At Hotel Chocolat, we strive to be a force for good. We aren’t perfect but we’re working on it, and we believe in trying to do the right thing, leaving things better than we find them. From ethical cocoa to sustainable packaging, here’s what’s on our Christmas list that will make you feel proud that we’re on yours...

GIVING COCOA GROWERS A FAIR SHARE We’ve always wanted chocolate lovers to feel more connected with cocoa farmers, because we believe growing cocoa for chocolate deserves as much respect as growing grapes for wine.

That’s one of the reasons we started growing our own cocoa at our Rabot Estate plantation on the Caribbean island of Saint Lucia in 2006. At the same time, we teamed up with local farmers to give Saint Lucia’s exceptional cocoa the international spotlight it deserves – and to pass more of the financial rewards on to them. Cocoa farmers often don’t see a fair share of the profits from chocolate sales, but through our Engaged Ethics

programme, we guarantee to buy farmers’ harvests at more than twice the bulk cocoa market price. This gives them the security they need to invest in their farms and their families’ futures.

“All of our chocolate is from 100% Engaged Ethics Cocoa” Today, 220 Saint Lucian farmers are part of our Island Growers team, and all of the chocolate in our range comes from 100% Engaged Ethics Cocoa. Much of it is sourced from Ghana, where we make fair and direct payments to cocoa growers in the Osuben community. We’re also supporting farmers with free technical help, training and top-quality cocoa tree seedlings supplied at a low price, as we’ve been doing since 2001. In recognition of the relationship we’ve formed with the community, where we’ve also opened a medical centre, they have appointed our Head of Chocolate Development as a tribal chief, or ‘nana’, with a special responsibility for developing the local cocoa industry. It’s a responsibility we take seriously, and it’s your love of great cocoa that allows us to live up to it.

TAKING CARE OF THE ENVIRONMENT We buy all our electricity from recyclable sources – mostly wind and solar. And by 2021 if not sooner, we plan for 100% of our packaging to be compostable, reusable or recyclable – and our revolution has already begun.

Over the next few years, you’ll start to see all of our packaging subtly changing, with lighter designs that use fewer components and smarter materials that are compostable, reusable or recyclable. It’s not easy being green, but it’s worth it. We’ll keep you posted on the journey to our 2021 target.

“Cocoa will always be our first ingredient, not sugar”

It’s a tall order, but we’re passionate about making it happen. To start with, the cups in our cafés and restaurants are now completely compostable – even the lids and spoons – as we now make them from corn starch instead of plastic. We’ve never used plastic bags and we’ve replaced single-use plastic straws with recyclable cardboard and paper. In fact, almost all the cardboard and paper we use is already certified by the Forest Stewardship Council and comes from sustainably managed UK forests. Right now, most of our plastic trays are made with recyclable plastic. But we aim to remove all singleuse, non-recyclable plastic from our entire range by 2021. We are trialling sugarcane-based 100% plant-fibre trays

This low-cocoa chocolate often uses cheaper, lower quality cocoa too, because high levels of sugar can dull its poor flavour. And that not only denies you high-quality cocoa’s nuanced notes of brownie, coffee, fruit and more, it removes value from the supply chain, contributing to the poverty trap of many cocoa growers.

All of our recipes are made with natural ingredients: our vibrant pink comes from beetroot, our orange from carrots. MORE COCOA, LESS SUGAR Cocoa will always be our first ingredient, not sugar. Today, a typical

THE REAL DEAL Our advice for choosing the best chocolate is simple: always check the ingredients, and follow the golden rule: Cocoa first = chocolate. Sugar first = confectionery, not chocolate. We rake back the sugar so the cocoa can sing – so it has to be the best.

For the past two years we’ve been crafting the perfect Chocolat Cream Liqueur. We’re the only chocolatier to run three bars; one on our Saint Lucian cocoa plantation, the others at our restaurant in London’s Borough Market and Leeds flagship.
