As our memories of summer are slowly fading away we are now entering the festive season for which the Club will be organizing events for Halloween, Sinterklaas and Christmas. We are looking forward to your participation and hope that you will find fun and excitement throughout these celebrations over the coming months. 2018 turned out to be another year of significant membership growth as we continued, and are now at the tail end of, the implementation of the Club Revisited vision voted in 2016. We have welcomed more than 210 new families to our community in 2018 to date and the membership drive will remain a priority in the coming year. It’s great to see the atmosphere around the

and won a free 3D2N stay at LooLa Adventure Resort on Bintan. Here, she tells us about her adventurous prize.
My husband Robert and I were completely taken by surprise when we were told we’d won the trip to the LooLa Adventure Resort, and after looking at the resort’s website, were really looking forward to a short adventure-based holiday not too far from Singapore. It forced us to take a minibreak holiday, which we probably wouldn’t have done otherwise. It was extremely easy getting to the resort. A ferry ride, just under two hours from Tanah Merah Ferry Terminal brought us to Tanjung Lehman, the main town on Bintan. Getting through Customs on the Indonesian side was simple and quick, and a representative from LooLa was waiting for us. Then followed a 60-minute car ride to the resort in the company minivan. No fuss or trouble at all. We chose to stay in the LooLa Classic over-water chalets. Whilst they don’t have hot water or air-conditioning, we didn’t need either. The sea breeze kept us cool the entire stay and the view from our verandah was stunning. Tip – ask for

the chalet at the end of the pier, it has the biggest outdoor area to lounge around and enjoy the ocean vista and breeze. Not really suitable for infants though, unless you’re constantly watching them. If you’re after something a bit more luxurious, they have LooLa luxury Eco Villas with more creature comforts. The best thing about LooLa was the staff. Genuinely friendly, they were always more than willing to answer our questions or help in any way requested. The food was simple but ample; local dishes served at whatever time best suited us. I’m vegetarian, so sometimes travelling in South-East Asia can be problematic, but LooLa has recently launched a vegetarian menu which I enjoyed. Rob also looked forward to the seafood and meat dishes each meal. Being an adventure resort, there was plenty to do. Rob climbed coconut trees, did the Skywalk, exhausted himself on the rock climbing wall and had multiple goes on the zipline. We took Jack, our son, for his first kayak around the beach, which he enjoyed immensely. The wide open spaces were great for him to run around; he played soccer with the local children for hours each afternoon as the temperature cooled before dinner. Something we will remember for a while happened on the last morning of the holiday. We woke up just before sunrise, which coincided with low tide. The water had receded a long way, exposing a large area of sand and mud flats, sea grasses and rocky outcrops. We walked out a long way from our chalet with Jack and, with the sun rising up over the South China Sea, found an amazing variety of sea life; numerous types and sizes of crabs, mud skippers and other small fish caught in the pools. The most exciting sighting though was three small octopi. Watching them forage for food, change colour when approached, and morph into an amazing array of shapes entertained us for over an hour.

I set up Delmedica Investments, a medical devices company, in 2007. We developed the first exhaled breath thermometer, the X-halo, which can detect the onset of an asthma or chronic obstructive pulmonary disease (COPD) attack before symptoms appear. Blow into the device which connects to your smartphone and it records your breath temperature. Over time an algorithm predicts attacks by tracking your temperature and understanding your triggers. Our son suffered from asthma as a little boy; I remember the panic on his face and rushing him to hospital because his lips had turned blue when he could not breathe. As parents we had never felt such sheer panic, so when I met Professor Popov who told me about using exhaled breath to monitor inflammation in the lungs, the idea spoke to me. I felt we could improve on what he had built to make it easier to use. W H AT H AV E B E E N S O M E H I G H L I G H T S S O FA R ?
The technology, developed in Singapore, has won the President’s Design Award, the iF design award and the YPO Global Innovation Award in 2018 which we collected at a “ringing the bell” ceremony at Nasdaq in New York.
I find the environment relaxing. I can hold meetings in a relaxed atmosphere in Jaxs or more officially in the meeting room inside the WorkSpot. The location is convenient as my son swims at the Club, so it is a nice break from work to spend some time with him. D E S C R I B E A DAY AT WO R K AT T H E WO R K S P OT.
I normally get to the WorkSpot at lunchtime and start with clearing administration work, write or edit papers for medical journals and then teleconference with our clinical centre in Bulgaria. We also meet representatives from the Health Sciences Authority, respiratory specialists about further research work and digital marketing companies. Don’t get me wrong - we also just chat over a coffee with other WorkSpotters! HOW HAS THE WOR KSPOT HELPED YOU WITH YOUR WOR K - LIFE BALANCE?
My son swims here and uses the gym so it makes a really pleasant change to be able to walk out of my office to have a chat and a drink with him before getting back to work; then we often go home together.

