Get the full scoop on Hoopla, what’s in this issue and whatever else we want.

I was at a loss for what to write about in this space this week. The issue is sort of a

mishmash of cooking and creepy crawly. And for some reason neither inspired any words of wisdom. Or lets be more honest, rambles.

But after Tuesday night’s Mayoral debate at Dublin City, I couldn’t resist but opine on that topic again. I said it last week and I’ll say it again. The

average voting age in the last Cedar Rapids’ municipal election was 57.

Seriously! 57!

Tuesday night, though, gave me hope that maybe this election will be a little different. Hoopla hosted a Mayoral debate between the three candidates contending for the position in Cedar Rapids: Ron Corbett, Brian Fagan and P.T. Larson.

KCRG-TV9’s Ashley Hinson and I moderated the event, which drew around 100 people, mostly young professionals. I was blown away not only by the attendance but by the number of questions submitted both in advance via e-mail and during the event. Ashley and I shouldn’t have prepared a single question. The audience had plenty. Unfortunately the hour flew by and we weren’t able to get to more than a fraction. I’m going to post them online so you can see what your peers want to know and we’re going to ask the candidates to answer. Look for more on the

elections, both in Cedar Rapids and Iowa City, in next week’s Hoopla.

And in the meantime. Don’t forget Nov. 3 is Election

Day.

If you are not yet registered to vote, go to www. linncounty.org to download the voter registration form. Friday at 5 p.m. is the last day to register to vote for the election.

college hoping on the green train. Luther College in Decorah was recognized as a leader by the College Sustainability Report Card. Luther will build a wind turbine near campus to generate about one-third of the energy it uses annually. Mount Mercy College in Cedar Rapids is one of several schools to switch to trayless dining, saving the electricity and water required to wash them, and even cutting food costs. Kirkwood Community College focuses on green building and geothermal heat for new projects, energy director Melissa Jensen said. A lot of fixes are simple things homeowners can do, too, she said, such as turning off lights and computers when not in use.

IOWA CITY — Dr. Ignacio Ponseti, who developed a non-surgical method to correct the birth defect clubfoot, died suddenly Sunday afternoon at the University of Iowa Hospitals and Clinics. He was 95. Ponseti was born in Spain, escaped the regime of Gen. Francisco Franco and eventually landed at UI in 1941. Ponseti learned to align a child’s club foot by manipulating ligaments and tendons and applying plaster casts to the full leg. Parents brought their children to Ponseti and the UI clinic that bears his name from around the world.

Domestic partnership

IOWA CITY — Since last decade, Iowa City and Johnson County have extended health insurance benefits to the domestic partners of gay and lesbian employees but not to those in opposite-sex domestic partnerships. They did that because same-sex couples could not marry in Iowa. Now that gays and lesbians can marry, the city plans to end its program next summer, when its current union contracts expire. A Society for Resource Management survey showed 36 percent

amie Kelly and Cecelia Hanley decided to visit some Eastern Iowa’s haunted houses this Halloween season. They rated each frightening venue like Roger Ebert rates movies — except using skull & crossbones. Four is the highest rating.

and scare you, there’s not anyone there, which is almost scarier, because the tension keeps building, with no release. A trip through both “haunts” takes a bit less than an hour. You could take longer, though, and appreciate the work that goes into putting this together. Well, you could if it wasn’t so dark out. RATING: — JAMIE

HE SAYS: Frightmare Forest is a real marvel. When you look at the property from the parking lot, you just have no idea how much they pack into the lot. You enter the “Cedar Bend Asylum” through the front door, escorted by shambling zombies. It is designed to disorient you as much as scare you, with plenty of strobe lights and dark turns. The cast is committed to scaring you. Most of them just pop up once and make a noise, but some follow you, asking you questions and, in some cases, not leaving you alone till you interact with them. And there’s plenty of misdirection. Sometimes, just when you expect someone to pop up

