Roasted Delicata Squash & Forbidden black Rice Salad Cook Time: 1 hour • Serves 6
• 2 tbsp sunflower seed oil
INGREDIENTS:
• 2 tbsp honey
• 1½ cups Lotus Foods Forbidden Black Rice®
• 2 tbsp soy sauce
• olive oil to drizzle
• ¼ tsp black pepper

Whisk together vinaigrette ingredients. Set aside.

Once rice is cooked, combine with roasted squash, pomegranate seeds and scallions, then toss with yuzu ginger vinaigrette.