Well, I am originally from the UK but settled in Singapore eleven years ago so consider myself to be semi-local! My background is primarily within the travel industry where I have worked for several airlines in commercial teams such as marketing, sales and partnerships. My wife Constance is from Singapore and is a clinical psychologist at one of the public hospitals here, whilst our ‘spirited’ daughter Ella (6) can be found living in the clubs Puppy Room at weekends. WHAT DO YOU LOVE MOST ABOUT YOUR JOB? MOST MEMORABLE DAY?
I love the variety that my position affords, be it creating new events for our members, looking to collaborate with external partners or working to improve our social media communications. Most memorable day has to be the 110th Anniversary party that the club threw for its members. Stationed at the inflatable obstacle course I learned invaluable life lessons on how to manage (or not) marauding groups of children high on candy-floss and delirious under the baking hot sun!

The one thing I always tell my friends is that we are not like any other club, and it’s true. When people hear the term ‘members club’ they often think of something exclusive or a bit stuffy and I love the fact that we have such an informal and inclusive atmosphere here. Every person I have walked through the swing doors onto the terrace has instantly been surprised, in a good way, at both our beautiful setting and the welcoming vibe that exists. Like most men I have very simple pleasures (insert your own punchline!) which are my family, travelling, good food, finding quality coffee in Singapore and the opportunity to put my feet up and watch the odd major sporting event. BY INGE KUIPERS The 110th Anniversary Party was a huge success for our Club. Everyone is still talking about the great celebration that was held on Sunday, September 30th. More than 250 members were kept busy with an activity-packed day of fun and excitement. Children, teenagers and parents alike were treated to some heart-pumping action with Bubble Soccer, a splashing good time with Meltdown and Slip & Splash as well as Pool Games and Bouncy Castles. After working up an appetite from all the excitement, families feasted on the sumptuous Buffet at the Terrace which included sizzling steaks, juicy

sausages, grilled salmon and tasty burgers, which would satisfy even the hungriest of Members. Our President, Daniel Gelinas, was thrilled to see the children enjoying the party, with parents relaxing around the pool. We also had the Dutch Ambassador, H.E. Margriet Vonno celebrating with us. She conveyed her best wishes for our Club to continue being Singapore’s truly international family club. Just when everyone thought it couldn’t get any better, our Members were presented with our new Hollandse Club water bottles and sweet treats before they left. Nothing could replace the surprised and joyful looks of the children, teenagers and parents alike as they received their free gifts. As the pioneer swim school in Singapore, we offer a unique swimming programme that combines renown techniques from Europe, America and Australia with an Asian flavour. We teach children from 6 months and above, in parent & child sessions, preschool, learn to swim, development and competition training. For adults we teach aqua aerobics and adult swimming lessons.
We share the belief that water safety and your child’s individual needs is key. Swimming is a life saving skill, a good exercise and most of all a lot of fun. INTER CLUB TENNIS TEAM SEPTEMBER 8
The Hollandse Club had 30 players represent 3 teams in this year’s STA Interclub Doubles League. Matches were played over Saturdays and Sundays against other clubs in Singapore. The Men’s B Division team had a consistent season after a close loss to the best team in our pool, we won our next three matches. The Women’s B Team had good wins against NUSS & U & I Teams finishing with a 2-2 win/loss record for the season. The Men’s C Team had won against the Burghley Tennis Club, and had a close loss to the Filipino Tennis Club, at the time of writing they had one more match against NUSS. we are waiting to see if we had qualified for the semi-finals for all our teams based on our win-loss average. Fingers crossed we will update you in the next issue. Well done to all the players who represented this season who did the Hollandse Club proud.

