We’re well into the wedding season, and along with it comes some hefty expenses. Whether you’re getting married, are a parent of the bride or groom, are in the wedding party or are attending as a guest, the cost to take part can be exorbitant.

Keep your budget in check with my wedding season financial survival guide HIGH EXPECTATIONS

In addition to the big day, the recent trend is to host more pre-wedding events. There are often several bridal showers, possibly a stag and doe, and the bachelor party might be an out-of-town brew haha. Engagement parties and photos are becoming the norm. All of these expectations can put an unnecessary financial strain

on the couple, as well as their guests who feel obligated to participate. If you’re a guest, pick one or two events. If you’re part of the couple, try to keep the extra events to a minimum so as not to put a strain on everyone.

CUT OUT THE EXTRAS

To help keep costs down, keep the guest list small and trim certain elements. Is a full wedding party necessary? There are lots of extras for those involved, including a special outfit, as well as hair and make-up. Feelings of those who may feel left out would be spared if the wedding party was eliminated. Instead of a plated meal, consider a buffet. Look at the cost of a DJ over a band.

BE UNIQUE

Save money with a different approach. Choose a day other than a Saturday. Rather than a ballroom, consider another type of venue. Host a wedding at a five-star restaurant (as an example) on a weekday, and save big. Vendors also offer discounted rates during the week, like cake makers, hairdressers, wedding planners, etc. The Hollywood trend is to host weekday weddings, so get on board with the celebrities and don’t listen to the critics.

WEDDING GUEST

If you’re a guest at a few weddings, try to find one outfit that will work for all of them, or borrow a dress or a suit from a friend. Drive (if possible), rather than fly. Stay in an Airbnb, instead of an expensive hotel. If you’re invited to a wedding where you don’t know the couple very well, don’t feel obligated to attend. Instead, send your regrets with a small congratulatory gift.

THE GIFT

The one area that you shouldn’t cut back on is the gift. Even if you had to travel to attend the nuptials, your presence is not the present. You are honouring the celebration of the couple’s union as a positive participant in one of the most important days of their lives – the gift should reflect that. n

Touted as one of Canada’s first celebrity chef’s, Jamie Kennedy is also a member of the Order of Canada, and a recipient of the 2010 Governor General’s Award in Celebration of the Nation’s Table.

K

ennedy’s appetite for gastronomy was sparked some 50 years ago at the age of 10 when his father moved his family to Connecticut. In his senior year, Kennedy was the the president of the cooking club.

Following his high school graduation, and the family’s return to Canada, Kennedy was at a crossroads. He hadn’t applied for post-secondary education, so decided to work in order to fund his desire to travel. Cooking was something that he was genuinely interested in, so it might be said that it wasn’t a coincidence that he wandered into the legendary Windsor Arms Hotel at exactly the right time on that specific day. “I was fortunate to have arrived at the

hotel between the lunch and dinner service,” says Kennedy. “Had I arrived closer to noon or the dinner service, it would have been a different reception. There was time to look at a young candidate. Ultimately I accepted a job offer as apprentice cook, which determined my life for the next three years.”

Kennedy’s entrepreneurial trajectory began in earnest after he left Scaramouche in 1982. He opened a series of eating establishments that Torontonians from every walk of life enjoyed for decades.

One of Kennedy’s greatest fans, Toronto criminal lawyer Clayton Ruby, once stated that Kennedy was the heart of Canada’s food movement – a nod to Kennedy’s dedication to the sourcing of local and sustainable ingredients. It was Ruby who successfully nominated Kennedy for the Order of Canada in 2010. “It has been my life’s work to create regional dishes and encourage others to do the same thing in their areas,” says Kennedy. Known for his culinary innovation, Kennedy’s creativity flourished. He opened a series of restaurants, which included Jamie Kennedy Menus Gastronomiques, as owner and chef. Once Kennedy earned his certificate as a cook through his apprenticeship and in-school training at George Brown College, he pursued his dream and travelled throughout Asia and Europe. After returning to Toronto, Kennedy started working at Scaramouche in 1980 with partner chef, Michael Stadtländer. “It was an incredible experience for one so young,” says Kennedy. “It was the foundation for my career in Toronto.”

