Is It OK to Eat...

EXPIRED FOOD? For most people, expiration dates on food are like red lights. If the date has passed, you stop—and the food goes into the trash. But the reality is, you should treat them more like yield signs. Slow down, use caution, and if the coast is clear ... gun it! Sometimes, food can be perfectly good a day, a week, a year, or even multiple years after the date on a package. In fact, Doug Rauch—the former president of Trader Joe’s supermarkets—is turning “expired food” into a business of his own. Come May, he’s opening a grocery store in the Boston area called The Daily Table—it’ll be a market where all the items have one thing in common: They’re past their “sell-by” date. “The terminology of shelf life labeling can be confusing,” explains Men’s Health nutrition advisor Alan Aragon, M.S. People are confused by three popular terms, he explains. Here’s your cheat sheet. 1. SELL-BY DATE: This is a guideline for stores regarding how the food looks. It has nothing to do with whether a food is expired, unsafe, or won’t taste good. It’s not the same as an expiration date. 2. BEST BEFORE (OR BEST IF USED BY) DATE: This is an indicator of a food’s flavor and look, but not necessarily an indicator of its safety. 3. USE BY (OR EXPIRATION) DATE: This is the strongest indicator of safety. If you consume a food after its “use by” date, you could be taking a gamble. How much of a gamble? That’s hard to know, because it’s difficult to study, says Aragon. It’s impossible to pinpoint the exact day a food crosses the line from tasting bad to being dangerous. “Food can be safe to eat even when it doesn’t look great or taste amazing,” he says.

NUTRITION LABELS, DECODED: Soon, the FDA will be updating food labels. Here’s a look at what may be different—and what you need to know. A general rule of thumb: “The more refined and processed a food is, the longer you can keep it past the expiration date,” says Aragon. Chalk that up to very low (or no) water content in these foods—environments microbes can’t thrive in, especially when preservatives are added, he says. The exception: meat. Toss deli sandwich meat, hot dogs, and sausage the day they expire, Aragon says. They have a particularly high risk of listeria, a bacteria that can cause an infection called listeriosis, which can even manifest as meningitis. Below, Aragon outlines seven food types and how long you can keep them past their expiration dates. Canned goods: Most expiration dates on cans range from 1 to 4 years. But if you keep cans in a cool dark place, and undented, the food inside will keep for 3 to 6 years. Frozen foods: They’re much like canned goods: pretty much expiration-proof. The exception? Meat. Pasta: Pasta won’t spoil—it has no water content. As long as it doesn’t smell odd, you can keep it past the expiration date. Eggs: Put the egg in a bowl of water. If it floats, there’s too much gas (created by high levels of bacteria) inside. Toss it. Bread: You can keep bread dramatically longer than the date on the box if you put it in fridge or freezer. As long as you don’t see mold, it’s good. Fresh fruits and vegetables: Look at them, smell them, and feel them—if you’re still hungry, they’re still good.

Diaper rash is an area of red, irritated skin located in baby’s diaper area. Here is an overview of what causes it and what you can do to prevent it. The most common cause of diaper rash is a wet diaper contacting your baby’s sensitive skin too long. When urine mixes with your baby’s stool, it can produce a harsh chemical called ammonia, which can irritate your baby’s skin. Diaper rashes are also frequently caused by the chemicals or perfumes in diapers irritating the skin in the areas that contact the diaper. This may be a sign that you need to try a different brand of disposable diaper or use gentle, fragrance-free detergent on cloth diapers. A diaper rash that involves the folds of the skin in the diaper area may be a bacterial or fungal infection. If the folds of your baby’s skin in the diaper area are moist, they provide a nice, warm home for bacteria and fungus to live in and multiply. A bac-

terial or fungal infection may also spread to other parts of the body. Most diapers rashes can be treated and prevented by keeping the diaper area clean and dry. Clean the diaper area with fragrance- free wipes and pat the diaper area dry with every change. Applying a barrier ointment to clean, dry skin before putting on a new diaper will also help. Exposing your baby’s bottom to air by letting her go diaper -free in an area where the floor is easily cleaned also will aid in healing. If you suspect your baby’s diaper rash is caused by a fungal infection or a bacterial infection, contact her doctor to see if a prescription may be needed to treat it. Also contact your baby’s doctor is she develops a fever, the rash does not go away with home treatment after 3 or 4 days, or the rash looks infected.

pancakes Forget the box mix, you probably have all the ingredients to make much healthier pancakes...low fat, low sugar and high protein.

DIRECTIONS Mix all ingredients to nice consistency. Should not be too thick, or too watery. Add more dry ingredients such as protein or oats to thicken or add more egg whites, yogurt or bananas to moisten. Can add splashes of almond milk to thin as well. Coat skillet with coconut oil or other healthy oil. Heat skillet to medium fire. Pour desired size portion and shake to spread or spoon to even out. Flip when bubbles form on the surface. Top with choice of peanut butter, berries, nuts, or yogurt.