The Retro Tennis Night on 31st August was so much fun, seeing players dressing in their favourite retro tennis gear. After having a laugh at each others unique tennis outfits we got into playing doubles matches using different racquets made of wooden, steel and aluminium tennis racquet frames. SQUASH

The season ended on a bit of a quiet note. None of the 3 teams in the National Squash League made it to the playoffs: • D team had too few D graders and although the E graders playing up fought well it was not enough. • E team should be a walk in the park for us, but the genii of the youth sections of various clubs have a wonderful policy of letting their kids play in divisions below their standard rather than the league above their standard. This way they are filled with a false sense of ability rather than challenging them to improve. The bottom line for us is that we were getting thumped by 14-year olds. • Vet II suffered from too few folks willing to play on a Friday night. Despite a significant interest at signing on time, enthusiasm waned when the reality of the encroachment into weekend drinking time hit home with members. Beer won the day!

A bit of navel gazing and strategising are obviously required. However, the spell check got the right spelling for “strategising” but none of the squash committee members knew what it meant… The summer was eclipsed by the Putin Soccer Cup, the saving grace that England progressed further than Germany for the first time since 1966…It was amusing to hear the echoes of ‘Football’s coming home’ despite some very average performances by England. Still, it was a step in the right direction after the ignominy of getting beaten by Iceland in the last competition. We have had a few little sideshows with the SICC Marigold Jumbo Doubles in late June: • Daniel and Ross – veterans – made it to 2nd place in their Veteran pool and lost in the semis of the Veteran Plate • Colin and Paul – open – first round against the top seeds, second round against a couple of national lady players and despite a very cunning strategy of lulling our opponents into a false sense of superiority by pretending we had no idea what we were doing, the flaw in the plan was that we actually didn’t have any idea what we were doing. Utter chaos ensued, resulting in the obvious loss. Perhaps a plan for the next outing would be to practice playing together beforehand!
• Kim and Ken – open – made it to the final of the plate – not bad… - very stylish as well Chris Leung was back for a brief visit in August before he makes the final move to Dubai – good job it was Taco Tuesday at Jaxs. Any excuse for Colin to get a school night beer in! To look forward to: • September saw the start of the COSMO league where 7 clubs in Singapore try to kill each other on the court and then make up in the bar afterwards – good for middle-aged cripples desperately trying to relive what they remember of their 20s. • 1 September is the Annual Gautam Mug against the Singapore Cricket Club – it used to be a bowl (which was not orange originally but due to the extravagant budget the squash club was able to afford, soon became orange with rust) and so we put a mug on a mug as a replacement. • 5-7 October is the Hollandse Club Squash Tournament – open to all members • 2-4 November is the Hollandse Club Veterans Tournament – open to all with three age groups 35+, 45+ and 55+ • 1 December is the 2nd annual Racquetlon of the year – which should really make it bi-annual but we don’t know if that means twice a year or every 2 years – so we stick with annual… anyway we will trash the tennis section again (unless they get some more giants…) As always, we are on the look-out for new players to join our very vibrant section. Social squash sessions are: • Tuesday 7.00 – 9.00pm • Thursday 7.00 – 9.00pm • Saturday 2.00 – 5.00pm

We live in a world where we rush from the moment we first wake up. Sometimes we struggle to find the time to exercise to keep ourself fit and healthy. It is necessary to do at least thirty minutes to one hour of physical activity a day which can be brisk walking, exercise at a gym or - we have these three exercises for you to do in your own place and in your own time.
THE PLANK All you need is a mat and it can be done in your own home or gym. Plank workouts strengthen the upper body and your lower body and it is a cardiovascular workout as well. It improves your core muscles and stabilises your spine and posture. It is an isometric exercise which works the entire body, which includes, shoulders, biceps, lower back, chest, abs, calves, thighs and your glutes.
Do make sure that your entire body is as straight as a plank from your lower body to your upper body. And do focus on your breathing as well. To start with you can do 30seconds and as time goes by you may increase it to 1 minute.
THE SQUAT The ladies loves this exercise as this targets the glutes and the entire legs and is a full body compound exercise. You can use your own body weight to perform this exercise. As you get stronger and fitter you can use a barbell over your shoulder to add weight while performing the squat. It burns calories and you tone your muscles. As you squat do take note that your knees should not cross over your toes as this puts pressure on your knees and ligaments. Keep an upright posture as you perform it.
CYCLING I am sure everyone of us enjoys cycling. This exercise is a stationary cycling while your back is resting and you start cycle in the air. It targets your glutes, hamstrings, quadriceps and you core muscles. One minute would be a great one to start with. As you become stronger you can increase it to two minutes. These three exercises are simple to perform. However do consult your doctor for a medical checkup before jumping into any physical activity. INGREDIENTS Pulled Pork Filling 1 shoulder of pork (1.2kg with bone), deboned and fat left on 2 cups soy sauce 3 cloves garlic, chopped 20g ginger, chopped 5 coriander roots, chopped
Pumpkin Mash Pumpkin (900g–1kg) Freshly grated nutmeg, to taste 2 tsp soft light brown sugar 40g unsalted butter
2 cups of white wine vinegar
Sea salt, to taste
1/2 cup sweet soy sauce
Pie Crust
1 cup brown sugar
500g shortcrust pastry
2 onions, roughly chopped 5 chillis, roughly chopped 1/2 cup of coffee beans 1 shot Kahlua

