HOO’S Deck the Halls – Tips for Holiday Decorating and Tree Care One of my all time favorite holiday activities is to sit on the couch with a glass of wine and bask in the glow of the Christmas lights. There is just something about those twinkling LEDs that fills my heart with warmth, joy, and happiness. But before the basking can happen, the work of decorating must be done. Here’s some simple tips to help you deck the halls and enjoy it! Start with a plan – and some measurements. Do you plan to decorate your mantle? Outdoor spaces? Foyer or front door? Patio? Backyard? Kitchen? Do you go crazy and even do the bedroom and bathroom too? Just how many strings of lights does it take to span the whole roof ? Are you doing colored or white lights? There is a lot to think about, so it’s handy to put to paper just what you are thinking. Knowing where your outlets are located and what your extension cord needs may be can help you map a lighting scheme that only requires one trip to the store and save money. Don’t get lost in Pinterest land. The grand mecca of beautiful décor ideas in perfect breathtaking glory are all shown on Pinterest. Search away my friends, but beware- that ribbon twist garland so beautifully displayed – that was most likely done by a

HOME professional, with double the resources. Embrace the imperfections of your decorating style. White lights and rainbow LEDs mixed? Yes! It adds whimsy and personality. Who wants to be perfect anyways? Think outside the box. I had a friend one year who collected a bundle of sticks and tied them together for a Christmas ornament display holder (also known as a Christmas Tree). Oodles doesn’t have to be spent on new decorations- you can DIY everything from wreath’s to candle holders. So dig out your glue gun and glitter and remember tip number 2imperfections are whimsical. Tree Care. Water, water, water. When picking a tree from the nursery or farm, make sure to run your hand along a branch- do the needles come off ? Too dry. Pick another. Once home, saw off about ½ inch of the stem and place in your reservoir stand. Keep a water pitcher or jug handy- trees can consume up to a gallon in the first 24hrs! And finally, remember to check the water level daily.

Growing Lettuce, Carrots, and Kale! There are few things as satisfying in life as growing your own vegetables and eating them. And, just because we are heading into the colder winter months doesn’t mean you have to hang up your gardening gloves just yet. Lettuce, Carrots and Kale are excellent staples of a southern winter gardensdelicious too! Lettuce is a particularly good winter crop to grow in our climate- as it thrives in the 50 -60 degree weather and is tolerable of light freezes and frosts. Simply sprinkle the seeds in rows and cover with dirt. In just a few short days the green shoots will pop out of the soil. Thin plants so they grow 2-3 inches apart. Lettuce is made up mostly of water- so if we have a dry winter, make sure to water regularly.

Carrots are fun to grow from seed also. They can grow in a multitude of temperatures- except hot, making them ideal for our winter garden season. Using the same technique of sprinkling the seeds into the rows and covering is all you need to get started. Carrots can be harvested about two months after planting. Kale is typically a fall growing vegetable in most of the United States. Again, the technique for planting is the same as lettuce, putting seeds into your row about a half inch down. Once the seedlings sprout, (about 2 weeks) thin the plants so they are spaced 8-12 inches apart. Harvest by picking a handful of leaves off each plant, and avoiding the main center bud (for continuous production).

Wine Pairings and Wine Buying Guide

Red? White? Pink? Is this the extent of your wine knowledge? Or are your more of a wine-aficionado? Whatever your wine appreciation level, and whatever your buying budget- we’ve got ideas for you. For Parties: wine by the case. Supplying wine for large parties can get pricey. Many places offer discounts when wine is purchased by the case. Also, skip the Chardonnay- being so popular it rarely goes on sale. A good wine can be found for about $10, try a Pinot Grigio varietal. For Turkey: the unexpected. The table staples for holiday meals are usually Chardonnays and Cabernet Sauvignons. But, turkey balances well with Pinot Blancs, dry Rosé or even a fruity Zinfandel. We are particularly excited about trying a Prosecco this year with our turkey drenched in cranberry sauce. For Dessert: Ice Wines and Rieslings, Shiraz by the fireplace. Ice wines are wines where the grape is frozen on the vine, causing the wine to be achingly sweet. Gewürztraminer’s are a popular choice. If you go for the Riesling, remember to serve it chilled, not cold. About 20 minutes in the fridge is about all you need to allow for optimum flavors and aromas. Not looking for the overwhelming sweet? A Shiraz is the perfect fireside sipper.

Recipe: Cajun Fried Turkey

Bluebird skies and refreshing chill winds are the Christmas days I remember – escaping the hot kitchen to the backyard or patio where my father and older brothers stood around the fryer sipping cold brews and monitoring the oil temperature was high entertainment for me. There’s no doubt about it – Cajun Fried Turkey is a tradition!

Ingredients 2 cups butter ¼ cup onion juice ¼ cup garlic juice ¼ cup louisiana-style hot sauce ¼ cup Worcestershire sauce 2 tablespoons ground black pepper 1 teaspoon cayenne pepper 7 ounces beer 3 gallons peanut oil for frying 1 (12 pound) whole turkey – neck and giblets removed 1. To make the marinade: melt butter in large saucepan over medium heat. Add onion juice, garlic juice, hot sauce, Worcestershire sauce, black pepper,

cayenne, and beer. Whisk until well blended. 2. Inject mixture with marinade syringe into the turkey’s legs, back, wings, thighs and breast. Place in large bag and marinate overnight. 3. When it is time to fry, pre-measure the amount of oil needed by lowering the turkey into the fryer and filling with enough water to cover it. Remove the turkey and pat with paper towels to dry throughly. 4. Heat oil to 365 degrees. Lower the turkey into the oil slowly with the provided tool. The turkey should be completely submerged. Cook 3 minutes per pound of turkey. The turkey is done when the thickest part of the thigh reaches 180 degrees F. Allow the turkey to rest for about 20minutes before carving. Please read and follow safety instructions on your fryer. Bon Appetite!