The Jamie Kennedy Cookbook, HarperCollins, 2014. Kennedy also dedicated his time to many causes within the industry, including co-founding Slow Food Toronto, 2003. In 2011, Kennedy received the Chairman’s Lifetime Achievement Gold Award from the Ontario Hostelry Institute. Kennedy’s culinary stardom rose to such a height that at one time he had three active restaurants, a booming catering business and 100 people on the payroll – all of which were pulling him in a myriad of directions. “It didn’t really work for me,” says Kennedy. “It was a tough go. I made a couple of classic entrepreneurial mistakes and it threw me into a tailspin.”

In 2014, Kennedy handed over control of Jamie Kennedy at the Gardiner. “It took a lot out of me, but I was determined to keep going,” says Kennedy. “And I did. The solution for me was to get back to a business model that I was comfortable with.” For Kennedy, it wasn’t that he lost his passion for his craft, it was more about the financial challenges that he was facing. After a quiet year of recovery, Kennedy was back with a more reasonable framework that included a small restaurant and a catering sideline. “I really strove to find a comfortable work model – one, in which, I didn’t feel overwhelmed or drained by – rather, that I could flourish in.” After 40 years in business and a lifestyle that had come to define him, Kennedy closed the Gilead Cafe & Wine Bar on March 31st, 2015 and transitioned to his 115-acre rural property in Prince Edward County. “After Gilead closed, I moved all of my pots and pans to the farm,” says Kennedy. “Having this property has helped me to decompress and relax. My farm projects keep me busy and happy, and give me more balance.” That balanced lifestyle includes more hobbies. Kennedy planted an acre of vines to familiarize himself with the process of growing grapes and making wine. “Taking the grapes and transforming them into wine through fermentation is a magical process. now because I know what it took to grow the grapes. It is something that occupies my time and gives me physical work. I get right in there and cultivate the vines. I would encourage others to find something that turns them on.” Retirement is not attached to an arbitrary age for Kennedy. He recognizes the struggles and limitations that other people have, and appreciates that he’s in good health. “I don’t regret not being young, but I do understand the expression – youth is wasted on the young – more than I did when I was young,” says Kennedy. “At this age, what we yearn for the most is that level of energy and flexibility that youth had.”

Kennedy admits that his biggest challenge was finding a balance between his work and his private life. These days he spends more time with his children who range from 21 to 33. One daughter lives in Los Angeles, and the other three are within reasonable proximity. As an avid supporter of environmental issues and involved in a wide variety of community work, Kennedy was a pioneer in the nationwide farm-to-table movement. Once again, he will be hosting his five-course Summer Dinner Series at Hillier Farm, which is held in a rustic barn setting and features a feast of local organic delights. “I look around and I see a future here,” says Kennedy. “I feel incredibly lucky to have stewardship of this place.” n

Niçoise-Style Salad with Local Smoked Whitefish

G

iving classic French dishes a new regional Canadian flavour is something that has interested me for many years. Salade niçoise is a beautiful creation, full of sunny reminders of the south of France, where it originated in the sun-drenched city of Nice. Although the dish itself is arguably already perfect and I have great respect for tradition, in the interest of creating a local version that reflects our terroir, I have used the original to inspire this version. It uses one of my favourite ingredients, local smoked whitefish. It is especially delicious using fresh eggs, tomatoes, herbs and greens from my farm. INGREDIENTS

DIRECTIONS

1 head of butter lettuce 100 grams fresh green beans, trimmed 4 new potatoes 4 small field tomatoes Salt and freshly ground black pepper 2 shallots, finely chopped 30 ml white wine vinegar 1 small red onion, sliced into thin rounds 20 niçoise-style onions 4 hard-boiled eggs, quartered 350 - 400 grams of smoked whitefish, skin removed and cut into 4 pieces 4 fresh basil leaves, thinly sliced 60 ml fine olive oil

• Tear the lettuce into bite-size pieces.

