School Lunches made easy by Oliver McCabe It comes as little surprise to learn that, according to recent research carried out in Ireland, the most popular items in a lunchbox are sliced white bread sandwiches with a filling of ham, cheese or chicken; crisps; a chocolate bar or biscuit; and yogurt or a cheese snack. While there’s nothing wrong with any of these foods on an occasional basis, if children eat them every day, they will not get the range of nutrients they need for good health and energy. As children get older, they can start to crave sugar and salt leading to trips to the local sweet shop before school starts. Let’s prevent this. The key to a healthy packed lunch is nutritional balance and a wide variety of foods.
FRUIT AND VEGETABLES: Fruit is a great lunch-box staple

that can be chopped, sliced, or made into a mixed fruit salad, fruit compote, or purée. Another option is mini packs of dried fruits with no additives (sulphur is used to preserve the colour of apricots for display purposes) or added sugar. Make sure to check labels to see if anything has been added. The healthiest options are normally found in your nearest local independent health store. Better still you and your children can make your own dried fruit mix using dried coconut and seeds, which add vital minerals. Fresh fruit smoothies with non-dairy alternatives such as coconut or oat will keep for a school day if made fresh in the morning. Use frozen berries with banana and some ground flaxseed. Children often prefer raw vegetables to cooked: try cherry tomatoes, carrot sticks, cucumber, pepper, slices of fennel - which have a liquorice flavour, florets of broccoli and
cauliflower, fresh peas, whole mangetouts, sugar snap peas, or baby corn. Green beans, beetroot and asparagus are best cooked for the lunchbox.
DAIRY FOODS: It is important to provide good sources of calcium as about half of adult bone density is laid down during adolescence. Sources of magnesium, such as seeds and greens, should also be included to assist the absorption of calcium. Calcium can be found in greens and grains as well as dairy products remember. Avoid processed cheese. Buy local farmhouse cheese or organic cheese for your child. These types of cheeses are stocked by your local independent health store – they might take a little extra effort to find but they’re definitely worth it! Goats’ and sheep’s cheese are excellent as they are high in protein and low fat and are lovely with organic oatcakes or rice cakes. PROTEIN: Protein foods are fantastic for staving off hunger pains and they work
together with carbohydrate foods to create energy for your child. This also helps to boost concentration, memory and attention span. Good examples of protein foods are free range or local chicken, turkey or lean beef, cooked fish and prawns, cooked eggs, seeds, seed butters, pulses and hummus, vegetarian sausages, nut cutlets, and tofu. Omega 3 has also been shown to improve mood and benefit those with dyslexia and attention deficit hyperactivity disorder. It is found in oily fish such as herring, salmon, trout, mackerel, sardines and tuna, which all make great sandwich fillings, especially blended with a little crème fraîche, pâtés, savoury dishes or salads.
STARCHY CARBOHYDRATES: Whole grains are the body’s main source of long
term energy and should be at the heart of every lunchbox. Try to avoid sliced pans as they have no wholegrain and are really just water and sugar. Go for granary, rye or spelt bread for a change or, if you prefer, whole wheat baps, rolls, wraps or pittas.
DRINKS: Children should drink plenty of fluid at school. Dehydration can affect concentration and intellectual performance as well as compromising the transportation of fluids around the body. Make sure to provide bottled water, diluted fresh fruit or vegetable juice, a fresh fruit smoothie, milk or a non-dairy alternative. Ideally, lunchboxes should be appealing and inviting, never boring. And remember it’s about quality not quantity. As always, portion control is very important too. Remember your young child does not need an adult portion.
DON'T SUFFER IN SILENCE I’m not one to suffer in silence, when I’ve an ache, or a pain or any sign of illness I take medication or seek help. I just don’t have the patience for feeling sick, I’ve too much to do. I think a lot of women are like that. We are busy, we multi-task and generally, let’s face it, we do too much.
