AS SURE AS the sun is always shining

somewhere, even on the most dismal of winter days, when we start a new calendar year, the clean slate brings with it the irresistible urge to start again and rapidly fill that blank canvas with the business of busyness. Before you begin feverishly scribbling in a long 2016 To Do list, consider some sage advice I once read that goes something like this: Don’t waste the perfectly good person you are by trying to be somebody else. We shouldn’t feel we have to become someone else’s idea of who we should be. Sure there may be a few pounds to lose—but with an eye to improving overall health and care of joints like hips and knees. Maybe there’s more grey hair to camouflage too, as we long as we don’t sacrifice our humanity for vanity. Or perhaps you want to learn another language—at least a few key phrases to help you better navigate that one exotic destination you hope to check off your bucket list this year. Before you hit the ground running to get a head start on 2016, consider resetting the pace in your race to fill up calendar space by taking a page out of Brené Brown’s book The Gifts of Imperfection. Brown, through her own midlife unravelling discovered that this is a time when we become desperate to live the life we want to live not the one we’re supposed to live. She says, at this significant time, we’re being challenged by the universe to let go of who we think we’re supposed to be and embrace who we are. Let the unravelling begin and, by all means, take all the time in the world!

Tipping Is it time

FOR MANY OF OUR well-travelled readers, it will come as no surprise that tipping etiquette is different around the world. For example, in America tipping anything less than 20 percent at restaurants is considered bad manners, but across the pond in places like England and France, there’s generally no expectation of a tip for service. When I was in England, I learned quickly there was no need to tip at a bar. Is tipping an out-of-date custom or is it still a relevant way to say “Thank you” for serving us so well. Some North American businesses want to eliminate tipping, but does it make economic sense?

Eliminating Tipping

A restaurateur in New York City, a place with arguably the most established tipping culture, wants to remove tipping from all restaurants. Danny Meyer’s is chief executive at Union Square Hospitality Group.

He recently announced they will be eliminating tipping at 13 restaurants operated by the company. Instead servers and staff will receive better hourly wages. To make this happen, prices will be increased and all menus will show that hospitality prices are included. The bills will no longer have a blank line to include tip. Customers will pay what they see. That’s it. Meyers believes this will help by providing more predictable and reliable wages and give his 1,800-plus employees more job security.

The Economic Impact

According to University of Guelph Associate professor Bruce McAdams, tipping brings $6-billion annually into Canada’s economy. McAdams teaches at the School of Hospitality and Tourism Management. He based that number on an average 15 percent tip rate at full-service restaurants across Canada. He says tipping for Canadians is a social norm and taking it away may prove to be difficult. In 2014, a restaurant called Smoke and Water, in Parkville, B.C., attempted to eliminate tipping by doing much like Meyers is in New York. But they abandoned the effort after only three months when they discovered that customers didn’t like the idea of not having control over how much they could tip.

Canadians are Generous

In a survey of five major cities, the online travel rating site Trip Advisor found Canadians tip anywhere from

15 to 20 percent. That was the range it recommended to tourists visiting our country. Ottawans are the most generous tippers at 15.6 percent then its Montreal, Toronto Vancouver and Calgary. Calgarians tip on average only 13.3 per cent. Eliminating the custom of tipping would mean raising prices by that much in order for servers to feel like they are being adequately compensated.

Would Eliminating Tipping Work?

Getting rid of tips from establishments like restaurants, hair salons and taxi cabs would take a lot of courage from the individual companies. Business owners would have to feel confident that raising wages and increasing prices wouldn’t scare customers away. Tipping in North America is much more established but has been criticized as an ineffective way to pay those who work in the service industry. In many cases, servers get lower wages because the expectation is they will make more money by collecting tips. Economically, new rules would have to be established to raise the minimum wage of servers. There could also be tax implications for staff who may not be claiming all their cash tips in their annual salary. It’s one thing for a tourist to adapt to the tipping culture in a foreign city but it’s another kettle of fish when you try to change the habits of customers in their home town. n

or tried and true Toronto Maple Leaf fans, there is no middle ground, no centre ice; it is a roller coaster of breakaway emotions, playoff dreams, and dare we say it, a Stanley Cup parade, all the way down Yonge Street and back up Bay to the team’s home at the Air Canada Centre.