Cook the beans in a pot of boiling water until tender. Remove the beans, refresh under cold water, drain and reserve. Add salt to the water and cook the potatoes until just tender; drain and cut into slices.

• Cut the tomatoes into quarters and season with salt and pepper. Stir together the shallots and white wine vinegar.

• Divide the lettuce among four plates. Arrange the prepared vegetables, onion slices, olives and eggs in a pleasing pattern on the plates. Top with the smoked whitefish. Sprinkle each plate with the shallot vinegar mixture and basil. Drizzle the olive oil over each plate. Season with salt and pepper. Serve. n myhomepage.ca/activelife

When the work week is over, Kennedy enjoys returning to the city of Toronto with his Aussie Shepherd/Border Collie, and taking in cultural events that have nothing to do with cooking. “I want to stay working as long as possible,” says Kennedy. “It’s good for your mind and your sense of self and well-being. And, because there is a physicality to cooking, like any craftsman, the longer you do it, the better you become. I have a more confident approach and calmness about my cooking now, as opposed to 20 years ago.”

Before removing the tick, disinfect the area with rubbing alcohol. Then, using disinfected fine pointed tweezers, pull the tick up with a steady hand trying to remove it whole with the head intact (don’t twist the tweezers). Once removed, apply more rubbing alcohol to the area. Put the tick in a plastic bag for testing.

Unmasking Lyme Disease e are hearing more and more about Lyme disease. Sometimes it takes celebrity news to bring it to the forefront, as in the case of the former spouse (Yolanda) of musician David Foster who contracted the disease, even though its first written description dates back to the 18th century. It wasn’t given its current name until 1975 when a few cases were identified in, and around, Lyme, Connecticut. Originally diagnosed as juvenile rheumatoid arthritis, Lyme disease was discovered to be an infectious disease caused by a type of the Borrelia bacteria that is transmitted to humans from the bite of an infected black-legged tick – often known as a deer tick. Ticks become infected by feeding on infected wild animals, such as deer, rodents and birds. The disease-carrying ticks can be found throughout Canada, as well as in the northeast and midwest regions of the United States, many parts of Europe and various locations around the world.

COMMONSENSE PRECAUTIONS If you plan to travel and/or spend time outdoors this summer (especially in, or around, grassy and heavily wooded areas) take a few simple precautions to avoid getting bit by a deer tick. ◆ Wear long sleeves, and tuck your pants into socks or boots, and wear closed-toe shoes. ◆ Wear light coloured clothing so that you can see ticks if they land ◆ Use repellant products for insect protection (follow directions) ◆ Check children, pets and yourself for ticks before entering the house ◆ Shower or bathe within two hours of being in a wooded area to wash away ticks ◆ Maintain the area outside your home: mow the grass, remove leaf litter and brush, and keep bird feeders and woodpiles away from the house TICK REMOVAL If you do find a tick on your body, stay calm, but remove the tick quickly. Infection is usually prevented if the tick is removed within 24 to 36 hours.

