St. Tammany Who Dat Headquarters Saints’ season doesn’t officially kick off until September 11 in the Dome against the Minnesota Vikings, but pre-season got underway back on August 10. Crustacean Celebration: St. Tammany Crab Festival St. Tammany Parish’s annual two-day festival, held at Heritage Park in Slidell on September 9 and 10, is always a big hit with locals and visitors alike! 4 quarts water 2 tablespoons distilled white vinegar Crab Boil, recipe follows (see note) 4 bay leaves 4 dried chile peppers 3 sprigs fresh thyme 1 head garlic, cloves separated and peeled ¼ cup sea salt 2 lemons, halved 12 fresh crabs 3 pounds new potatoes, scrubbed clean 4 ears corn, shucked and cut into thirds 1 (10-ounce) bag pearl onions, peeled 1 (10-pound) bag ice Instructions In a very large stockpot, bring 4 quarts water, vinegar, Crab Boil, bay leaves, chiles, thyme, garlic, salt, and lemons to a rolling boil over high heat. Add crabs, potatoes, corn, and onions. Return mixture to a rolling boil, and cook for 5 minutes. Turn heat off, and cover pot for 15 to 20 minutes. Pour ice into pot. (This helps the crabs absorb the seasonings and prevents them from overcooking.) Let crabs stand in water for at least 1 hour before serving. Crabs can be served warm or completely cooled.

This organization raises money to provide financial grants to families of children in Southeastern Louisiana and the Gulf South Region with disabilities, including cerebral palsy spina bifida, muscular dystrophy, traumatic brain injuries, spinal cord injuries, stroke, and autism. These grants are used to purchase adaptive equipment, assistive devices, special vehicle modifications, and other interventions that are not covered by private insurance or Medicaid. The organization’s annual fundraisers include BooFest, coming up on October 29 at Lakeview Regional Hospital in Covington, and Sweet Soiree in the spring, but they also accept individual donations and sponsorships. HEALTHY BUTTERNUT SQUASH RECIPE (Courtesy of Food Network) Ingredients One 2- to 3-pound butternut squash, peeled and seeded 2 tablespoons unsalted butter 1 medium onion, chopped 6 cups chicken stock Nutmeg

• Pumpkin seeds pack about 1.7 grams of dietary fiber per ounce

Directions

• Mashed pumpkin has only 50 calories per cup and 3 grams of fiber • Better vision • Lower blood pressure • Better sleep • Heart healthy

Cut squash into 1-inch chunks. In large pot melt butter. Add onion and cook until translucent, about 8 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes. Remove squash chunks with slotted spoon and place in a blender and puree. Return blended squash to pot. Stir and season with nutmeg, salt, and pepper. Serve.

Hurricane Prep Checklist September is known to be the busiest month of hurricane season. Considering 2017 has been widely predicted to be an especially active year, it’s probably time to think like a boy scout, and be prepared! The Red Cross has made it easy for us with this handy checklist:

BEFORE THE STORM: • Be sure your homeowner’s insurance covers flooding associated with big storms! Talk to a local agent or visit the National Flood Insurance Program at www.FloodSmart.gov. • Talk with members of your household and create an evacuation plan. • Get a NOAA Weather Radio for critical information from the National Weather Service. • Learn about your community’s hurricane response plan. Plan routes to local shelters, register family members with special medical needs, and make plans for your pets to be cared for.

WHEN THE WATCHES AND WARNINGS BEGIN: • Check your disaster supplies and replace or restock as needed. • Bring in anything that can be picked up by the wind (bicycles, lawn furniture). • Close windows, doors and hurricane shutters, or close and board up windows and doors with plywood. • Turn the refrigerator and freezer to the coldest setting and keep them closed as much as possible so that food will last longer if the power goes out. • Turn off propane tanks and unplug small appliances. • Fill your car’s gas tank. • Evacuate if advised by authorities. Be careful to avoid flooded roads and washed out bridges.

Cool Under Pressure: Don’t Neglect Your A/C! There are places in the U.S. where air conditioning is not necessarily a priority. According to Energy Star, a typical maintenance check-up should include: • Check thermostat settings to ensure the cooling and heating system keeps you comfortable when you are home and saves energy while you are away. • Tighten all electrical connections and measure voltage and current on motors. • Lubricate all moving parts. • Check and inspect the condensate drain in your central air conditioner, furnace and/or heat pump (when in cooling mode). • Check controls of the system to ensure proper and safe operation..