FAMILY AND FRIENDS

It has been decades of unrequited dreams but with the new face of the 2015-2016 Leafs’ team, coach and management, hope, once again, springs eternal. A key driver and strategist of these new initiatives is Brendan “Shanny” Shanahan, President and Alternate Governor of the Toronto Maple Leafs.

While thousands of young would-be hockey stars would salivate for such an opportunity, it was a bittersweet time for Shanahan, whose dad, Donal, a chief inspector for the Etobicoke Fire Department, was stricken with Alzheimer’s at the young age of 52.

Shanahan, 46, comes with the goods. A career packed with goals, gold medals, and thousands of penalty minutes. At the time of his retirement in 2009, Shanahan was a leader among active NHL players for goals scored. In fact, he is a walking trophy case. In June, 2011, he became the NHL’s chief disciplinarian, delivering numerous suspensions to players via video replay of the disputed infractions, a process which is now a de rigueur NHL policy of discipline around regulatory violations. On November 8, 2013, Shanahan was inducted into hockey’s revered Hockey Hall of Fame.

While Shanahan’s world has evolved exponentially from his family home in Mimico, his dedication to both family and his childhood friends is constant. By the time he turned 16, Shanahan had left home to play hockey in London. At 18, he was in the NHL.

“My dad never got to see me play in the NHL,” Shanahan says. “He started to disappear on me when I was 16 and died when I was 21.” After Shanahan won his first Stanley Cup with the Detroit Red Wings in 1997, he made a private Saturday afternoon visit to his Dad’s grave to show him the Cup and share in his happiness. There is an irony to Shanahan’s interpretation of his initial hockey-playing success, an endearing detail that reflects his down-to-earth persona. “I thought my friends’ lives were so much more interesting because they were doing all these new things,” Shanahan says. “I was certainly the more interesting at the ages of 16 to 18 because I was starting my career as they were finishing high school. But then my friends went to college, started a job, got promoted. They said to me, ‘What are you doing?’ I felt a little bit envious of the variety of their lives while I still had the same job over a 21-year period.”

While Shanahan did that “same job” with five different teams over the course of his career, including the St. Louis Blues, Hartford Whalers, Detroit Red Wings, New York Rangers, and two stints with the New Jersey Devils, he always had one eye on “his” Toronto Maple Leafs, a commitment to the team which is deeply personal. “I watched the Leafs while I was growing up and always kept one eye on them,” Shanahan says. “I understand what it means for people in this city for the team to have success. And how it feels when it doesn’t appear there is hope. It’s like a kid growing up in Dallas being asked to run the Cowboys, or a kid in the Bronx being asked to run the Yankees.”

“I’ve always been someone who, even at a young age, was able to recognize when I was in a moment. I’ve never looked back and said, I wish I’d realized what great times those were.” Shanahan’s ties to Toronto run deep. His Mom, Rosaleen, who Shanahan calls his hero—she drove to London most weekends to watch him play hockey after Donal died—still lives in the same family home. So when he was approached with the offer to be the Leafs’ president, Shanahan tried to weigh the decision objectively and without emotion. It became a family decision that included his wife, Catherine, his 13-yearold twins, Jack and Maggie, and daughter Cate, 11. “My wife has been incredible. She has given me a great gift in allowing me to come here and do this. When we finally made the decision—with the kids a part of it—my wife gave me a hug and said, ‘I knew you were taking it the day they talked to you about it’,” Shanahan says with a smile.