DIAGNOSIS AND TREATMENT Because Lyme disease has nonspecific symptoms, it can often be misdiagnosed as rheumatoid arthritis, multiple sclerosis, chronic fatigue syndrome, lupus, fibromyalgia, plus a multitude of other diseases. If suspected, a simple Lyme disease blood test can be given. In the early stages of the disease it can produce a false/negative result. oping to have more time in July and August to get into shape is often the plan, but the reality of barbecues, day trips and the hot, lazy days of summer has those days, weeks and months flying by. The bike is primed and ready to go and those sneakers are at the ready by the back door for an early morning walk, but once the ‘too’s’ set in, the best of intentions fly out the window - it’s too hot, it’s too humid, it’s too boring or you’re too busy. Three years ago, I got a spring tune-up on my bike, but after riding it once, it was too much effort to get it down from its hook in the garage. The more I thought about it, I realized that I was headed down the wrong path – figuratively and literally. It wouldn’t make sense for me to advise you to take up skateboarding as a fitness activity if you’re not going to be compliant – as compliance is the key to any fitness regime. It’s important to find new ways to motivate ourselves. The latest rage is fitness trackers. Most of us love to receive feedback (how many steps?) and incentive (you win virtual rewards and can compete against others). Use these devices if they work for you, but it’s important to add in the fun factor, as that’s what’s going to keep you going. Often it’s the tried and true activities that are the most enjoyable.

On Canada's 150th birthday, it’s quite fitting that a notable Canadian painter, Tom Thomson, is being recognized on the 100th anniversary of his death. From 1915 to 1917, he produced some of his most famous works, including The Jack Pine,

In honour of Thomson’s memory, The Portage Store on Canoe Lake in Algonquin Park is hosting exclusive tours. Horseback riding through the forests, farmland and the jaw-dropping vistas of Muskoka is a great way to go. Beyond Equine Centre has horses suitable for all riding levels, as well as wagon rides, marshmallow roasts and farm tours. Choose furniture THAT FITS YOUR HOME

here’s more to selecting furniture than picking a style and a colour. When shopping for furnishings it’s very important that everything fits in relationship to the size of the space or room, and that it functions properly. While considering scale may sound obvious, it doesn’t mean that you should choose ample, or puffy, furniture to fill a big space. In larger rooms, it’s advisable to break up the space with tailored furniture pieces that are positioned in conversational groupings. Intimate groups of furniture that are arranged together around a main seating area will not only fill the room, but make it feel visually comfortable.

A large space also doesn’t mean that you have to have more furniture. For some it’s tempting to try to fill every corner, but it can make the room look cluttered and overwhelming. Instead, look at it from a pared-down perspective – it can make all the difference. When downsizing, we’re forced to edit our belongings. It’s the perfect opportunity to get rid of furniture that isn’t suitable, and add new pieces that fit properly. Furniture that is too big for the space will make the room look smaller and constricted. The shape of a piece of furniture can really help in tight situations. For instance, an attractive round table between 38 and 46 inches in diametre, can accommodate four people. This makes for cosy dining and great conversation, and also promotes a more straight-forward traffic flow than a rectangular table.

SIZE DOES MATTER

An average sofa is around seven feet in length (84 to 88 inches). Measure where you plan to put the sofa before you go shopping. For a seven-foot sofa you’ll want the wall behind it to be at least 11 feet long, allowing for two feet on either side of the sofa for end tables, if you choose to use them. We can be deceived by the appearance of space, especially when we walk into a large furniture showroom. A particular piece may look to be the right size in a different setting, so bring a tape measure to make sure that your purchase will fit in your space. As the old adage goes when building; measure twice, cut once. The same can be said when you’re buying furniture. It may look small in the store, so measure twice to make sure that it’s well suited to your space, and that it will fit through doors, hallways and openings when moving it in.

The size of the arms on a sofa or chair will also make a big difference in how a particular piece fits. A sofa with thinner arms can maximize the seating area. If space allows, consider a sofa with deeper cushions so that you can curl up on it. For a casual setting, choose a sofa with lower, boxier arms that are the same depth of the sofa. For a more formal appearance, choose one with raised arms that are the same height as the back of the sofa. In a small guest room, rather than having a large bed that consumes the space, consider purchasing a chair-and-a-half as the focal point, and have a single bed tucked aside. With this type of approach, there may be room to add in a desk or sideboard. There are so many options when it comes to bedside tables. Wider ones are like small chests with

drawers for storage. The average size used to be 24-inches, but 36-inch nightstands are not uncommon, with wider ones available.

