For the chips; place a large oven tray into the oven and preheat oven and tray to 220°C fan forced. Cut the potatoes into wedges and pat dry with paper towel. Remove hot tray from the oven and line baking paper. Place the potatoes, in a single layer, on the lined tray. Spray with olive oil, season with SAXA® Natural Sea Salt Flakes and scatter over half the thyme, turn potatoes over and repeat with oil and thyme. Bake in oven, turning once, for 35-40 minutes or until golden. Meanwhile, prepare your fish fillets. If you’ve chosen fish with skin on, use a small, sharp knife to score the fish skin. For skinless fish fillets move straight to step 4. Season fish with SAXA® Natural Sea Salt Flakes and pepper, then rub lemon rind into the skin or flesh. Heat oil in a large frying pan over high heat. Cook two pieces of the fish, skin-side down first (if your fish has skin), for 2-3 minutes or until light golden. Turn and cook for a further 1-2 minutes or until just cooked through. Transfer to a plate and squeeze over one half of the lemon. Serve the fish with chips with lemon wedges.

Mexican Burgers Method: 1 Lay truss tomato slices on a large plate. Season with salt. Drizzle with half of the lime juice and season with pepper. 2 Roughly mash avocado in a bowl. Add remaining lime juice and season to taste. Cover tomato and avocado with plastic and chill until ready to serve. 3 Preheat barbecue on medium-high heat. Brush Mexican-style beef burgers with a little oil. Cook for 8-12 minutes, turning halfway, until brown and cooked to your liking. Trim ends of Turkish bread and divide each into 4 portions. Split through centres. Lightly toast halves on barbecue. 4 Divide 8 Turkish bread halves among plates. Spread with avocado and top with lettuce leaves. Add patties, tomato and remaining avocado. Finish with coriander and remaining Turkish bread halves. Serve.