• 1 mashed banana • 2 egg whites • 1/2 cup low sugar yogurt, cottage cheese or pumpkin, or try tbsp. peanut butter • 1 scoop protein powder, or oats • sweeten w/ tsp. vanilla extract, or agave syrup, or shredded coconut Optional additions or toppings: nuts, berries, chia seeds, flax seeds

reading for fun? For many school aged children, summer means three months free from teachers, tests, and books. But the summer shouldn’t be free of all books. It’s a perfect opportunity to introduce the concept of pleasure reading. According to the National Foundation for Educational Research, “There is a strong association between the amount of reading for pleasure children reported and their reading achievement.” In addition, pleasure reading is important because it “makes students more articulate, develops higher order reasoning, and promotes critical thinking.” Unfortunately, many children don’t enjoy reading; they view it as boring, too hard or no fun. According to R.I.F (Reading Is Fundamental), ways to get around these objections are to “expose your child to another kind of reading at home that is related to their interests.” If a child finds reading too hard, make sure to find interesting titles that match their reading ability. Your child’s teacher or a public children’s librarian can assist you with this. Here are the top five suggestions, according to R.I.F, to encourage reading:

1. Scout for things your children might like to read. Use their interests and hobbies as starting points.

2. Leave all sorts of reading materials including books, magazines, and colorful catalogs in conspicuous places around your home.

3. Notice what attracts your children’s attention, even if they only look at the pictures. Then build on that interest; read a short selection aloud, or simply bring home more information on the same subject. 4. Let your children see you reading for pleasure in your spare time.

5. Take your children to the library regularly. Explore the children’s section together. Ask a librarian to suggest books and magazines your children might enjoy. The main thing is to never give up; eventually you will find something you child enjoys reading.

TECH OR OUTDOOR Advancements in technology over the last decade have children spending more time with gadgets and gizmos, and less time enjoying the great outdoors. In fact, kids are now indoors up to 10 hours a day, according to the Joan Ganz Cooney Center. But kids’ increasing use of technology and opportunities to appreciate Mother Nature do not have to be mutually exclusive.

THE IMPORTANCE OF OUTSIDE PLAY A new National Wildlife Federation (NWF) report shows that kids’ media habits can both positively and negatively impact health, and provides realworld advice to help parents serve as positive role models and teach children to use technology in moderation. “Kids need to be outside all year long, especially in the winter when days are short and we’re all a little more cooped up than usual,” said Maureen Smith, chief marketing officer for National Wildlife Federation. “In addition to developing a deeper appreciation for the outdoors and the wildlife around them no matter where they live, it helps them burn off energy, stay fit, and be mentally focused for school, homework and all activities in their busy day.”

SCREEN TIME PLUS GREEN TIME Technology can be a valuable tool to help families balance the lure of screen time with the importance of green time for kids. Today’s connected world enables children to experience nature in ways never before imagined. NWF’s report offers families these ideas for combining technology with the outdoors: Rely on technology to plan or inspire outdoor adventures. This can include anything from finding great nearby hiking trails to interactive, outdoor treasure hunts. Keep a record of outdoor experiences with the help of electronic photos, videos or an electronic journal. They’ll love the ability to share their experiences with family and friends. Use tools such as Ubooly, an app-based learning toy that can turn a walk in the park into an interactive experience with activities such as scavenger hunts, nature hikes, mindfulness games and plenty of exercise. Staying dry through the night is a developmental milestone that may be reached by children at different ages. Kids under age six often have not yet developed a great enough sensitivity to the body’s signal that the bladder is full, so bedwetting is normal for toddlers and preschoolers. If your child is over age 6 and still experiences regular episodes of bedwetting (also called nocturnal enuresis), he may feel embarrassed or frustrated. With your support and encouragement, he will eventually achieve this milestone. Here is what you can do to help. Make an appointment for your child to see the pediatrician. The pediatrician will rule out medical issues like a urinary tract infection, diabetes, or bladder problems that could be to blame for the bedwetting. At this appointment, discuss any recent emotional issues your child has been having, as emotional problems can sometimes trigger an increase in bedwetting. Stay positive. Keep a sticker chart to reward dry nights. Your child may feel guilty about making a mess of the bed so letting him help change the

sheets may help him feel better about it. Never yell or scold your child for wetting the bed. Encourage your child to take in more liquids during the day than in the evening. Limit liquid intake right before bedtime. If the sticker chart does not help, discontinue using it after a few weeks and try using a bed alarm. The bed alarm is a battery operated device attached to a pad has a moisture sensor in it. The pad is placed on your child’s bed and the alarm sounds when moisture is first detected. The alarm will hopefully wake your child and stop him from urinating on the bed. Bed alarms are very effective but it takes about 12 weeks to start seeing results so be patient. If you feel you have tried everything possible and your child is still experiencing instances of bedwetting, his doctor may decide to prescribe a type of medication called desmopressin (DDAVP) that slows down the production of urine. When DDAVP is used in conjunction with a bed alarm, the combination is highly effective is resolving bedwetting issues.