“One wins and the other loses,” Shanahan says. “As a hockey player you get hit over the head with your victories. When you score, people cheer. The thing I had to learn in my five years at the league is balance. That means having a thick skin. It is learning how to take in the good and block out the bad.” Another factor that hockey players deal with when they retire is the feeling that a part of them has died; the ability to go out on the ice and perform is taken away at a fairly young age, somewhere between the mid 30s or early 40s as was the case for Shanahan. “You look for other ways to get going,” Shanahan says. “I’m definitely a challenge-oriented person. I don’t mind sitting back and relaxing in the midst of having a challenging job, but I wouldn’t enjoy sitting back and relaxing without knowing that the wheels were turning somewhere in my mind with a challenge that I had taken on.”

EVER YOUNG AT HEART Fatherhood is at the top of the list when Shanahan counts life’s gifts. “It is a blend of me getting older and my children getting older too. Each age has been so much fun. With my kids I’m part dad and part kid. Oftentimes, my wife will say she is laying discipline on all four of us children,” Shanahan says with a boyish grin. ACTIVE LIFE

A big believer in being totally immersed in the challenges at hand, often to the point of obsession, Shanahan is also a firm believer in solitude as a means to strategize and decompress. Often he will sit in the corner of a restaurant, iPad in hand, and spend some time thinking.

One of the hardest transitions of aging for Shanahan is recognizing life’s victories and failures, a fact that he says was not nearly as hard when he played hockey, where the victories were obvious and clear cut.

“I really don’t focus a lot on age. When I was younger I felt older, like a 28-year-old man who had a job and responsibilities. Now that I’m older, I feel younger, until someone calls me ‘sir’ on the street that I think is way older than me, or I see a photo and I see I have a lot of grey hair. I remain young at heart and mind by being around the game. That’s the gift that hockey gives to us; it allows us to be kids at heart.”

GO LEAFS GO! And at the end of the day, hockey is what quickens the spirits of Torontonians, arguably one of the most hockey-crazed cities in either division. Shanahan, Toronto’s home-grown Mimico boy, understands that, lives that, is committed to that. “I don’t forget what the team meant to the people that I grew up with, to what hockey means to the entire city. Underneath my smile is a fierce determination to do whatever it takes. My single biggest dream, the one that I am committed to achieving, is to win a Stanley Cup here in Toronto. I won’t be entirely happy until I achieve my goal here.” May the force, in the guise of Mike Babcock, Lou Lamoriello, Kyle Dubas, Mark Hunter, and the entire Maple Leafs roster be with him and all of Toronto too. n active-life.ca

Cold-Weather

SKIN CARE Protective, preventative and corrective tools to help your skin this winter BY GAIL ROBERTSON

This weather can contribute to premature aging, fine lines and wrinkles. Although your basic skin care routine may remain the same, it is necessary to add an intense moisturizer or oil-based cream. Serums and products containing hyaluronic acid are especially beneficial and suitable for all skin types. Hyaluronic acid is a natural component already in the body, a glycosaminoglycan found in extracellular tissue space, joints and eyes. It is also a valuable antiaging defense in skin care products. Washing with tepid water instead of hot will help reduce the drop in PH levels. These products will create a protective barrier for the epidermis and maintain hydration in the dermal tissue. In addition, don’t forget the importance of sunblock during the winter months; UV rays are just as damaging from winter sun. Skiers should be especially diligent with moisturizers and sun block. Exfoliating more regularly will also help shed dead skin cells and allow better penetration of moisture. Either a simple, gentle exfoliating scrub or a chemical peel from your medical esthetician once a month will do wonders. Chemical peels will also stimulate collagen and elastin cells, plumping up skin and leaving you with a youthful radiant glow. Extreme winter cold can exacerbate some sensitive skin conditions

such as rosacea and eczema. In this case, a gentler more specific treatment may be recommended by your skin care professional or physician.