SHE SAYS: As you wait to go in to the creepy “Cedar Bend Asylum,” the inmates greet patrons in line by holding a stare just a bit too long, or maybe asking an off-putting question — at least that’s what I think was happening. The music is a little too loud in the waiting area. A lower volume might help ramp up feeling of dread if we could hear ourselves think, or even the screams in the asylum. Ghouls and inmates popping out of the darkness becomes a little repetitive while walking through the hospital and the cemetery/forest. I found it more disconcerting when a ghostlike companion appeared out of nowhere, walking a bit too close for comfort. My favorite rooms were when the doctors (or are the inmates running the asylum?) engage you. Be prepared for a grouptherapy session like no other. The scenes you wander through are

HE SAYS: To me, there’s very little as creepy as walking through a cornfield at night. You can see the sky, but with the corn on every other side, it feels like something could jump out at you at any moment. At Bloomsbury Farm, of course, that’s exactly what happens. Eventually, that is. Before you get to the maze, you have to go through an evil-circus-themed maze and a haunted barn, the latter of which isn’t really all that scary. The corn maze on the other hand, is a great example of the way to pace for maximum scares. There are stretches where nothing happens, and then, someone springs out of the corn. And the cast, much like the cast at Frightmare Forest, doesn’t just jump out and scare you, they do what they can to creep you out, in-

SHE SAYS: The haunted corn maze does one of my favorite things very well. You’re walking through a cornfield exposed under the night sky and claustrophobic at the same time. It’s dark, quiet, your feet barely make a noise — and something is rustling. Is it the fall breeze? Or something waiting to jump out and scare you? When I turned around to see how a kid was doing there walking in line with us was a spook. Sometimes, people didn’t just jump out, they ran across the path into the corn — and you weren’t sure you saw what you think you saw. Before the cornfield, you go through a disorienting clown maze called “Curtain Chaos” which was slightly unnerving, especially when a ghoulish clown came to “help” you out, and the Dread Shed — which had high production value, but was more of a museum of a creepy things. Clearly, the star of this show was the haunted cornfield. To the Highway Man at the bus wreckage: ”Wow, you are one creepy dude.” My only complaint for all three is heavy use of the fog machine. I’m all for it, but after walking through any fog patch in

The Haunted Barn in Marengo

HE SAYS: I’m not sure how they fit so much into a relatively small barn, but I’m sure a lot of it has to do with the fact the corridors are so very narrow. So narrow, in fact, that sometimes I had to turn sideways to fit through. Add to that the fact many of the hallways are pitch black and you turn every few feet, and you have a cramped environment ready to scare. The cast takes advantage of that fact, with people jumping out just about everywhere. But unlike other haunted houses, they don’t just jump out at you. Some of them chase you, others follow you quietly and all do their best to keep you scared. RATING:

The volunteers who run the haunt have constructed narrow passage ways, with nooks and crannies for creepy people to jump out at you, or even worse, just appear right next to you, tugging on your sleeve. For operating on a shoe string budget, they have made the most of their space and the fear factor. While waiting to go inside, you can hear the screams of the patrons before you. Once inside, the ghouls use misdirection, dark hallways of different sizes (you will have to crouch at some point) and a terrifying room where “Fluffy” is chained to the wall. I ran out of there and back to my car as fast as could, trying to out run what was chasing me, physical therapy be damned. RATING:

The restaurant is open Monday through Thursday from 11 a.m. to 1 p.m. during fall and spring semesters in the atrium of the Mansfield Center in Iowa Hall on Kirkwood’s campus. Or keep an eye out for chances to taste her creations. Recently Melanie was a guest chef at Zins, preparing a Cuban menu for the night and cooking with several former students. DID YOU KNOW Kirkwood is building the largest, most comprehensive community college teaching hotel in the United States. Beginning in August 2010, Kirkwood culinary arts professors will teach students in the new state-of-the-art culinary facility. Students will intern with professional chefs in the hotel’s fullservice restaurant.