CREATE BALANCE

When it comes to light fixtures, consider them as a key piece of furniture to draw your attention to a particular area. Go dramatic with a statement fixture, and then augment the space with other types of lighting, like wall sconces and pot lights. If you have a narrow front hall or entranceway, consider small cubes for temporary seating, and shop around for consoles that are less than 12 inches in depth. Once you’ve chosen furniture that fits proportionately and complements the size of the room, you can then turn your attention to the fun part of decorating with colours and accessories. n

rying to extend outdoor time in our seasonal climate, and squeeze as much living as possible out of our backyards, has become a national preoccupation. With the addition of fire pits, heaters, deep-seated sectional sofas, dining areas and lots of lights, it’s easy to accomplish.

ELEMENTAL FURNISHINGS The quality of outdoor furniture has come a long way. There are far more durable and water-resistant options available, but good quality does cost more. When it comes to frames, there are all-wood ones, like teak, ipe (an exotic hardwood) or treated pine, as well as ones that are a wood/metal mix that include solid aluminum, stainless or iron. Hardy resin/wickers inject a weathered Hamptons’ look. Whatever style you choose, stick to a minimal colour scheme that com-

plements your home. Turquoise and lime suggest a seashore theme, while green and red are pure Muskoka, and black and tan are fashionably uptown. Consider your sight-lines when positioning furniture. When sitting, make sure your eyes rest on a pleasing view. If not, reconfigure. If you don’t have a deck, balcony sized furniture can be arranged to create a similar experience. If you’re short on space, consider an expandable table and stackable chairs. Storing cushions and dining essentials can be a challenge, so incorporate a waterproof bench or a cubby by the back door. Keep extra throws on hand for chilly evenings.

ENVIRONMENTAL CONDITIONS Even the smallest water feature can add a soothing ambiance to an outdoor space. There’s nothing like flickering flames from an outdoor fire and candles. Depending upon your space, flameless candles may prove to be a safe alternative, or string small white lights through a tree or along a fence. Ethanol fire pits are a great option, but check first with your condo board. Long gone are the days when you had to put a speaker in the window from your massive stereo system. Playing music outdoors is easy, and it sounds great. Tune into

your favourite playlist through your computer, phone or Sonos speakers, but ensure that the neighbours don’t have to listen too.

CLANDESTINE MEASURES Typically, an outdoor space is more private if you’re living in a low rise home, than a townhome or condo. Imaginative fixes to counter balance this concern include the installation of lattice or bamboo screening. Also, you can place boxwoods or ornamental grasses in tall, matching containers along the edge of your deck – they not only create privacy, but augment your deck-scape. Umbrellas come in all shapes and sizes, and can be positioned to shade targeted areas. If space isn’t a concern, consider a a pergola. Not only is it an attractive architectural feature, but it can be fitted with a retractable canopy system and screened in to keep out pesky pests. Whether you follow the farmers’ almanac, the pundits of global warming, or listen to the long range forecast, this summer is bound to be a hot one. So, the burning question is, “How do you enjoy a great-looking garden in the heat?”

Y

ou can train plants to expect water only when the soil around their roots dries to three to five centimetres below the surface of the soil. Of course the amount will vary from plant to plant, but the point is that if you water your garden a little bit at a time, the roots stay up near the surface of the soil and wait for you to stand at the end of your hose each evening. It may be water therapy for you, but its bad training for your plants. This rule is equally true for perennials, annuals, veggies, and even the shrubs and trees on your property – not to mention your lawn. Plants that are watered infrequently, and deeply, will send down roots in search of moisture as the temperature rises, and the timing between summer rainfalls stretches from days into weeks.

THIRSTY TREES

Trees need water too – more so when you think back to the weeks of belownormal rain fall that we experienced last summer. Apply water to the root zone of both young and mature trees by placing a hose at the base of the tree with just a trickle of water coming out. Leave it there for three to four hours. If you have trees on your property that were planted within the last three years, watering them is critical at this time of year. A mature, 20-metre-

high maple tree transpires more than 500 litres of water on a hot day, so its important to get water down to its roots. The tree that grows on the boulevard also needs water. Even though it may be owned by the municipality, consider it your responsibility and give it healthy drink.

