• 1 tbsp red wine vinegar
• 2 tbsp freshly grated ginger
1. Preheat oven to 400°F. Line two baking sheets with foil. Toast pecans on one sheet for 5 minutes, then set aside.
2. In a large bowl, mix sugar, 2 tsp salt, and dry ginger. Toss squash to coat, drizzle with olive oil, and stir. Spread squash on the sheets in a single layer.

3. Roast for 30 minutes, rotating pans halfway, until squash is tender and browned.

4. In a saucepan, boil honey, maple syrup, cinnamon stick, orange zest/juice, 1 tsp salt, vinegar, and fresh ginger. Simmer until syrupy. Stir in chopped pecans and remaining halves.
