It is November and you are terribly cold. You know that you will only be getting colder in the coming weeks, months even. You find yourself staring into your refrigerator looking for salvation, but you only find yourself getting colder. Listen to me carefully because I will only say this once: Borscht. For this recipe, you will need: Oil, Beef, Bay leaf, Beef broth, Beets, Carrots, Celery, Onion, Potato, Cabbage, Garlic, Salt and pep, Allspice, Tomato paste, Red wine vinegar, Dill, Soured cream I would never lie to you about this. I didn’t give you any proportions, I know. Trust your intuition.
For starters, brown your beef in a large pot. I like over cooked meat but you’ll be happy with about 4 minutes to one side, flip, repeat. Next, add your bay leaf and a good bunch of beef stock and take a nap for just about 1 hour, while she simmers. Oh wait— you can never sleep and cook at the same time, i t ’ s just not
done! Instead, you will cut up your various vegetables, from root to cruciferous. Shred some of your beets, but cut up most of them into teeny tiny cubes and throw them right into the pot! Careful because they splash. The celery, carrot and onion—dice them really small too. Some people call this “sofrito,” but that’s beside the point. Throw those puppies into the boiling stock along with shredded cabbage and the shredded beets and the potatoes. Then for the flavor—your salt
and pep, allspice, and tomato paste. Top it all off with another big glug of your stock. Do you see what you’ve done? You’ve come so very far. Simmer for 30 mins. Give it some vinegar, don’t skimp on it. Shower it with dill, lots of it. Serve in bowls or plates or mugs or out of the pot with a dollop of soured cream and more dill for a chic finish. Your lips and your tongue are tinted purple. Your body’s cold is replaced by a deep purple heat. Excellent work.