Defining Skin Products

Skin care products can vary greatly in cost and efficacy; however, it is important that you consult with a professional to identify products best suited to your skin type and needs. The major difference between drug store products and products from a clinical Medi Spa is the allowable percentage of active ingredients governed by the CSA. For example, ingredients such as Glycolic/AHA (Alpha Hydroxy Acid) has a 2 percent maximum and at a clinical level can be as much as 15 percent. Products containing Retinol are also very effective in skin repair and vary in percentage according to the source.

Laser Skin Therapy

Winter is an ideal time to introduce Laser Skin Therapy. Although it is safe to have laser treatments all year-round, you have to be extremely cautious with sun exposure during the core summer months. There are many different lasers to address an array of skin concerns and the downtime will vary according to each technology. Non-invasive technologies, such

as IPL (Intense Pulsed Light), has little to no downtime. IPL/Photo Rejuvenation is used to treat sun damage, broken blood vessels and help reduce fine lines while stimulating collagen and elastin. IPL is a good anti-aging preventative measure alternating with chemical peels and treatments such as Oxygeneo and SWiCH, all with minimum downtime. Fractionated technologies, such as Fraxel Restore skin resurfacing, are also non-invasive, but have an approximate downtime of three days. This treatment is targeting the deeper dermal tissue for tightening and remodeling, while shedding several layers of the epidermis resulting in resurfacing. Fractionated technology will significantly reduce acne scars and surgical scars as well as reduce sun damage and shrink pores. Ablative resurfacing technologies are actually removing the epidermis, exposing the deep dermal tissue for anti-aging and tightening. Ablative treatments generally have a twoweek downtime with strict home care instruction. n For advanced skin care treatments, research and qualify the accreditation and experience of the professional you choose. Catherine Peterson, now 51, took stock of her health and weight issues in her late thirties after having five children and putting on 50 pounds. “After the birth of our fifth child, I found that for the first time I was overweight, and unhappy.” Peterson confessed that, “My daily routine included a bag of cookies during

nap time and eating a family-sized chocolate bar with a Coke after the kids went to bed. “But there were other problems. I was diagnosed with depression and anxiety disorder. The medication caused further weight gain. Although my doctor encouraged me to exercise, it was the last thing I wanted to do. “However, I did hire a personal trainer and began to see results. During my year-long journey of losing the 50 pounds, I discovered an incredible passion for helping women become healthy and strong. I took the courses and became a Certified Personal Trainer Specialist.” When the Curves near Peterson opened in the early 2000s, she submitted a resume and was hired. “I lost my last 10 pounds with the Curve Circuit and by following the

Curves Complete program.” In April, 2009, Peterson bought the Newcastle Curves location in Clarington and is now the franchise owner. “My heart absolutely aches for women who are unhappy, unhealthy, overweight, underweight, depressed, and lonely. I feel burdened by this and I am determined to make a difference. We have quite a diversity of women here; women with physical challenges, psychological challenges, and so on. My goal is to empower every member and to help them discover their true potential.”

On the Road to Fitness

Six years ago, Maureen Catania, 56, shared her story with ACTIVE about losing 50 pounds. We recently asked her how she’s doing. Because her work takes her out of town quite a bit, either by car or air travel, she has encountered a few hurdles, but she has maintained and even lost a few more pounds. “I credit working with a personal trainer as my key to continued fitness success,” says Catania. “The return on investment is significant for me.” The personal trainer outlined a routine Catania can do in a hotel room. “I have a routine that includes planks, back lunges, push ups, and so on,” she said. Catania brings along a portable fridge and her trusty NutriBullet when she’s travelling by car. When at home, she maintains regular sessions with the trainer and visits the gym almost daily.

I stock the bar fridge in the hotel room with tuna, peppers, cooked chicken or beef, pre-washed salad, Greek yogurt, and almonds. And I can always make a protein shake.” When asked what her biggest obstacle has been, Catania admitted, “The single biggest thing I’ve changed is cutting out sugar. I was a sugar addict. Sugar kept me fat and prevented me from achieving my weight goal. I stopped eating cake, cookies, pastries, pasta, bread, rice, and potatoes. And, I limit myself on whole grains.” She likens the whole weight loss and fitness process to moving a boulder uphill. “It gets easier once it’s moving and I have no intentions of having the boulder roll back downhill. It was a lot of effort in the beginning to get it going but now it’s much easier to maintain.”

