BACK TO SCHOOL RECIPES by Oliver McCabe As the new term begins, here are some of my favourite easy and healthy ‘back to school’ recipes for all parents who are looking for something exciting and new to prepare with their kids when they come home from school or at weekends. They don’t take long to create and are sure to become firm family favourites - enjoy! And remember to buy your healthy ingredients at your local independent health food store. I’m looking forward to demonstrating how to cook these recipes at the Horan’s Health Stores Health & Wellness Fest on Saturday September 21st at The Oliver McCabe Rose Hotel, Tralee.
MAGIC MOMENT MOROCCAN VEGGIE STEW Vegan and Allergen Free • Contains celery • 1 tbsp organic olive oil • 1 large onion, chopped • 1 large carrot, chopped • 400g of peeled, chopped and boiled butternut squash • 2 garlic cloves, chopped • 100g baby spinach • 1 tbsp True Natural Goodness organic paprika • 2 tsps True Natural Goodness ground cumin
• 11/2 tsps True Natural Goodness organic Ceylon ground cinnamon • 250ml homemade vegetable stock • 150g pitted Kalamata olives, halved • 100g True Natural Goodness golden raisins • 400g can organic chickpeas, drained • 1/2 cup chopped fresh coriander • 1 tsp grated lemon peel
1. Heat 2 tbsps of oil in a large saucepan over a medium-high heat. 2. Add 1 tbsp oil, and the onion, carrot and garlic to the saucepan. Cook until the vegetables are soft, stirring frequently, about 10 minutes. 3. Add the spices, squash and spinach and stir for 1 minute, Add the stock, olives, raisins, chickpeas and coriander; bring to the boil. Simmer on a very low heat for 40 minutes. 4. Add the lemon peel. Remove the saucepan from heat and leave to rest for 20 minutes. Serve with couscous or quinoa and top with fresh coriander. Enjoy!

If the creamed coconut or coconut oil is very solid, soften by placing in a container inside a bowl of warm water. Place all ingredients into a food processor, and process till smooth. Adjust the quantities of oil, cocoa and honey to suit your taste. Pour into a jar. The spread will firm up after sitting for a while.
SCRUMPTIOUS COCONUT FLOUR BREAD Makes 1 loaf • Vegetarian and Allergen Free • Contains eggs • 6 organic eggs • 90g sifted True Natural Goodness • ½ cup of melted True Natural organic coconut flour Goodness extra virgin coconut oil • 1½ tsps of True Natural Goodness • 1 tsp True Natural Goodness xylitol gluten free baking powder • ½ tsp True Natural Goodness fine • 125ml of coconut milk Himalayan rock salt Pre-heat the oven to 180°C. Separate eggs. Whisk the yolks until light and fluffy. Add the xylitol. Add the oil and salt and continue to mix for a further few minutes. Add the flour ¼ cup at a time. Next, add the baking powder. The dough should be crumbly at this point. Add the milk until the mixture looks like a regular dough. Roll into a ball. Whisk the egg whites until they rise into a soft peak. Add the egg whites and the dough together with a spatula. Pour into a parchment-lined loaf pan and bake at 180°C for 45 minutes.

WHAT’S DIFFERENT AND HOW
LEWY BODY DEMENTIA BY KEVIN QUAID AUTHOR OF "LEWY BODY DEMENTIA, SURVIVAL AND ME"
I was diagnosed with Parkinson’s Disease just over three years ago and then six months later I was diagnosed with Lewy Body Dementia, and like a lot of people the first word that registered with me was the word Dementia. Yes, I was having some memory problems but none that were really impacting on my daily life and I thought to myself… how could I have dementia? TA LK Surely this must be wrong, but I was soon to AY D E ACH find out that there are over 400 different types AT 2P M of dementia and not all of them are memory based. The most common type of dementia is Alzheimer’s, and it’s only in the last decade that they have developed a scan that can identify Lewy Body Dementia and that scan is called a DaT Scan. For me the main difference in Lewy Body Dementia actually happens at night as I suffer from horrific nightmares, for example I sometimes believe that there are people trying to break in to kill me, I might not recognise my wife who is lying next to me in the bed and ask her in not very polite terms, who she is but thankfully after a while it is her voice that I will recognise. I can wake in the middle of the night and be as afraid as a little child left alone in the dark, with no one to turn to or no one to ask for help and sometimes I am just afraid, of what I don’t know, I am just afraid. It’s a fear that is totally unfounded, but yet to me a fear that is all too real. Then there is the problem of the Rem Sleep Behaviour Disorder, which is basically a sleep disorder in which you physically act out vivid, often unpleasant dreams with vocal sounds and sudden, often violent arm and leg movement during rem sleep. There is also the very vivid hallucinations that go along with this disease and they can be frightening, I have seen people who are not
there, we have been going along the road with my wife driving and I might see a car coming against us, a car that is actually not there but to me, it is very real. When I was first diagnosed both my wife and I were told that the disease was both incurable and progressive and for any couple this was a hard thing to take in, to be honest it didn’t hit me for a long time. The first good thing to happen to us after my diagnosis was that I was put in touch with my local Dementia Advisor called Amy Murphy and she in turn put me in touch with the Alzheimer’s Society of Ireland and I soon became part of their working group. They have a confidential helpline 1800 341 341 and its there for you if you have any concern about yourself or a loved one. Since being diagnosed I have written a book called Lewy Body Dementia, Survival and Me and that book is available in all of Horan’s Health Shops as well as on Amazon and Kindle. The people at Horan’s Health Shops have been of enormous help to me in my journey so far with this disease. I take Celtic Wind CBD Oil on a daily basis which I find wonderful and I also take Aloe Vera Juice. I use a Diffuser in my bedroom which changes colour and the different soft colours have a very soothing effect without being very bright. I add water and Lavender aromatherapy oil which helps with relaxation when I go into bed.