Meditation & Zen for a Stress Free Holiday There’s no denying that this time of year is stressful. What exactly is stress? Google defines it has “a state of mental or emotional strain or tension resulting from adverse or very demanding circumstances.” Holidays qualify as some of the most very demanding circumstances – that’s why we’ve developed this quick beginner’s guide to help you find your inner zen and focus on all the beautiful moments of the season instead of the things that drive you crazy. Many misconstrue meditation has a passive time-waster, where one sits or lays quietly with their eyes closed (sometimes even sleeping!). But, it is actual an active exercise in which one focuses intensely inward. What are you focusing on? The two common types of mediation are concentration meditation and mindfulness mediation. In concentration, typically one will focus on breathing, or perhaps a single positive word or prayer. This is typically very challenging for beginners as the mind will wander to things in the outside world. In mindfulness mediation one focuses on the conscious thoughts and feelings as they enter the brain – being aware objectively, making a mental note so-to-speak, and moving on. You don’t need fancy pillows, yoga mat, aromatherapy or guided meditation tapes to begin. Simply find a quiet place to sit or lay down where you are comfortable. It helps to close your eyes so that your are not distracted by things in the outside world. Start by focusing on your breath. Observe how the body moves with each exhale and inhale. Don’t feel that you have to do this more than three to four minutes- lowering blood pressure and heart rate can be achieved in just a few short minutes. If your mind starts to wander, try placing your hand on your chest or abdomen to refocus your mind on the breath. There are plenty of guided meditations available for free and for purchase – but this isn’t only way you can achieve enlightenment. For some, the simple act of a five minute walk can benefit the same as a twenty minute session. It’s important to do what is comfortable for you. Just remember to pay attention to the moment – how your feet feel with each step, the sensation of the sun on your skin, listen and observe what you see and hear. Being in the moment will both lower your stress levels and enhance your enjoyment of the season. So remember – just breath!

Year in Financial Review: Did you stick to your Budget? There are certain housekeeping tasks that can be done now in regard to finances to set up your 2018 money goals to achieve success. Taking stock of what’s currently on hand and in your bank accounts will let you know if you met your savings goals for the past year, and if not- why. Take just thirty minutes to review your finances with this tax, planning, and finance checklist. 1. Evaluate your savings. Did any circumstances change for you in the past year? Or do you anticipate any changes? Do you have a six month salary cushion saved and readily available? What’s the retirement account look like? Did you max your contributions this year? If so, high-five! If not, you may consider doing that to boost tax-savings. Don’t have a retirement account? Today would be a good day to start a little research. 2. Speaking of taxes, now is a good time to plan ahead. Did you make more or less money than last year? Do you anticipate having to pay in? If so, do you have the cash to cover it? Think back to if you changed jobs, moved, got married, or had a baby, picked up a bonus or inherited money. Are you a contract employee? If so, you’ll want to have all your receipts collected and organized. 3. If you did get a holiday bonus- resist the urge to splurge on holiday gifts. Instead, pay down stHow much are you spending on eating out or buying drinks? Many times the budget numbers we have in our head don’t line up. 4. Review insurances. Houses, cars, and your health are all things that, should something occur, can cripple you financially and wipe out savings. Now is the time to review your coverages and perhaps shop rates or bundle if you haven’t in a while. Don’t be afraid of excel. A simple money in/money out spreadsheet can really give a complete picture of the financial state of things. Get one last credit report so you know just where you stand. Consider if you don’t already have a will, getting one. Now back to the egg nog.

Study Tips for Passing the Final Exam Mid December is end of term for college students and high schoolers alike. This means final exams. Even if you are not a student yourself, you may be the parent, family member, or friend of one that needs some help. Prioritize and make a study plan. Some subjects you may grasp easier than others, some classes may have exams worth more to the final grade than others. Learn what each test will be, what it covers, and prioritize. Know how much time to allocate to each subject and start early. No late night cram sessions! It’s helpful to pace yourself- breaking study material into smaller chunks helps to not be overwhelmed Having a plan will keep you on track. Write your own study guides and pretend you have to teach a class on the topic. This will help you understand key concepts and material a lot better than copying notes word-for-word or simply highlighting text in a book. Know what type of learner you are. Do you understand best when the teacher lectures about it out loud? Or do you like the read over the material to learn it? Does drawing visual cues help? Play to your strengths. Turn off the phone and just do it! Distractions are countless- the dinging of an incoming text, or the urge to check in on Facebook results in procrastination minutes and lost focus. Manage the anxiety and get plenty of rest. If one feels good, one will test well. Try playing calming music when studying or stretching to manage anxiety. If your prepared and know the material- there is very little panic, thus reducing anxiety.

Giving Back this Holiday Season Sometimes as we gather around our table with friends and family and enjoy a bountiful meal it’s easy to forget that many in our community are not as fortunate. Sometimes we are guilted into helping out, or think dumping loose change into a bucket is enough. But, I am here to tell you- volunteering your time and energy to a cause near and dear to your heart exponentially increases the goodwill and love in your life and in the life’s of others. Volunteering has unrealized benefits. Expanding your perspectives and making a concrete impact in the community are just a couple. It creates networks and connections you may never had an opportunity for before. You’ll learn a lot about yourself, your community and maybe even about non-profits. At the end of the day, you’ll have made a direct difference in someone’s life- and that’s a powerfully positive feeling. If you need more incentive, just know that volunteering has tangible health benefits as well. “If our hopes of building a better and safer world are to become more than wishful thinking, we will need the engagement of volunteers more than ever.” - Kofi Annan