The smells of Cuban food — sofrito, in particular — lured culinary arts professor Melanie Ewalt into her grandmother’s kitchen when she was a girl growing up in Miami. She’d slip past busy family gatherings to join her grandmother at the stove, where green peppers, onion, garlic, and tomato simmered with pork and seafood. “Cuban food is more about flavor than spice,” Melanie says. “You could smell it as soon as you walked into the house.” Melanie developed a love for Cuban cuisine and everything Latin during those early years surrounded by an extended Cuban family in Miami, where she learned Spanish alongside English. When she was 8 she moved to Iowa City but returned to Miami every summer to stay with her grandmother, where “everything centered around food,” she says. In 2000, Melanie graduated from the Kirkwood culinary arts program. She worked as an assistant kitchen manager in charge of catering for Hy-Vee planning events at Hancher Auditorium and for the University of Iowa Athletics program.

Second-semester students train in international cuisine with David Horsfield, a chef from Australia. Melanie focuses on third- and fourthsemester students. The third-semester cooking lab is the college restaurant, Class Act, where students prepare meals for the general public. Twice each semester Melanie organizes large events that bring together the entire culinary arts program — students and instructors — to plan and prepare fivecourse themed meals. The most recent event focused on locally grown and harvested foods. “I actually went out and picked all of the eggplant at a local farm,” Melanie says. Students found pears in Marion and spinach in Mount Vernon.

Goat Cheese Mashed Potatoes 4 cups white potatoes, peeled and diced 1 1/2 teaspoons salt ■ 3/4 cup heavy cream ■ 1/4 cup butter ■ 1/2 pound goat cheese, crumbled ■ 1/8 teaspoon white pepper ■

Ropa Vieja 3 pounds flank steak 3/4 green pepper, halved ■ 3/4 onion, halved ■ 2 1/4 cloves garlic, whole ■ 3/4 bay leaf ■ Sofrito ■ 1 1/2 tablespoons Spanish Olive Oil ■ 3/8 green pepper, diced ■ 3/8 onion, diced ■ 2 1/4 cloves garlic, minced ■ 15 ounces tomato sauce ■ 1/2 cup white wine ■ 3/4 bay leaf ■ 1 package Sazon seasoning ■

Combine the potatoes and 1 teaspoon salt in a large saucepan. Cover the potatoes with water, bring to a boil and cook over medium heat until fork-tender, about 20 minutes. Drain. Return the potatoes to the saucepan and, over low heat, stir them with a fork or wire whisk for about 2 minutes to dry them. Add the cream, butter, cheese, and white pepper. Mix well. Season to taste with salt and pepper.

In a large stock pot add flank steak, green pepper, onion, garlic and bay leaves. Add enough water to cover. Simmer for about 2 hours. (The longer, the more tender the meat.) After meat has simmered, cool and shred. In Spanish olive oil sauté green pepper, onion and garlic. Add tomato sauce, shredded meat, white wine and bay leaf. Make sure there is enough liquid to allow it to simmer. Let simmer for about 30 minutes. If mixture is too dry add more tomato sauce, or wine. Adjust seasonings. Remove bay leaf. Serve over rice or goat cheese mashed potatoes.

DID YOU KNOW Kirkwood is building the largest, most comprehensive community college teaching hotel in the United States. Beginning in August 2010, Kirkwood culinary arts professors will teach students in the new state-of-the-art culinary facility. Students will intern with professional chefs in the hotel’s fullservice restaurant.

The smells of Cuban food — sofrito, in particular — lured culinary arts professor Melanie Ewalt into her grandmother’s kitchen when she was a girl growing up in Miami. She’d slip past busy family gatherings to join her grandmother at the stove, where green peppers, onion, garlic, and tomato simmered with pork and seafood. “Cuban food is more about flavor than spice,” Melanie says. “You could smell it as soon as you walked into the house.” Melanie developed a love for Cuban cuisine and everything Latin during those early years surrounded by an extended Cuban family in Miami, where she learned Spanish alongside English. When she was 8 she moved to Iowa City but returned to Miami every summer to stay with her grandmother, where “everything centered around food,” she says. In 2000, Melanie graduated from the Kirkwood culinary arts program. She worked as an assistant kitchen manager in charge of catering for Hy-Vee planning events at Hancher Auditorium and for the University of Iowa Athletics program.