CO FFE E P U LLE D P O R K A N D PUMPKIN PIES METHOD To make the filling 1. Preheat the oven to 180°C/350°F. 2. Place all ingredients into a baking tray, cover the tray with aluminum foil and bake for 3-4 hours, till the pork is tender. The pork should be falling apart when poked with a knife. 3. Remove the pork from the marinade and allow to cool slightly before shredding. 4. Transfer the rest of the marinade to a pot and reduce by half. 5. Skim the excess fat away so you have a non-greasy sauce. Strain the sauce and set aside. 6. In a small pot, heat Kahlua and flame to remove alcohol. 7. Add to the sauce, taste and adjust seasoning to taste. 8. Mix a couple spoons of sauce with the shredded pork cheeks and set-aside. To make the pumpkin mash 1. Cut the pumpkin in half and remove the seeds. 2. Place the pumpkin halves on a large piece of foil. Season the cut sides with salt, pepper and nutmeg, then sprinkle over the light brown sugar.

3. Divide the butter in half and place one half in the centre of each pumpkin half. 4. Cover tightly with foil and bake for 50 minutes or until the pumpkin is soft. 5. Remove the pumpkin from the oven and let it cool for 5 minutes. 6. Scrape out all the flesh from the skin into a bowl and mash the pumpkin flesh well with a fork until smooth. Taste and adjust the seasoning, if necessary, set aside and keep warm. To assemble the pies 1. Preheat oven to 200°C/400°F. 2. Lightly grease six 10 x 8cm round moulds (each 300ml volume). 3. Roll out shortcrust pastry on a lightly floured work surface to 3–4mm thickness and cut
out six 16cm rounds, then use them to line the prepared moulds. 4. Leave to rest in the fridge for about 30 minutes or until needed. 5. Combine the pulled pork with its sauce. Adjust seasoning, if necessary. Spoon the pork mixture into the pastry-lined moulds, filling each mould about three-quarters full. Spoon the warm mashed pumpkin on top of the pulled pork mixture, dividing it equally between the moulds. 6. Bake the pies in the oven for 25–30 minutes or until the pastry is cooked through and the pumpkin tops are golden brown. 7. Remove from the oven and let the pies rest in the moulds for 10 minutes, before carefully turning them out on to serving plates.

CHORIZO STUFFED CHICKEN

INGREDIENTS 1 chicken, deboned 1 lemon 400ml chicken stock 1 tsp paprika
METHOD To make the stuffing 1. Heat a splash of olive oil in a frying pan, add the chorizo and fry until turning golden brown. 2. Add the onion and cook until softened, then add the garlic.

3. Cook for a further couple of minutes before adding the leaves from 3 thyme sprigs. Stir in the cannellini beans, seasoning well. Cook for a minute or two to warm through.
200g chorizo, skinned and cubed
4. Add the tomatoes and a couple of tablespoons of the oil they are stored in.
200g sundried tomatoes, chopped
5. Stir to combine, then remove from the heat.
2 x 400g tins cannellini beans, drained and rinsed 1 onion, peeled and finely chopped 2 garlic cloves, peeled and finely sliced Bunch of thyme sprigs
To make the chicken 1. Preheat the oven to 180°C/355°F 2. Season the chicken with salt and pepper. 3. Fill with chorizo stuffing, lemon zest and a gentle squeeze of lemon juice. 4. Tie up the chicken with butcher twine and rub olive oil over the chicken skin. 5. Sprinkle with paprika and season with salt and pepper. 6. Place chicken stock in a roasting tray, a couple sprigs of thyme and place chicken in the tray. 7. Bake until golden brown, about 1 hour. Remove and allow to rest for 15 minutes before serving.
