Business Acumen: F&B Management

Food and Beverage professionals are increasingly being asked to add business acumen to their strengths in operations and creativity. This course sharpens the skills, knowledge, and mindset that form the business foundations of a successful Food and Beverage leader throughout their career. It provides the following three essentials of hotel business acumen that are needed for effective decision-making, efficient execution of these decisions, and positive business scorecard results: 1. This course is suitable for staff and managers from different types of operations: F&B Directors, Restaurant and Bar Managers, (Senior) F&B Supervisors, Revenue Directors, Asset Managers, and Multi-Unit F&B Staff.

Course Method The course is dynamic and based on blended learning. This includes a combination of e-learning, classroom conferences, and a real-time hotel simulation competition in a dynamic market—using the world’s leading lodging business simulation.

Course Modules Targeting Business Priorities Provides complete competence in using the Income Statement, Balance Sheet, and Cash Flow Statement to target the business priorities that will produce business results. You will become financially confident in putting financial information to use for your organisation.

Leading with Communications Turning business priorities into business results means working with other people. Here you will learn to improve your own communications skills and how to turn them into one-on-one and group communications that create business results, allowing you to lead the firm.

Managing Business Priorities You will master the Smith Travel Research (STR) metrics, terminology, and calculations that assist you in turning business priorities into measurable results. You will be competent in measuring internal business results and indexing those results against those of your competitors.

Partnering with Owners Priorities Although the goals of owners and managers are similar, their views, jargon, and calculations may be different. Here you learn the owners’ perspective, which enables you to partner effectively with owners in areas of Asset Management, Capital Investment, Contracts, and Equity.

Course Setup

The learning modules are put to immediate use in a real-life simulation, where you learn how competitive strategies and decisions affect a hotel’s F&B results and those of the competition. Working in teams, you compete with other hotel teams in real time, and within these market dynamics, experience competition between hotels. Participants work together and compete with each other to construct, promote and deliver a competitive “price-for-value” proposition. In this way, learning is stimulated using different approaches: Mindset The participants act as the F&B Director and take the required actions from this position, based on the information input of the course. This stimulates: • Strategic thinking, strict planning, and competitive proactivity in a dynamic market with high financial potential—yet perishable—products; • Development of a cost-effective, competitive product that offers both market value and sound levels of financial returns; • Awareness of the financial impact on daily decisions of monthly and annual business results; • Total overview of the Food and Beverage department and revenue co-ordination. Knowledge & Skills Participants learn to act proactively as they develop essential F&B management knowledge and skills in: • Forecasting and optimising F&B revenue, price/value balancing, targeting revenue priorities, competitive response, cost control, variance and financial analysis;

F&B departmental financial statements, industry F&B revenue metrics and indexes, and capital investment.

Decision-Making Ability During the simulation, participants make decisions on all aspects of Food and Beverage management: • Revenue forecasting, pricing, costs, refurbishments, capital improvements, staffing and salaries, training and development, sales incentives, advertising and promotion, and displacement analysis. Reporting & Analysis To support financial decision making, participants need to be aware of all levels, and interpret these reports: • Revenue performance, perceptual mapping, business summary, business scorecards, revenue variances, competition, reputation management, staffing levels, staff competence and turnover, guest comments and general trends, and departmental income statements. The Food & Beverage Business Acumen course can be followed in three different ways: either on the campus of Hotelschool The Hague, on site at your company, or through an online hotel simulation course.

With the on campus edition, you enjoy five days of true hospitality at Hotelschool The Hague, where everything is facilitated by us. While on campus you can use the library and facilities of the school, and experience the dynamics of student life. The on site edition includes a four day training programme within your company, giving you a more comfortable training setup. For those unable to leave work or family situation, we offer an online edition that is practical and can be combined with work.