Alzheimer’s is Personal “So many people with this disease feel isolated and marginalized,” said Julianne Moore during her Oscar acceptance speech for her role in Still Alice. “And one of the wonderful things about movies is it makes us feel seen and not alone. And people with Alzheimer’s deserve to be seen, so that we can find a cure.” Although Dr. Alois Alzheimer first identified the disease in 1906, it was not until 1976 that Alzheimer’s was recognized as the most common form of dementia. Today, Alzheimer’s diagnoses are still on the rise, and most of us are affected by it in some way. There are several age-related changes we can experience, such as minor memory loss, vision changes due to cataracts, and occasional weariness that are not necessarily

signs of Alzheimer’s. But when should we start to worry?

Dementia is a decline in memory that affects one’s ability to perform everyday tasks. Many conditions that are reversible, such as vitamin deficiencies and thyroid problems, can cause dementia. Therefore, it is important to seek medical advice early on. Never attempt to self-diagnose or rely on an

Alzheimer’s is a progressive disease that destroys memory loss and functions such as intellectual and social skills due to brain cell degeneration. High-risk factors include age, genetics, environment, lifestyle, and co-existing medical conditions. At present, no cure means relying on medication and management techniques to temporarily improve symptoms and stall progression. Research is showing that a healthy lifestyle may prevent and/ or slow down the disease. A healthy lifestyle includes: regular exercise, a healthy diet and weight, social and intellectual stimulation, controlling type 2 Diabetes and high blood pressure, no smoking, and obtaining treatment for depression.

Living with Alzheimer’s

My sister-in-law, Carolyn, was diagnosed with Alzheimer’s ten years ago. Over the years, Carolyn’s family has been very grateful for the help extended by the Alzheimer’s Association. They provided information, support groups, respite care, and a day-away program. When Carolyn was transitioned into a long-term care facility, the association assisted. This is where you’ll find some of the most diverse year-round fishing in Ontario. Anglers can fly fish in the Ganaraska River that runs through the heart of town and empties into Lake Ontario. Excellent for trout and salmon fishing, charter boats will take anglers out on Lake Ontario during the summer months. And, when you’re not fishing the Ganny you might try floating your Fanny down the river. The annual 10 km race welcomes canoes, kayaks, and crazy watercrafts. Golf enthusiasts will enjoy the Port Hope Golf and Country Club with its challenging 18-hole course overlooking Lake Ontario. Nearby Trickle Creek Farms offer horseback riding. And, one of Port Hope’s best-kept secrets is a bowling green established in 1900. There’s no shortage of places to take a hike, such as the trails along Lake Ontario, the Ganaraska River, and in the Ganaraska Forest Centre. The Forest Centre offers Tree-Top Trekking, an aerial adventure tour using platforms, ropes, bridges and zip lines. The Waterfront Trail and country sideroads are perfect for cyclists to take a scenic tour through the Municipality’s pretty villages and hamlets.

Men of Distinction Joseph Medlicott Scriven was a scholar and lay preacher who penned a particularly famous poem in the 1800s. William Leonard Hunt was a high-wire daredevil known as The Great Farini. Scriven came to Ontario from Dublin, Ireland in 1845. The poem that went on to become a beloved hymn was first published in the Port Hope Guide in 1870. However, it wasn’t until Charles Converse found a copy of the poem in his Pennsylvania organ factory—it was mistakenly left behind by a travelling music salesman—that the words were put to music. Today we know the collaboration as “What a Friend We Have in Jesus”. While the hymn became universally known, Joseph Scriven died in obscurity. You can learn more about Scriven at josephscriven.org Hunt, born in 1838, lived an adventurous life that early on included walking a rope strung between two buildings about 80 feet above the Ganaraska River in Port Hope. During his second river walk onlookers were awestruck as he stood on his head in mid-walk. In 1860, Hunt challenged the legendary Frenchman Blondin to a high-wire competition 180 feet above the Niagara Gorge near the Falls. More than a showman, Hunt was innovative in other ways, from creating folding theatre seats to the modern parachute. If you enjoy ignoring your indoor plants, allowing them to go dry for long periods of time, orchids are the perfect fit for you. The availability of orchids today is a testament to the advances made in plant propagation through “meristem propagation.” Karl von Nägeli was the first to use this

