BORSCHT by GEORGICA PETTUS

It is November and you are terribly cold. You know that you will only be getting colder in the coming weeks, months even. You find yourself staring into your refrigerator looking for salvation, but you only find yourself getting colder. Listen to me carefully because I will only say this once: Borscht. For this recipe, you will need: Oil, Beef, Bay leaf, Beef broth, Beets, Carrots, Celery, Onion, Potato, Cabbage, Garlic, Salt and pep, Allspice, Tomato paste, Red wine vinegar, Dill, Soured cream I would never lie to you about this. I didn’t give you any proportions, I know. Trust your intuition.

For starters, brown your beef in a large pot. I like over cooked meat but you’ll be happy with about 4 minutes to one side, flip, repeat. Next, add your bay leaf and a good bunch of beef stock and take a nap for just about 1 hour, while she simmers. Oh wait— you can never sleep and cook at the same time, i t ’ s just not

done! Instead, you will cut up your various vegetables, from root to cruciferous. Shred some of your beets, but cut up most of them into teeny tiny cubes and throw them right into the pot! Careful because they splash. The celery, carrot and onion—dice them really small too. Some people call this “sofrito,” but that’s beside the point. Throw those puppies into the boiling stock along with shredded cabbage and the shredded beets and the potatoes. Then for the flavor—your salt

and pep, allspice, and tomato paste. Top it all off with another big glug of your stock. Do you see what you’ve done? You’ve come so very far. Simmer for 30 mins. Give it some vinegar, don’t skimp on it. Shower it with dill, lots of it. Serve in bowls or plates or mugs or out of the pot with a dollop of soured cream and more dill for a chic finish. Your lips and your tongue are tinted purple. Your body’s cold is replaced by a deep purple heat. Excellent work.

horoscopes by Ocean Fonseca Jensen, Nick Kathios, & Habeeba Idris O’Neill SAGITTARIUS Henny doesn’t count as a coat — before the new year, you’ll cross paths with your soulmate — try to stay sober enough to remember them when you do. Trade the mint juul pods for CBD.

CAPRICORN Take a break from your meteoric rise in Spec; the new year will help you schedule some spontaneity into your Gcal.

PISCES

SCORPIO No matter what we say, you’ll be upset. All of your suspiscions are correct. Your TA from 2 years ago is still in love with you.

We don’t know shit about Pisces. Stream MAGDALENE.

LIBRA

Stumped for Christmas gift ideas for your new but very serious girlfriend? We suggest an elegant pendant inlaid with a diamond formed in your chest from your deeply repressed emotions. You could try Mejuri.

Instead of falling in love with everyone you see on the subway, monetize your inner flirt by becoming a Bumble ambassador.

VIRGO When you visit home this holiday season, take a chance and text your high school crush. They want to lose their virginity just as much as you do.

LEO You’re overcompensating for the lack of sun we’re getting this season. The only way to appear mysterious is to stop oversharing.

AQUARIUS

That advising appointment you have planned? Cancel it. Try something new this season: the new Ferris latte machine, for instance, or actually opening yourself up to your friends.

OPHICHUS

You know what you have to do. Open the portal this year, no matter the cost.

CANCER You’re beefing with yourself. That girl who keeps giving you dirty looks in Barnard Hall is the mirror next to the elevator — just ignore her.

TAURUS

You will get a disciplinary notice for smoking in your Wein single but let’s be real, its the only thing that’s going to get you through the winter (and don’t fight us on this one).

GEMINI

We know you’re planning to invent a new personality over winter break — have you consiered taking one out rotation?