Second-semester students train in international cuisine with David Horsfield, a chef from Australia. Melanie focuses on third- and fourthsemester students. The third-semester cooking lab is the college restaurant, Class Act, where students prepare meals for the general public. Twice each semester Melanie organizes large events that bring together the entire culinary arts program — students and instructors — to plan and prepare fivecourse themed meals. The most recent event focused on locally grown and harvested foods. “I actually went out and picked all of the eggplant at a local farm,” Melanie says. Students found pears in Marion and spinach in Mount Vernon.

Goat Cheese Mashed Potatoes 4 cups white potatoes, peeled and diced 1 1/2 teaspoons salt ■ 3/4 cup heavy cream ■ 1/4 cup butter ■ 1/2 pound goat cheese, crumbled ■ 1/8 teaspoon white pepper ■

Ropa Vieja 3 pounds flank steak 3/4 green pepper, halved ■ 3/4 onion, halved ■ 2 1/4 cloves garlic, whole ■ 3/4 bay leaf ■ Sofrito ■ 1 1/2 tablespoons Spanish Olive Oil ■ 3/8 green pepper, diced ■ 3/8 onion, diced ■ 2 1/4 cloves garlic, minced ■ 15 ounces tomato sauce ■ 1/2 cup white wine ■ 3/4 bay leaf ■ 1 package Sazon seasoning ■

Combine the potatoes and 1 teaspoon salt in a large saucepan. Cover the potatoes with water, bring to a boil and cook over medium heat until fork-tender, about 20 minutes. Drain. Return the potatoes to the saucepan and, over low heat, stir them with a fork or wire whisk for about 2 minutes to dry them. Add the cream, butter, cheese, and white pepper. Mix well. Season to taste with salt and pepper.

In a large stock pot add flank steak, green pepper, onion, garlic and bay leaves. Add enough water to cover. Simmer for about 2 hours. (The longer, the more tender the meat.) After meat has simmered, cool and shred. In Spanish olive oil sauté green pepper, onion and garlic. Add tomato sauce, shredded meat, white wine and bay leaf. Make sure there is enough liquid to allow it to simmer. Let simmer for about 30 minutes. If mixture is too dry add more tomato sauce, or wine. Adjust seasonings. Remove bay leaf. Serve over rice or goat cheese mashed potatoes.

Some business buildings are little Bermuda Triangles of commerce. You’ve seen them, one month it’s an ice cream shop, the next a bead store. The home of GG’s Diner is in such a location on Center Point Road in Cedar Rapids. Over the years I’ve frequently driven past the area and noted its incarnations. One day I decided to finally get a sundae from the ice cream shop and it had been mysteriously transformed into cafe.

GG’s is decked out in a retro feel with heavy black and red paint and a counter with stools for customers to sidle up and take down a slice of banana cream. The one downside to the space is that the bathrooms are a little tricky to get to. human head-sized grilled tortilla overflowing with melted cheddar, grilled tomatoes, onions and cilantro and I added chicken for an extra $1. My meal started at a meager $5.95 so I didn’t feel that was too much to ask. Sandwiches come with a choice of side and, feeling nostalgic, I picked potato salad. It was smooth and creamy with hearty chunks of potato. My meal was quite large and very filling. Unfortunately I didn’t have room for a slice of pie. Believe me, I really, really wanted one but I just could not bring myself to eat one more bite. But I’m sure GG’s Diner will be around a long time so save me a slice of that pie. — ANDREA

Legend says there is a woman named Tillie who is said to make her presence known by ensnaring those brave enough to pass through at night. Witnesses report seeing a mysterious ghostly woman walking the grounds with a small candle in her hand. Rumors say that she was a practicing witch in Cedar Rapids in the 1800s who was stoned to death. Others said she was a poor woman in Cedar Rapids who died without any money or possessions and roams the cemetery. Her grave use to be in an area surrounded by an iron gate, but the gate was removed and Tillie is said to now roam the cemetery.