technique in 1858. We have merely perfected the process since then and put it into production. Orchids consist of more than 26,000 species and 143,000 hybrids (about 1,500 of which are naturally occurring, including many that grow in Ontario). Most orchids sold for use in the home are members of three groups: Phalaenopsis, Paphiopedilum and Cambria. These are reliable indoor performers that tolerate our dry air in winter and the low light of our northern latitude. The limited root mass makes for an ideal window sill plant.

PAPHIOPEDILUM

This is the most popular of orchids for the home gardener. They are epiphytic, which means that they grow in trees and rocks in the tropics. When the bloom fades, cut the stems below the last flower, just above a node (where the leaf meets the stem). In most cases, a new stem will develop and it will re-flower. LOCATION: Warm home. These are ground dwellers [terrestrial]; orchids that grow naturally in tropical and subtropical Asia. They are easily identifiable by their pouch-like lip, much like our native Lady Slipper orchids. This is a spectacular species with gorgeous single blooms born on a stem ranging in colour from white, green, brown, claret, red, yellow and pink. LOCATION: Defused light to direct sunshine. Versatile. TEMPERATURE: Low 13C to high of 24C. Generally like it cool. Green-leaved hybrids are tougher than varieties with mottled leaves. HUMIDITY: Use pebble tray to increase humidity. Misting can cause mould. FERTILIZE: Sensitive to fertilizer burn. Feed year-round with high-nitrogen fertilizer.

CAMBRIA Cambria orchids provide a spray of bloom on a single stem that is quite impressive. LOCATION: Diffused light, north or west facing window is ideal most of the year. North is favoured during the intense summer time. TEMPERATURE: Low of 13C and high in the summer of 24C. HUMIDITY: Group with other plants and use a pebble tray with water in the bottom to raise humidity, especially in late spring and summer. In winter, reduce temperatures and watering frequency. FERTILIZE: Use half-strength Schultz orchid fertilizer.

Green & Black’s Organic Maya Gold Chocolate-Dipped Figs with Chèvre Mousse

INGREDIENTS 2 ½ tbsp Chèvre 1 ½ tbsp Greek yogurt, plain ¼ tsp range zest, plus extra for garnish 4 figs, large (Black Mission or Brown Turkey)* 50 g Green & Black’s Maya Gold Chocolate Bar, finely chopped (½ bar) 1 tbsp pistachios, finely crushed Honey, for drizzling *Note: If fresh figs are not available, substitute fresh strawberries or large dried figs. DIRECTIONS • Prepare a baking sheet with a silicone mat or piece of wax paper.

• To create the mousse, purée the

chevre, yogurt and orange zest in a small food processor until smooth and light. Transfer mousse into a piping bag or into

a plastic, re-sealable bag with a small hole in the corner cut out. Set aside.

• Cut the stem off of the figs and cut an X

into the tops of them, slicing almost all of the way down to the base. Be careful not to cut fully through the figs.

• Place the chocolate in a glass heat-proof bowl set over a small saucepan filled an inch high with water.

• Bring the water to a boil then reduce the

heat to a simmer. Stir the chocolate slowly, allowing it to melt gently. Once melted, remove from the pot and set aside.

• Dip the base of the figs into the melted chocolate, swirling to coat the figs about 1/3 of the way up.

• Place onto the prepared baking sheet and continue with the remaining figs.
