few. The plant dies back in winter and so when it shoots again in May it is doubly welcome as a marker of early summer. Mint and peas is a union made in food heaven, with mint and new potatoes a close second. Mint is splendid with asparagus, and mashed into Roquefort cheese and stuffed into a boned out leg of lamb it is amazing. Chopped finely and added to blackcurrants for a pie or to be served stewed and eaten cold with clotted cream, mint adds an extra 46

depth to the flavour and takes away the tartness, reducing the need for so much sugar. A little mint is also good with strawberries and it looks pretty. Pimms or other summer punches would look undressed without a sprig of mint, and then there is mint tea which only requires a mug, a sprig or two of the mint you prefer, some boiling water and a little sugar or honey if your taste is for sweet drinks. Thyme (thymus vulgaris) adds richness to many meats. It is known to aid digestion of meat, and in conjunction with lemon is delicious with chicken, rabbit and veal. It is a vital herb in a bouquet garni. This is a little bunch of herbs often required in casserole, stew and game recipes. Tie together, between two bay leaves, a good sprig of thyme, some parsley on its stalks and about a three inch piece of celery. This is then easy to fish out before the dish is served. After slow cooking the herbs have given up their flavour to the dish and no longer taste of much. If the bouquet is for a beef daube you can add a strip of orange or lemon peel. Thyme needs a good sunny summer to reach its full flavour and it prefers a neutral or limey soil. As with mint there are many different varieties of thyme with varying tastes (lemon or ginger) and many different habits and leaf colours. It is a tough plant when established and a pleasure to have in the garden.