THE MIRACLE OF MULCH

A six- to eight-centimetre layer of finely ground cedar or pine bark insulates the soil from the drying effects of the sun and the wind. This layer of mulch can reduce the need for water by up to 70 per cent, and is one of the best monetary, and timesaving, investments that you can make for your garden. n

t’s been quite the year for Lucchetta Homes and it’s not even over yet. On May 2nd, they were named Builder of the Year by the Niagara Home Builders’ Association (NHBA) 2017 Awards of Excellence. And on May 12th they received the top award for the Best Community Development of the Year from the Canadian Home Builders’ Association (CHBA) for their development called the Residences of Hunters Pointe. Director of sales and marketing, Kim Kopyl, expressed her enthusiasm prior to the CHBA win simply because Lucchetta Homes had been nominated. As a result of a new program, CHBA received a record number of entries for the 39 th National

Awards for Housing Excellence, and had to pare down thousands of entries to 700. This, alone, was an unexpected victory for Lucchetta. Over a two-week period, 80 judges evaluated all of the entries. “To have been selected as a national finalist was already an immense accomplishment,” said Kopyl. Often referred to as the ‘Oscars’ of housing, 39 awards recognized the best in the industry. I

n cinema, as in music, there is no age limit on genius. That is what makes me re-ask the eternal question: What if? In this case, what if the great American filmmaker Jonathan Demme did not die in April at the age of 73? What if he had been able to battle through complications from esophageal cancer and heart disease to create more stunning and/or influential films? What if he followed in the footsteps of Hollywood legend Martin Scorsese, still vigorous at 74? I asked Scorsese in December if he could stop himself from directing. “No.” he said grinning. “And I don’t want to.” You could also wonder if Demme could have followed the lead of another legend, John Huston. He was a Hollywood renegade who launched his career with The Maltese Falcon (1941) and finished with Under the Volcano (1984), Prizzi’s Honor (1985) and his sublime triumph The Dead (1987) in his final years. The Dead, which Scorsese cites as a Huston masterpiece, was released posthumously shortly after Huston died at 81. He had been written off as a hopeless drunk years earlier. Yet there he was at at 80, directing The Dead from a wheelchair on set in James Joyce’s Dublin. Huston famously leapt out of his conveyance with oxygen tubes dangling from his nose as he barked directions. I repeat, there is no age limit on genius – nor on the indomitable spirit of a creator. Demme, who was born in 1944 in the hamlet of Baldwin on Long Island, New York, was a humanist, political

activist, AIDS awareness campaigner and anti-apartheid spokesman when South Africa was still a racist state. He subtly blended these convictions into his best films, both dramatic and documentary. But he also had a keen sense of wry and, occasionally, wicked humour. Demme’s best-known dramatic films were made when he was in his 40s: Something Wild (1986),

The Silence of the Lambs (1991) and Philadelphia (1993), although we cinephiles also adore his later effort, Rachel Getting Married (2008). In the documentary vein, Demme’s celebrated films bridged decades, starting with Stop Making Sense (1984) and spiking with Man from Plains (2007), three collaborations with Neil Young (in 2006, 2009 and 2012) and culminating with Justin Timberlake + The Tennessee Kids (2016). A note on Demme’s The Silence of the Lambs. It still is the only horror film (however classy it remains) that won the Oscar for Best Picture. It also boasts of being one of only three films that have swept the top Oscar categories of best film, director (Demme), screenplay (Ted Tally), actor (Anthony Hopkins) and actress (Jodie Foster). Demme’s final dramatic film release was the wretched Ricki and the Flash (2015). No problem, Huston directed the equally awful Phobia! (1980) in the cold rain in Toronto just to prove he could still function in his 70s. More classics were still to come. n
